Ground Chicken Fried Jalapeño Turkey Bacon Slider
































Psalm 119:133

An ej original recipe!!



Chicken burger recipe( I make these and keep in freezer)

1 lb ground Chicken 

1/4 c chopped Green onions

1/4 c Italian cheese blend

3 T buttermilk 

1/4 c panko 

Salt and pepper to taste

1/2 t onion powder 

1/2 t garlic granules 

Mix just to incorporate.

Make into 6 Slider patties.

Fry in a tablespoon of olive oil.

Fry onions and peppers also.

Build Slider.


Pan fried sweet onion slices

Pan fried slices of Jalapeño, seeds removed ( makes them smoky tasting)

Cheddar Cheese slice

Crisp turkey bacon slices 

Slider buns(Sam's club bakery) keep in freezer

25 Minute Instant Pot Birria Beef Tacos

2 lb beef chuck roast, cut in thirds then 1 inch chunks


Birria seasoning 

1 /2 c  Guajillo chili powder made from dried chilis (Clean chilis removing seeds and tear into pieces, pulse in coffee grinder to make powder)

1 T smoked paprika 

2 T chicken base seasoning 

1 T onion powder 

1 T garlic granules 

1 t salt

1 t black pepper 


Instant Pot ingredients 

Beef

3 c Hot water 

2 large carrots

2 bay leaves

3/4 of the Birria seasoning

Reserve rest to sprinkle on taco 


Soft Corn tortillas 


Toppings

Quesadilla cheese

Green onions

Cilantro 

Lime


Add hot water, beef, carrots, bay leaves and seasoning to IP

Process on pressure setting for 25 minutes 

Quick release

Add 1/2 inch of oil to skillet 

Heat

Remove beef to container 

Add 1 c juice to beef

Shred or chop beef

Dip corn tortillas in juice 

Add to hot oil

Fill taco with meat and cheese

Fold 1/2 of shell over to make the taco

Deep fry and flip

Top with toppings 

Enjoy

Toasted Chili Pork Tenderloins

    [91] By your appointment they stand this day,

        for all things are your servants.



2 pork Tenderloins(I got mine at Aldi) 2 to a pkg $8.00 

1 T coarse salt (heaping)

rub all over 

Marinate 8 hrs in fridge

Remove from fridge

Dry off 

Salting pork over a long period refrigerated gives a really juicy texture.


Rub

2 T Toasted and ground Ancho and Pasilla Chilis powder  ( I make my own)

2 T brown sugar 

1 t toasted cumin

1 t Garlic granules 

1 T Mexican oregano 

1/4 t coarse black pepper 

Add the 3 T citrus juice of your choice to make a paste to the spice rub

Rub pork all over


Lime, lemon or ruby red grapefruit (your choice) 3 T fresh juice


Bake on rack for 450 degree preheated for 25-35 minutes until pork is 145 degrees.

Rest, loosely covered at least 5 minutes but 10 is better and slice to serve.

Boars Head Pepperoni Pasta Salad in a Jar

An ej original recipe!!



Makes 4 qt size wide mouth jars



1/2 box of bow tie Pasta, salted, cooked al dente(9 minutes) set aside to cool


Salad dressing of your choice

I make my own (recipe per each jar)

1/8 c Olive Garden Italian 

1/2 t capers

1/2 t Caper juice

1/4 t Honey

1 t Mayo

1/4 t salt

1/4 t coarse black pepper 


Layers from bottom up

Salad dressing

English cucumber (chopped)

Sweet onion( sliced thin)

Cooked Pasta around 1c per each jar

1/4 c baby Arugula and baby spinach torn

2 T fine grated Parmesan 

1 medium carrot, grated

20 large slices of Boars Head Pepperoni stacked and chopped (divide between 4 jars

Another 1/4 c spinach and Arugula greens 

Shake jar before serving!


Will keep 5 days in fridge

Krystal Burger Knock Off Ground Chicken Sliders

Taste just like a Krystal burger!



Large sheet pan covered with foil

Spray with non stick



1 & 1/2 lb ground Chicken(I used Aldi)

1/2 T dill pickle juice

1 pkg dried onion soup(I used Aldi)

3 t dried onions

Pinch each of black pepper, salt, celery salt, onion powder


1 t creamy peanut butter

1/4 c milk


1 medium sweet onion, finely diced

Scatter half of onions on sprayed foil pan

Reserve other half for top of patties 


Yellow American cheese slices

12 pkg Dinner rolls(I used brioche from Aldi) I trimmed out some of the roll for less bread and froze the scraps for bread pudding)


Whisk peanut butter into milk until smooth (I used honey peanut butter)

Set aside

To the chicken add 

Add dried spices, pickle juice, dried soup, onions and milk peanut butter mixture 

Make 2 piles of meat

Pat out onto onion laced foil lined and sprayed pan into a rectangle shape

Using a pizza cutter, cut 6 patties out each meat mound

Make 5 thumb holes in each patty to stop shrinkage 

Add other half of onions

Bake 15 minutes lightly covered at 375 degrees

Uncover then bake 10 more minutes 

Turn off oven

Remove from oven and top with cheese

Bake 5 minutes, residual heat will melt the cheese

Remove and flip over,  add bottom bun

Serve and enjoy

Oven Baked Sauvignon Blanc Shrimp and Andouille Sausage Boil

[15] But let none of you suffer as a murderer or a thief or an evildoer or as a meddler.



An ej original recipe!



1 lb baby Yukon gold, microwave 1-1/2 minutes each side, half, set aside

3 ears of corn, each cut into 3 pieces

1 small lemon, quartered

1 onion quartered

1 lb Andouille sausage, slit lengthwise and cut into 2 inch pieces

1 stick of salted butter, melted

1/8 c olive oil

1/4 t garlic granules 

1/4 t salt and pepper

2 t dried thyme or 2-3 sprigs fresh 

2 lb jumbo shrimp, cleaned, tail on is okay

2 heaping t Old Bay seasoning

1/2 c Sauvignon Blanc, add 1/2 t sugar 


Microwave potatoes(info above) set aside

Melt butter, add oil, thyme, set aside


Toss corn, lemon quarters, potatoes, sausage in butter thyme mixture 

Using a large sheet pan covered in foil, 

Add the corn, sausage, potatoes and lemons

Stand corn on end

Make a good size foil boat and add wine and sugar, shrimp and Old Bay seasoning 

Cover tightly 

Set on top of lemon, onion, sausage, potatoes, corn mix

Bake preheated 400 degree oven for 30 minutes 

Add end of bake time pour shrimp and wine juice over the onion, lemon, sausage potato, corn mixture 

To serve, remove lemon

Enjoy
