Greek Corn On the Cob





























16 For people swear by something greater than themselves, and in all their disputes an oath is final for confirmation.
17 So when God desired to show more convincingly to the heirs of the promise the unchangeable character of his purpose, he guaranteed it with an oath,
18 so that by two unchangeable things, in which it is impossible for God to lie, we who have fled for refuge might have strong encouragement to hold fast to the hope set before us. - Hebrews 6:16-18



Fresh Corn, microwave 2 ears at a time, covered, flip, repeat
Lightly squeezed Fresh Lemon juice
Drizzle a little Clarified butter
Light dusting of Greek seasoning 
Season salt, to taste
Could add feta, I would have but I was out!!

Greek-Asian Fusion Fresh Chicken Stir Fry

4 Chicken tenderloin, sliced on diagonal and cut in half 
1/2 of a lemon, juiced 
1/2 t Greek seasoning (recipe this blog under seasonings)
1/8 c Lite soy sauce

Squeeze lemon over chicken, both sides, add soy sauce then Greek seasoning.
Set aside while prepping veggies.

Veggie mix
2 baby bok choy, washed, stem removed and chopped
1 Onion, sliced thin strips
2 large carrots, cut in half and slice on diagonal 
1 T roasted garlic
1/2 t Greek seasoning
Drizzle of Olive oil for sautéing

Add oil to large non stick skillet and heat.
Sauté the onions and carrots first, then add greens and seasoning.
Sauté just till greens wilt.
Remove to a plate.

Drizzle a tad more oil.
Add the chicken that has been cut on the diagonal into thin pieces and then cut in half.
Sauté just till no pink shows, 3 minutes, flipping to insure even cooking.
Then add marinade from chicken. 
Cook 2-3 minutes.
Add veggies back in.
Yum!
I served this with Greek corn, recipe under the vegetable tab and green beans.

Mini Gnocchi In Sauvignon Blanc Herb Cream

Mini gnocchi, I used Archer Farms from Target, cooked according to package directions

Gnocchi Sauce
3 T Butter
1 T roasted Garlic
1/4 t Fresh sage
1/4 t Fresh oregano 
1/4 t Fresh thyme
1/4 t Fresh rosemary 
1/8 c Sauvignon Blanc
1/8 c Heavy Cream
1/4 c Three cheese Italian blend, Trader Joe's
Smoked salt and cracked black pepper, to taste


Place butter, garlic and herbs in skillet.
Sauté until butter melts.
Add rest of ingredients in skillet.
Simmer sauce until it reduces and is fairly smooth.
Add cooked gnocchi and toss in cream sauce.
Serve with salad.

Quickie Panzanella for Two































1 Oh that you would rend the heavens and come down, that the mountains might quake at your presence-

1/2 of an English cucumber, chopped
4 radishes, chopped
3 Medium tomatoes, chopped
1/4 c Olive Garden Italian dressing
Season salt, to taste
Garlic granules, to taste
Cracked black pepper, to taste
1/4 c pickled red onion, recipe this blog under Mexican tab
2 slices of crispy toasted garlic bread, big chopped pieces

Mix veggies together, season, then add dressing. 
Toss in bread chunks right before serving.

Red Curry Chicken






























11 You clothed me with skin and flesh, and knit me together with bones and sinews.

Splash Olive oil
Splash Sesame oil
1 Shallot, diced
1 T Roasted Garlic
1 t Fresh Ginger, grated
4 Chicken tenders cut thin on the diagonal 
1 lime juiced over chicken
1 t chicken base seasoning
1 c Broccolini 
1/2 t sugar
1/2 t apple cider vinegar 

Sauce
1 (5 oz )can pet milk
2 T coconut 
3 T Mirin
Whisk together.


Slice chicken and squeeze lime over slices.
Sauté shallots, garlic and ginger in oils.
Add chicken, sauté until just cooked through.
Remove and set aside.
In the drippings sauté Broccolini, add sugar and Broccolini.
Add chicken back in, add sauce and thicken sauce.
Serve over sticky rice.

