John Reed's Magnificent Cookie Recipe

















John 1:1-14

[1] In the beginning was the Word, and the Word was with God, and the Word was God. [2] He was in the beginning with God. [3] All things were made through him, and without him was not any thing made that was made. [4] In him was life, and the life was the light of men. [5] The light shines in the darkness, and the darkness has not overcome it. [6] There was a man sent from God, whose name was John. [7] He came as a witness, to bear witness about the light, that all might believe through him. [8] He was not the light, but came to bear witness about the light.[9] The true light, which gives light to everyone, was coming into the world. [10] He was in the world, and the world was made through him, yet the world did not know him. [11] He came to his own, and his own people did not receive him. [12] But to all who did receive him, who believed in his name, he gave the right to become children of God, [13] who were born, not of blood nor of the will of the flesh nor of the will of man, but of God. [14] And the Word became flesh and dwelt among us, and we have seen his glory, glory as of the only Son from the Father, full of grace and truth. 



Bake 13 minutes in preheated 350 degree oven, bottom rack.

 

1 c soft butter

1 c sugar

1 c brown sugar

2 eggs

2 t vanilla 

1 t baking soda 

1/2 t salt

1/2 t cream of tarter

3 c AP flour

1 c semisweet chocolate chips

1 c white chocolate chips

1 c chopped nuts, optional


Using an electric mixer,  cream butter, sugar and brown sugar until smooth.

Add eggs 1 at a time, then vanilla.

Set aside.

Whisk in soda, tarter and salt to flour.

Add chips. 

Add nuts if desired.

Using a large melon ball scoop, place on parchment, 2 inches apart.

These freeze well in the dough form.

Should make 4 dozen cookies.

Bacon Egg Marinated Artichoke Soufflé


































Romans 8:31-32


[31] What then shall we say to these things? If God is for us, who can be against us? [32] He who did not spare his own Son but gave him up for us all, how will he not also with him graciously give us all things?


 

 An ej original recipe!

 

 

Spray Muffin pan, makes 9 

Bake time 40-45 minutes, until lightly browned and are centers set.

Bake temp preheated 350 degrees


Egg Mixture 

3 whole eggs

1/2 c plus 3 T liquid egg whites

1/8 c half and half

Salt and pepper to taste

Whisk together, set aside.


Meat Filling

1 c crispy chopped bacon

1 jalapeño, diced 

1/2 c marinated artichoke hearts, chopped 

1/2 of a onion, chopped

1 T roasted garlic, mashed

1 t olive oil


Sliced Sandwich cheese broke into large pieces to lay on top ( I used a mixture of Havarti, cheddar and pepper jack)


Fill each muffin, sprayed with non stick, 3/4 way from top with egg mixture.

Spoon 1 heaping T of meat filling into egg mixture, cover with cheese pieces.

Creamy Artichoke Hearts Rice and Chicken
































Psalm 136:1


    [1] Give thanks to the LORD, for he is good,

        for his steadfast love endures forever.



1 c Rotisserie chicken, shredded

2 c left over sticky rice

Set aside.


1 c marinated artichoke hearts 

1 t olive oil

1/2 c chopped Green onions

1 T roasted Garlic

2 T soft Cream cheeses

1/4 c Sauvignon Blanc

1/4 half and half 

Salt and pepper


Place oil in skillet, heat.

Add artichoke, onions, garlic, cream cheese and wine.

Stir to incorporate, then add cream and salt and pepper.

Add chicken and rice.

Add finishing ingredients.

Serve.


Finishing to drizzle and sprinkle on top

1 t fresh lemon juice

1/4 c Parmesan 

1/8 c Olive Garden Italian dressing

Refrigerated Garlic Dill Pickles



































Colossians 3:10


[10] and have put on the new self, which is being renewed in knowledge after the image of its creator.


 

3-4 cucumbers, sliced and set aside 

1 small Onion, sliced thin


1 c vinegar 

1 c water


1/2 t Dill, I use freeze dried

1 T roasted garlic

1/4 t red pepper flakes

1 T kosher salt


Bring vinegar water mixture to boil just to melt salt.

Stir in seasonings.

Add cucumbers and onions to quart jar.

Pour vinegar mixture over cucumbers mixture.

It will be about half way up.

Let sit on counter until cucumbers mixture softens and the mash down.

Refrigerate.


Pan Seared Asian Sea Bass

Asian Sea Bass ( got mine at Costco, frozen farm raised Barramundi)

1 Lime

Cornstarch in a bag

Salt and pepper

Old bay 

Smoky paprika


Clarified butter and olive oil


Thaw fish in cold water in its individual bag. 

Set aside.


Seasoning mix

Mix salt, pepper, Old Bay and smoky paprika, set aside. 


Lightly grease fish with olive oil.

Squeeze lime juice on each piece.

Liberally apply seasoning mix to both sides.

Roll in cornstarch.

Heat skillet on medium along with oil and clarified butter.

Add fish fry 3 minutes and flip, repeat.

It will take several times to achieve a light and crispy outside.

Watch carefully so as not to burn.

Fish is done when the thickest part flakes with a fork.
