Old Time Sock It To Me Cake





































This is an oldie but a goodie!!  

                                                         

It's like a pound cake and and coffee cake had a baby!




Isaiah 57:16


    [16] For I will not contend forever,

        nor will I always be angry;

        and the breath of life that I made.




Streusel Filling:


2 tbsp cake mix

2 tbsp brown sugar 

2 tsp ground cinnamon 

1 cup finely chopped pecans 



1 pkg Duncan Hines® Moist Deluxe® Golden Yellow Cake Mix 



Cake:


4 large eggs 

1 cup sour cream 

1/3 cup vegetable oil 

1/4 cup water 

1/4 cup granulated sugar 


Glaze:


1/2 cup Duncan Hines® Creamy Home-Style Classic Vanilla Frosting 



Preheat oven to 375°F. Grease and flour 10-inch tube pan.


To prepare streusel filling, combine 2 tablespoons cake mix, brown sugar and cinnamon in medium bowl. Stir in pecans. Set aside.


To prepare cake, combine remaining cake mix, eggs, sour cream, oil, water and granulated sugar in large bowl. Beat at medium speed with electric mixer 4 minutes. Pour two-thirds of batter into pan. Sprinkle with streusel filling. Spoon remaining batter evenly over filling.


Bake at 375°F for 45 to 55 minutes, or until toothpick inserted in center comes out clean. Cool in pan 25 minutes. Invert onto serving plate. Cool completely.


Place frosting in small microwave-safe bowl. Microwave at high power 10 seconds; add 5 to 10 seconds if needed. Stir until smooth and thin. Drizzle frosting over cake.

Porchetta with Red Wine Gravy


































Matthew 7:1-6

[3] Why do you see the speck that is in your brother’s eye, but do not notice the log that is in your own eye? [4] Or how can you say to your brother, ‘Let me take the speck out of your eye,’ when there is the log in your own eye? [5] You hypocrite, first take the log out of your own eye, and then you will see clearly to take the speck out of your brother’s eye.


[6] “Do not give dogs what is holy, and do not throw your pearls before pigs, lest they trample them underfoot and turn to attack you.

Porchetta *, cut into bite size pieces

1 t olive oil

3 T Flour

1 Onions, sliced

1/4 c Cabernet Sauvignon 

1/4 c Water

3 T Half and half

Salt and pepper, to taste


Sauté onion in oil.

Add flour, stir until dissolved.

Add Cabernet, sauté 1 minute.

Add water and cream, sauté until gravy thickens.

Season.

Serve over mashed potatoes!

Ginger Ale Greek Yogurt Mini Biscuits

1/2 c mini Canada Dry Ginger Ale

1/2 c Cabot Whole Milk Greek Yogurt

2 c buttermilk Pioneer biscuit mix


1/4 c butter


Preheat oven to 450 degrees.

As oven preheats melt a 1/4 c butter in a 8 inch light colored square pan.

Place on oven middle rack to melt butter and to cook biscuits.

Watch and do not burn.

Add biscuit mix to large bowl.

Using a fork, cut yogurt into biscuit mix.

It should have bead size lumps.

Form a rough shaggy ball.

Pat out to 1/2 inch thickness onto a sheet of floured parchment.

Cut out with a mini biscuit cutter.

Bake until biscuits slightly brown, around 12 minutes.

Sliced Filet of Beef with Briny Cilantro Scallion Relish



































Psalm 19:11-12

2 Beef Filet, seasoned with your favorite rub ( I make one that's delicious) *

Salt and Pepper to taste

Pinch Smoked paprika 

 

Splash of Olive oil in large skillet for frying steaks.

Over medium high heat, heat oil in skillet.

Add steaks. 

Flip to other side to insure even browning.

Cook to medium.

To finish, add 1/8 c Bourbon to fillets.

To serve, slice thin, drizzle relish over slices.

Serve with a baked potato and salad.

This is a cross between persillade and chimichurri. 

Countless uses, giving such a fresh taste to all kinds of meats!!

1 bunch fresh cilantro, cleaned and rough chopped

1/2 c extra virgin olive oil

Salt and pepper to taste

2 scallions, sliced thin

3 T rough chopped Greek peppers

1 t Greek Pepper brine

1/4 c capers, rinsed and drained, diced 

1 T roasted and mashed garlic

1 t sugar


Mix well and refrigerate.

