Black Pepper Brown Sugar Molasses Ham

An ej original recipe!



Preheated 325 degree oven for 3-31/2 hr until internal temp is 140


Turkey size baking bag

1 T flour

Place flour in bag

Add mini coke


14-15 lb. Publix brand smoked semi Boneless whole ham(not sliced)

Set ham in bag

Place in doubled foil heavy duty pan

Place in a sheet pan


1/2 c yellow mustard

1 t black strap Molasses 

Mix and set aside

Smear on top of ham

Pat sugar on mustard mix

1- 1/2 c Light Brown sugar

Sprinkle with pepper 

Cracked coarse black pepper 

Tie up bag with the zip tie that's provided 

Cut 2-3 slits in top of baking bag

Bake

Slice to serve

I cook mine ahead of whatever holiday, slice and freeze

To reheat, use smaller baking bag, add desired amount of ham for your crowd and add 1 mini coke

Calabrian Pepper Dried Butterbeans

An ej original recipe!



1 lb dried butterbeans, picked and rinsed


Using a Dutch Oven

Cover beans with water, bring to boil, turn to simmer

Add these ingredients below


1- 2 T coarse kosher salt

2 t sugar

1/2 t Cajun seasoning

Drizzle of olive oil 

1 t mashed jarred Calabrian peppers

1/2 t cracked coarse black pepper

1 link of smoked sausage, cut into 1/4 inch rounds, fry in skillet, drain


Cook 45 minutes partially covered stirring  frequently 

Add water again to almost cover, return to simmer

Cook until beans are soft 

Total cook time 1-1/2 hrs

Buttery Maple Buffalo Breast

375 degrees 40 minutes 

Then under broiler to crisp


2 large chicken breast, pounded to 1/4 inch and cut into pieces


1 hr brine

1 qt water 

3 pieces Parmesan rind 

2 T kosher salt 

2 T Honey

1/2 c Sweet Baby Ray wing sauce

2 T peppercorns 

2 medium lemons, cut in half

3 T roasted garlic 

2-3 bay leaves

2 T extra virgin olive oil

Boil 10 minutes

Cool down and add ice to speed cooling 

Using large container add chicken pieces and pour brine over 

Brine 1 hr.

Dry chicken pieces with paper towels



End Baste sauce (slurry) for crispness 


2 T oil

1 T cornstarch 


Cooking Sauce

1/4 c Butter, melted

1/2 c Maple syrup

1-1/4 c Wing sauce


Bake preheated 375 degree oven for 40 minutes, each side, or until internal temp is 165.

Use foil pan and rack with 1 c water in bottom of pan.

Dry chicken with paper towels.

Drizzle with sauce.

Bake.

Baste at the end with slurry, put back in oven, under broiler to crisp.

Watch closely.

1/2 -1 shot Whiskey (I used Woodford Reserve)

1/4 shot maraschino cherry juice

1 shot orange juice with pulp

2 shots Ginger Ale ( I used Canada Dry)

3 shakes orange bitters

1 Cherry 

1 t Honey 

1/4 c crushed Ice

Shake or blend

Air Fryer Lloyds BBQ Style Onion Rings

1 onion sliced thin and separated and soaked in cold water for 10 minutes then completely dried

1 c AP Flour in a bowl with lid

Seasoned salt

Non stick spray 

Spray both sides


400 degrees 10 minutes on one side flip and 8-10 minutes on the other

Salt with seasoning salt

Drain on paper towel

Twice Baked Rueben Potatoes

        beholding your power and glory. 

    [3] Because your steadfast love is better than life,

3 medium bakers

Pierce with knife tip

Microwave 5 minutes, flip then 3 more

Set aside to cool

Cut in half

Scoop out potatoes 

Reserve potatoes

Reserve skins



Filling

1 T Olive oil

1 medium Onion, chopped 

1 t Sugar

1/2 t garlic granules 

2 c Pastrami or Corned beef, chopped 

1 c squeezed kraut

Scooped out Potatoes 

1/4 c Russian Dressing 

 

Saute onions, garlic granules and sugar in oil.

