Ground Chicken Pan Fried Dumplings

























Job 9:25


    [25] “My days are swifter than a runner;

An ej original recipe!!


Won ton wrappers( I cut mine into a circle but You can just do a square one)

Water to seal


Filling

1/2 lb Ground Chicken 

1/4 c Mortadella, process in food processor along with a shallot

1 Shallot 

1 c Cabbage 

1/4 c Mushrooms

1 T Roasted Garlic

1 t sesame oil

Sauté in oil

Set aside to cool


Sauce

1 T Ponzu 

1 T Mirin 

1 T Brown sugar 

Salt and pepper to taste

Add to Chicken mixture 


Fill wrapper with a teaspoon of filling

Fold over and seal edges with water

Fry in a skillet with oil just covering bottom

Drain on paper towel

Cheesy Creamy Bavarian Soup

4 chicken Meatball, cooked

1/2 t olive oil

1 (6" link) smoked sausage, thin sliced

1 Carrot, sliced thin

1 small Onion, sliced thin

1 c cabbage, sliced thin

2 medium Yukon Gold Potato, microwaved 2 minutes each side, cool chop

1/8 c Celery, sliced thin

1/2 t Smoked paprika 

Pinch red pepper flakes 

2-3 T Sugar, to taste

Smoked salt, to taste

Black pepper, to taste

1/4 c Kraut(squeeze)

4-6 c beef stock

2 bay leaves, remove before serving

1/8 c heavy cream

1/4 c white cheddar


Topping

Sour cream

Fresh chopped parsley 

 

Saute all veggies except potatoes, until slightly tender in oil. Add sausage, chicken meatballs and seasonings. Add squeezed kraut and stock boil lightly. Lastly add cream ans cheese.Simmer 15 minutes.

Air Fryer Greek Pork Tenderloin and Potatoes






























Ezekiel 18:26-27


[26] When a righteous person turns away from his righteousness and does injustice, he shall die for it; for the injustice that he has done he shall die. [27] Again, when a wicked person turns away from the wickedness he has committed and does what is just and right, he shall save his life.



Ingredients


2 pork tenderloins trim extra fat and silver skin

1/2 c olive oil

2 t lemon pepper

1 lemon, juiced

1 t dried oregano

1 t Greek seasoning 

2 t roasted garlic

salt and pepper to taste


2 t mayonnaise

1/8 c Sauvignon Blanc 

1 & 1/2 pounds mini potatoes, microwaved, cooled and split in half


In a gallon ziplock mix the olive oil, lemon pepper, lemon juice, Greek seasoning, oregano, and garlic. Add the tenderloins and coat. Place in the fridge for 6 or more hours. Turn occasionally.

1 hour before dinner, take the pork out of the fridge.

Preheat the Air Fryer to 400 F

Microwave the potatoes, 2 min each side.

Cool potatoes.

Meanwhile, heat a large fry pan on the and sear tenderloins.

Reserve drippings in fry pan.

Add the browned tenderloins back to the marinade and air fry, uncovered, until desired doneness. The internal temperature is 145-150 degrees.

Should only take 7 minutes each side.

While the pork is air frying, slice the potatoes in half and toss in Mayo wine mixture.

Add to the same pan as drippings.

Brown the cut side on high temperature. Set aside.

Remove the pork to cutting board and cover with foil to rest.

While pork rests, add the potatoes to the pan with the marinade drippings, salt and pepper, to taste, and add mayonnaise wine mixture. Coat thoroughly.

Add the fry pan back to air fryer and let the potatoes continue cooking while the pork has rested about 10 minutes.

Slice the pork after rest.

Serve with Molasses mixed greens

Char Siu Pork Noodle Bowl

























 

 

 

 

 

1 Timothy 6:6-8


[6] But godliness with contentment is great gain, [7] for we brought nothing into the world, and we cannot take anything out of the world. [8] But if we have food and clothing, with these we will be content.



