Bacon Mushroom Serrano Potato Casserole






























Psalm 121:2


    [2] My help comes from the LORD,

        who made heaven and earth.



6 medium Yukon Gold Potatoes, microwave 3 minutes each side or until potatoes are soft, slice into 1/8 inch thick rounds to cool, peel or not according to your preference 


1 c real bacon bits, microwave 1 minute

Set aside


1 t Oil

1 t Butter

2 T roasted Garlic

1/2 c sliced Leeks

1/2 of a chopped Serrano

1 c sliced Mushrooms 

1 t Chicken base seasoning 

1/2 t Sugar 

1/2 t Pepper

1 t basil

1 t oregano 

1/2 t Salt

2 c Heavy Cream

1 c Parmesan cheese


Using a medium pot

Sauté veggies in butter oil mixture 

Add seasonings 

Add cream and sauté 5 minutes until slightly thickened 


To build

13x9 pan

Layer 1/3 of potatoes in pan

Spoon 1/3 of cream mix

Spoon 1/3 of bacon

Repeat 2 more times 

Add Parmesan to top

Cover with foil

Air fry 20 minutes 

Uncover and cook an additional 5 minutes 

Serve

2 bags frozen California Medley from Aldi

1/2 c chopped onions or leeks or shallots

1/4 c butter 

1/4 c olive oil

1/2 c Mayo

1/2 c sour cream

1 c crushed Ritz crackers 

2 c shredded cheese ( I used 1 c each of smoked Gouda and white cheddar)

1/2 t salt

1/2 t garlic granules 

1/2 t cracked black pepper 


Air fry 375 degrees for 30 minutes or until veggies are tender

13x9 greased pan

Mix everything together until coated

Top with Ritz and cheese

Ham Hawaiian Bagel and Croissant Breakfast Casserole




































Isaiah 37:16


[16] “O LORD of hosts, God of Israel, enthroned above the cherubim, you are the God, you alone, of all the kingdoms of the earth; you have made heaven and earth.



2 Hawaiian bagels

2 large croissants 


2 c chopped ham


Bread soak

6 eggs

1-1/2 c whole milk

1/2 t salt

1/4 t pepper

1/4 t Calabrian peppers

1/2 t Dijon 

2 c chopped ham

1 c shredded cheese( I used seriously sharp and cheddar)

2 T chives


Hollandaise sauce, make and set aside

1/4 c Mayo

1 T heavy cream

1 t fresh lemon juice

1/2 t Honey

1/2 t Calabrian Pepper

1/2 t dry mustard

1 t dry white wine 

Salt and pepper to taste

Whisk and set aside


350 degree preheated oven covered for 30 minutes and 20 minutes uncovered 


Tear breads into chunks

Place in 13x9 deep pan

Prepare egg mixture 

Pour egg mixture over bread

Mash bread into egg mixture 

Place ham over egg bread mixture 

Top with cheese

Bake 

Drizzle hollandaise sauce over and enjoy

Air Fryer No Peek Chicken

Air Fryer Mode

375 degrees 

13x9 foil pan tightly covered with foil

40 minutes or until chicken pieces reach 165 degrees


1-2 boneless skinless chicken breast cut in half lengthwise and cut into 2-3 inch chunks (keep about the same size)

(This step isn't necessary but I brined my pieces in salt sugar water for 30 minutes before seasoning)

Sprinkle Kinder Wood fired seasoning on chicken pieces 

Set aside


1 qt of Rice ( I used sticky white rice I keep in freezer) it was thawed 

2 cups Chicken bone broth 

1/2 c diced Mushrooms 

DIY Shallot soup mix* or pkg of onion soup mix

1 can Cream if chicken soup


Dump rice in pan

Add mushrooms, soup, broth and stir to mix

Lay Seasoned chicken pieces on top

Sprinkle dry Shallot soup mix over rice and chicken 

Cover tightly, bake till chicken reaches 165 degrees, around 40 minutes 

Serve with tossed Salad 



* DIY Shallot dry soup mix

1 T dry beef broth seasoning 

1 T dried shallots

1/8 t onion powder

1/8 t garlic granules 

1/8 t celery seeds

1/8 t smoked paprika 

1/8 t coarse black pepper 

1/8 dried parsley 

Mix and set aside

Air Fryer Yellow Squash Casserole




























 

 

 

Job 16:18-19

    [19] Even now, behold, my witness is in heaven,

        and he who testifies for me is on high.



An ej original recipe! 


 

1 deep dish pie plate

Spray with non stick


3-4 medium yellow squash (I used 3) quartered

1 medium onion

1 t Chicken base seasoning 

1/4 t garlic granules 

1/4 t onion powder

1/4 t Cajun seasoning

Steam in microwave for 7 minutes.

Drain juice off.

Add:

1 T (heaping) spreadable cream cheese

1/4 c white cheddar 

1/8 c Gruyere cheese

Mix.

Transfer to deep dish pie plate.

Top with:

1/8 c panko

1/4 c canned crushed onion rings   

1/4 mozzarella 

1/8 c Gruyere


Preheat air Fryer to 350 degrees.

Cook 16 minutes or until bubbling and browned.

