Fried Potatoes and Onions

SUNDAY, MARCH 9, 2014




Ex.20:

4 potatoes
1 onion
1 onion seasoning salt 

garlic salt 
oil for frying


Microwave potatoes for 3 minutes on each side.
Slice into thick slices.
Take a cast iron skillet and heat oil.
Oil should be about a quarter inch thick in skillet.
Add potatoes and seasoning salt, fry until soft, flipping to insure even cooking. Add onion, cook until translucent.

Drain on paper towels, add garlic salt. 

Mexican Meatloaf



WEDNESDAY, APRIL 3, 2013 




I Corinthians 15:3-4
3 For I delivered to you as of first importance what I also received: that Christ died for our sins in accordance with the Scriptures,
4 that he was buried, that he was raised on the third day in accordance with the Scriptures,




2 T olive oil
1/2 cup finely chopped leeks
1 medium carrot, finely chopped
1 rib finely chopped celery
1/2 of a chopped jalapeno
1 clove roasted garlic
1/4 c fresh chopped cilantro
1 lb. ground turkey
6 ounces soft Mexican chorizo, removed from casing and crumbled 

3/4 t smoked salt
1/4 t freshly ground black pepper 

/4 t cayenne pepper 1/2 t ground cumin 1 c buttermilk
1/4 cup ketchup

1 T smoky chipotle Tabasco 1/4 cup sour cream
1/2 c Panko

Salsa-Glaze:
2 medium tomatoes, cored
1/4 medium white onion
2 cloves roasted garlic, mashed
1/4 cup brown sugar
2 peppers from canned chipotle chile in adobo sauce, minced 1 tablespoon Dijon mustard
1/2 t smoky salt

In a heavy skillet, add the oil and heat over medium-high heat. Add the onion, jalapeno, carrot, celery, and garlic, stirring often until vegetables are soft.
In a large bowl combine the sauteed vegetables, ground beef, chopped cilantro and chorizo.
In a medium bowl, combine the salt, pepper, cayenne, cumin, and buttermilk. Add the ketchup and sour cream. Add Panko, meat and veggie mixture and mix thoroughly.
Place in crock pot on high and cook for 4 hrs.
Meanwhile, heat a heavy skillet over high heat. Add the whole tomatoes, onion, and roasted garlic cloves. Cook veggies, turning frequently, until lightly charred on all sides. Add all the charred ingredients to a blender. Pulse until chunky, pour into a small skillet and stir in the sugar, chipotle chile and mustard. Bring the mixture to a boil over medium heat. Cook until slightly thickened, about 4 to 5 minutes and season with salt, to taste.
Spoon the salsa-glaze over the meatloaf and serve. 

Revani (Greek Semolina Cake)

27 And just as it is appointed for man to die once, and after that comes judgment,
28 so Christ, having been offered once to bear the sins of many, will appear a second time, not to deal with sin but to save those who are eagerly waiting for him.


This cake recipe makes my mouth water!! 
2 1/2 cups granulated sugar
3 cups cold water
1 small stick cinnamon

4 whole cloves
Zest of 1 orange
7 ounces unsalted butter (14 T) 

6 eggs
2/3 cup all-purpose flour
1 cup + 2 T fine semolina
1 T baking powder 

3/4 cup blanched almonds, finely chopped 
1 t vanilla extract
2 T brandy


Preparation:
Combine 1 1/3 cups of the sugar with the cold water in a saucepan and simmer over a low heat until the sugar has dissolved. Then, add the cinnamon stick, cloves and orange zest and simmer for another 15 minutes. Remove the cinnamon stick and cloves. Cool.
Preheat the oven to 350F. Place the butter in a bowl and beat until soft and light with an electric blender or hand whisk. Slowly add the remaining 1 cup sugar, then add the eggs individually, beating thoroughly after each addition. In another bowl, sift the flour, semolina and baking powder together. Add the chopped almonds and mix well. Gradually add this mixture to the batter, beating continuously. Finally, add the vanilla and brandy to the mixture and pour into a buttered 9 x 12 inch rectangular baking pan.
Bake for 30 minutes. Remove from the oven and score the cake into diamond shapes with a sharp knife. Spoon the cooled syrup over the cake and allow to cool. Decorate each portion with a blanched almond.

