Hash Brown Fried Bologna Skillet Nest

2- 6 inch cast iron skillets

Clarified butter to grease skillet


Drizzle of clarified butter

3/4 c Hash browns, I used dehydrated that I reconstituted and pressed water out

1/4 c Parmesan Cheese/white cheddar equal mix

2 slices thick sliced fried Bologna, chopped

Cooked Egg whites, seasoned with your favorite seasoning

Sweet 100 sliced tomatoes 


Preheat oven 450 degrees.


Fry bologna crisp, chop, set aside.

Fry egg whites, season, set aside.

Slice and season tomatoes, set aside.


In a bowl, to the hash browns, add a drizzle of clarified butter and the cheese.

Mash into skillet.

Bake 15-20 minutes or until hash browns are crispy around the edges.

Remove and fill.

With the oven off, set back in oven to heat fillings

Chicken Bone Broth Italian Wedding Soup




































From new moon to new moon, and from Sabbath to Sabbath, all flesh shall come to worship before me, declares the LORD.  - Isaiah 66:23



2 qts strained chicken bone broth*

1 c chicken from the strainer, pick carefully looking for bones

From the strainer remove carrots, celery and 2 t of the spices 

10 browned meatballs, I make my own*

1 can of garbanzo beans, drained

2 c Spinach 

1/2 t sugar

1 c of tiny shell pasta, I got mine at Walmart in Mexican product section

3 T bruschetta, I make my own*

1 inch piece of Parmesan rind


Put into pot and bring to boil. 

Simmer 30 minutes.

Rotisserie Chicken Bone Broth

Carcass of a Rotisserie chicken including fat jelly in bottom of container ( I used the Costco one) 

5 qts Water

1 c Celery

1 c Onion

2 large Carrots

2 T roasted garlic 

1/8 c kosher Salt

1 T black pepper 

1 t dried Rosemary 

1 t dried Thyme

2 bay leaves

2 T Dry Onion soup, I make my own

2 T Apple cider vinegar 


Bring to boil, turn to simmer.

Simmer, covered 2 hours.

Remove the bones with a large slotted spoon.

Reserve carrots, celery and 2 t of spices.

Strain.

Put into jars and freeze!

Pressure Canned Chipotle Chicken in Adobo

3 lb Boneless chicken thighs, browned in olive oil in skillet, seasoned with plain sea salt and pepper

1/4 c Onions, thin sliced

1 T roasted Garlic

Pinch of Sugar

1 t Oregano

1 t Cilantro 

1/2 t Chipotle in Adobo

Chicken stock made from chicken base


Place in pint jar in order listed.


Add warm chicken stock to cover each jar full, remove air bubbles, 1 inch head space, clean jar top with vinegar.

Add ring just finger tight.

Add to canner following manufacturers directions.

Serve as tacos, nachos, on salads or I'm stuffing a baked potato with the chicken, steamed broccoli, cheese, sour cream and butter.

Italian Dressing Pan Seared Rotisserie Chicken Sandwich

Makes 2 sandwiches!


1 c Rotisserie chicken breast 

1/8 c Olive Garden Italian dressing 

2-4 Provolone cheese slices

Sliced Onion

Greek pepper slices 

Sliced tomatoes 

Honey Wheat bread


Thick pull chicken.

Add 1/8 c dressing to skillet and heat.

Add chicken, using tongs, flip chicken around until all the dressing is cooked out.

Fry chicken until it has that grilled appearance.

Add a slice of provolone to bread and toast.

Build sandwich. Enjoy!

White Wine Canned Smoked Chicken and Rice







































1 Who has believed what he has heard from us? And to whom has the arm of the LORD been revealed? 

2 For he grew up before him like a young plant, and like a root out of dry ground; he had no form or majesty that we should look at him, and no beauty that we should desire him. 

3 He was despised and rejected by men, a man of sorrows and acquainted with grief; and as one from whom men hide their faces he was despised, and we esteemed him not. 

4 Surely he has borne our griefs and carried our sorrows; yet we esteemed him stricken, smitten by God, and afflicted. 

5 But he was pierced for our transgressions; he was crushed for our iniquities; upon him was the chastisement that brought us peace, and with his wounds we are healed.  - Isaiah 53:1-5



1 pint of canned smoked chicken, I smoked and then canned 

1/4 c Sovereign Blanc 

1/4 c evaporated milk

10 Green onions, chopped 

1 c Mushrooms, chopped 

1/2 t Thyme

1/2 t Rosemary 

1/2 t Sage

1/2 t black pepper


Drizzle of olive oil in skillet.

Throw in mushrooms and green onions.

Sauté until tender.

Add smoked chicken, wine, evaporated milk and the canning broth.

Reduce then add seasoning.

Serve over sticky rice!

Chipotle Beef in Adobo




































8 By oppression and judgment he was taken away; and as for his generation, who considered that he was cut off out of the land of the living, stricken for the transgression of my people? 

