Potato Starch Crust Brined Chicken

An ej original recipe!



3 Chicken breast 

Cut in half then cut into nugget


1 hour Brine

1/8 c salt

1/8 c sugar

2 limes, squeezed

1 chunk of Parmesan rind

1/8 c Worcestershire sauce

Water to cover chicken 


Using a gallon ziplock bag

Place ingredients in first, then chicken, then water

Stir before adding chicken 

Place bag in bowl 

Marinate 1 hr in fridge


1-1/2 c Potato starch in a bowl

Dry chicken with paper towels after the brine

Lightly sprinkle with black pepper, garlic and seasoned salt

Roll in potato starch 

Fry in batches in peanut oil until internal temp is 165 degrees

Oil temp needs to be 350 degrees

Let oil return to 350 each time you fry a batch

I deep fried mine in a small Dutch Oven 

Outstanding chicken