Cream Cheese Squash Casserole




Gal.2:
16 yet we know that a person is not justified by works of the law but through faith in Jesus Christ, so we also have believed in Christ Jesus, in order to be justified by faith in Christ and not by works of the law, because by works of the law no one will be justified.





6 yellow squash
1 chopped onion
1/3 of a stick of cream cheese
1/4 c cheddar cheese
1 t chicken base seasoning
1/4 t Cajun seasoning
1/4 t granulated garlic 

Topping
1/2 c canned onion rings
1/2 c cheddar cheese
1/2 c panko

Add these to food processor and pulse just until incorporated.


In microwave, add 1 t water, steam squash, onion and seasonings until tender. Add cream cheese and cheese. Add to a pie plate that has been sprayed with non stick spray and has a small sprinkling of topping. Add rest of topping to top of casserole, bake 325 for 20 minutes.

Fontina Chops Bonefish Grill Knockoff






2 Sam. 22:
31 This God-his way is perfect; the word of the LORD proves true; he is a shield for all those who take refuge in him. 32 "For who is God, but the LORD? And who is a rock, except our God? 

2 thick Bone-in Pork Chops
3 T Olive Oil
Seasoned Meat Tenderizer
Thin sliced Fontina cheese

Season chops with tenderizer. Sear chops in skillet. Place in oven under broiler, cook 7 minutes on each side or until the temperature is 155 degrees. Add the cheese and let melt. Add sauce.

Sauce
1 T Olive Oil
3 slices Prosciutto, chopped
2 c Button Mushrooms, Sliced
1 leek, sliced
1 roasted garlic clove, mashed
3/4 c Marsala 
(8 ounces) Chicken Broth
1 T cornstarch 

Heat olive oil in a pan. Add the mushrooms, roasted garlic, leeks and prosciutto, cooking until mushrooms are browned. Remove from pan and set aside. Add the Marsala to the hot pan. Bring to a simmer and cook until the liquid has reduced to about 1/4 cup. Add the chicken broth. Return to a simmer and cook until a little more than 1 cup of liquid remains. Place the cornstarch in a small bowl with a little water. Then, add the cornstarch mixture to the pan to thicken. Return the mushroom mixture to the pan.

Spoon the sauce over the cheese covered chops and serve.

CHICKEN CHILE RELLENO CASSEROLE

Matt.28:
18 And Jesus came and said to them, "All authority in heaven and on earth has been given to me. 19 Go therefore and make disciples of all nations, baptizing them in the name of the Father and of the Son and of the Holy Spirit,
20 teaching them to observe all that I have commanded you. And behold, I am with you always, to the end of the age."



1 rotisserie chicken, chopped
4 Roasted Poblanos, cut in half and seeded
4 oz cream
2 T cream cheese, room temperature
1/2 lb sharp cheddar cheese, shredded, divided in half 1/2 lb mozzarella, shredded, divided in half

1/2 lb jack cheese, shredded, divided in half 
2 T fresh cilantro
2 T flour
4 eggs
1 t smoked salt



Preheat oven at 350 degrees.
Lay roasted peppers in bottom of casserole.
Combine half the cheeses and the rest of the ingredients in a large bowl. Pour into a 9-inch by 13-inch baking dish.
Top with the remaining cheese. 

Bake for 35 minutes.

Romans 3:

24 and are justified by his grace as a gift, through the redemption that is in Christ Jesus,

25 whom God put forward as a propitiation by his blood, to be received by faith. This was to show God's righteousness, because in his divine forbearance he had passed over former sins.

