Cheese Dip Spread

25 for apart from him who can eat or who can have enjoyment?
26 For to the one who pleases him God has given wisdom and knowledge and joy, but to the sinner he has given the business of gathering and collecting, only to give to one who pleases God. This also is vanity and a striving after wind. - Ecclesiastes 2:25-26

This is a versatile dip.
You can drizzle it on nachos or spread it on sandwiches.
Makes it thin or thick depending on how much half and half you use.

1/2 of an Onion, diced
Tiny splash of olive oil
3 T Fresh cilantro
1 t cumin
Half and half, start with an 1/8 c, add more for a thin dip
White American cheese, from the deli, 1 inch block, cut into cubes, use just half
1/2 Jalapeño, seeded and chopped
1 t roasted Garlic

Place oil in skillet and sauté onion, peppers and garlic.
Set aside when onions are soft.
Place half and half in saucepan on low heat and add cheese.
Stir constantly.
When cheese is melted, add seasoning, onion mixture and cilantro.