Potato Leek Fennel Gratin































Psalm 90:1-2


Book Four


From Everlasting to Everlasting

    [1] Lord, you have been our dwelling place

        in all generations. 

    [2] Before the mountains were brought forth,

        or ever you had formed the earth and the world,

        from everlasting to everlasting you are God.



3 medium Yukon Gold potatoes, use mandolin slicer and sliced 1/8 inch cut

2 t salt

Cover with water, bring to boil, boil 1 minute and drain in colander

Set aside


Veggie mix

1/2 c sliced thin leeks

1/2 c sliced thin Fennel bulb

2 T roasted garlic

1/2 t thyme

Salt and pepper

2 T butter 

Sauté veggies in butter, just till tender.

Set aside 


Preheat oven to 375 degrees.

Cook, uncovered 45 minutes 



Cheese Sauce

1 can evaporated milk

1/8 c olive oil

Splash Apple cider vinegar 

1 c Gouda, grated 

1 c Parmesan, grated 

1/4 Sauvignon Blanc

1 T butter

1/4 t sea salt

1/4 t dry mustard

1/4 t ground coriander 

Cornstarch to thicken


Spread a little cheese sauce in bottom of Casserole pan.

Layer 1/2 of the potatoes, then half of the veggies and repeat.

Bake, uncovered.

Cabbage Casserole

Preheated 350 degree 

Cook 45 min-60 minutes 

If crackers start browning too much, lay foil loosely on top



1 large roll of Ritz crackers, crushed 


Layer in a 13x9 greased pan

1 medium head of cabbage, chopped 

1 stick of butter, divided 3/4 for Casserole and 1/4 for crackers to be tossed into

1 medium sliced onion

1/4 t garlic granules 

Salt and pepper to taste


Mix together 

1 can Cream of chicken soup

1 c Mayo


Dollop on top of Casserole and spread over top, top with cheese and buttered crackers


Topping

Cheddar cheese

Buttered Ritz crackers 


I made a half size of this recipe. 

It fit perfectly in a deep dish pie plate!

Scratch Potato Casserole

An ej original recipe!

 

 

5 medium Yukon Gold, microwave 1-1/2 minutes each side, place whole potatoes in cold water 5 minutes, drain and dry off, grate, set aside

1 t olive oil

1/2 t salt

1/2 t pepper

2 T roasted garlic 

1 small chopped onion

1/4 c half and half

1 c sour cream

1 can Cream of chicken soup

1 c Cheddar, grated, divided in 1/2 c 

1 c smoked Gouda, grated, divided 1/2 c 


Place oil in small skillet.

Sauté onions and garlic.

Add to bowl.

Mix in grated potatoes 1/2 of the cheeses and other ingredients together.

Place prepared potatoes in a greased casserole pan. 

Add other half of cheeses to top.

Bake in a preheated 325 degree oven for 45 minutes.

Spanish Style Potatoes (Patatas Panaderas)































John 11:26-27

Patatas Panaderas

Spanish potatoes in olive oil and white wine



2 &1/2 lb Yukon Gold potatoes, cut 1/4 in thickness

1/3 c Olive oil

Toss potatoes in oil.

3-1/2 t kosher salt

1/4 t black pepper

White wine


Toss into oiled potatoes.

1 sweet onion, sliced thinly

2 T roasted garlic mashed

Toss into oiled salted potatoes.

Place in 13x9 pan.

Seal tightly with foil.

Preheat oven 400 degree oven, middle rack, 40 minutes.

Potatoes will be knife tender.

Remove from oven.

Remove foil.


Add 1/2 dry white wine over top.


Loosely add foil back and cook an additional 20 minutes at 350 degrees.

Shrimp and Gouda Cheese Grits Casserole

2 T butter

1 bundle of scallions, chopped

2 mini red bell pepper, sliced in small strips

1 jalapeño pepper, seeded and sliced in small strips

2 T roasted and mashed garlic

1 can (10-ounce) diced tomatoes with green chiles - drained

2 c chicken bone broth

⅔ cup quick-cooking grits 

Salt and freshly ground black pepper - to taste

1 pound large shrimp, cooked

1 T clarified butter

1/4 c bacon bits(I used store bought)

1 large egg - beaten

1 ¼ cups shredded Gouda cheese - divided


Preheat oven to 375 degrees. 

Grease an 13x9 foil pan

Set aside.

Cook shrimp in clarified butter just till done.

Set aside in a plate.

Heat butter over medium-high heat in a large saucepan. 

Add the scallion, red pepper and jalapeño pepper. 

Reduce heat to medium, cook 4-5 minutes or until beginning to soften.

Stir in garlic, diced tomatoes with chiles and chicken broth. 

Bring to a boil. 

Slowly stir in grits.

Stir continuously until mixture returns to a boil. 

Reduce heat to low. 

Simmer, stirring occasionally, for 5-7 minutes or until thickened. 

Remove from heat and cool slightly. Season to taste with salt and black pepper.

Stir in shrimp, bacon, egg and 1 cup cheese. 

Transfer to prepared baking dish. Sprinkle with remaining cheese.

Bake for 30-35 minutes or until heated through and bubbling. 

Let stand 5-10 minutes before serving.