1/2 of a rotisserie chicken 
8 oz mushrooms, sliced
2 T Jim Beam
1 T capers

1 pgk. small asparagus, cut into bite size pieces 
1 shallot, minced
2 T sun dried tomatoes

 2 T butter
1 t olive oil
1/4 c Zesty Italian dressing
1 t dry chicken base
1/4 c cream
1 Green Giant creamed spinach, microwave for 5 min 

2 cloves roasted garlic, mashed
2 T Fresh flat leaf parsley
Black pepper
1 1/2 c shredded Mozzarella
1/2 c Italian Panko



Cook the shallots, sun dried tomatoes, garlic, asparagus, capers, fresh parsley and the mushrooms in the butter, chicken base seasoning and olive oil until tender. Add the cream, Jim Beam and creamed spinach to the skillet. Add zesty Italian and black pepper into the veggie mix. Remove from heat.
Place 1/2 half of the veggie mix into a casserole pan. Next layer of chicken and 1/2 of the cheese. Repeat layers and bake for 30 minutes. 

Quick Chocolate Pie (similar to Johnny Ray's)








Romans 7:7
What then shall we say? That the law is sin? By no means! Yet if it had not been for the law, I would not have known sin. For I would not have known what it is to covet if the law had not said, "You shall not covet."


1 Deep dish baked and cooled pie shell
1 small instant chocolate pudding
1 small instant white chocolate pudding 

2 c cold 2% milk
1/4 c cold heavy whipping cream

Topping
1 c cold whipping cream 
1/4 c powdered sugar
2 T vanilla extract

Empty both boxes of puddings in a glass bowl, add milk and cream. Beat with hand mixer until thick.
Fill pie shell, cover and place in freezer for 30 minutes.

For the topping, place cream, powdered sugar and vanilla in a cold glass bowl. Whip until thickened.
Top cold pie, cover and refrigerate. 

Limoncello Shrimp and Chicken Pasta

3/4 of a box of Angel Hair, cooked al dente 
2 c diced chicken
1/4 c extra virgin olive oil
1/4 c melted, salted butter

2 roasted garlic cloves, smashed 
10 minced green onions 
2 t capers
sea salt and black pepper, to taste

1/4 c Limoncello
1/4 c fresh mixed sweet and spicy basil, minced 

1/2 c half and half
2 c Frozen shrimp
1 c fresh grated Parmesan Reggiano cheese


In a large saucepan, cook pasta according to package directions. Drain.
Reserve some pasta water.
In large sauté pan, place olive oil and onions. Sauté on medium. Add garlic, capers, chicken, salt and black pepper. Add shrimp. Add remaining half of Limoncello. Stir. Add minced basil and butter. Stir. Add half and half after alcohol cooks off. Add pasta, some pasta water and toss. 

Shrimp and Garlic Noodles





1 Cor.1:23
but we preach Christ crucified, a stumbling block to Jews and folly to Gentiles,


1 lb Angel Hair
3 t roasted garlic, mashed 

3 t sugar
2 t rice vinegar
1/4 t red chili flakes
1 t cilantro
2 t olive oil
1/2 t sesame oil
1 English cucumber


Sauce:
3/4 cup water
1 t chicken base powder 

1 t sugar
2 t Mirin (rice wine)
1 t oyster sauce
1/2 t salt
1 t cornstarch

1 lb. frozen cooked shrimp

Garnish
1/2 c crushed sweet and salty peanuts. 



Cook noodles.
Rinse with cold water and cool down. Set aside.
Add red chili flakes, sesame oil and cilantro to pasta, toss them together.

Slice cucumber diagonally into 1/4" thick slices. Cut into strips. Set aside. Heat wok hot, add oil. Stir in minced garlic. Add sugar, shrimp and vinegar. Mix sauce until thick in a bowl.
Return noodles back to wok, add sauce mixture, stirring until noodle is heated through. Garnish with match stick cut cucumber and peanuts. 

