Warm Feta Pasta Salad





































Psalm 140:13

Surely the righteous shall give thanks to your name; the upright shall dwell in your presence.






2 pints sweet 100 cherry tomatoes 

1 diced Shallot 

3 T roasted garlic

1/2 c light olive oil, reserve 2 T 

Kosher salt, to taste

Red pepper flakes, to taste

8 oz block Feta ( I think you could use 1/2 and it would still be good)

6 oz cooked bow tie pasta, set aside

1/2 c reserved pasta water

2 t dried thyme


Topping

Zest of 1 lemon

3 T chopped fresh sweet basil


Light sprinkle of black pepper


Preheat oven to 400 degrees.

Using  a 13x9 pan, lay tomatoes in a single layer. 

Add garlic and shallot. 

Drizzle oil over the mixture, season with salt, pepper flakes and thyme. 

Right in the middle, push tomatoes to make a place for the feta.

Cook 35 minutes until tomatoes are bursting and feta is slightly browned.

Add drained pasta and 1/2 c pasta water.

Stir until you have a sauce.

Mix zest and basil, sprinkle over top.

Lightly pepper.

2 small pork tenderloins

Bang Bang Sauce
1 c sweet Chili Thai sauce
1/2 c Hoisin sauce
Fresh chopped parsley

Reserve a little for a drizzle on the loins after it's done.

Marinate the tenderloins overnight in a zip lock with the sauce. 
Sear in a cast iron skillet, transfer to a roasting pan and bake in the oven at 350 degrees until the internal temp is 150 degrees. 

2 Cheese Quick Chicken Divan

1 bag steamed broccoli 
1/2 of a Rotisserie chicken, shredded
1 cream of mushroom soup
1 cream of chicken soup
1/3 c mayo
1T lemon juice
1/2 c canned onion rings
1 c sharp cheddar, shredded

Topping Mixture
1 c panko
1 c melted butter
1 c Parmesan
Mix together.


In a 13x9 casserole pan, mix soups, mayo and juice.
Add onion rings and broccoli, then the chicken.
Add layer of cheddar.
Top with Topping mixture.
Bake in 375 degree oven for 25 minutes, if necessary, then broil just till cheese is slightly browned.

John 1:1-14

Bake 13 minutes in preheated 350 degree oven, bottom rack.

 

1 c soft butter

1 c sugar

1 c brown sugar

2 eggs

2 t vanilla 

1 t baking soda 

1/2 t salt

1/2 t cream of tarter

3 c AP flour

1 c semisweet chocolate chips

1 c white chocolate chips

1 c chopped nuts, optional


Using an electric mixer,  cream butter, sugar and brown sugar until smooth.

Add eggs 1 at a time, then vanilla.

Set aside.

Whisk in soda, tarter and salt to flour.

Add chips. 

Add nuts if desired.

Using a large melon ball scoop, place on parchment, 2 inches apart.

These freeze well in the dough form.

Should make 4 dozen cookies.

Bacon Egg Marinated Artichoke Soufflé


































Romans 8:31-32


[31] What then shall we say to these things? If God is for us, who can be against us? [32] He who did not spare his own Son but gave him up for us all, how will he not also with him graciously give us all things?


 

 An ej original recipe!

 

 

Spray Muffin pan, makes 9 

Bake time 40-45 minutes, until lightly browned and are centers set.

Bake temp preheated 350 degrees


Egg Mixture 

3 whole eggs

1/2 c plus 3 T liquid egg whites

1/8 c half and half

Salt and pepper to taste

Whisk together, set aside.


Meat Filling

1 c crispy chopped bacon

1 jalapeño, diced 

1/2 c marinated artichoke hearts, chopped 

1/2 of a onion, chopped

1 T roasted garlic, mashed

1 t olive oil


Sliced Sandwich cheese broke into large pieces to lay on top ( I used a mixture of Havarti, cheddar and pepper jack)


Fill each muffin, sprayed with non stick, 3/4 way from top with egg mixture.

Spoon 1 heaping T of meat filling into egg mixture, cover with cheese pieces.