1 plain small Pork tenderloin cut in half lengthwise 

1 jar Char Siu sauce (Lee Kim Kee) 

Marinate 2 hours

Air fry 425 degrees for 15 minutes, flipping 3 times and drizzle with honey every 5 minutes 

Internal temp should be 150 degrees

Slice thin 


Broth 

1 qt Water or chicken stock

2 green onions cut in half

2 t chopped ginger

1 t neutral oil

1/2 t white pepper

1 t Soy sauce

1 t sesame oil

1/2 t salt

1 t sugar


Noodles

I used flat rice noodles

Cook drain and set aside


2 c stir fried thin sliced Cabbage 


Slices of cooked pork 


Garnish

Green onion curly q's, paper thin slice green parts, add ice to bowl and let sit 10 minutes drain 

Chili crunch


To serve

Place noodles in individual bowls

Add broth just to cover noodles

Add slices of pork to the side

Add Cabbage to the side

Add a teaspoon of chili crunch 

Add onion curly q's

1/2 c neutral flavor oil( I used grape seed) 

8 cloves of diced garlic 

Using a small pot, fry garlic in oil 1 minute

Take off heat

Add these ingredients:

1 T dried red pepper flakes

2 t sugar

2 t dried onion

1 t toasted sesame seeds

1 t kosher salt

1 t smoked paprika 

2 t Soy sauce

Grandma Wanda's Hot Honey Chicken Thighs































Ezekiel 3:18-21


[18] If I say to the wicked, ‘You shall surely die,’ and you give him no warning, nor speak to warn the wicked from his wicked way, in order to save his life, that wicked person shall die for his iniquity, but his blood I will require at your hand. [19] But if you warn the wicked, and he does not turn from his wickedness, or from his wicked way, he shall die for his iniquity, but you will have delivered your soul. [20] Again, if a righteous person turns from his righteousness and commits injustice, and I lay a stumbling block before him, he shall die. Because you have not warned him, he shall die for his sin, and his righteous deeds that he has done shall not be remembered, but his blood I will require at your hand. [21] But if you warn the righteous person not to sin, and he does not sin, he shall surely live, because he took warning, and you will have delivered your soul.”




Rub

2 t kosher salt 

1 t cumin


Chicken thigh pieces skin on, bone in

Pat Dry, season


1 T oil

Sear skin side down 4 min each side


Preheat oven to 425 degrees


1/2 c Franks hot sauce( I used Pete's)

1/2 c Honey

2 t roasted chopped garlic


Remove chicken to plate

Drain fat

Add chicken back in

Add hot honey 

Remove chicken to roasting pan

Move to oven 

Bake preheated 425 degree oven to a internal temp of 175 degrees 17-22 minutes 

Rest in pan 10 minutes 

Make sauce out of pan drippings by frying till reduced and then adding 2 t butter and 2 t lime juice

Add chopped green onions for garnish

Oh my goodness, delicious!

An ej original recipe!



1 lb ground Chicken 

4 oz mortadella( grind in mini food processor)

1 Tango Apple(grated)

1 t brown sugar 

Pinch of pepper flakes 

Pinch of nutmeg

Salt and pepper to taste

1/4 t garlic granules 

1/4 t onion powder 

1/4 t sage

1/4 t thyme 

1/4 t rosemary 

1/4 t smoked paprika 


Oil hands

Shape into logs

Lightly Oil pan

At this point you can freeze logs for further use

Fry (will burn so stay with it) 

Internal temp should be 165 degrees

Knock Off Schlotzsky Deli Bread






























These were amazing!! Best sandwiches!


 

2 Corinthians 13:9


[9] For we are glad when we are weak and you are strong. Your restoration is what we pray for.



