Fluffy Mile High Biscuits

Acts 2:17-21

[17] “‘And in the last days it shall be, God declares,

that I will pour out my Spirit on all flesh,

and your sons and your daughters shall prophesy,

and your young men shall see visions,

        and your old men shall dream dreams;

[18] even on my male servants and female servants

in those days I will pour out my Spirit, and they shall prophesy.

[19] And I will show wonders in the heavens above

and signs on the earth below,

        blood, and fire, and vapor of smoke;

[20] the sun shall be turned to darkness

        and the moon to blood,

before the day of the Lord comes, the great and magnificent day.

[21] And it shall come to pass that everyone who calls upon the name of the Lord shall be saved.’

Note:

I grated the cold butter straight into the flour mixture and it worked great!

2 c AP flour, aerate

5 t baking powder

1/4 t baking soda

1 T sugar

1 t salt

6 T cold butter

3/4 c  + 2 T buttermilk

Heat the oven to 425 degrees and set aside on a parchment lined baking sheet

Combine the flour, baking powder, baking soda, sugar, and salt in the bowl and whisk

Add to food processor

Cut the cold butter into 6 slices, then scatter it over the flour in the food processor

Pulse 7 to 9 times or until the butter turns into tiny bits

Empty the butter-flour mixture back into the large bowl

Make a well in the middle, and then pour in buttermilk

Stir until a shaggy dough forms

Transfer the dough onto a lightly floured work surface

Sprinkle a little flour on top, and then bring the dough together with your hands

It might be a bit sticky, so add flour as needed

Without working the dough too much, pat it down into a rectangle about 1/2 inch thick

Fold the dough into thirds

Rotate the rectangle and then repeat this process two more times

Pat the dough into a rectangle between 1/2 inch thick

Then use a 3 inch biscuit cutter to cut out

Do not twist the cutter, as this will seal the edges of the biscuits and prevent them from rising

Place the cut-out biscuits onto a baking sheet

Keeping them close to each other helps them rise

Gently press together the scraps and use them to make more biscuits, but be careful not to overwork the dough, or else they will be tough

Bake the biscuits until golden brown and have risen, 10 to 15 minutes

Brush tops with melted butter
