Parsley Horseradish Relish





















 
 
 
Job 17:1-2

Job Continues: Where Then Is My Hope?

    [1] “My spirit is broken; my days are extinct;
        the graveyard is ready for me. 
    [2] Surely there are mockers about me,
        and my eye dwells on their provocation.


This is similar to persillade! 


Add to mini food processor 

1 c packed flat leaf parsley, short stems are ok 

1 T roasted garlic, mashed

1 diced Shallot

1 T lemon juice

1/4 c prepared horseradish 

2 T capers, drain and rinse

1/2 t Salt 

1/4 t black pepper

Pulse 6-8 pulses to incorporate 

Place in bowl

Add 3/4 c olive oil

Whisk around with a fork!

Serve on beef, sandwiches, burgers, etc!

Fresh Cranberry Orange and Pineapple Relish






























Job 38:36


    [36] Who has put wisdom in the inward parts

        or given understanding to the mind?



1 lb fresh cranberries, washed and soft ones removed, put in mini food processor and dice

1/2 c fresh diced celery

1/2 c toasted chopped pecans

1 20 oz can Pineapple, drained, diced in mini food processor 

1-1/2 c boiling water

1 c sugar, may add 1/2 c more if desired 

2 Navel oranges, peeled and chopped

Zest of 1 lime

3 oz pack of strawberry jello

3 oz pack of raspberry jello


Dump sugar on diced berries.

Mix, add rest of ingredients and stir well.

Taste for your desired sweet flavor.

Refrigerate overnight.

May be made a few days ahead.

Persillade




































This French recipe is the bomb!!

Serve on beef tenderloin, steaks, chicken and fish!

I bet it would be good on potatoes too!!

It's briny goodness puts your meat over the top!!

3/4 c diced parsley

1/2 c olive oil

6 T mild pepper rings, diced, plus 1 t of the brine

1/4 c capers, rinsed and diced 

1 scallion, diced

1 T roasted garlic 

1 t sugar

1/4 t each kosher salt and black pepper 

Mix well.

Sliced Filet of Beef with Briny Cilantro Scallion Relish



































Psalm 19:11-12


    [11] Moreover, by them is your servant warned;

An ej original recipe!!



2 Beef Filet, seasoned with your favorite rub ( I make one that's delicious) *

Salt and Pepper to taste

Pinch Smoked paprika 

 

Splash of Olive oil in large skillet for frying steaks.

Over medium high heat, heat oil in skillet.

Add steaks. 

Flip to other side to insure even browning.

Cook to medium.

To finish, add 1/8 c Bourbon to fillets.

To serve, slice thin, drizzle relish over slices.

Serve with a baked potato and salad.

Oh my goodness! 

This is a cross between persillade and chimichurri. 

Countless uses, giving such a fresh taste to all kinds of meats!!

An ej original recipe!


1 bunch fresh cilantro, cleaned and rough chopped

1/2 c extra virgin olive oil

Salt and pepper to taste

2 scallions, sliced thin

3 T rough chopped Greek peppers

1 t Greek Pepper brine

1/4 c capers, rinsed and drained, diced 

1 T roasted and mashed garlic

1 t sugar


Mix well and refrigerate.

Piccalilli (Green Tomato Relish)



































Psalm 150:6


    [6] Let everything that has breath praise the LORD!

    Praise the LORD!


 

 

10 medium green tomatoes 

Core and chopped 

1 medium head of cabbage 

3/4 c red and yellow bell peppers

1 Jalapeño 

1/2 c onion

1/2 c kosher salt 


I chopped all mine in food processor.

Salted it and let it sit in fridge for 4 hours.

Drain water off, then rinse and drain.

I used a wire mesh colander.

Prepare syrup.


Syrup

3/4 c brown sugar

1 t mustard seed

1/2 t celery seed

1/2 t prepared horseradish 

1/3 of a quart of water with 1/4 c plus 1/8 c white vinegar


Place ingredients in pot.

Cook at a rolling simmer for 15 minutes.

