Hummus And Steak Layered Dip

1 layer Roasted red pepper hummus
2 Shredded Cheddar cheese
3 Chopped grilled steak with caramelized onions
4 Sour cream 
5 Cheddar cheese
6 Avocado

The amount you use depends on your container size.
I used a small bowl because this was a test recipe.
You could also add other layers, such as black olives, green onions, tomatoes etc. you could also use chicken, ground turkey, ground beef etc.

Bruschetta Cheese Steak Nachos







1 Behold, the LORD's hand is not shortened, that it cannot save, or his ear dull, that it cannot hear;

Steak(seasoned cooked steak sliced thin cut into bite size)
Onion, sliced
1 capful Jim Beam
Tostado chips
1/2 c chopped Bruschetta cheese( Publix in the deli cooler)

Garnish:
Tomato
Avocado

I keep cooked steak in my freezer for a super fast meal.

Sauté onions in olive oil, add salt and pepper, then whiskey.
Add steak and 1/2 of the cheese to cooked onions, this makes a delicious sauce.

Build nachos, steak and onions first, then cheese followed by avocado and tomato. Yum!!

Cranberry Balsamic Aioli for Turkey Subs





so shall my word be that goes out from my mouth; it shall not return to me empty, but it shall accomplish that which I purpose, and shall succeed in the thing for which I sent it.  - Isaiah 55:11







2 T Whole Berry Cranberry Sauce, mashed
1/8 t Balsamic vinegar
1 t Honey
1/3 c Toasted pecans, chopped
1/3 of the block Cream cheese, softened 
1 t Olive oil

Mix all ingredients together, serve on bread or crackers with turkey for a taste of the holidays. 

Fresh Herb Roasted Turkey Breast






"Seek the LORD while he may be found; call upon him while he is near;  - Isaiah 55:6








Steaming liquid
1/4 c red wine
1/4 c water
1/2 lemon
1/4 c orange juice


1/2 of a turkey breast, skin on
1/3 stick of butter, cut into pats
Fresh sweet basil, diced
Fresh Greek oregano, diced 
Fresh Thyme, diced
Fresh Rosemary, diced
Garlic Granules
Olive oil
Kosher salt 
Cracked black pepper

Loosen skin and place butter under skin. 
Sprinkle olive oil over skin.
Salt, pepper and herb the oil covered turkey breast.
Place on a rack in a pan with steaming liquid and roast for 2 hrs and 15 minutes on 325 degrees, internal temp should be 165-170 degrees. Let rest 10 minutes and slice.

Quick Caramel Banana French Toast

2 Sour dough bread
1 Banana
Chopped pecans
Salted caramel syrup (ice cream topping section)
Spray whipped topping 
Butter for frying soaked bread
Sugar cinnamon mix


Soaking ingredients:
2 beaten eggs 
1/4 c half and half

Soak bread.
Melt butter in large skillet and lightly brown bread.
Sprinkle with cinnamon sugar mixture.
Plate, add thin sliced bananas, drizzle caramel, nuts and topping.
Serve immediately.

Zaxby's Left Over Chicken Black Bean Paste Quesadillas





And if anyone's name was not found written in the book of life, he was thrown into the lake of fire. - Revelation 20:15





4 medium flour tortillas
Olive oil
8 pieces of Zaxby's, sliced thin
1/2 onion, sliced
2 T roasted Poblanos, chopped
2 T black bean paste, this blog under sauce tab
1 t roasted garlic
1/2 of a lime juiced
1 t Cuban seasoning
Grated sharp cheddar

Drizzle oil in a medium skillet, add onions, peppers and garlic, sauté until onions are soft. Add beans, seasoning, and lime juice. Set aside. 
In a large skillet drizzle oil and swirl one side of tortillas to coat, remove. Add tortilla oiled side down to heated skillet, add cheese and meat mixture and another layer of cheese, top with another tortilla. When one side toast, flip. I weight mine down with a cast iron skillet.

Mango Canadian Bacon Pizza

1/2 of a Vidalia Onion, sliced really thin
1c Grated Mozzarella cheese
6 slices Canadian bacon, chopped
4 Turkey bacon, cooked and chopped
2 slices Naan bread
1/2 of a mango, chopped
Olive oil

Spray Naan bread with olive oil. Toast, flip over.
Add cheese, onions, bacon, ham, another layer of cheese and end with the mango. Toast until cheese melts. Delightful!!!

Creamy Whiskey Alfredo

2 slices Prosciutto, diced
4 slices Pancetta, diced
1 t olive oil
1 Onions, sliced thin
1 capful Jim Beam Whiskey
1 Leeks, sliced thin
1 c Parmesan, grated
1 t Fresh Greek oregano, chopped
1 t Fresh spicy oregano, chopped
5 single stems Fresh thyme, shave off with fingers
1 t Fresh sweet basil, chopped
1 Carrot, sliced thin
2 t Roasted garlic
1/2 c Half and half
1/4 c Milk
1/4 of a block of Cream cheese
Prepared pasta 

Sauté meat, onions, carrots, garlic and leeks in olive oil.
Add whiskey, cook 2 minutes.
Add fresh herbs, cream cheese, milk and half and half.
Cook until thickened. 
Add pasta and toss.
Serve immediately!

