Scratch Panang Curry Chicken

2 c chicken tenders, sliced on diagonal thin
1 can coconut milk, divided
Cream-thick and watery thin, do not shake up
1 level t Panang curry paste, order online, it has endless uses to add spicy to any dish
1 t basil, crushed
1 t kariff powder, order Kariff lime leaves and put into coffee grinder then sift 
1 t palm sugar, order or go to Asian store
1/2 t anchovy paste, Walmart has this
1 T mushroom Soy sauce, this stuff is delicious but use sparingly, it’s salty, order online

Veggies
1/2 c broccoli florets
1/2 c sliced onions

Serve over sticky rice!


When you open can, spoon off the thick cream part and reserve thin watery coconut juice. 
Add cream to wok or large skillet and stir 5 minutes so it sorta separates. 
Add curry paste and mash to incorporate, cook 2 minutes. 
Add chicken and bring to boil.
Simmer 5 minutes, thin chicken cooks quickly.
Add palm sugar to side mashing to incorporate, add 1/2 c of thin watery coconut juice stirring to make sauce.
Add anchovy, soy, spices and veggies.
Cook 4 minutes.
Serve over rice with a thin drizzle of coconut juice over dish.

Fried Squash and Green Tomatoes

An ej original!

3 medium yellow Squash, chopped small
3 medium green tomatoes, chopped small
1 onion, chopped small
1 Raw egg
Seasoned salt, to taste
Light sprinkle of Garlic granules 
Black pepper, to taste
1/4 c Cornmeal
1/8 c Flour
1/8 c Panko

Enough olive oil to cover bottom for pan frying.


Add chopped veggies to a large bowl.
Crack a whole egg into them and stir with a spatula.
Sprinkle dry ingredients over veggie-egg mixture.
Veggies should be very slightly wet with a coating of the dry ingredients.
Fry in hot oil letting the mixture sit until the bottom is crusty, then flip to get the other side crusty.
Do this flipping a few times until veggie are soft and crispy.

DeKuyper Cherry Brandy Pan Fried Beef Fillets

An ej original recipe!

4 Beef Fillets
Seasoned meat tenderizer( lightly season both sides)
Rub of your choice( I make mine) lightly season both sides 
2 T Clarified butter
1 t olive oil
1/8 c water
2 T Cherry Brandy
2 T Worcestershire sauce

Season beef with the tenderizer and the rub.
In a non stick fry pan add clarified butter and a tad of olive oil.
Heat on high and add beef to sear on both sides. 
Turn heat to medium cook 4 minutes, flip cook another 2 minutes. 
Add water and Worcestershire sauce.
Cover loosely with foil for 1 minute, flip repeat.
Add Brandy, cut off heat, cover with foil and let sit 1 minute, flip, cover and let sit 1 minute.
Rest covered for 5 minutes.
Yum!

Gochujang Thai Pork

An ej original recipe!!

Boneless Country Pork Ribs, cut into 3 inch chunks
1 t Gochujang
1 Onion
1 Pink Lady Apple
1/2 t seasoned salt
1 T olive oil
1/2 small lime squeezed on pork

Squeeze lime on pork.
Season with salt.
Rub Gochujang on pork.
Sear in a cast iron Dutch oven.
Add the rest of the following ingredients.

2 t Hickory liquid smoke
2 t Soy sauce
2 t Worcestershire sauce
1 t Powdered mustard
1 c water

Cover, bake in preheated 350 degree oven for 1-1/2 hours. 
Stir and chunk.
Put under broiler to crisp up.
Serve as Nachos, on tortillas or buns.

Fresh Made Spicy Chow Chow

Delicious, versatile recipe! 
Good on tacos, BBQ, sandwiches, peas or beans.

1/2 of a medium head Cabbage, thick shredded, mine made 4 cups
1 any color Bell pepper, cut in strips
1 large Onions, chopped
3 large Green tomatoes, chopped
3 large Red tomatoes, chopped
1/8 c Sea Salt

Prepare veggies.
Add to bowl.
Place salt on top and using hands, toss.
Set aside.

Add the below ingredients to a large sauce pan.
Heat until sugar is melted.
Add veggies and cook on medium for 30 minutes.
Add to clean jars, wipe lid rim, slightly tighten lids and boil in water for 30 minutes.
Set on counter to cool and listen for the tops to pop.


