Psalm 46:1-3


God Is Our Fortress


To the choirmaster. Of the Sons of Korah. According to Alamoth. A Song.


    [1] God is our refuge and strength,

        a very present help in trouble. 

    [2] Therefore we will not fear though the earth gives way,

        though the mountains be moved into the heart of the sea, 

    [3] though its waters roar and foam,

        though the mountains tremble at its swelling. Selah



2 c AP flour(aerate flour before measuring) 

1 T fresh baking powder

1/2 t baking soda 

1 t kosher salt

Whisk together

Set aside


3/4 c stiff full fat Greek Yogurt ( I used 5% Fage)

Place in freezer 15 minutes 


1 egg

1/2 c full fat buttermilk 

Beat egg into buttermilk 

Set aside


Egg wash 

Beaten egg 

1 t water


Preheat oven to 400 f

Lay a sheet of parchment on a sheet pan

Cut yogurt into flour mixture 

Add buttermilk mixture, incorporate using rubber spatula 

Dust flour onto a piece of parchment 

Add dough and pat out to 1/2 inch thickness, use extra flour if dough is too sticky 

Cut biscuits out with a floured 2 inch cutter

Place 2 inches apart 

Brush with egg wash

Bake 16 minutes until golden brown 

Shrimp Moo Goo Gai Pan































Psalm 49:7-9


    [7] Truly no man can ransom another,

        or give to God the price of his life, 

    [8] for the ransom of their life is costly

        and can never suffice, 

    [9] that he should live on forever

        and never see the pit.



Shrimp

1 lb Red Shrimp 

1 T Soy sauce 

1 T Cornstarch 

1 T Flour

Toss shrimp in Soy sauce

Toss shrimp in cornstarch and flour.

Fry until slightly crispy about 3/4 way done.

Remove to plate.


Veggies

1 small onion, chopped

1/4 c sliced Leeks 

3 T sliced Celery

2 c Broccoli florets 

3 T Roasted Garlic, mashed 

Olive oil for sautéing 

Sauté onions, leeks, celery and garlic, then add broccoli. 

Remove to plate. 


Sauce 

1-1/2 c Chicken stock

1/4 c Mirin 

1 T Toasted sesame oil

1 T Brown sugar

1/2 t Chili garlic paste

1/4 t White pepper

Mix well.

Place in hot skillet add slurry.

Add veggies back in, then add shrimp.


Cornstarch slurry


Sticky rice

Florence Italy Mortadella Meatball Rigatoni

    Your right hand is filled with righteousness.


 

 

18-20 Meatballs 

1 lb ground Chicken, beef, turkey, pork ( your choice) I used chicken 

1/3 lb Boars Head mortadella (Italian Bologna) found at Publix, chopped in food processor 


1 small onion or 1/2 large onion, chopped

2 T roasted garlic

2 t olive oil

Sauté until tender and at the end add 1 t salt, 1/2 t black pepper and 1 t dried rosemary and 1 t dried basil

Set aside to cool


To make the Meatballs 

In a large bowl add:

Meats 

Veggies herb blend mix, cooled

1/2 c heavy cream

1/2 c three cheese Italian blend 

1 beaten egg 

Mix just till incorporated.

Shape into your desired size Meatball. 

I did 2 inch size.

Refrigerate for 30 minutes before cooking in olive oil. 

Prepare your favorite sauce, red or white. 

I made red sauce.


Sauce 

10 Meatballs cooked in 2 T olive oil, mashed

1/2 t red pepper flakes

Cook until Meatballs are done, around 10 minutes.


Add

1/4 c Cotes-du-Rhône wine (Costco 13.99)

Cook 3 minutes 

Add

1 jar Marinara ( I used Aldi) 

1 can diced tomatoes

1/4 c full fat cottage cheese


To the meat sauce , add wine, cook 3 minutes, add jar of marinara, tomatoes. Cook 2 minutes.

Add cottage cheese.

Let sauce simmer 15 minutes, stirring every few minutes.


Cheeses 

Cottage cheese (spoon teaspoon on each layer to sparsely cover layer)

Parmesan ( light sprinkle) 

Mozzarella ( light sprinkle)


To assemble, add 1 cup of sauce to 1/3 rigatoni and stir.

Ladle a little meat sauce with the rigatoni in bottom of 13x9 pan.

Lightly cover with all the cheeses, repeat 3x.

Add rest of meat sauce to top.

Finish lightly with all the cheeses


Cook

Bake uncovered preheated 350 degree air Fryer for 20-25 minutes until lightly browned.

Cool 10 minutes before serving.

Instant Pot Leftover Lo Mein Soup

































Psalm 35:9-10

        from him who is too strong for him,

        the poor and needy from him who robs him?”



An ej original recipe!!



Left over Lo Mein Trio (at least 2 c but more is good too)

1 qt chicken bone broth

1 c water

Add to IP.

Turn to soup setting.


Lo Mein Sauce

1/2 c low sodium Soy sauce

1/4 c sugar

2 T cooking wine(Mirin)

1/2 t anchovy paste

1 T Hoisin

1 t toasted sesame oil

Whisk together and add to IP.

Bring up heat under pressure. 

Cook 10 minutes.

Wait 10 and do a release.

Serve over rice. (Optional)

Serve with mini spring rolls.