9 And they made his grave with the wicked and with a rich man in his death, although he had done no violence, and there was no deceit in his mouth. 

10 Yet it was the will of the LORD to crush him; he has put him to grief; when his soul makes an offering for guilt, he shall see his offspring; he shall prolong his days; the will of the LORD shall prosper in his hand. 

11 Out of the anguish of his soul he shall see and be satisfied; by his knowledge shall the righteous one, my servant, make many to be accounted righteous, and he shall bear their iniquities. 

12 Therefore I will divide him a portion with the many, and he shall divide the spoil with the strong, because he poured out his soul to death and was numbered with the transgressors; yet he bore the sin of many, and makes intercession for the transgressors.  - Isaiah 53:8-12




Each half pint jar

Yield 15 pints

1 inch headspace



Total amount of Chunks of chuck roast beef when trimmed, 7-1/2 lbs


1/2 lb Beef chunks per pint

1/2 c Sliced onions

1 t Garlic, chopped

1/2 t leaf Oregano

1/2 t kosher salr

2 T Fresh cilantro, chopped

1 t Chipotle in Adobo, chopped 

Beef broth made from beef base


Fill jar with the above ingredients, in the order listed.

Remove air.

Add beef base.

Clean glass tops with vinegar, add flat tops, secure with bands only finger tight.

Process for 75 minutes at 11 lb pressure.

Maple Bourbon Brown Sugar Ham































5 I am the LORD, and there is no other, besides me there is no God; I equip you, though you do not know me,

7 I form light and create darkness; I make well-being and create calamity; I am the LORD, who does all these things.  - Isaiah 45:5-7






Bone in fully cooked ham

1 c water in bottom of pan.


Sauce

1/3 c Yellow mustard

1 t Bourbon

1 1/2 c Brown sugar

1 t Maple flavoring 


Make sauce and set aside


Bake preheated 325 oven for a total of 3 hrs.

Use a roasting rack, place ham bottom up in a large heavy duty foil pan.

Score.

Dry roast, tightly covered with foil for 1 & 1/2 hrs. 

Roast should be 130 degrees, if nor recover and put back in 20 minutes 

When it's 130 degrees, spoon on sauce.

Can baste a few times with pan drippings if desired.

Recover tightly and finish cooking until internal temp reaches 150 degrees.

Rest 20 minutes before slicing!

Lemon Cream Cheese Pudding Blueberry Trifle

1 tube pan angel food cake, cubed
3 c blueberries 

Pudding
1 room temp block of cream cheese (needs to be really soft)
2 small boxes of instant lemon pudding ( use powdered pudding only)
3 c milk ( needs to be room temp)
8 oz non dairy whipped topping 

Using an electric beater, beat cream cheese and dry pudding mix.
After mixture is mixed, add milk a little at a time, beating with electric mixer.
Fold in 2/3 of the non dairy topping.
Reserve rest for top of trifle.

#2 Layer pudding
#3 Layer blueberries

Top
Non dairy topping
Lemon slices
Blueberries 

Jalapeño Red Pepper Jelly






































"O LORD of hosts, God of Israel, enthroned above the cherubim, you are the God, you alone, of all the kingdoms of the earth; you have made heaven and earth. - Isaiah 37:16





3 red bell peppers
1 yellow bell pepper
1 large green jalapeño pepper

De-seed and core peppers. 
Cut into chunks.
Pulse in food processor until chopped into bits.

Pinch of red pepper flakes
3 c sugar
1 c white wine vinegar
1 T butter
1/2 t kosher salt

To a heavy bottom pot add peppers and all ingredients.
On medium high heat, bring to a rolling boil, keep stirring for 20 minutes until desired thickness.
Do not over cook! 
Spoon into 1/4 size jelly jars.
Refrigerate for up to a month.
Serve on cream cheese with crackers!

Tuscan Style Smothered Chicken Marsala

3 Chicken breast, cut in half lengthwise and pounded thinner
1/2 c Italian style Bread crumbs
2 T Tuscan seasoning
2 c Shredded Mozzarella
1 Leeks, sliced thin
1 small Baby Bella's, sliced thin
2 T Clarified butter
2 T Olive oil
1/4 c Sweet Marsala
1/4 c Heavy cream

1 t olive oil for saluting veggies.

Place the Tuscan seasoning in the bread crumbs.
Toss chicken.
Heat the butter and oil.
Fry chicken until lightly browned.
Place chicken on a plate and set aside.
Wipe out skillet and add 1 t olive oil to sauté leeks and mushrooms.
When they are tender add Marsala, sauté 2 minutes and add cream, reduce until slightly thickened.
In a 13 x 9 pan add a little of the gravy mixture and 1/2 c cheese to the bottom of the pan.
Place chicken on top, then add rest of the gravy and top with rest of cheese.
Bake 20 minutes, preheated, middle rack of oven. 
Serve over angel hair pasta!
