Isaiah 53:4-5

Surely he has borne our griefs
and carried our sorrows;
yet we esteemed him stricken,
smitten by God, and afflicted.

But he was pierced for our transgressions;
he was crushed for our iniquities;
upon him was the chastisement that brought us peace,
and with his wounds we are healed.
1 lb white beans(I used Mayacabo beans)
Cover with water, bring to boil, cook 15 minutes
Turn off heat
Add water if necessary to cover beans
Cover for 30 minutes
Drain water and set aside
1 t Olive oil
2 T Butter
1 Onion, diced
1 c Celery, diced
1 c Bell pepper, diced
2 T roasted Garlic
1 c chopped Ham
1 t Cajun seasoning
1 T Sugar
1 t Hot sauce
1 t dried Thyme
1 Bay leaf
Add butter and oil to large pot ( I used a Dutch Oven)
Add veggies, ham and seasonings
Sauté until tender
Add drained beans to pot
Cover with stock
Add hot sauce
Add bay leaf
Bring to boil
Simmer with lid loosely on for 1-2 hours
Stir often
Check for tenderness after 1 hr and adjust seasonings if necessary
Mash some of the beans against side to promote creaminess
Serve over rice, with cornbread, onion and pieces of crispy Catfish on the side
