Oven Roasted Sheet Pan Shrimp Boil


























 

 

 

 

Romans 10:13


[13] For “everyone who calls on the name of the Lord will be saved.”



1-1/2 lb Yukon gold, small potatoes, microwave 2 minutes each side, quarter, set aside

3 ears of corn, each cut into 3 pieces

1 small lemon, quartered

1 lb smoked sausage, slit lengthwise and cut into 2 inch pieces

1/2 stick of salted butter, melted

2 t dried thyme or 2-3 sprigs fresh 

2 lb jumbo shrimp, cleaned, tail on is ok

2 heaping t Old Bay seasoning

1 stale white beer( if not stale, add 1 t sugar to bring down hop taste)


Microwave potatoes(info above) set aside

Melt butter, add thyme, set aside


Toss corn, lemon quarters, potatoes, sausage in butter thyme mixture 

Using a large sheet pan covered in foil, 

Add the corn, sausage, potatoes and lemons

Stand corn on end

Make a good size foil boat and add beer, shrimp and Old Bay seasoning 

Cover tightly 

Set on top of lemon, sausage, potatoes, corn mix

Bake preheated 400 degree oven for 30 minutes 

Add end of bake time pour shrimp and beer juice over the lemon, sausage potato, corn mixture 

Serve


This was delicious! 

I might even try white wine instead of beer on shrimp next baking

Caramelized Onion BBQ Chicken Dip


































Isaiah 53:4-6

An ej original recipe!



2 c chopped leftover BBQ chicken breast, set aside


1 small onion chopped and caramelized 

1 T Pork fat and 1 t brown sugar

Cook onion until tender


Add 

1 T roasted Garlic and the chicken 


Add 

1/4 c roasted red bell pepper, chopped 

1/4 c green onions, chopped


Mix in 

1 c soft cream cheese

1/4 c Ranch dressing

1/4 BBQ sauce


Add 

Chicken mixture

Place in a greased pie plate


Top with 

1 c shredded mozzarella 

1/2 c shredded cheddar 

Air fry 350 degrees for 15- 20 minutes until cheese melts and is lightly browned 

To serve add chopped green onions and a few sprinkles of Texas Pete hot sauce

Serve with taco chips

Slab Cheese Chive Biscuits






























Hebrews 10:4-7


[4] For it is impossible for the blood of bulls and goats to take away sins.

    “Sacrifices and offerings you have not desired,

        but a body have you prepared for me; 

    [6] in burnt offerings and sin offerings

        you have taken no pleasure. 

    [7] Then I said, ‘Behold, I have come to do your will, O God,

        as it is written of me in the scroll of the book.’”



 

1 c cold freezer *buttermilk (place in a bowl that has a lid, place in freezer for 10 minutes 

8 T microwave melted butter, cooled

Take freezer buttermilk and pour cooled butter in and stir around with a fork.

This will form butter globs.

Add to dry Biscuits mix making a stiff dough.

Scatter flour over parchment and kneed 5-6 times, pat into a 1 inch tall dough.

Shape into a large square

Cut into squares 

Slightly separate

Bake 425 degree preheated oven for 17-20 minutes

Remove from oven

Brush tops with melted butter


Dry Biscuit mix

2 c AP flour ( King Arthur my fav)

1 t white sugar

1/2 t baking soda

2 t baking powder

3/4 t kosher salt

Whisk together.

Add and stir around add ins with spatula 


Add Ins

1-1/4 c triple Cheddar grated cheese

1/4 c diced chives



* I don't keep buttermilk anymore. I make mine out of whole milk and 1 t of vinegar.

Tenderloin Beef 

Buy an $97.00 extreme peeled Choice beef tenderloin from Costco 

Trim into your desired cuts

I got 6 Filets 

1 pile of scraps pieces sliced thin for fajitas 

2 tenderloin tails for thin sliced deli style roast beef

It took about 15 minutes

I saved a lot of money

Example 

Bought 1-1/4 lb tenderloin tail from a butcher and it was $ 50.00 with tax

The other cuts were a bonus😂

Honey Molasses Cornbread




































Psalm 112:7

Makes two 6 inch cast iron skillet Cornbread

Prepare the skillet with oil and a sprinkle of cornmeal

Heat till sizzling 

Add 1/2 of batter to each


Batter

1/8 c Olive oil

1 Egg

1 T Molasses 

1 T Honey

Mix set aside

Add the following 

1/2 c Buttermilk 

1 c cornmeal 

1/4 c AP flour

3/4 t salt

3/4 t baking powder

Mix

Air fry 425 degrees for 20 minutes

Brazilian Cheese Bread

This was good but I'm going to try another recipe!



