Sausage and Shrimp Fideos

























So now faith, hope, and love abide, these three; but the greatest of these is love. - 1 Corinthians 13:13


A one skillet dish, this was amazing!

1/2 box of angel hair broken into inch size pieces
2 T olive oil
1 Leek
2 T roasted garlic 
1 t smoked paprika
1 t toasted cumin powder
1/2 t sumac
1 t chicken base seasoning 
1/2 c Sauvignon Blanc wine
1 c water
1 can Mexican style diced tomatoes, un-drained
1/2 c frozen English peas, un-thawed 
1 mild Conecuh Sausage, cook on grill and chopped ( I cook a lot at a time and freeze)
2 c frozen medium shrimp, slightly thaw

Heat oil in skillet, sauté leeks and garlic.
Add uncooked pasta.
Stir and brown pasta.
Add all dry seasonings.
Stir to incorporate.
Add wine, reduce by half, add water, tomatoes, peas, sausage and shrimp. 
Cook only until shrimp turn slightly pink.
Do not overcook, shrimp will be tough.
Add fresh herb mix.
Serve with crusty bread.

Fresh herb mix to finish
1/2 t oregano 
1/2 t sage
1/2 t thyme
Lemon or lime wedge if desired

Chicken Queso Fundido Pizza

Small Soft White Corn Tortillas, I use Mission brand
Olive oil for frying, enough to cover small skillet 1/8 inch 

Fry in oil on medium heat until crispy, flipping over to toast both sides.
Drain on paper towel, set aside.

1 -1/2 c Rotisserie chicken, shredded
Small can of green chilis, drained
4 T Cream cheese
1 c Quesadilla cheese
1 t olive oil
1 Leeks, chopped
1 t Roasted garlic
2 T Tomato paste concentrate
1/2 t Chicken base seasoning
2 T Salsa
1 t Toasted cumin powder
1 t smoked paprika
1 t  sugar 

An ej original recipe!

In a small sauce pan, heat oil.
Add leeks, chicken and all seasonings.
When leeks are tender, add all the rest of ingredients.
Just let cheese melt and you are ready to build pizzas.
Top with avocado creama.
On the spicy side but oh so good!!!

Avocado Creama

1 avocado, mashed with fork 
1 T mayo
1 T sour cream
1/2 t toasted cumin powder
Pinch of sugar 
Squeeze of 1/2 of a lime

Bean and Chicken Mexican Pizza


































25 that there may be no division in the body, but that the members may have the same care for one another.

Small Mission White Corn Soft Tortillas
Olive Oil for frying
1/2 can of Frito Lay bean dip
1/2 c Rotisserie chicken, diced
3 T Salsa

Add just enough of oil to fry tortillas.
1/4 way up the side would be good.
On medium heat, in a small skillet, fry until crisp.
Add your choice of toppings.

I reserved half of bean dip because I didn't want chicken.
Added a little salsa to bean dip.
Set aside.

Mix bean dip, chicken and salsa.
Set aside.

Spread dip over crispy tortillas, top and eat.
You have to make these, then eat them because they will get soggy.
It's easiest to set toppings on table then prepare tortillas.
These are so refreshing and yummy.
You could hit them with a squeeze of lime too!!

Toppings
Quesadilla shredded Cheese 
Onions, sliced thin
Lettuce, shredded 
Sour cream
Avocado, sliced or chopped
Tomatoes, chopped
Salt and pepper


My Take on Lean Cuisine Glazed Chicken

































23 For I received from the Lord what I also delivered to you, that the Lord Jesus on the night when he was betrayed took bread,
24 and when he had given thanks, he broke it, and said, "This is my body, which is for you. Do this in remembrance of me."
25 In the same way also he took the cup, after supper, saying, "This cup is the new covenant in my blood. Do this, as often as you drink it, in remembrance of me."

3 large Chicken tenderloins, cut into bite size pieces

Paste Rub for chicken

1/2 of a large lemon, the Lemon zest and the Lemon juice
1 t smoked paprika
1/2 t molasses 
1/2 t sumac
1/2 t tarragon 
1/2 t sugar
1/2 t onion powder
1/2 t garlic granules 
1/2 T t olive oil
A few turns Smoked salt ( I use Alder wood) buy online
A few turns Cracked black pepper

Mix up rub.
Rub chicken and let sit 15 minutes.
This tenderizes the chicken as well as gives a wonderful flavor.

Add 1 T clarified butter to skillet.
Sauté chicken.
Set aside.

1/2 inch of a carrot, fine grated
1/2 celery stalk, chopped
1 T Clarified butter
1/2 t dry chicken base seasoning
6 button Mushrooms, chopped
1/4 c onions, sliced thin 
6 green beans, chopped ( I used cooked ones)

Using the same skillet, heat butter and cook until veggies are slightly tender.

Add chicken, stir around and add 1 c water.
Cook until it makes a glaze.
Serve over sticky rice.

Italian Croissant Casserole

An ej original recipe!

I was making chicken Zucchini roll ups and had left over stuff.
I decided to invent a dish using said stuff.
It was delicious!!

Makes a small pan, mine was 12x6 foil pan.

2 croissant 
Left over marinara 
Left over filling from Zucchini roll ups, recipe this blog under Italian tab
Fresh Mozzarella 
4 cheese Italian blend
Fresh basil

Place a little sauce in the bottom.
Spoon left over filling over sauce.
Crumble croissant over filling then add rest of  sauce. 
Top with mozzarella and 4 cheese blend. 
Bake preheated 375 degree for 30 minutes, broil just to slightly brown.
Garnish with fresh basil that's chiffonade.

I baked this and the chicken Zucchini roll ups at the same time.
