Garlic and Black Bean Sauce Shrimp and Chicken

  • 2 T roasted garlic
  • 1/4 c Asian black bean sauce( I made my own, recipe on this blog under sauce tab)
  • 1 t olive oil
  • 1 bag frozen shrimp, tails removed
  • 1/4 cup cornstarch
  • 1 t brown sugar
  •  oil for deep frying
  • 1/2 cup chinese rice wine
  • 1 1/2 c water plus 1/2 t cornstarch
  • 1 heaping T chicken base seasoning
  • 1/4 of a roasted poblano, seeded and chopped
  • 1 t roughly cilantro 
  • 1 shallot, diced



Take garlic and black bean sauce and mash together.
   
Season meat with a sprinkling of brown sugar and kosher salt. Let sit 5 minutes.
  1. Dredge meat in cornstarch. 
  2. Deep fry.
  3. This meat is delicious even without the sauce!!!
In a skillet, add 1 t olive oil, shallots and Poblanos, heat until fragrant. Add garlic and bean sauce.

Add water, wine, chicken base seasoning, and simmer 10 minutes until sauce thickens. To serve, first layer noodles or rice, then meat and end with sauce. You must keep these 3 sets of ingredients separate until serving if using starchy noodles such as stir fry noodles, they become gummy.