Spicy Sausage and Three Cheese Grits with Marinated Tomato Scallion Salsa

Pot of cooked grits

1/4 c Unexpected Cheddar 

1/4 c Smoked Cheddar

1/4 c Sharp Cheddar for sprinkling

1 c Spicy Smoked Sausage sliced really thin

1/2 Leeks, sliced thin

1/2 Bell pepper, cut in thin strips

3 T Olive Garden Italian dressing

2 Campari Tomatoes, diced 

2 Scallions, diced



Dice tomatoes and scallions.

Add dressing, set aside.

For creamy grits, cook in milk and water.

Add Smoked Cheddar and Unexpected cheddar.

Stir fry sausage, leeks and peppers together.

Set aside.

To assemble:

Place cheese grits in bowl.

Cover the middle of grits with sausage mixture.

Sprinkle sharp cheddar on outer edge of grits.

Spoon marinated Scallion tomato salsa on the side.

This was delicious, reminiscent of shrimp and grits!!

Bourbon Brown Sugar Molasses Pork with Jalapeño Gravy
































WOW!! Delicious comfort food!

        because he is at my right hand, I shall not be shaken.

4 c Pork chunks, I cut mine out of a pork roast which I trimmed off fat

Mardi Gras seasoning, salt and pepper, sprinkle over pork chunks

2 T olive oil


Preheat oven to 400 degrees.


In a Dutch Oven, on stove top, brown in olive oil.

Throw in onions and peppers.

Stir fry 1 minute.

Over the browned pork sprinkle brown sugar and Molasses.

Stir well.

Add water and Bourbon.

Bake 1-1/2 hours, covered, or until pork is tender.

Check half way through and add water if necessary. 


1 Jalapeño, seeds and spines removed, diced 

1 small Onion, chopped

2 T brown sugar

1 /2 t Molasses 

1/8 c Bourbon 

1-1/2 c water



Cornstarch slurry to thicken gravy.

Serve over garlic mashed potatoes with a side of tossed salad.

Meaty Brunswick Stew































Psalm 14:1-3


To the choirmaster. Of David.

    [2] The LORD looks down from heaven on the children of man,

        to see if there are any who understand,

        who seek after God.


    [3] They have all turned aside; together they have become corrupt;

        there is none who does good,

        not even one.



2 c Rotisserie chicken breast, shredded

2 c BBQ pork, shredded

2 c Beef Brisket, thin sliced

1 Onion, diced 

1 can Lima beans, drain

1 can corn, drain

4 medium potatoes, I par cook mine in microwave, chopped 

1 28 oz diced or crushed tomatoes 

2 c beef stock

1/4 c ketchup

3 T brown sugar

2 T Apple cider vinegar

2 T Worcestershire sauce

1/2 t Cajun seasoning 

Pinch of cayenne 

1/8 t black pepper

1/4 t garlic granules 

1 T Texas Pete


Put in a large pot, stir well.

Bring to a light boil.

On simmer, cook 30 minutes or until flavors have developed.

Serve with cornbread.

Kung Pao Chicken Stir Fry





































Psalm 8:9


    [9] O LORD, our Lord,

        how majestic is your name in all the earth!



 

Cut 1 chicken breast sliced thin and cut into 1/4 inch equal pieces.

Put marinade in a gallon size ziplock.

Place in marinade for up to 2 hrs.

Drain chicken.

Place 1 T of sesame oil in hot skillet.

Fry chicken until partially cooked, remove to plate.


Marinade for chicken 

1/8 c sweet chili Thai sauce

1/8 c lite Soy sauce

1/8 c Hoisin 


Veggies

2 T Roasted Garlic 

3 T Sushi Ginger slices, diced

1 c Cabbage, sliced thin 

1 small Onion, sliced thin

1 c Broccoli florets

1 T sesame oil


Add oil to skillet and heat.

Stir fry veggies in hot skillet until partially done.

Add chicken back in, cook just till chicken is done, about 5 minutes.

Add rice and and stir.

Add peanuts to serve.


1 c cooked Jasmine rice, set aside

1 c dry roasted peanuts
