Pumpkin Cake Donuts



































Isaiah 53:6


    [6] 

    All we like sheep have gone astray;

        we have turned—every one—to his own way;

    and the LORD has laid on him

        the iniquity of us all.



2 c AP flour

1-1/2 t baking powder

1/4 t baking soda

1-1/2 t pumpkin pie spice

1/2 t cinnamon 

1/2 t Ginger 

3/4 t kosher salt


Whisk together dry ingredients.


1/2 butter, melted 

1 c brown sugar

2 large eggs

1 c pumpkin purée

2 t vanilla 


Using a mixer beat butter and sugar.

Mix 2 minutes.

Add eggs one at a time.

Add pumpkin and vanilla.

Mix till incorporated.

Using a mixer, add dry ingredients into wet, a little at a time.

Use a doughnut pan if u have one.

I lined a large sheet pan with parchment.

I shaped dough to look like a doughnut.

They will puff and spread so leave space.

I did 6 at a time.

Bake preheated 400 degrees for 10-12 minutes.

Let cool before icing.


Icing

1 c confectioners sugar 

1 t Bourbon 

1 t vanilla 

Add milk a little at a time to get a consistency that you can dip doughnut tops.


Italian Chicken Meatball and Orzo Skillet



































John 5:39-40


[39] You search the Scriptures because you think that in them you have eternal life; and it is they that bear witness about me, [40] yet you refuse to come to me that you may have life.

Meatball ingredients 

1 lb ground chicken 

1/4 c (3 cheese Italian blend)

1 small Onion, diced

1 t dried Sage 

1 t dried Cilantro 

1/2 t dried Fennel seed 

1/4 c Panko

2 T Tomato paste concentrate 

2 T cream cheese

2 T buttermilk


Make sausage meatballs and set aside.


2 c broccoli florets, blanched and dipped in ice water, set aside


Orzo ingredients 

1 c Orzo 

1 diced Shallot 

1 t dried Sage 

1/2 t dried thyme

1 T Butter

1 t roasted Garlic, mashed 

1/2 c Sauvignon Blanc 

2 c chicken stock 

1/4 c half and half 

1/4 c (3 cheese Italian blend)


Spray braiser pan with non stick.

Add 1 t each butter/oil mixture to braiser pan, heat on medium.

Place meatballs in braiser and sauté.

Cook 3-4 minutes on each side.

Don't flip until it's brown, they will fall apart.

Remove from pan.

Scrape bits.

Add 1/2 t oil, sauté herbs, garlic and shallots, scrap bits loose.

Add wine, stock, cream and stir for 30 seconds, add Orzo.

Stir constantly for 8 minutes.

Next add cheese, stir to melt.

Add Meatballs and steamed blanched broccoli florets.

Cold Grape Salad






























Ecclesiastes 12:13-14


[13] The end of the matter; all has been heard. Fear God and keep his commandments, for this is the whole duty of man. [14] For God will bring every deed into judgment, with every secret thing, whether good or evil.



1 8 oz spreadable cream cheese

1 c sour cream

1/3 c sugar

2 t vanilla 

2 lbs seedless red grapes, sliced *

2 lbs seedless green grapes, sliced *

3 T brown sugar

3 T roasted chopped pecans



In a large bowl, beat the cream cheese, sour cream, sugar and vanilla until incorporated.

Add sliced grapes and toss to coat.

Transfer to a bowl. 

Toss toasted pecans in brown sugar. 

Sprinkle over grapes.

Do not mix.

Cover and refrigerate over night.


*tip


Take 2 plastic lids from take out containers.

Place one with the part that snaps on facing down.

Cover with grapes.

Put other top the same way on top of grapes.

Using a sharp butcher knife, hold hand on top of plastic lid, slice through the grapes. 

You can cut cherry tomatoes this way too!

Creamy Dried Big White Butter Beans

































Psalm 139:13-16

    when I was being made in secret,

        intricately woven in the depths of the earth. 

    [16] Your eyes saw my unformed substance;

    in your book were written, every one of them,

        the days that were formed for me,

        when as yet there was none of them.



An ej original recipe!



1 small bag of large white butter beans

Pick over for debris.

Put in large pot, cover with water at least 1 inch over beans, bring to boil, boil 5 minutes.

Turn off making sure beans are still completely covered with water.

If necessary add water.

Soak, covered for 20 minutes.

Drain water and cover with fresh water.

Chop 1 small Onion in beans.

Add 1/2 c diced ham.

Add 2 T white vinegar and 1 T bacon grease.

In a bowl add 2 T chicken base seasoning, 1 t garlic granules, 1 t Cajun seasoning, 2 T sugar and 1/8 c water. 

Mix and dump in beans, stir.

On medium heat bring to a low rolling boil. 

Cook 50 minutes.

Almost cook out all of the water.

Stir often, you will have to add water but just even with beans.

Lower heat but keep beans slightly boiling.

Cook another 20-30 minutes until beans are soft and juice is thick.

Serve with cornbread.

Instant Pot TV Dinner Sliced Roast Beef and Gravy



























 

 

 

 

Jeremiah 10:10


    [10] But the LORD is the true God;

        he is the living God and the everlasting King.

    At his wrath the earth quakes,

        and the nations cannot endure his indignation.






2 lb.Eye of round roast( 2- 3 inches thick) 

Coarse Kosher Salt 

Cracked Black Pepper

Generously salt and pepper all around roast 

1 Onion, sliced


On the sauté setting add 1 t oil.

When it's says hot sear roast.

Remove to plate.

Add onion slices and soften.

Add gravy ingredients.

Using a wooden spatula, scrape bits off bottom. 

Add IP rack and place roast on rack.

Set to pressure and set time for 2 minutes.

Make sure warm button is on.

After cook time is over, let set for 20-25 minutes to do a natural release of pressure.

Roast temp should be 145-150 degrees.

Remove meat, foil tent for 10 minutes, and then slice thin and against the grain.

Add thickener to gravy.

Stir to help thicken.

Put roast slices into the gravy.



Gravy ingredients 

2 c beef broth 

1/2 c Cabernet Sauvignon 

1 t each of dried rosemary and thyme

2 T roasted mashed garlic

2 t each of Worcestershire sauce and Soy sauce


Thickener for gravy

1/4 c water 

3 T flour
