Old Time Fried Squash with Chives



















4 who gave himself for our sins to deliver us from the present evil age, according to the will of our God and Father,
5 to whom be the glory forever and ever. Amen. - Galatians 1:4-5




6 medium Squash, chopped
1 Onion, chopped
1/8 c Chives
1 beaten egg
1/8 c flour
1/4 c cornmeal
1/4 t garlic granules 
Salt and pepper to taste
1/4 c Oil for frying


Chop squash and onions, season, toss in beaten egg.
Add flour and cornmeal, toss to coat.
Heat oil using medium high heat, place in hot oil and fry until crispy on one side then flip.
Add chives.
Flip a few times until you have some crispy all through.

Coconut Milk Sauce Chicken Thighs Veggies and Pasta



















2 O you who hear prayer, to you shall all flesh come. 
3 When iniquities prevail against me, you atone for our transgressions. 
4 Blessed is the one you choose and bring near, to dwell in your courts! We shall be satisfied with the goodness of your house, the holiness of your temple!  - Psalm 65:2-4




6 -8 boneless chick thighs, cut into chunks, marinate in teriyaki sauce

1 pkg. Fresh angel hair pasta, cook, drain and set aside

Teriyaki Marinade
1 c Teriyaki sauce
1/8 c olive oil 
1/2 of a lime juiced

Marinate for 1 hour

Stir fry chicken until it resembles grilled chicken.
Remove from skillet.
Wipe out skillet.
Add 1 t oil. 
Sauté veggies.
Add meat back in, and add sauce.
Cook until sauce reduces.
To finish add 1/4 c sliced almonds.
Serve over pasta.

Veggie mix
2 carrots, matchstick cut
2 baby Bok choy, chopped
1/4 c chives, I used the freeze dries ones

Sauce 
1 c coconut milk
3 T honey
1 T mayo

Sauvignon Blanc Ancho Chili Lime Chops




















 Deuteronomy 7
  Know therefore that the Lord your God is God, the faithful God who keeps covenant and steadfast love with those who love him and keep his commandments, to a thousand generations, 10 and repays to their face those who hate him, by destroying them. He will not be slack with one who hates him. He will repay him to his face.



4 bone in chops, pounded, lightly floured and seated in oil

Cooking Seasoning 
1 t Seasoned meat tenderizer
1/2 t Ancho chili powder
1/2 t Toasted cumin
1/2 t Garlic granules

Mix seasoning and sprinkle on both sides

1 c flour in a Ziploc
Oil for searing

Finishing seasoning
1/2 of a Grated lime zest
1/2 of a Lime juiced
Pinch Kosher salt
Pinch Black pepper

1/4 c Sauvignon Blanc 

Sear seasoned floured chops in oil.
Place in a pan, add wine and broil 12 minutes on each side or until chops reach 150 - 155 degrees internal temp.
Add finishing seasonings.
I served this with chili lime corn on the cob, yum!

4 Ears of fresh corn
1/2 t Ancho chili 
1/2 t Garlic
1/2 t Toasted cumin
1/2 t Salt 
Pinch Pepper
Cooking spray 

Finishing 
1/2 of a Lime juiced and zest

Mix seasoning.
Spray corn with cooking spray, then season.
Microwave covered and cook 3 minutes on each side.
Finish with lime zest and juice.

Old Time Boiled Okra Tomatoes and Onions


















This day I will begin to put the dread and fear of you on the peoples who are under the whole heaven, who shall hear the report of you and shall tremble and be in anguish because of you.' - Deuteronomy 2:25




I remember this from my childhood.
My grandmother made this.
I didn't realize how good it was until I grew up and made it myself.

2 cans stewed tomatoes 
1 onion, chopped
3 c chopped okra
1/4 c celery
1 heaping T chicken base seasoning
1/2 t Garlic granules 
1/2 t Cajun seasoning
A few turns of black Pepper
1 c water

Boil all together until okra and onions are slightly soft.
