White Wine Chicken Pot Pie































Psalm 19:14


    [14] Let the words of my mouth and the meditation of my heart

        be acceptable in your sight,

        O LORD, my rock and my redeemer.



2 pie shells non frozen (in the biscuit isle)

2 c Rotisserie chicken breast, shredded or chopped 


350 degrees 40-45 minutes

Cook bottom crust 

Set aside


Veggies

1/4 c Onion

1/4 c Leeks

1/4 c Celery

1 Carrot, diced 

1/4 c frozen English Peas (green sweet)

1/4 c cooked potatoes, chopped

3 T Butter


3 T flour

2 T chicken base seasoning

1 t soffritto, dried

1/2 t each Rosemary, thyme, Sage

1/4 c Sauvignon Blanc

2 c half and half 


Sauté veggies in butter

Add seasonings, herbs and flour 

Sauté until flour is dissolved 

Add wine and sauté 

Add cream and sauté 

Set aside

Lay bottom crust in pan, pierce with holes Bake 20 minutes

Fill crust

Top with other crust

Clip vents in middle

Brush with beaten egg


3 T flour

2 T chicken base seasoning

1/2 t black pepper

1/2 t salt

1 t soffritto, dried

1/2 t each rosemary, thyme, sage

1/4 c Sauvignon Blanc

2 c half and half

Fresh Strawberry Cobbler



































Romans 4:18


[18] In hope he believed against hope, that he should become the father of many nations, as he had been told, “So shall your offspring be.”



3 c fresh chopped strawberries 

1 c sugar 

Stir until berries give off juice and make a syrup.

Set aside.


Dry ingredients 

1 c AP flour( aerate flour for accurate measure)

2 t baking powder 

1/2 t salt

1/2 c white sugar

Whisk together.


1 c full fat milk

1 stick of melted butter, cooled

1 t vanilla extract

Gently stir in liquid ingredients into dry ingredients, just till combined.

Using a slotted spoon, drain berries and gently distribute berries over top of cobbler.

Do not stir. 

Serve with vanilla ice cream!


Bake preheated 375 degree oven for 35-40 minutes 


Greased glass pan 11x 8-1/2

Air Fryer Peach Cobbler

































Psalm 89:47-48

An ej original recipe!



1 qt jar of Kirkland peaches pour off 1/4 c juice

1/4 agave syrup

1 T fresh lemon juice

1/4 t each nutmeg, cinnamon, pumpkin pie spice, ginger

Pinch cloves and allspice  

1 t vanilla 

1/2 t Molasses 


Cornstarch slurry

1 t cornstarch 

1/4 c water


Place in pot and boil on medium for 5 minutes.

Add slurry to thicken.

Transfer to large pie plate. 


Topping

1/2 c pancake mix

1/4 c sugar

Whisk together.

Sprinkler on top of peaches.

Cut thin pats of butter, cover top of pancake mixture.

Heat Air Fryer to 350 degrees and cook 16 minutes until bubbly and browned.

If you see dry pancake, cut tiny pieces of butter and cover them. 

Cook a couple minutes more.

New Twist Croque Monsieur Egg Pie

1 greased deep dish pie pan



An ej original recipe!

 

 

3 T butter

10 thin slices stale or fresh white bread, crusts trimmed, cut into pieces

12 thin slices Boars Head Honey Maple ham

6 thin slices Boars Head deli sliced Pepperoni 

2 round T flour

1 c whole milk

Freshly grated nutmeg

Salt and pepper

1 T Dijon mustard

2 large eggs

1/4 c half and half

4 ounces Gruyere or Swiss cheese, shredded 

5 slices Havarti 

Fresh chopped parsley

 

Grease a casserole dish and line with half of the bread. 

Top with half of the ham and pepperoni.

Melt the butter in skillet over medium heat, add the flour and whisk 1 minute. 

Add 1 cup of the milk and some nutmeg, and then season with salt and pepper. 

Cook to thicken, the sauce should coat the back of a spoon. 

Stir in the mustard. 

Spoon half of the thickened bechamel evenly over the ham and pepperoni, top with the remaining bread.

Whisk up the eggs and the remaining 1/4 cup half and half and sprinkle with salt and pepper. 

Pour the eggs evenly over the casserole dish and then add the remaining ham, pepperoni and bechamel.

Top with the Gruyere.

Preheat the oven to 375 degrees F and bake the casserole until golden and firm, 30 to 35 minutes. 

Sprinkle with fresh parsley.

Let cool 10 minutes to set.

Fall Harvest Cobbler
































Jeremiah 4:27-28


[27] For thus says the LORD, “The whole land shall be a desolation; yet I will not make a full end.


    [28] “For this the earth shall mourn,

        and the heavens above be dark;

    for I have spoken; I have purposed;

        I have not relented, nor will I turn back.”


 

An ej original recipe!!



Baking mix wet crust 

1-1/2 c Pioneer buttermilk biscuit mix

1/4 c sugar

4 T butter, softened

1/2 c whole milk

Pinch of nutmeg 

Mix and set aside.

