O LORD, our Lord, how majestic is your name in all the earth!  - Psalm 8:9



1 roll of Croissant dough

Press seams together.

Very lightly sprinkle brown sugar, roll tightly and cut into mini rolls.


Fried apple filling

2 sweet apples, chopped tiny

1 T Clarified butter

2 T Brown sugar

Pinch of nutmeg

1/2 t cinnamon 

Heat butter in small skillet and add brown sugar, dissolve sugar.

Add rest of ingredients.

Stir until apples get soft, on medium heat.


Sugar roll

Mix 1/4 brown sugar, pinch of nutmeg and 1/2 t cinnamon.

Set aside.


Preheat oven to 350.


Melt 1/4 c butter in a 8 inch skillet.

Set aside to slightly cool.

Take rolls and roll all sides in butter.

Roll all sides in cinnamon mixture.

Place in the butter. 

Spoon cooked apples on top.


Cook for 25 minutes on the middle rack.


Ice with:

Powdered sugar, half and half

Apple Prune Biscuit Fritters

Preheat 375 degree oven

Bake 30-35 minutes, drizzle with glaze.


3 Frozen buttermilk biscuits, thawed, roll in butter, slightly mash in skillet

1/4 c Butter

Place foil under skillet.


Melt butter in small skillet.

Roll biscuits in butter.

Then roll all sides of biscuit in the following mixture.

1/4 c Brown sugar

1 t Cinnamon 

Pinch Nutmeg


Stewed fruit

2 sweet apples and 6 prunes, cut into small pieces

2 T Butter

1 T Sugar 

1 T Brown sugar

Cook until tender, 5 minutes or so.

Spoon over prepared sugared biscuits.

Bake.


Glaze

1/4 c Powdered sugar

2 t half and half

Lemon Cream Cheese Sauvignon Blanc Reduction Over Chicken and Rice

An ej original recipe!



2 c Rotisserie breast, shredded, set aside


1 T Clarified butter

1/2 large Onion, sliced thin

1/2 c button Mushrooms, sliced thin

1/8 c Sauvignon Blanc 

1/8 c half and half

Salt to taste

1/2 t Umami seasoning, Trader Joe's 

1/2 t Mrs Dash table blend 

1 T soft cream cheese, separate into tiny bits  

1/2 lemon juiced 



Sauté onions, mushrooms and garlic in butter.

Add wine, reduce slightly, add water, half and half and reduce slightly.

Add chicken and all the rest of the ingredients.

Simmer 5 minutes.

Serve over rice.

Creamy Mustard Green and Chicken Veggie Soup































4 Surely he has borne our griefs and carried our sorrows; yet we esteemed him stricken, smitten by God, and afflicted. 

5 But he was pierced for our transgressions; he was crushed for our iniquities; upon him was the chastisement that brought us peace, and with his wounds we are healed.  - Isaiah 53:4-5



1 qt Chicken bone broth

1/4 c shredded bits of chicken from the bones

1 c Mustard greens, chopped

1 c Speckled butter beans

1 Onions

1/2 of a Jalapeño 

1 Carrots

1/2 c Orzo 

2 T softened Cream cheese, break into bits

2 T Half and half

1/2 lemon juiced

2 t Sugar

1 t roasted garlic 

1 bay leaf

Salt 

Pepper

1/2 t Rosemary 

1/2 t Thyme


Put in pot and bring to boil.

Turn to simmer until speckled beans are soft.

Serve with crusty bread.

Left Over Beef Tenderloin Pho

1 t 5 spice powder

1 t kaffir powder, I bought dried leaves and ground in coffee grinder or 1 t lemon zest

2 T roasted garlic

1 t dried cilantro 

Pinch of pepper flakes 

1 t anchovy paste

1 t olive oil

2 t chicken base seasoning 

1/2 t Chili oil

2 t sweet chili Thai sauce

1 t toasted sesame oil

2 t palm sugar

1 T mushroom Soy sauce, this stuff is salty so use sparingly.


Veggies

1/4 c leeks, sliced

1/4 c thin sliced cabbage 

1/4 c mushrooms, sliced 

1/4 c thin sliced carrots 

2 T sliced 

red bell peppers 

1/2 c chopped broccoli florets 


1 c sliced thin beef tenderloin 


Pasta, angel hair or rice noodles 


1 qt or more of water


Add oils to pot, heat to med high, throw in all seasonings, bloom 30 seconds, add veggies, sauté in oil until tender, add rest of ingredients.

This is spicy but oh so delicious.