 

2-1/2c aerated bread flour 

3/4 c warm milk

1/2 c warm water

1 T sugar

2-1/2 t instant yeast

1/2 t salt

1/4 t baking soda 


In small bowl whisk yeast, sugar water and milk, proof 10 minutes, should be frothy 

In another small bowl mix 1-1/2 t warm water and 1/4 t baking soda 

Prepare 9 inch foil pie plates by spraying with non stick and shaking 1 T of fine cornmeal, dump excess 

Combine aerated flour and salt into large bowl, whisk

Add soda mixture to wet mixture 

Add frothy liquid by using a large plastic spoon handle, beat into a sticky wet dough 

Divide dough between pans

Spray tops of dough with non stick, cover with sprayed plastic wrap and tea towel

Rise for 1 hour

Preheat oven to 375 degrees, spray dough tops with non stick and a few spritz of water

Bake 20-25 minutes until tops are beginning to lightly brown

Flip over on a rack and cool 1 hour before cutting ( I put mine in freezer for 20 minutes and then cut)

You get 4 sandwiches out of each round 


My Dressing recipe

2 T chow chow (I used Full Moon)

2 T chopped dill pickles( I used leftover Full Moon)

2 T Olive Garden Italian dressing

3 T Dukes Mayo 

Mix


Build Sandwich 

Your baked bread 

Your dressing

Turkey slices( I used Full Moon)

Ham slices ( I used Canadian bacon)

Slices of Gouda

Grated Parmesan 

Chopped Lettuce

Sliced Tomato 

Thin sliced sweet onions

Leftover Ukrainian Chicken Kyiv Breakfast Gravy

Left over chicken Kyiv (sliced)* I had 1 c 

1 T olive oil

2 T Flour

Milk

Seasoning 


Fry the leftovers in a little olive oil 

Add flour and fry until dissolved 

Add milk and seasonings

Enjoy over Grits

Ukrainian Chicken Kyiv































No dry chicken breast here!

The ground chicken worked great!





Psalm 28:2


    [2] Hear the voice of my pleas for mercy,

    when I lift up my hands

        toward your most holy sanctuary.



Compound butter

1 stick softened Butter 

1/2 t Smoked Paprika

1/2 t Lemon zest

1/2 t Ginger

3 T Fresh Dill 

Pinch Cayenne 

Mix and make into football shapes 

Freeze for at least 15 minutes 



1 lb. Ground Chicken 

1/2 t Garlic granules 

1/2 t Dill 

1/2 t Paprika 

Salt and pepper 

Mix

Grease hands

Make into 8 football shapes

Seal frozen butter into chicken ball

Freeze for 30 minutes


Dredge ingredients 

Flour

Egg-water mixture

Seasoned panko (dill lemon zest Parmesan) add a little oil



Bake on parchment lined sheet pan

Spray each shape with non stick spray or a drizzle oil

Preheated air fryer 375 degrees for 30 minutes turning half way through cook time

Bread Bowls



























 

 

 

 

 

Psalm 8:3-4


    [3] When I look at your heavens, the work of your fingers,

        the moon and the stars, which you have set in place, 

    [4] what is man that you are mindful of him,

        and the son of man that you care for him?



1-1/2 c warm water 110 -112 degree

2 T Instant yeast

1 T sugar

3-1/2 c aerated bread flour

1-1/4 t salt

2 T melted butter for after baking finishing 


Mix water, sugar, yeast in bowl for 10 minutes to bloom 

Mixture should be foamy

Add flour and salt to bowl and whisk

Add flour mixture and yeast mixture to stand mixer bowl and mix on medium 

Dough will come together and pull away from sides of bowl, knead for 5 minutes in mixer

Put dough on parchment and kneed 5 more minutes 

Rise dough, covered in bowl for 30 minutes 

I put in oven with light on

Bring dough out

Cut dough into 6 equal pieces

Roll into balls

Put on non stick sprayed parchment 

Spray with 2 mist of water 

Preheat oven to 500 degrees

Rise dough balls for 15 minutes covered

Bake 2 minutes 

Take out dough balls

Spray with 2 sprays mist of water 

Turn oven down to 400 degrees and put dough balls back in

Bake 15 minutes or until internal temp is 190

Baste roll with melted butter

Carefully cut top out of bowl

Use a spoon to scoop out most of the bread

Fill with soup