Chicken and Shrimp Moo Goo Gai Pan







10 And I heard a loud voice in heaven, saying, "Now the salvation and the power and the kingdom of our God and the authority of his Christ have come, for the accuser of our brothers has been thrown down, who accuses them day and night before our God.

Seasoning for meat(split between the two):
2 t kosher salt
2 t brown sugar

Sauce:
1 t Chicken base seasoning
1 c Water
1/4 c Rice wine 
1/2 t Honey
1 T Soy sauce 
1 t Sesame oil
1 t Cornstarch


2 T roasted Garlic
1 t grated Ginger
1 shallot, diced
4 Chicken tenderloins, flat sliced
3 c shrimp, frozen cooked, remove tail
1 t Olive oil

2 Carrots, cut into matchsticks 
2 Baby Bok Choy, chopped
1/2 t Olive oil

Prepare angel hair pasta Al dente.

Separate meat into 2 plates.
Sprinkle 1/2 salt and 1/2 brown sugar on meat and toss to coat.
Set aside.
Prepare sauce and set aside.
Place oil in skillet and heat, add ginger, shallots and garlic to flavor oil.
Add chicken and lightly brown, then add shrimp.
Shrimp is already cooked so just heat through.
Remove from skillet, set aside. 
Wipe skillet with paper towel.
Add oil.
When oil is heated add veggies and sauté for 5 minutes. 
Leave veggies crunchy.
Add in sauce. 
Heat until thickened, then add in meat and pasta.

Greek Pork Tenderloin





5 So too at the present time there is a remnant, chosen by grace.
6 But if it is by grace, it is no longer on the basis of works; otherwise grace would no longer be grace. - Romans 11:5-6







Pork loin(comes 2 to a packet)
Greek pork tenderloin marinade( this blog under marinade tab)

I marinated my loin for 2 days.
Place marinade in a zip lock bag and add loin. 

To cook:
Sear in skillet with a little olive oil until slightly browned.
Place on a rack over water-wine bath, in a preheated 450 degree toaster oven.
Toast 15 minutes on each side until internal temp is 155 degrees.
Remove, tent with foil and rest for 5 minutes before slicing.

Greek Pork Tenderloin Marinade







20 The rest of mankind, who were not killed by these plagues, did not repent of the works of their hands nor give up worshiping demons and idols of gold and silver and bronze and stone and wood, which cannot see or hear or walk,
21 nor did they repent of their murders or their sorceries or their sexual immorality or their thefts. - Revelation 9:20-21







Pork tenderloin
1 sm. Shallot, diced
4 sprigs of fresh Thyme
2 twigs of fresh Rosemary
2 T Fresh greek oregano and spicy oregano, diced
1/2 of a lime zest
1/2 of a lime juice
1 t Red wine vinegar
1/2 c Olive oil
1/4 water
1/8 c white wine 
1 t Dijon mustard
2 t roasted Garlic, mashed with fork
1/2 t Kosher salt
A few turns of Cracked black pepper 

Whisk together, add loins, and marinate overnight.
Grill or bake as usual.

Honey Tomato Chutney Aioli/ Knock Off Tazikis Sauce





The Lord is not slow to fulfill his promise as some count slowness, but is patient toward you, not wishing that any should perish, but that all should reach repentance. - 2 Peter 3:9





This is a knock off of Taziki's sauce. We use it on Greek seasoned pork tenderloin.

1 T Honey 
1 t Roasted Garlic
2 T Sun dried tomatoes
1/2 t Olive oil
1/4 c Mayo
1/8 t Sriracha  
1 small smoky chipotle in adobo, chopped 
1 t White raisins or dark, diced
A few turns of Smoked salt
A few turns of Cracked black pepper


Mix all together except olive oil.
Add oil a little at a time and whip with a fork. 

Crispy Mongolian Beef and Shrimp Pasta






15 Then the kings of the earth and the great ones and the generals and the rich and the powerful, and everyone, slave and free, hid themselves in the caves and among the rocks of the mountains,
16 calling to the mountains and rocks, "Fall on us and hide us from the face of him who is seated on the throne, and from the wrath of the Lamb,

Wow!!!

Beef and shrimp seasoning:

1 t kosher salt
1/2 t brown sugar
1/2 t of granulated garlic powder

Dipping batter for shrimp and chicken 

1/4 c soy sauce
1/2 c cornstarch 
1 egg, beaten
Whisk together, will be very thick

Oil for frying.

