Spicy Chicken Noodles





13 But we do not want you to be uninformed, brothers, about those who are asleep, that you may not grieve as others do who have no hope.
14 For since we believe that Jesus died and rose again, even so, through Jesus, God will bring with him those who have fallen asleep.
15 For this we declare to you by a word from the Lord, that we who are alive, who are left until the coming of the Lord, will not precede those who have fallen asleep.
16 For the Lord himself will descend from heaven with a cry of command, with the voice of an archangel, and with the sound of the trumpet of God. And the dead in Christ will rise first.
17 Then we who are alive, who are left, will be caught up together with them in the clouds to meet the Lord in the air, and so we will always be with the Lord.
18 Therefore encourage one another with these words.
1 Thessalonians 4:13-18




1/2 c green cabbage, cut in strips
1 leek
2 carrots, diced 
1 bunch Broccolini 
4 mushrooms, sliced
2 inches fresh ginger, peeled and grate
1 t roasted garlic
1 large chicken breast, cut into small chunks
1 t olive oil
2 packages ramen noodles, (discard season packet) or soba noodles
1 t sesame oil 
¼ cup soy sauce
¼ cup worcestershire sauce
2 T sweet chili Thai sauce
1 T honey

Begin by preparing the meat and vegetables for stir frying. Peel the ginger and grate. Grate the carrots. Slice the leeks. Cut the broccolini into bite-sized pieces. Cut cabbage into strips. Cut the chicken into chunks.
Prepare noodles, when done, drain and toss in sesame oil. Heat the olive oil in a large skillet over medium-high heat. When the oil is hot, add the garlic and grated ginger, sauté. Add the chicken and cook until they are no longer pink.
Once the chicken is cooked through, add all of the vegetables. Stir and cook until wilted.
In a small bowl, combine the soy sauce, worcestershire sauce, sweet chili Thai sauce and honey. Stir until the sweet chili Thai sauce and honey are dissolved. Pour the sauce into the skillet with the chicken and vegetables with the heat still on medium high. Add the noodles, stir to coat everything in the sauce, and heat through.

Cheesy Broccoli Carrot Casserole






And whatever you do, in word or deed, do everything in the name of the Lord Jesus, giving thanks to God the Father through him. Colossians 3:17








1 t Olive oil
1 pgk Broccoli, steamed
2 Carrots, slice thin
1 Onion, chopped
1 rib of Celery
1 t Chicken base seasoning
1/2 t Cajun seasoning
1/4 t Garlic
1 can Cream of mushroom
1/4 Cream
1/4 Mayo
1 1/4 c sharp cheddar, reserve quarter cup for topping
Sleeve of Ritz, crushed
1/4 c canned crushed onion rings

In oil, sauté onions, carrots, celery and all the seasonings.
In a 13x9 pan, place the steamed broccoli, the veggie sauté, cream, cheese, mayo, and the soup. Mix well. Crush Ritz, put on top and add onion rings and rest of cheese. Bake 350 for 30 minutes.

Citrus Chicken Pasta with Creamy Smoked Gouda Sauce




6 Therefore, as you received Christ Jesus the Lord, so walk in him,

8 See to it that no one takes you captive by philosophy and empty deceit, according to human tradition, according to the elemental spirits of the world, and not according to Christ.

Colossians 2:6-15







2 c grilled chicken tenderloins, cut into bite size pieces
1/4 c Gouda
1/4 c Carrots
1/4 c celery
1 Leek
1 T roasted Garlic
6 asparagus spears, cut into bite size pieces
1 T olive oil, for sautéing veggies 
1/2 box of Linguini, prepared
1/2 t Cuban seasoning
Smoked salt, to taste
Pepper, to taste
1/4 c Cream
1/4 Half and half 
Pasta water
1 Lime juiced
Zest of 1/2 lime
1/4 c Apple juice

Place oil in large skillet, heat and add garlic, leeks, celery, asparagus, carrots and seasoning. Remove and add a little more oil to sear chicken, zest of lime and juice.
Next add cheese, cream, half and half, pasta water and juice.
Cook just until sauce is thickened and cheese is melted. 
Toss pasta in sauce and serve.

Cuban Chicken Pasta

8 boneless skinless chicken tenderloins, pounded and cut into tiny bites
1 box angel hair pasta, cooked al dente 
cuban rub(recipe on this blog under the rubs tag)
2 T olive oil
1 thinly sliced leek
1 diced carrot
1/4 t sugar
Juice of a lime
Zest of 1/2 of a lime
1/2 c heavy whipping cream 
1/2 c pasta water
1/2 c half and half
4 T chopped sun-dried tomatoes 
Smoked salt and black cracked pepper
1T roasted garlic 
1/4 cup Italian 4 cheese blend 

Cook pasta and set aside reserving 1 c pasta water.
Season chicken with rub and sear in oil, remove and set aside.
Squirt lime juice on chicken. 
When cooking veggies add extra oil if needed.
Take veggies, garlic, sugar, zest, and chopped sun dried tomatoes and sauté. 
When veggies are done add the cream, water, cheese and half and half, add salt and pepper.
Add the chicken back into the sauce and slowly toss in pasta.
I use small tongs which work great.

Eggo Maple Flavored Waffles
Cooked sausage 
Maple syrup (optional)

Toast waffles.
Fry and drain sausage.
Cut sausage in half.
Spread a little syrup on waffle and add sausage. 
Best mini breakfast sandwich ever!!
