Pan Seared Greek Tilapia



























22 Indeed, under the law almost everything is purified with blood, and without the shedding of blood there is no forgiveness of sins.
23 Thus it was necessary for the copies of the heavenly things to be purified with these rites, but the heavenly things themselves with better sacrifices than these.
24 For Christ has entered, not into holy places made with hands, which are copies of the true things, but into heaven itself, now to appear in the presence of God on our behalf.
25 Nor was it to offer himself repeatedly, as the high priest enters the holy places every year with blood not his own,
26 for then he would have had to suffer repeatedly since the foundation of the world. But as it is, he has appeared once for all at the end of the ages to put away sin by the sacrifice of himself.
27 And just as it is appointed for man to die once, and after that comes judgment,
28 so Christ, having been offered once to bear the sins of many, will appear a second time, not to deal with sin but to save those who are eagerly waiting for him. - Hebrews 9:22-28





Butter 
Olive oil
3 pieces fresh tilapia, I got mine at Costco 
1/2 of a lemon, juiced, reserve some for tarter sauce 
Squeeze a little lemon over fish and let it set a few minutes while you prepare tarter sauce and  seasoned flour .
Sprinkle a little Greek seasoning over fish

Seasoned flour mixture:
2 T Greek seasoning, I make my own, recipe on this blog under seasonings tab
1/4 c flour
Smoked salt
Cracked black pepper
1 T cornstarch 
1 T cornmeal
1 t paprika 
Place ingredients in a large zip lock bag. Add fish and shake bag.
Heat butter and oil, enough of both to sear fish.
Cook 5-7 minutes on each side. Fish will be crispy.
This was delicious! 
I made sandwiches on Publix White Mountain bread with homemade tarter sauce* and fresh tomatoes.

* Tarter sauce recipe
1/4 c mayo
3 T fresh lemon juice
1 T sweet relish
1 T honey
1 t horseradish 
Whisk together.

1/4 c mayo
1/2 of a lemon, juiced
2 t yellow mustard
2 t honey
2 t BBQ sauce
Dash of Hickory flavored liquid smoke

Whisk together.
Chill.

Nutty Bar Pecan Pie






24 but he holds his priesthood permanently, because he continues forever.
25 Consequently, he is able to save to the uttermost those who draw near to God through him, since he always lives to make intercession for them. - Hebrews 7:24-25








Makes 2 regular crust pies
2 regular pie shells
1 Nutty Bar, crushed
1 c pecans, chopped 
3 eggs
1 c sugar
4 T butter, melted and cooled
1/2 c light Karo syrup
1 t cinnamon
1 cap full Jim Beam


Whisk eggs and sugar together.
Add Karo and butter, whisking again.
Add cinnamon and whiskey.
Set aside.
Into the bottom of the pie crust, add 1/2 of the pecans and 1/2 of the Nutty bar.
Then split the liquid mixture evenly between the 2 pies.
Bake 30 - 40 minutes on 375 degrees in the middle rack.
Pie should be set but not completely.
They will continue to set as they cool.

Parmesan Reggiano Pasta Shrimp Stir Fry






This makes Jesus the guarantor of a better covenant. - Hebrews 7:22








2 c cooked al dente pasta, set aside

1 lb. shrimp, cleaned
1 lb. tiny asparagus, tips only
2 Bok Choy, chopped
1 leek, chopped
2 T pimentos
1/4 c half and half
1/4 c Limoncello
2 T butter
2 T olive oil
1/4 c Parmesan Reggiano 
Cheese ribbons for garnish 


Melt butter in oil.
Add veggies, pimentos and leeks.
Stir fry until slightly tender.
Add seasonings, cream, limoncello and shrimp.
Stir fry 5 minutes, add cooked pasta.
Add cheese ribbons for garnish.

Balsamic Marinated Tomatoes Onions and Croutons

1/4 c Olive Garden dressing
Splash of olive oil
Cap full of aged Balsamic vinegar
Make dressing, add all seasonings, whisk, add to bottom of salad bowl and set aside.

5 Tomatoes , chopped
1 Onion, sliced
Ribbons of Parmesan Reggiano, to equal 1/2 -1 c (I used a potato peeler to make the ribbons)

Seasonings
1/2 t Smoked salt
A few turns of Cracked black pepper
1/2 t Garlic granules
1/2 t dried Dill 
1/2 t dried Parsley
1/2 t dried Rosemary


Croutons made from 3 large slices of White Mountain Bread drizzled with olive oil, seasoned with smoked salt and cracked pepper and grilled on cooktop (bought at Publix)
After grilling, cut into croutons, set aside.

To the salad bowl with the dressing, add the onions and tomatoes, toss.
Fold in croutons.
Add ribbons of cheese.

Skillet Smoked Sausage Peppers and Parsley Dill Potatoes






17 So when God desired to show more convincingly to the heirs of the promise the unchangeable character of his purpose, he guaranteed it with an oath,
18 so that by two unchangeable things, in which it is impossible for God to lie, we who have fled for refuge might have strong encouragement to hold fast to the hope set before us.