Add drained veggies.

Simmer at a rolling 10 minutes.

Fill hot jars. 

3 Pints with a 2 inch head space.


Process 10 lbs for 10 minutes.

Follow canner instructions.

I added a jar of water to insure safe amount of jars for canning.

Cool.

Persillade Relish for Beef Tenderloin

For serving on beef tenderloin!


3/4 c diced parsley

1/2 c olive oil

6 T mild pepper rings, diced, plus 1 t of the brine

1/4 c capers, rinsed and diced 

1 scallion, diced

1 T roasted garlic 

1 t sugar

1/4 t each kosher salt and black pepper 

Mix well.

Sun Dried Sweet 100 Tomatoes in Convection Oven































"On that day I will cause a horn to spring up for the house of Israel, and I will open your lips among them. Then they will know that I am the LORD." - Ezekiel 29:21





Sweet 100's sliced, salted and seasoned 
I used seasoned salt, Mrs. Dash table, Umami 
Olive oil drizzle

U can slice 100's between 2 plastic take out lids.
Spread over parchment, season, drizzle oil.
Cut side up.
Bake 200 degrees on convection mode for 2-1/2 - 3 hours until they are dried and have a wrinkled appearance.
Pack in oil.
Will keep a month in fridge. 
Can freeze for long term storage.

Sweet 100 Pico de Gallo


































Let my cry come before you, O LORD; give me understanding according to your word!  - Psalm 119:169


2 c sliced and chopped sweet 100 cherry tomatoes
1 jalapeño, diced
1 c vidalia onion, diced
1/4 t Sugar
1 t Toasted cumin
1 t Kosher salt
1/4 c Cilantro, chopped
Pinch black pepper
1/4 t Garlic granules 
1 t Apple cider vinegar 

Add pinch of salt, 1 t peppers, 1 t cilantro and 1 t of Onions to a mortal and pestle and smash to make a paste. 
Set aside. 
Chop all tomatoes, onions and peppers.
Add seasoning paste.
Add all the rest of the ingredients and toss. 
Taste and adjust salt.
Refrigerate.

Fresh Made Spicy Chow Chow






































The eyes of the LORD are in every place, keeping watch on the evil and the good.  - Proverbs 15:3





Delicious, versatile recipe! 
Good on tacos, BBQ, sandwiches, peas or beans.

1/2 of a medium head Cabbage, thick shredded, mine made 4 cups
1 any color Bell pepper, cut in strips
1 large Onions, chopped
3 large Green tomatoes, chopped
3 large Red tomatoes, chopped
1/8 c Sea Salt

Prepare veggies.
Add to bowl.
Place salt on top and using hands, toss.
Set aside.

Add the below ingredients to a large sauce pan.
Heat until sugar is melted.
Add veggies and cook on medium for 30 minutes.
Add to clean jars, wipe lid rim, slightly tighten lids and boil in water for 30 minutes.
Set on counter to cool and listen for the tops to pop.


1 t Dry mustard
3 T Pickled Jalapeño,chopped
1 t Aleppo Pepper
1 t Red pepper flakes
1-1/2 c white Vinegar
1-1/2 c Sugar
1/2 c Bread and butter pickle juice and the seasoning from bottom

Chunky Pico De Gallo

1/2 onion, diced
1 tomato, chopped
1/4 of a jalapeño, diced
Salt and pepper
Juice of 1/2 of a lime

Mix together and chill.

Avocado Onion Tomato Jalapeño Relish


















For the Lamb in the midst of the throne will be their shepherd, and he will guide them to springs of living water, and God will wipe away every tear from their eyes."  - Revelation 7:17


1 small Avocado, chunked
1 small Onion, diced
1 t Mayo
1 t yellow Mustard
1 small Tomato, chopped
2 Pickled Jalapeño slices, diced
1 t Sweet pickle relish
Salt and Pepper to taste

Mix together, leaving chunky.
Spread on hamburger, steak sandwich or chicken sandwich.