400 degree preheated oven, middle rack, for 15-20 minutes just until tops are lightly browned 


1 room temp egg

1/4 c olive oil

2/3 c whole milk

1-1/2 c Tapioca flour, aerate 

1/2 c mozzarella 

1/2 c Parmesan 

3/4 t salt


Spray a 12 roll pan with non stick 

Add all ingredients to blender, pulse to incorporate 

Scrape down sides

Pour cups 1/2 full

Bake

Cool 

Enjoy

Almond Crunch








Luke 19:10
For the Son of Man came to seek and to save the lost."


3/4 cup sliced almonds
7 tablespoons real butter, plus more for pan
1/2 cup sugar
2 tablespoons milk
1 tablespoon all-purpose flour

Preheat oven to 400 F. Line a 9-x13-inch, 2-inch deep baking pan with foil. Butter the foil. Set pan aside.

In a large skillet, combine all ingredients; stir over medium-high heat until butter melts and mixture bubbles around the edges. Reduce heat to medium, and cook 2 minutes more.

Pour into prepared pan, spreading to coat bottom. Bake 10 minutes or until golden brown. Watch carefully, it will burn. Cool in pan. Peel off foil and break into pieces.

Knock Off Longhorn Marinated Salmon





























 

 

Psalm 108:3-4


    [3] I will give thanks to you, O LORD, among the peoples;

        I will sing praises to you among the nations. 

    [4] For your steadfast love is great above the heavens;

        your faithfulness reaches to the clouds.






4-7 oz skin salmon Filets ( I had a total of 7 pieces, so I doubled the marinade recipe, divided it between 2 gallon zip lock bags and reserved 1/4 c 


4 Hour Marinade(double for more salmon pieces)

3 T Bourbon

3 T brown sugar

2 T olive oil

3 T low sodium Soy sauce

1 T Ginger, diced

3 T mashed roasted garlic

1/2 of a small lime juiced

1/4 t coarse black pepper 

1/8 c diced sweet onion


Put in blender and pulse to incorporate 

Add salmon to bags, marinate for 4 hrs ( don't go longer your fish will dry our because of the lime juice)

Turn pieces occasionally 

Grill, pan fry or bake 

Grease pan, grill or parchment for your preferred method of cooking

Internal temp should be 145 degrees

Cook 13-15 minutes 

Do not overcook

Before cooking, drizzle a little reserved marinade over pieces 

Serve with seasoned steamed broccoli and roasted red pepper rice pilaf

Psalm 109:26-27

1 c Jasmine rice (rinse until water is clear, 4 or 5 times, drain and set aside 


In a thick bottom pan melt 

2 T butter

Add

1/2 c diced onion

1 T roasted garlic

1/4 c chopped roasted red bell peppers 

Cook 2 minutes 

Add drained rice

1 T chopped parsley 

Stir fry rice 5 minutes continually moving rice 

Add 

2 c chicken stock

Cover, set to simmer and cook 15 minutes stirring once

Serve with salmon and steamed broccoli

Sous Vide at 150 degree for 2 and 1/2 hour


4 chicken breast butterfly and pounded thin 

Wood fired Garlic Steak seasoning for chicken breast 

DIY Shallot and herb Boursin cheese

Shredded Mozzarella cheese

Spinach and Arugula mix



Spread Boursin on butterflied chicken 

Add greens, then cheese

Fold over and tie or use toothpicks

Place in zip bag and squeeze air out

Immerse in water

Cook

Remove from bag and slice in thick chunks and sear in butter or oil

1/2 stick softened butter

1 c spreadable cream cheese

1 small Shallot, diced

1 t Garlic granules 

1/2 t onion powder 

1 t dried Trader Joe Soffitto 

1/4 t rosemary 

1/4 t oregano 

1/4 t thyme

1/4 t salt

1/4 t black pepper 

Mix well and refrigerate

Italian Grinder Salad

Dressing

1/8 c Olive Garden Italian dressing 

1/2 c Mayo

2 T red wine vinegar

1 T Greek pepper juice

1 T diced Greek peppers

1 t garlic granules 

1 t oregano

1/2 t each salt and pepper

1/2 t sugar

Mix and set aside


Salad

Shredded lettuce

Baby Arugula and baby spinach 

Vidalia onion slices

Sweet tomatoes 

Chopped Greek peppers

Chopped Greek Castelvetrano olives

Chopped ham and Pepperoni (salami if u like it, we don't)

Chopped Swiss or provolone

Grated Parmesan 


Toss before serving!

2 T teriyaki sauce

2 T Soy sauce 

Make sauce set aside


1 T sesame oil

2 T roasted Garlic

1 lb petite green beans

Salt and pepper to taste


Steam beans for 3 minutes in microwave 

Heat oil in skillet

Add beans and garlic, stir fry until slightly tender

Add sauce and seasoning

Serve