1 lb. grilled smoked sausage, sliced
Drizzle of olive oil
1 onion, sliced
1 medium red bell pepper, sliced
5 medium red potatoes, microwave 4 minutes on each size and chopped
1 t dried Dill
1 t Parsley
1/2 t Onion powder
1/2 t Garlic granules
1 t Seasoned salt

Microwave potatoes and set aside.
These will just need to be crisped in the oil.
Cut grilled sausages into bite size pieces.
Set aside.
Heat oil, add onions and peppers.
Cook until onions are translucent.
Add potatoes and sausages, you may have to add a little more oil if potatoes are not sizzling.
Add all the seasonings.
Cook 10 minutes.
Yum!!!

Balsamic Peppered Fig Jam

10 fresh figs
1/4 c water
1t balsamic vinegar
1t sugar 
1t honey
1/2 t olive oil
A few turns of Cracked black pepper
Pinch of Smoked salt
1 T diced onion

Add all ingredients to a small sauce pan.
Boil on medium heat.
Cook the liquid out.
Mash with a potato masher.
Serve on breakfast sandwiches, lunch sandwiches or burgers! Yum!

Stir Fry Cream Cheese Cabbage with Bacon Crumbles






Therefore he had to be made like his brothers in every respect, so that he might become a merciful and faithful high priest in the service of God, to make propitiation for the sins of the people. - Hebrews 2:17






1 small head of cabbage
1 t chicken seasoning base
1/2 t smoked paprika
1/2 t dry mustard
1/8 t garlic granules
1 T cream cheese
4 slices of crisp fried bacon, crumbled
1 T reserved bacon grease

Heat bacon grease and add sliced cabbage.
Add seasonings.
Stir fry until tender.
Add cream cheese and stir until melted.
Add crumbled bacon on top.

Instant Pot Beef Stroganoff with Marsala Gravy

pgk.egg noodles, cook al dente and set aside

2 T Fresh herbs( lemon thyme-Greek oregano-Rosemary )
1 lb. Beef tips
1 Leeks
2 T Celery 
1 c Mushrooms
2 T roasted garlic
2 T Flour
Olive oil
Salt and pepper to taste
1/4 c Sweet Marsala
1 c water 

1/2 c sour cream
2 T cornstarch in 1/4 water


Set pot to sauté, add oil and heat.
Toss meat in flour.
Add herbs.
Season with salt and pepper.
Add to oil and brown.
Add celery, garlic, mushrooms and leeks. 
Cook 5 minutes.
Add sweet Marsala and sauté a minute, then add water.
Change pot setting to meat/stew, place lid on and set to pressure.
Set time for 40 minutes.
Take off pressure, stir in sour cream.
Add 2 T cornstarch to 1/4 c water and add to pot to thicken gravy.
Serve over egg noodles.

Extra Creamy Smoky Stove Top Mac and Cheese

This was so good, fast and easy!!! 
Hubby loved it!!!
I developed this recipe because he told me he hated dry Mac and Cheese!


1 box penne pasta, cook al dente, drain and set aside

1/2 stick butter
1 T flour
10 oz. Pet milk(evaporated)
1/2 c half and half
1/4 c smoked Gouda
1 1/4 c sharp Cheddar, shredded(reserve 1/4 c for top)
Smoked salt, to taste
Cracked black pepper, to taste
1/2 t dry mustard
1/2 t smoked paprika
1/4 t garlic granules
Pinch cayenne pepper

Melt butter in sauce pan used to cook pasta and add flour, then add pet milk and cream.
Add all seasonings and all cheese except the 1/4 c for the top.
Take off heat and add pasta back in.
Can put in a 13 x 9 pan and top with cheese.
Place under broiler to slightly brown.

Homemade Shrimp Egg Rolls




1 But all this I laid to heart, examining it all, how the righteous and the wise and their deeds are in the hand of God. Whether it is love or hate, man does not know; both are before him.
2 It is the same for all, since the same event happens to the righteous and the wicked, to the good and the evil, to the clean and the unclean, to him who sacrifices and him who does not sacrifice. As the good one is, so is the sinner, and he who swears is as he who shuns an oath.
3 This is an evil in all that is done under the sun, that the same event happens to all. Also, the hearts of the children of man are full of evil, and madness is in their hearts while they live, and after that they go to the dead.
4 But he who is joined with all the living has hope, for a living dog is better than a dead lion.
5 For the living know that they will die, but the dead know nothing, and they have no more reward, for the memory of them is forgotten.

Frieda's egg roll wrappers
1 beaten egg, to seal egg rolls


1 pgk. slaw mix
Cook covered in microwave for 5 minutes.
Set aside and cool.

1 c chopped shrimp
Set aside.

1 small Onion, diced
1 t roasted Garlic, mashed
Drizzle olive oil
2 T fresh ginger, grated
Stir fry until onions are translucent.
Add shrimp and cook 2 minutes.

1 t sesame oil
2 T soy sauce
1/2 t sugar
1 t sweet chili Thai sauce
Mix together and set aside.
When shrimp mixture is done, add sauce.
Then add shrimp mixture to slaw mixture.
Cool.

