White Wine Chicken Stock Braised Chicken































Psalm 96:13


        [13]     before the LORD, for he comes,

        for he comes to judge the earth.

    He will judge the world in righteousness,

        and the peoples in his faithfulness.


 

 

3-4 lb chicken pieces( I used 2 bone-in breast, split in half and 4 legs)

1/2 t kosher salt 

1/4 t pepper 

1/4 t garlic granules 

1 T olive oil 

2 T butter divided into 1 T each

Desired amount of Cajun spice

4 medium carrots cut into chunks

1 onion, sliced

1/4 celery

3 c chicken stock 

1/2 c white wine( I used 2 Buck Chuck Sauvignon Blanc)

1/2 T thyme

1 large bay leaf


Cook preheated 325 oven for 45 min, lid on

Season chicken 

Sear in hot oil and butter until lightly browned all over

Remove

Add butter to drippings

Sauté onions, celery and carrots until slightly soft

Add wine, stock and seasonings

Reduce slightly 

Nestle chicken in

Cover 

Bake

Remove chicken and thicken sauce with cornstarch slurry

Return chicken 

To serve, spoon gravy over chicken and veggies