Add meat, potatoes and kraut.

Lastly add dressing. 

Add topping by the spoonfuls until overstuffed.

Top with cheese and air fry.

400 degrees for 15 minutes until cheese melts!

Havarti cheese, chopped

Guinness Like Cake

        that is higher than I,

Butter spring form pan and cut out a circle of parchment for bottom


1/2 c light Beer 

1/2 c coffee liqueur ( I used Bourlaine brand)

1 T black strap Molasses 

Mix together and set aside


10 T  (1 stick plus 2 T 

3/4 c unsweetened cocoa

2 c superfine sugar

3/4 c sour cream

2 large eggs

1 T vanilla extract

2 c AP flour

2 1/2 t baking soda


Icing 


1 1/4 c confectioners' sugar

8 oz spreadable cream cheese 

1/2 c heavy cream


For the cake: 


Heat oven to 350 degrees. 

Butter a 9-inch spring form pan and line with parchment paper. 

I only had a 10 inch one so I used it.

It did change the baking time to 35 minutes.

In a large saucepan, combine Beer mixture and butter. 

Place over medium-low heat until butter melts, then remove from heat. 

Add cocoa and superfine sugar, and whisk to blend.


Make super fine sugar by putting in mini processor. 

Remeasure because it did change to a larger amount. 


In a small bowl, combine sour cream, eggs and vanilla; mix well. 

Add to Beer mixture. 

Add flour and baking soda, and whisk again until smooth. 

For a 9 inch, pour into buttered pan, and bake until risen and firm, 45 minutes to 1 hour. 

See 10 inch bake time above.

Test with toothpick, should come out clean.


Place pan on a wire rack and cool completely in pan.


Icing

Using a hand mixer, mix confectioners' sugar, cream cheese and heavy cream and blend until smooth.


After cooling, frost top only!

Spray large 12 cup muffin pan with non stick spray 


Preheat 350 degree oven 

20 minutes bottom rack

Rest of bake time move to next position rack

Bake 30-35 minutes until custard is set


3 large croissants torn into small pieces (enough for 12 cups)

Fill muffin cups and set aside


2 c ham chopped

1 t olive oil

1 c Leeks

1 T roasted Garlic 

2 c baby Spinach 

Sauté and set aside


Custard

4 eggs, beaten

1/8 c liquid egg whites

1/8 c heavy cream

1/2 t Seasoned salt

1/4 t garlic granules 

Pinch of Pepper

Whisk


Topping

2 c cheese 


To build Cups

Add same amount of croissant pieces to each muffin cup

Using a gravy ladle, spoon custard over croissant pieces

Mash down

Add 1 T of meat filling on top of croissant egg custard 

Top with cheese

Done when custard is set and toothpick comes out clean 


May serve with hollandaise sauce!

Pork Carnitas Taquitos (Rolled Fried Taco)

Carnitas pork

 

 

Flour tortillas, fajita size (softened)

Spread cream cheese

Onions, thin sliced

Grated cheese

Tomato, diced


Peanut oil (2 inch) deep

Medium size Skillet 


Heat to 350 degree


Spread soft cream cheese liberally on tortillas 

Place filling and toppings close to one edge and roll tightly 

Place seam side up, brown and roll to other side, brown and drain on paper towels

Salmon Tacos with Jalapeño Slaw
































Psalm 56:3-4

Left over salmon 

Heat in skillet with water and 1 t taco seasoning


 Slaw

1 c shredded cabbage  

1 t Mayo

1 t Olive Oil

1/8 c chopped Onion

1 T chopped Pickled Jalapeño 

1 t Honey 

Salt and pepper to taste 


Hard shell tacos


Toppings

Onions 

Slaw 

Picketed Jalapeño