Spoon on top of Cobbler.

It will be thick, carefully spread being sure to keep just sitting on top.


5 large sweet pears( extended Family 

shared) 

4 Gala apples

1/2 c sugar

1 cutie squeezed

1/2 of a lemon squeezed

1/2 t each of cloves, pumpkin pie, nutmeg, allspice

1 t cinnamon 

1 t Molasses 

1 t vanilla 

Water not quite covering fruit

1/4 c half and half 

1/2 stick of butter

Thickener

1 t cornstarch 

1/8 c water

Stir


Boil lightly for 15 minutes.

Transfer to 13x9 foil pan.

Bake, after topping with crust, preheated 350 degree oven for 45 minutes until top is lightly browned.

Canned Peaches and Cherry Pie Filling Cobbler


































Proverbs 17:28

1 can cling stone peaches

4 fresh sliced peaches

1/2 can of cherry pie filling

Juice of half lime

1/4 c sugar

1 t vanilla 


Seasonings

1/4 t Nutmeg

1/4 t Clove

1/4 t Pumpkin pie spice

1/4 t Allspice



Cook in pan 15 minutes to slightly soften fresh peaches.




Topping

Waffle mix ( lightly sprinkle on top)

Slice thin pats of butter to cover waffle mix 


Bake preheated 350 degree oven for 35 minutes.

Top with ice cream.

Easy Apple Hand Pies
































Psalm 127:3


    [3] Behold, children are a heritage from the LORD,

        the fruit of the womb a reward.


Frozen Puff pastry, thawed

Can of pie filling 

Beaten egg


Cut into squares, fill, fold, brush with egg, bake.

Drizzle with topping.


Sweet drizzle 

Powdered sugar

Milk 



Cook 400 degree oven 15 minutes.

Apple Blueberry Maraschino Cherry Cobbler




























 

 

 

 

 

1 Peter 2:24-25


[24] He himself bore our sins in his body on the tree, that we might die to sin and live to righteousness. By his wounds you have been healed. [25] For you were straying like sheep, but have now returned to the Shepherd and Overseer of your souls.




An ej original recipe!!




2 c chopped Pink Lady apples

2 c fresh Blueberries

1/4 c cut in half maraschino cherries

2 T maraschino juice

1/2 of a squeezed lemon

2 T orange juice

1/2 c agave syrup 

1 t vanilla extract

1/4 t each ginger, pumpkin pie spice, cinnamon, cloves, nutmeg

1/2 t molasses 

1/2 c water


Bring to boil, cook 5 minutes.

Thicken with a cornstarch slurry.

Add to pan and top.


Pour into a 8x8 greased pan.

Bake in preheated 325 degree oven for 35 minutes.


Dry Topping

3/4 c pancake or waffle mix

1/4 c white sugar

Whisk.

Evenly sprinkle over top.

Cover with pats of butter.

Peach Cobbler with Agave



































2 Corinthians 3:15-18


[15] Yes, to this day whenever Moses is read a veil lies over their hearts. [16] But when one turns to the Lord, the veil is removed. [17] Now the Lord is the Spirit, and where the Spirit of the Lord is, there is freedom. [18] And we all, with unveiled face, beholding the glory of the Lord, are being transformed into the same image from one degree of glory to another. For this comes from the Lord who is the Spirit.



An ej original recipe!!


 

Preheat oven to 325 degrees.

Bake 35 minutes until top is lightly brown.


Jar of peaches( I use Costco premium peaches in extra light syrup)

1/8 t each of pumpkin pie spice, cinnamon, cloves, nutmeg and allspice

1 t vanilla extract( I make my own)

1/4 t molasses 

1/2 c agave nectar 

1/2 of a lemon squeezed for juice


Drain 1/4 of the juice out.

Reserve the rest.

Bring to boil, add cornstarch slurry for thickening. 

Add to a 8x8 pan sprayed with non stick spray.

Add topping.


Topping

3/4 c pancake or waffle mix

1/4 c sugar

Mix together, sprinkle over peaches.

Slice thin pats of butter and cover dry topping.

Serve with vanilla bean ice cream!!

Cabbage and Cheese Skillet Pie





































Psalm 98:2-3


    [2] The LORD has made known his salvation;

        he has revealed his righteousness in the sight of the nations. 

    [3] He has remembered his steadfast love and faithfulness

        to the house of Israel.

    All the ends of the earth have seen

        the salvation of our God.



2 c shredded cabbage 

7/8 c flour

3 beaten eggs salt and pepper them

1 c sliced scallions 

Salt and pepper

Mix together.


Heat 1/8 c peanut oil in light colored skillet, fry on med heat on stove top covered with foil for 15minutes,  covered with sheet pan.

This will burn so watch closely.

Light colored pan is best, cast iron darkens too quickly.

Flip out into plate, place back in skillet and cook 10 minutes, sprinkle with cheese of your choice.

Slice to serve.

Serve with dollops of sour cream.


Peanut Oil for frying

Cheese for topping, I used cheddar