Italian Sausage Rice and Potato Stuffed Pepper

1 pgk of Italian sausage, cooked
6 large bell peppers, parboiled 3 minutes
1 pgk cooked microwave Rice
1/2 c Instant potato flakes, as a binder
1 c shredded Parmesan Cheese, half in meat mixture, half on top of each pepper 1 onion, minced
1/2 c cream
1/4 c red wine
Small Spaghetti sauce
Fresh herbs, combo of fresh sweet basil, spicy oregano, spicy basil
Pinch garlic powder
Salt and pepper to taste 

1/2 c Italian Panko
1/4 c crushed canned onion rings
Cut peppers in half, scoop out seeds and pulp.
Just cover with water.
Parboil peppers for 3 minutes in water.
Remove with spider or slotted spoon and drain on paper towels.

Filling
Sauté onion in a little olive oil.
Add sausage and brown, add seasonings, cream, wine and herbs. Microwave rice.
In a bowl, add meat mixture, rice and potato flakes.
Spoon into each pepper half.
Sprinkle with cheese, crushed onion rings and Panko.
Place the sauce in bottom of large pan.
Add stuffed peppers.
Bake in a preheated 400 degree oven for 30 minutes, yum 

Brio Tuscan Sweet Potato and Chicken Risotto




Ps.139:
1 O LORD, you have searched me and known me! 
2 You know when I sit down and when I rise up; you discern my thoughts from afar. 
3 You search out my path and my lying down and are acquainted with all my ways. 
4 Even before a word is on my tongue, behold, O LORD, you know it altogether. 
5 You hem me in, behind and before, and lay your hand upon me. 
6 Such knowledge is too wonderful for me; it is high; I cannot attain it. 




2 ounces olive oil
4 ounces pancetta
12 ounces sweet potatoes, roasted (recipe below)
8 ounces asparagus, grilled, cut on a diagonal
24 ounces chicken stock (may be purchased)
24 ounces risotto, cooked (recipe below)
12 ounces pulled oven-roasted chicken
4 tablespoons unsalted butter
8 tablespoons Reggiano or Parmesan cheese, shredded
4 pinches salt and pepper
4 teaspoons pine nuts, toasted (place in 350 degrees oven for five minutes and toast till golden brown)
4 teaspoons fresh thyme, chopped

Heat oil in a sauté pan.
Add pancetta and sauté until golden brown and crispy.
Add sweet potatoes, asparagus, chicken stock and risotto.
Stir to combine and cook risotto.
Add chicken, butter, Reggiano or Parmesan and salt and pepper.
Stir to mix.
Place on a serving plate and garnish with pine nuts and thyme.

Roasted sweet potatoes
Dice 2 sweet potatoes, mix with salt and pepper and olive oil to coat. Place in a 350 degree oven for 35 minutes and cook until slight browning occurs.

Risotto
1 quart chicken stock
2 cups water
1 tablespoon extra-virgin olive oil 

1 small onion, chopped
2 cloves garlic, finely chopped or grated
1 cup Arborio rice
1⁄2 cup white wine
2 tablespoons butter, cut into small pieces

In a large pot, heat the stock and 2 cups water over medium low heat.
In a risotto pot or large skillet with a rounded bottom, heat the extra-virgin olive oil over medium to medium-high heat.
Add the onions and garlic to pan and saute to soften 3 to 4 minutes.
Stir in the rice and heat the rice for one to two minutes, then add the wine and cook until evaporated.
Add in the hot stock a few ladles at a time and stir for a minute with each addition to develop the starch and the creamy aspect. Total cooking time will be about 18 minutes or so. Keep adding stock each time the pan starts to become dry at the edges.
When rice is cooked to al dente, stir in the butter and cheese. Season with salt and pepper, to taste and transfer to a sheet pan and cool.

Jim Beam Chocolate Pecan Pie

FRIDAY, AUGUST 22, 2014 








Romans 12:12
Rejoice in hope, be patient in tribulation, be constant in prayer.