Oil for frying egg rolls, I use my Fry Daddy.

Fill egg rolls, roll and seal.

Place on parchment lined pan.
Cool 30 minutes in fridge.
Heat oil and fry until golden brown.

Zucchini Fries

2 medium zucchini
1 medium yellow squash
2 beaten eggs
1/2 c panko
1/2 c Parmesan cheese 
1/2 t Garlic granules
Salt and pepper 


Cut veggies into thin fries.
Roll in eggs and then the seasoned panko.
Spray with Pam spray.
Bake 12 minutes on each side.
Crisp under broiler.

Limoncello Lime Zest Parmesan Shrimp Pasta

Pasta, cooked al dente and set aside(I used angel hair)
1 lb. cleaned Shrimp
1 medium Onion, sliced
2 T roasted Garlic
1 small batch Asparagus, tips only
2 T Pimentos
2 T Butter
1 t Chicken base seasoning
1/2 c Parmesan 
Cracked black pepper to taste
1/8 c Half and half
1/8 c Limoncello
1/2 of a lime, zest and juice
Splash of Olive oil

Melt butter in oil.
Add onions, base seasoning and asparagus.
Cook 2 minutes, add shrimp, garlic and pimentos.
Cook 5 minutes and add rest of ingredients, except pasta.
Stir fry until sauce thickens slightly and add pasta.
Serve!! Yum!!!

Instant Pot Old Time Beef Stew





1 Let every person be subject to the governing authorities. For there is no authority except from God, and those that exist have been instituted by God.

3 For rulers are not a terror to good conduct, but to bad. Would you have no fear of the one who is in authority? Then do what is good, and you will receive his approval,
4 for he is God's servant for your good. But if you do wrong, be afraid, for he does not bear the sword in vain. For he is the servant of God, an avenger who carries out God's wrath on the wrongdoer.
5 Therefore one must be in subjection, not only to avoid God's wrath but also for the sake of conscience.
6 For because of this you also pay taxes, for the authorities are ministers of God, attending to this very thing.
7 Pay to all what is owed to them: taxes to whom taxes are owed, revenue to whom revenue is owed, respect to whom respect is owed, honor to whom honor is owed. - Romans 13:1-7




1 lb. Beef stew, toss in flour
2 T olive oil
4 Carrots, cut into chunks
8 small red Potatoes, quartered
1 Celery, sliced
1 Leek, sliced
4 Mushrooms, sliced
2 c water
1 T Chicken base seasoning
Cracked black pepper
2 T Tomato paste concentrate 
2 T Worcestershire sauce
Fresh herbs

Cornstarch slurry added after cooking for a thickner. 
1/4 c water
2 T cornstarch 
Stir together and set aside.


Set pot on sauté setting, heat, add oil, brown meat, add leeks, mushrooms, and celery.
Add all the rest of the ingredients except carrots and potatoes.
Change setting to meat/stew setting, place lid on, set to pressure.
Set timer for 45 minutes.
Take steam off using valve.
Add veggies, replace lid, set timer for another 15 minutes still using pressure setting. 
After time is finished, release steam, remove lid and stir in slurry to thicken gravy.
Serve with crusty bread!!

Cheese Dip Spread







25 for apart from him who can eat or who can have enjoyment?

This is a versatile dip.
You can drizzle it on nachos or spread it on sandwiches.
Makes it thin or thick depending on how much half and half you use.

1/2 of an Onion, diced
Tiny splash of olive oil
3 T Fresh cilantro 
1 t cumin
Half and half, start with an 1/8 c, add more for a thin dip
White American cheese, from the deli, 1 inch block, cut into cubes, use just half
1/2 Jalapeño, seeded and chopped
1 t roasted Garlic

Place oil in skillet and sauté onion, peppers and garlic.
Set aside when onions are soft.
Place half and half in saucepan on low heat and add cheese.
Stir constantly.
When cheese is melted, add seasoning, onion mixture and cilantro.

Cheese Dip Avocado Beef Patty Melt on Sourdough

Ground Beef, love Sprouts 85/15 blend
Cheese dip spread, recipe on this blog
Avocado, slices
Sourdough bread, Sprouts bakery
Tomato, slices

Make burgers and season with season salt.
Set aside.
Slice bread in 1\2 inch slice.
Toast sourdough with a little olive oil.
Spread cheese dip on toasted bread.
Add burger, tomato and avocado. 
Yum!!!

Feta Turkey Meatballs






Have I not commanded you? Be strong and courageous. Do not be frightened, and do not be dismayed, for the LORD your God is with you wherever you go." - Joshua 1:9








3/4 c Feta, crumbles
1 lb. Ground turkey
3/4 c Raisins 
1/4 t Garlic granules
1/4 t Greek seasoning
1/4 t fresh Greek oregano
1/4 t fresh lemon thyme
1/4 t sweet basil

Roll into 1 inch balls.
Place on parchment and bake 15 minutes on 375 degrees, flip and cook another 5 minutes. 
Place under broiler to brown and bring temp up to 165 degrees.
Drizzle teriyaki sauce over meatballs.
These were delicious and healthy!!!
