1 Peter 3:15

8 skin on bone in thighs, trim some fat

2 T toasted sesame oil, divided 

Turn IP on sauté and heat to hot

Add 1 T sesame oil

Add 4 thighs, fat side down, brown

Flip, sear 1 minute 

Remove to plate 

Add second 1 T sesame oil

Add other 4 thighs, fat side down

Brown, flip, cook 1 minute

Wedge all 8 thighs in IP, slightly standing on side

Spoon sauce over each thigh

Place lid on

Set IP to pressure cook

Cook 20 minutes

Do a quick release

Remove thighs to plate

Add cornstarch to thicken sauce

To serve, cover thighs in sauce

Serve with rice

1/8 c dark Soy

1/8 c light low sodium 

1/8 c ketchup

1/4 c brown sugar 

1 T roasted mashed Garlic 

1 t sushi Ginger, mashed 

1/2 t salt

Whisk set aside

1/2 of pkg of white chocolate melting bark (Aldi)

Melt in microwave 

Set aside

1 large bag on extreme butter microwave popcorn, pop and cool

1-1/2 c dry roasted peanuts

1-1/2 c cap'n crunch peanut butter cereal

Place in large bowl

Pour melted chocolate over mixture 

Using a wooden spoon mix until covered

Lay out a large sheet of parchment 

Pour mixture out and spread in a thin layer and cool

Use a spatula and break into pieces

Cranberry Aioli

2 pieces Turkey Bacon fried crisp in microwave 

4 thin pieces of pepperoni fried crisp in microwave 

Set aside

Chop meats when cool

1 T of clarified butter 

1/4 c chopped Onion 

1/4 t Garlic granules 

1/4 t onion powder

1/2 t sugar

3 T spread cream cheese

Add these ingredients except cream cheese to skillet and caramelize 

Cut heat off and add soft cream cheese

Serve on cheese straw wafers with a touch of cranberry Aioli

Easy Cheese Straw Crackers

Revelation 22:17

4 oz freshly grated white cheddar 

3 & 1/2 oz freshly grated mild cheddar

1/2 oz freshly grated Parmesan 

1 & 1/2 stick room temp butter

1/2 t salt

1/2 t garlic granules 

1/2 t red pepper flakes 

2 c AP flour

Cream butter and cheeses with mixer 

Add seasonings

Add flour a little at a time 

Pat into 4 equal size logs

Place in plastic wrap

Freeze 30 minutes 

Preheat oven 350 degrees

For baking use large sheet pan lined with parchment 

Using sharp knife, slice each log fairly thin

Each log should make a pan full of straws

Leave a little space in between each straw

Bake 15 minutes

Bake one pan full at a time

2 c Shredded Lettuce

Bang Bang Sauce

1/2 c mayo ( love Dukes)

1/4 c sweet chili Thai sauce

1 T Texas Pete hot sauce

Whisk together 

Set aside

Air fry nuggets, 8 minutes on each side

Slice in half

Drizzle Bang Bang sauce over lettuce 

Add chicken bites to top of lettuce

Drizzle Bang Bang sauce over chicken

Easy Small Batch Chocolate Peanut Butter Balls

Micah 5:15

    [15] And in anger and wrath I will execute vengeance

1/2 c creamy peanut butter

3 T softened butter

1 c powdered sugar

Melted Dipping Chocolate 

Using a heavy plastic spoon, mix butter and peanut butter together 

Gradually stir in powdered sugar 

Roll into 1 inch balls 

Freeze for 20 minutes 

Microwave chocolate 

Dip balls and place on parchment

2 oz diced Pancetta 

1 T oil

1 diced Onion 

1 stalk diced Celery

1 diced Carrot

1/4 t pepper flakes

2 T roasted Garlic 

3/4 t salt

1/4 t pepper

2 cans Cannelini beans(1 can beans plus 1 c water in blender) 

2 T concentrated tomato paste

4 c chicken bone broth 

1 c small pasta

1 t sugar

3 T dried basil 

1 c Parmesan 

Fry pancetta in oil until lightly crispy, add salt, pepper, onions, carrots, celery, garlic and celery

Sauté 5 minutes 

Add tomato paste and prepared beans and can of beans

Add broth, pasta, sugar, basil and cheese

Simmer 15 minutes 

To serve 

Drizzle with olive oil

Sprinkle with Parmesan

Chicken breast slices, warm*

Pepperoni, toasted in microwave 

Havarti cheese slices 

Sour dough bread 

Lettuce leaves

Thin Onion slices 

Thin Tomato slices

Jalapeño Garlic Aioli*

Jalapeño Garlic Aioli 

1/4 c Mayo

1/2 t sugar 

1/2 t olive oil

1/4 onion, chopped 

1/2 of a large jalapeño, chopped

1 T Roasted Garlic

1/2 t toasted cumin

1/2 of a lime juiced

Salt to taste

Add oil and heat

Add onion, jalapeño, sugar, cumin, salt and garlic to skillet and caramelize on med heat, cool

Add veggie mix to mini processor and pulse

Add Mayo, juice pulse a few times to get a spreadable mixture 

Scoop out to a small bowl with a lid

2 slices of Sandwich Bread

Spread on one side

Cheese on one side

Chicken 

Pepperoni 

Lettuce 

Tomato 

Onion

Clarified butter in skillet 

Heat

Toast both sides of bread with cheese and chicken 

Remove to plate and build sandwich 

Serve with Kosher Dill spear and chips

Steak Bites with Havarti Cheese and Caramelized Onions

Hebrews 10:16-18

    [16] “This is the covenant that I will make with them

        after those days, declares the Lord:

    I will put my laws on their hearts,

        and write them on their minds,”

    [17] then he adds,

    [18] Where there is forgiveness of these, there is no longer any offering for sin.

Seasoned Filet Steak from tenderloin cooked and cut into bite size pieces

Havarti cheese, cut into bite size pieces

Olive oil

1 onion cut in half, sliced thick, 1/2 t sugar sprinkled over

Horseradish sauce, make and set aside

Toothpicks 

Add oil to skillet

When hot add oil, onions and sugar sprinkled on top

Sauté until soft, remove to plate

Add steaks weigh down and sear, flip repeat 

Cut heat off

Finish with Bourbon 

Remove when cooked to medium 

Cool

Cut down middle and then into bites for a total of 6-8 bites according to steak size

Bite layers

1. Steak

2. Cheese 

3. Caramelized onion strip

4. Toothpick

5. Dollop of Horseradish sauce 

Serve with cucumber sticks, carrot sticks and curly fries

Creamed Left Over Smoked Turkey

Hebrews 9:27

[27] And just as it is appointed for man to die once, and after that comes judgment,

1-1/2 c chopped left over turkey

1 Shallot, diced

1 T roasted Garlic

Pinch Red pepper flakes

1 t olive oil

Sauté Shallot, garlic and pepper flakes in oil.

Add turkey

To the turkey mixture add

1/4 c heavy cream

1/4 c half and half

1/4 c water

Salt and pepper 

Sauté until turkey is creamy 

 

Serve over mashed potatoes or rice