1 (9 inch) deep dish pie shell 1/2 c white sugar
1/2 c brown sugar
1 c light corn syrup

1/2 c butter
4 eggs, beaten
1/8 c bourbon
1 t cinnamon
1/4 t salt
3 oz. semisweet chocolate bar, chopped 

1 c chopped pecans

Preheat oven to 325 degrees.
In a medium glass bowl melt butter in microwave.
Combine sugars and corn syrup into warm butter, stirring constantly, until sugars dissolves. Cool slightly.
In a large bowl combine beaten eggs, bourbon, cinnamon and salt.
Mix well with a whisk.
Slowly pour sugar mixture into egg mixture, whisking constantly.
Stir in chocolate and pecans.
Pour mixture into pie shell.
Bake in preheated oven for 50 to 55 minutes, or until set and firm.

Freezing Fresh Herbs In Olive Oil

The Lord will rescue me from every evil deed and bring me safely into his heavenly kingdom. To him be the glory forever and ever. Amen.



Chop your selection of fresh herbs.
Spray with non-stick spray. 
Place in an ice cube tray.
Cover with olive oil.
Wrap in plastic wrap and label.
Freeze, then pop out. 
I put mine on a paper plate, then in a freezer bag. 
I have had success with sweet basil, cilantro, sage, spicy oregano, spicy basil, oregano, and flat leaf parsley. The herbs stay beautiful and green!

Avocado Crema





Romans 11:36
For from him and through him and to him are all things. To him be glory forever. Amen.





1 large ripe avocado
1/4 c sour cream
2 T cream
3 t lime juice 
1 t honey
1 T Sriracha hot sauce
1 roasted clove garlic
1/2 t roughly chopped fresh cilantro
1/2 t cumin
1/2 t kosher salt

Mix well with a fork, mashing avocado. This stuff is delish! Serve on top of serving of Chicken Tortilla Stack.


Chicken Tortilla Stack

5 As for you, always be sober-minded, endure suffering, do the work of an evangelist, fulfill your ministry.



1/2 stick of Cream Cheese, softened
2 T taco seasoning 
2 T cream

3 c  shredded rotisserie chicken
1/2 can black beans, rinsed
1/4 c salsa
1/2 c onions, diced
2 T fresh cilantro
1 can enchilada sauce

3  medium size flour tortillas 
3/4 -1 c cheddar Cheese

HEAT oven to 375ºF.

Mix softened cream cheese, taco seasoning and cream until blended. Combine next 5 ingredients in large bowl. Add half the cream cheese mixture; mix lightly.

Spray round casserole with non-stick spray.
Spread a thin layer of enchilada sauce in bottom of casserole pan.
Place a tortilla in casserole pan.
Spread 1/3 of the chicken mixture onto tortilla, 1/3 of the cheese, add another tortilla, a little sauce then the chicken mixture, then 1/3 of the cheese. Repeat. Top with remaining cream cheese mixture and shredded cheese; cover.

Bake 25 min. or until heated through, uncovering for the last 5 min.

To serve, add a spoonful of avocado crema.

Shrimp Dan Dan Noodles






Romans 2:4
Or do you presume on the riches of his kindness and forbearance and patience, not knowing that God's kindness is meant to lead you to repentance?


1/2 of a box of angel hair pasta
1/4 c chicken broth(I use chicken base seasoning and add water) 
1 t cornstarch
1 1/2 t soy sauce
1 1/2 t oyster sauce

1/2 T sweet chili Thai sauce
1/2 T Hoisin
4 chicken tenderloin, cut into tiny bite-sized pieces 8 frozen Shrimp, tail removed
1 t roasted garlic
1/2 t fresh ginger
2 T scallions or leeks, sliced matchstick cut
1/2 c crushed sweet and salty peanuts
Salt and pepper to taste

Lightly sprinkle red pepper flakes

Garnish: crushed peanuts, matchstick cut cucumber slices Prepare noodles in boiling water and drain.
In a bowl, stir cornstarch into broth until dissolved. Add soy sauce, oyster sauce, hoisin and Thai sauce. Mix well.
Bring a oiled large skillet to medium heat. Add chicken, ginger and garlic. Cook and stir for about 4 minutes, until chicken is cooked through. Add shrimp, cooking until thawed. Don't over-cook.
Stir sauce mixture and add to skillet. Add noodles. Cook and stir until sauce has slightly thickened and noodles are hot, about 2 minutes.
Add salt, pepper and red pepper flakes.
Add cucumbers and crushed sweet and salty peanuts.

