Crispy Tortilla Crust BBQ Pulled Pork and Bacon Pizza

































Psalm 128:1


A Song of Ascents.


    [1] Blessed is everyone who fears the LORD,

        who walks in his ways!



Fajita size Tortilla 


Toppings

BBQ sauce

Fine grated Parmesan 

Pulled pork

Bacon bits

Thin sliced sweet Onions 

Thin sliced Sweet peppers

Grated Mozzarella 

Heavy cream

Drizzle olive oil


Lay out a piece of foil

Spray with nonstick 

Add tortillas 

Spray top of tortillas with non stick

Take 1 t of BBQ sauce and spread over tortillas 

Lightly sprinkle Parmesan 

Add pork, bacon, onions, peppers and drizzle oil

Mix mozzarella and 1 t heavy cream and top pizza

Preheat air fryer 450 degrees for 3 minutes 

Add foil and pizza

Cook 6 minutes 

Cut and serve

Yum!

White Chocolate Walnut Pie





























 

 

Psalm 127:3


    [3] Behold, children are a heritage from the LORD,

        the fruit of the womb a reward.



2 regular pie shells

Thaw and poke holes in dough


1-1/2 c chopped walnuts, set aside


White melting wafers, just to cover bottom of shell


Filling ingredients 

1 c white sugar

3 large beaten eggs

1/2 c light Karo syrup 

1/4 melted butter, cooled

1 t cinnamon 

1 t vanilla extract

1 t Molasses 


Whisk beaten eggs and sugar together

Add the rest of filling ingredients 

Whisk well

Add walnuts

Cover bottom of shell with white chocolate wafers

Add filling and nuts

Bake preheated 375 degree for 40 minutes 

Cool before serving

Top with spray whip topping

Bacon Mushroom Serrano Potato Casserole






























Psalm 121:2

6 medium Yukon Gold Potatoes, microwave 3 minutes each side or until potatoes are soft, slice into 1/8 inch thick rounds to cool, peel or not according to your preference 


1 c real bacon bits, microwave 1 minute

Set aside


1 t Oil

1 t Butter

2 T roasted Garlic

1/2 c sliced Leeks

1/2 of a chopped Serrano

1 c sliced Mushrooms 

1 t Chicken base seasoning 

1/2 t Sugar 

1/2 t Pepper

1 t basil

1 t oregano 

1/2 t Salt

2 c Heavy Cream

1 c Parmesan cheese


Using a medium pot

Sauté veggies in butter oil mixture 

Add seasonings 

Add cream and sauté 5 minutes until slightly thickened 


To build

13x9 pan

Layer 1/3 of potatoes in pan

Spoon 1/3 of cream mix

Spoon 1/3 of bacon

Repeat 2 more times 

Add Parmesan to top

Cover with foil

Air fry 20 minutes 

Uncover and cook an additional 5 minutes 

Serve


BBQ Dust Chicken Thighs Oven Steamed

BBQ Dust

1/2 c brown sugar

2 T paprika

1 T smoked paprika 

1/2 T coarse black pepper 

1 T coarse kosher salt

1 T garlic granules 

1 T onion powder 

1 t mustard powder

1/2 t cayenne pepper 


Lightly cover both sides of boneless skinless thighs


6 seasoned boneless skinless chicken thighs 

3 c water

Dutch oven

Ramekin 

Small plate


Add water to Dutch oven 

Place ramekin in middle, add plate to top

Stack seasoned thighs on plate

Add lid

Bring to light boil

Put in a preheated 350 oven for 55 minutes or until stack of thighs reaches 165 degrees 

To serve slice, chop or pull chicken

Greek Chicken Stir Fry for Two

































John 7:37-38


[37] On the last day of the feast, the great day, Jesus stood up and cried out, “If anyone thirsts, let him come to me and drink. [38] Whoever believes in me, as the Scripture has said, ‘Out of his heart will flow rivers of living water.’”



Prep 

1 c Rotisserie chicken breast, chopped

1 small onion, sliced 

1 c chopped broccoli florets (can sub Zucchini) 

3 t olive oil, divided

Set aside


Sauce

1/2 of a lemon juiced

1 t dried oregano 

3/4 t Dijon

3/4 t salt

3/4 t pepper

1/2 c salsa ( can sub cherry tomatoes)

1/4 c full fat cottage cheese ( can sub feta)

Make sauce and set aside


Add ins

1/2 c hominy, can sub Garbanzo beans)

3 T juice from hominy or beans

1/4 c Castelvetrano olives 

1/8 C capers

1 t fresh chopped dill


In a large skillet over medium heat, add 

1 t oil and stir fry onions, broccoli and chicken until onions are tender, add more oil if necessary 

Add sauce and stir fry for 3 minutes

Add the add ins

Stir fry another 2-3 minutes 

Remove from heat and add fresh dill

Serve