1 t Dry mustard
3 T Pickled Jalapeño,chopped
1 t Aleppo Pepper
1 t Red pepper flakes
1-1/2 c white Vinegar
1-1/2 c Sugar
1/2 c Bread and butter pickle juice and the seasoning from bottom

Gochujang Potato Casserole









Hear my prayer, O LORD; give ear to my pleas for mercy! In your faithfulness answer me, in your righteousness!  - Psalm 143:1


An ej original recipe!


Yummy yummy yummy!!


8 -10 Potatoes peeled, chopped 1 inch chunks
12 oz can evaporated milk
1/2 c water
1/2 c half and half
1/8 t baking soda
2 T butter
2 t salt
1 t pepper
1/4 t - 1/2 t Gochujang or more according to heat preference 

Add to pot and bring to boil, stirring repeatedly.
Adjust to low but still keep stirring, it'll burn!
Cook 15 -20 minutes, potatoes should only be knife tender.
Pour into a 13x9 pan, add topping. 
Bake preheated 375 degree oven for 20 minutes or until lightly browned.
Top should be crunchy!

Topping
3 T melted butter
1 c panko
1 c grated fresh Parmesan 
Mix with fork.


Crunchy Top Green Tomato Casserole

4 green tomatoes, chopped small, set aside

Filling
1 pet evaporated milk
1/2 c water
1/8 t baking soda
1 T butter
Salt and pepper to taste

Add filling ingredients to pot and bring to boil, turn low and simmer 10 minutes until slightly thickened.
Set aside.

Topping
2 T melted butter
3/4 c panko
3/4 c grated Parmesan cheese

Stir with fork to moisten.
Set aside.

Add tomatoes to filling.
Add filling and tomatoes to a deep dish pie plate.
Add topping.
Bake preheated 375 degree oven for 30 minutes.

Chopped Beef Patty with Cherry Brandy Mushroom Mustard Glaze

4 large beef burger patties, I used ground chuck
1/2 c sliced mushrooms 
1 diced Shallot 
3 T of butter
Cracked black pepper, to taste
3 T Cherry Brandy
1/2 c chicken stock
2 t Worcestershire sauce
2 t Dijon mustard
1/2 t chopped chives
Salt to taste

Melt 2 T of butter in a skillet on medium heat, add beef and sear 3 minute on each side.
Remove to a plate.
Add the rest of the butter.
Throw in the shallots and mushrooms, cook until slightly tender.
Mix the wet ingredients, except chicken stock, together in a small bowl.
Add to skillet.
Then add the stock, cook another minute on medium heat.
Add beef back in.
Reduce heat and simmer down to a glaze.
You are in for a delicious treat.
Serve over garlic mashed potatoes.

Peperoncini Caper Dressing Pasta Salad































I sought the LORD, and he answered me and delivered me from all my fears.  - Psalm 34:4




This was a delicious American Test Kitchen knock off recipe!

1/2  lb Italian Fusilli pasta, I bought mine from World Market
Cook, drain, cool

Dressing
1 t roasted Garlic
1/4 t Anchovy paste
1/4 t Red pepper flakes
1/8 c extra virgin olive oil

Heat in microwave covered 30 seconds.

1/2 c Peponcini, sliced into rings, set aside

Process
3 peperoncini, 
2 T Capers

2 T brine and warm oil mixture, pulse

Add to pasta  

Add-ins
1/2 c sun dried tomatoes, thick chopped
1/4 c black olives
1/2 c thick chunked hard salami, I used Boars Head, I bought a thick slice and chopped myself
1/2 c fresh mozzarella balls

Add right before serving
1/2 c torn baby greens
1/4 c fresh torn basil
A few Ringed peperoncini 
Toss

Chicken Fajita Nachos

































Remember your mercy, O LORD, and your steadfast love, for they have been from of old.  - Psalm 25:6




2 Rotisserie chicken breasts, shredded 
2 T olive oil
1 Onion, slice paper thin 
1 Bell pepper, sliced paper thin
1 T Adobo seasoning
1/2 t Black pepper
3 T Double concentrate tomato paste
1/8 c Bourbon 
1 t apple cider vinegar
1 c Water
1 c Fajita cheese


In the oil on medium heat, sauté the onions and peppers.
Add the seasonings then the vinegar, tomato paste, Bourbon and water.
Next add chicken.
Sauté until liquids are absorbed.
Then add cheese.

Sour cream
Sweet 100 cherry tomatoes, sliced
Lime tostado chips