10 shrimp, cleaned, 
2 small filets, sliced 
1/2 box prepared pasta noodles
2 baby bok choy, cleaned and sliced lengthwise then chopped
1 t fresh ginger, minced
2 carrot, cut into matchstick 
1/4 c Mirin
1 T roasted garlic, minced
1 leek, sliced thin
1/2 of a shallot, diced
1 T olive oil
1 t sweet basil and chive compound butter, recipe on this blog under compound butter tab


Preheat the oil to hot.
Add the shrimp and beef to a bowl and season with salt, brown sugar and granulated garlic. Mix well.
Add shrimp and beef to dipping batter and coat.
Fry the shrimp and beef separately in the oil until golden brown. Cooks quickly using Fry Daddy. Then, remove the from the oil and let the shrimp and beef drain on paper towels to absorb any excess oil. 

In a large skillet heat the hot oil, add the ginger, bok choy, carrots, leeks, shallots and garlic.


Sauce:

1/2 c soy sauce
1/2 c honey
1/8 c brown sugar
1/4 c water
Pinch red pepper flakes
1 T oil

Cook the sauce ingredients over medium high heat stirring occasionally. Once the sauce thickens, it’s ready for use.
Combine the meat, veggies and sauce.
Serve over pasta.

Greek Lemon Roasted Potatoes




But false prophets also arose among the people, just as there will be false teachers among you, who will secretly bring in destructive heresies, even denying the Master who bought them, bringing upon themselves swift destruction. - 2 Peter 2:1







Small red potatoes( I used baby new potatoes)
Juice of 1/2 lemon
Olive oil
Kosher salt
Fresh chopped oregano
Black cracked pepper
Garlic granules


Microwave covered potatoes 2 minutes on one side and flip, repeat, 
Cut in half and place in roasting pan, cut size up. Drizzle olive oil over cut side. Squeeze lemon half over potatoes. Season with oregano, garlic, salt, and pepper. Bake in toaster oven on 450 degrees for 15 minutes, then toast for 15 minutes or until slightly crispy.

Savory Smoky Sweet Potato Casserole





just as Sodom and Gomorrah and the surrounding cities, which likewise indulged in sexual immorality and pursued unnatural desire, serve as an example by undergoing a punishment of eternal fire. - Jude 1:7







2 sweet potatoes, sliced really thin using mandolin
1 can evaporated milk, 5 oz
1/2 c half and half
Season blend( garlic granules, onion powder, kosher salt, smoky paprika, black pepper, turmeric, ancho chili powder) 1/8 t each 
1 shallot, diced
1 1/2 c Cheese blend, 1c sharp Cheddar, 1/4 c smoky Gruyere and 1/4 c smoky Gouda

Layer 1/2 of potatoes, cheese and liquid. Season. Repeat.
Bake at 400 degrees covered 40 minutes, then uncover and bake 450 degrees an additional 15 minutes uncovered.

Asian Black Bean Sauce/Paste







And though the Lord give you the bread of adversity and the water of affliction, yet your Teacher will not hide himself anymore, but your eyes shall see your Teacher. - Isaiah 30:20







1 (15-ounce) can black beans, drain
1 T rice wine
1/4 c water
1 T low-sodium soy sauce 
1/2 t sugar
1 t chicken base seasoning
1 t grated ginger 
1/2 t grated orange peel
1/2 t crushed red pepper 
1 T roasted garlic 


Combine all the ingredients in a medium saucepan; bring to a boil. Reduce heat, and simmer, uncovered, 20 minutes. Sauce will be thick.

Garlic and Black Bean Sauce Shrimp and Chicken






Therefore the LORD waits to be gracious to you, and therefore he exalts himself to show mercy to you. For the LORD is a God of justice; blessed are all those who wait for him.  - Isaiah 30:18









  • 2 T roasted garlic
  • 1/4 c Asian black bean sauce( I made my own, recipe on this blog under sauce tab)
  • 1 t olive oil
  • 1 bag frozen shrimp, tails removed
  • 1/4 cup cornstarch
  • 1 t brown sugar
  •  oil for deep frying
  • 1/2 cup chinese rice wine
  • 1 1/2 c water plus 1/2 t cornstarch
  • 1 heaping T chicken base seasoning
  • 1/4 of a roasted poblano, seeded and chopped
  • 1 t roughly cilantro 
  • 1 shallot, diced



Take garlic and black bean sauce and mash together.
   
Season meat with a sprinkling of brown sugar and kosher salt. Let sit 5 minutes.
  1. Dredge meat in cornstarch. 
  2. Deep fry.
  3. This meat is delicious even without the sauce!!!
In a skillet, add 1 t olive oil, shallots and Poblanos, heat until fragrant. Add garlic and bean sauce.

Add water, wine, chicken base seasoning, and simmer 10 minutes until sauce thickens. To serve, first layer noodles or rice, then meat and end with sauce. You must keep these 3 sets of ingredients separate until serving if using starchy noodles such as stir fry noodles, they become gummy.
