Toasted Walnut and Milk Chocolate Cookie Cake

9 inch spring form pan

Bottom covered with parchment round

Sprayed with non stick 


350 degree preheated oven

25-30 minutes 

Edges will be firm but middle will slightly soft

Let cool completely before removing and cutting 


3/4 c softened butter

1/4 c white sugar 

3/4 c packed brown sugar 

1 egg plus 1 yolk

1/4 c sour dough discard

2 t vanilla 

Cream sugars and butter in mixer 3-5 minutes until fluffy

Beat whole egg in

Beat yolk in 

Add vanilla 

Add flour mixture 1/4 at a time

Beat just till mixed

Spoon in nuts and chocolate chips 

Stir

Spoon in pan

Use offset spatula to smooth out

Bake


Flour mixture 

2 c aerated AP flour

1 T cornstarch 

1 t baking soda

1/2 t salt

Mix and set aside


Add ins

1 c milk chocolate chips

1 c toasted walnuts

This French dish was amazing!


 

 

6 medium Yukon Gold potatoes 

1 large onion

1 T roasted Garlic

1/2 t sugar

2 T butter

1 T dried rosemary 

1-1/2 c chicken stock 

Salt and pepper

Drizzle of olive oil 

1/2 c grated Gruyere cheese

1 t fresh Cilantro for garnish 


350 degrees preheated oven

Bake covered 1 hour


Sauté onions and garlic in 1 T butter and sugar for 5 minutes 

I used my cheese grater with the slicer attachment to do the potatoes really thin

I used a 13x 9 foil pan

I did 3 layers starting with potatoes, then 1/3 of onion mixture and salt, pepper and rosemary

Pour stock mixture over top and mash down potato mixture 

Light drizzle of olive oil

Add remaining butter in thin slices to the top

Add cheese 

Cover and bake

Bump up oven to 425 degrees 

Uncover cook 25 minutes to crisp up top potatoes 

Put under broiler for 5 minutes if necessary 

Turn oven off

Add cheese

Let sit for 5 minutes in hot oven to melt cheese




Pan Seared Italian Seasoned Salmon with Lemon Caper Sauce

3 salmon Filets 

1 T Italian seasoning 

Black pepper and salt to taste


Sauce

1 T olive oil

2 T butter

1 T roasted garlic

2 chopped green onion

2 T capers, rinsed

1 t lemon zest

2 t lemon juice

Finish with a little cilantro 


Dry salmon off with paper towels 

Grease salmon with a tiny bit of olive oil 

Season salmon

Melt butter in skillet 

Add seasoned side down in hot butter

Cook 4-6 minutes and flip

Cook additional 2-3 minutes 

Remove to plate

Add garlic, onions, capers, zest to butte

Sauté 3 minutes 

Add juice

Remove from heat

Spoon over salmon

Garnish with cilantro

1 c 120-125 degree hot tap water

3 T olive oil

3 c aerated bread flour

3 T Italian seasoning

2 T white sugar

1-1/2 t salt

3/4 t quick yeast

Place in bread machine in the order listed above

Select white loaf

Select medium Crust 

Select 1-1/2 lb loaf


So delicious!

Fusion Rigatoni with House Made Chorizo and House Made Chicken Meatball

    and all the families of the nations

6 Chicken or beef Meatballs ( cooked and mashed) set aside


House Made Chorizo 

3 T olive oil

1 T pasilla ancho chili powder

1 T smoked paprika

1-1/2 t oregano

1-1/2 t coriander 

3/4 t smoked salt

1-1/2 t sugar

1/2 t black pepper

1/4 t cinnamon 

Pinch of allspice

Pinch cayenne 

Bloom in oil for 3 minutes.

Add:

16 oz ground pork (Aldi $ 3.55)

Break apart

Sauté until pork is done, around 10 minutes 

Remove from heat

Remove to plate


Bechamel Sauce

4 T bacon grease or butter

1/4 c flour 

Sauté until nutty smell

Add pinch of nutmeg

Whisk in 1/4 c milk

Whisk in 1/4 c heavy cream

Salt and pepper to taste

Keep whisking 

Cook until thick

Cool slightly 

Add 1 c cottage cheese


Red Sauce 

1 T of olive oil

1 T roasted garlic 

1 Shallot (chopped)

Sauté

Add Jar of red sauce (Aldi premium Marinara)

1 c pasta sauce


Add cooked Chorizo and mashed Meatballs

Simmer 15 minutes 


1 c Parmesan 

2 c mozzarella grated

1 c Cottage cheese


8 oz Rigatoni from a 16 oz box cooked al dente

Remove from water

Reserve 1 c pasta water for sauce


13x9 foil pan

Layers

Ladle Meat sauce to cover bottom 

Add 1/3 pasta

Add 1/3 bechamel sauce

Add sprinkles of mozzarella 

Repeat layers 3 x

Add Parmesan to top

Bake uncovered 30 minutes 

Broil 3 minutes or until slightly browned 


Serve with salad and bread