Easy Peach Ice Cream

11 And such were some of you. But you were washed, you were sanctified, you were justified in the name of the Lord Jesus Christ and by the Spirit of our God.

The possibilities are endless!!!
2 heavy cream, well-chilled
1 c sweetened condensed milk 
1 cut and mashed fresh peach
With a hand mixer beat cream until it leaves trails of firm peaks in the bowl. Fold in the other ingredients.
Fill one 1-pint airtight container and freeze for 6 hours or overnight. Serve straight from the freezer.

Sweet Basil Cream Cheese Potatoes





2 Cor.11:4
For if someone comes and proclaims another Jesus than the one we proclaimed, or if you receive a different spirit from the one you received, or if you accept a different gospel from the one you accepted, you put up with it readily enough.


6 medium red potatoes
2 T cream cheese
1 T chicken seasoning base
1/4 c heavy cream
1/4 c fresh chopped sweet basil


Boil chopped potatoes in water seasoned with seasoning base until just about all the water is cooked out. Potatoes should be fork tender. Remove from heat. Add all the rest of the ingredients except basil, stir leaving potatoes chunky. Add basil.

Butter Sautéed Parmesan Leeks And Asparagus






2 Cor.11:
14 And no wonder, for even Satan disguises himself as an angel of light.
15 So it is no surprise if his servants, also, disguise themselves as servants of righteousness. Their end will correspond to their deeds.






1t butter
1/2 t olive oil
1 lb. Baby asparagus 
1 Leek, sliced
1 clove Roasted garlic
2 T Parmesan Reggiano
Salt 
Pepper
Good size sprinkling of Parmesan and Romano cheese


Add butter and oil to skillet and heat, then add the leeks and garlic. 
Now add asparagus tossing in butter oil mixture, salt and pepper.
Continue sautéing on medium heat until asparagus begins to lightly brown. Add the Parmesan Romano and it's ready. 


EJ's Marinated Catalina Chicken Wraps

This turned out great, made a wonderful wrap and the chicken was so moist and flavorful! You could use this marinade for shrimp too!

Marinade
1 bottle of Catalina dressing 
1/2 c white wine
1/4 c lemon juice

Marinate pounded thin chicken breast for 2 hours. Drain well.
Salt with smoked salt and coarse cracked pepper.
Pan sear in a tad of olive oil.
Cook on a rack in a foil pan with water and white wine. Bake in convection oven for 16 minutes on each side.
Turn on broiler and blacken a little.
Thin slice on the long side.
Serve as a wrap or on Naan bread.
Add lettuce, Vidalia onion and a drizzle of Ranch dressing!

Beef Ragout

1 Cor.3:7
So neither he who plants nor he who waters is anything, but only God who gives the growth. 

2 T olive oil
1 Onions, chopped
1 small package Mushrooms

1 lb. beef tips
2 T olive oil
1 heaping T Chicken base seasoning 1 T Roasted garlic
2 T Worcestershire sauce
1/2 t Sugar

1/2 c Red wine
3 c Water
Small can Tomato paste 2 T Flat leaf parsley
5 Carrots, cut in chunks

Sauté onions and mushrooms in the oil in a pressure cooker. Remove onion. Add oil to pan and heat, add beef.
Add base, garlic, Worcestershire, and sugar, sear beef. Now add the wine and cook just a couple of minutes. Add water, paste, parsley and carrots.
Bring pressure up and cook 30 minutes.
Serve over rice, creamed potatoes or pasta.
