Skillet Sweet Potatoes with Marshmallow Fluff and Candied Pecans

2 med sweet potatoes, slice into chunks
Water to cover potatoes 
2 T Butter
2 T Honey
2 T Brown sugar
Smoked salt
Cracked black pepper
1/4 c Marshmallow Fluff 

In a skillet, slice potatoes.
Add water to cover.
Add all seasonings except Fluff.
Bring to boil on high heat and cook 20 minutes, lightly covered with foil.
Mash slightly, when tender.
Stir in Fluff.
Add crunchy Pecans.

Topping
1 c Pecans, chopped
1 T Clarified butter
1 T Brown sugar 

Microwave Pecans for 1 minute, they are done when you smell their fragrance.
Add 15 second intervals until toasty.
Cool. 
Add butter and brown sugar and cook 1 minute, shake and add another 1 minute.
Sugar should be crunchy.
Top potatoes and serve.

The Yum Yum English Muffin



































He seals up the hand of every man, that all men whom he made may know it.  - Job 37:7



Toasted English Muffins
Crispy Bacon 
Havarti cheese 
Fried hard egg
Hash browns( made from 1 small golden potato, grated)
Tomato

Melt cheese on English muffin, baking until muffin is toasted.
Fry bacon until crisp and drain on paper towels.
Reserve small amount of grease.
Grate 1 small potato, mash potatoes to remove moisture.
Fry in bacon grease.
Weight down to cook quickly.
Fry egg hard in nonstick skillet.
To build, to the cheesy toasted muffin with egg then potatoes, next comes the bacon then the tomato.
Yum Yum!

Perfect Old Bay Baked Salmon
































26 Help me, O LORD my God! Save me according to your steadfast love!

Salmon filet ( I buy mine at Costco) cut into serving size, tuck thin sides under
1/2 of a lemon 

Juice lemon over salmon.
Cook immediately, lemon juice will dry the fish out.
Put seasoning on.

Seasoning:
1/2 t Old bay seasoning, each filet
Smoked salt, to taste
Cracked black pepper, to taste
1/2 t Clarified butter on each filet  

Bake on parchment in preheat 425 degree oven for 14 minutes.
Serve with lemon wedge.
The sides I make are ginger rice and  gurkensalat (German Cucumber Salad)

Buttered Filet Hobo Packs





































17 Now this I say and testify in the Lord, that you must no longer walk as the Gentiles do, in the futility of their minds.

1 Filet, sliced thin ( I keep cooked sliced filet in the freezer, so I used that)
Skinny Green beans, Broccoli or squash
Onions, leeks or shallots
Baby potatoes, sliced ( I used left over) 
Seasonings of your choice ( I used onion powder, smoked paprika, Sumac) 
Salt and pepper( I used seasoned salt and Malabar cracked pepper)
Clarified butter

Wrap in heavy duty foil.
Bake or grill, preheated 400 degree for 30 minutes.
If you are using raw, 45 minutes up to a hour!

Crispy Squash Rounds
































This is my comfort in my affliction, that your promise gives me life.  - Psalm 119:50






2 Yellow squash, cut into rounds

Batter
1 c flour
1/2 t baking powder
1 t toasted cumin
1/2 t Seasoned salt
1/2 t Pepper
1 t sumac
1/2 t Onion powder
1 t Coriander 
1/2 t oil
1- 1/2 c water
Olive Oil for frying

Place into medium hot oil.
Fry 4 minutes on each side.
You should have a crispy crust.
Delicious!