Chocolate Pastry





























For through the Spirit, by faith, we ourselves eagerly wait for the hope of righteousness. - Galatians 5:5





1 pastry sheet, I used a Pillsbury Crescent sheet 
1 egg white
1 giant size chocolate bar with almonds, 
Coconut
Almonds, sliced
Powdered sugar

Preheat oven to 375 degrees.
I used my toaster oven.
Unroll crescent sheet, place on parchment.
Lay chocolate bar in the middle.
On both sides cut strips so you can make a weave design on top of chocolate.
Trim ends and seal. 
Brush with egg white.
Sprinkle almonds and coconut down the middle.
Bake for 12 minutes or until golden brown.
Sprinkle powdered sugar on top.
Drizzled chocolate would be good too!
Yum, chocolate goodness!!

Boursin Party Biscuits


























But now that you have come to know God, or rather to be known by God, how can you turn back again to the weak and worthless elementary principles of the world, whose slaves you want to be once more? - Galatians 4:9



Ham, I used Sara Lee Honey Ham sliced on #2 slice
Homemade biscuits, I use Pioneer or Publix biscuit mix 
Boursin Shallot and Chive

Make biscuits according to box directions using buttermilk.
Pat out dough to 1/2" height.
Cut out biscuits with a mini round cutter.
I baked mine on 400 degrees for 12 minutes.
They should be lightly browned.
Melt butter and brush on biscuits after they are baked.
Cool and slice.
Stack ham and use biscuit cutter to cut ham into rounds.
Using a butter knife, spread Boursin on cut biscuits.
Add ham, yum!
I added Honey on a few pieces of ham for a slightly sweet taste, very delicious too.
We also ate these for breakfast and added a piece of fried egg.

Mini Penne Meatball Florentine

1-1/2 c mini Penne cooked 7 minutes resulted in an al dente pasta

8 Meatballs, I make my own and freeze, recipe this blog under the Italian tab, E J 'S Real Easy Scratch Spaghetti and Meatballs
Drizzle of clarified butter and olive oil
1 c frozen chopped Spinach
1 c Artichoke hearts, I love Trader Joe's frozen
1/4 c Leeks
1/2 c Mushrooms
Salt and pepper to taste
2 T Fresh herbs mix, sweet basil, oregano, thyme 

Sauce
1 c half and half
3 T butter, melted
1/2 lemon, juiced, include pulp
1/4 c Sauvignon Blanc
1/2 c Italian Three cheese blend, Trader Joe's
3 T Boursin, Shallot and Chive
1 c Pasta water

Sauté smashed up meat balls in clarified butter and oil.
Set aside in a plate, leave drippings.
Sauté spinach, leeks, mushrooms and artichoke hearts in left over drippings from meat sauté. 
Add herbs, salt and pepper.
Set aside in a plate.
Using the same skillet, melt butter, add wine then half and half.
Reduce just a little then add Boursin and cheese blend.
After these melt, add cooked pasta.
Put burner on simmer.
Then add pasta water a little at a time to help thicken sauce so it will stick to pasta.
Serve with garlic bread, chopped tomatoes and cucumbers.

Shrimp Scampi

2 T butter
2 T olive oil
1 Shallot
3 T roasted garlic
1/2 c Sauvignon Blanc
Smoked salt and White pepper, to taste
1 lb. Shrimp, cleaned, tail removed
Juice of 1/2 of a lemon
1 T mascarpone
Pinch of red pepper flakes
1/2 c Italian cheese blend

To finish
1/2 t dried parsley
1/2 t fresh rosemary 
1/2 t fresh thyme
1/2 t fresh oregano 

Serve over pasta.

Chunky Maple Cinnamon Granola






























29 When you hide your face, they are dismayed; when you take away their breath, they die and return to their dust. 
30 When you send forth your Spirit, they are created, and you renew the face of the ground.

Preheat oven to 325 degrees.
Line pan with parchment.
Bake, bottom rack, at 15 minute intervals, turn pan.
I use a gas oven and mine was done in 30-40 minutes. 
Should be light browned.
Cool to yummy crunchy goodness!!


Heat these wet ingredients.
1/8 c Honey
1/8 c maple syrup 
1/2 c brown sugar 
a drizzle of molasses
1/4 c water
1 t vanilla extract
1 t maple extract
1/4 t fine sea salt
Set aside to cool.

Whisk in with a fork these ingredients.
1/3 c olive oil
1 beaten egg white
Add to nut-oat mix.

Toss these dry ingredients together and set aside.
3 c old fashioned oats
1 c almonds, I used sliced
1 c pecans, chopped
1 c coconut 
1 t cinnamon 
3 T flour
After mixed well, add wet ingredients.
Pat down and bake.



Asian Chicken And Vegetables In Garlic White Sauce































28 And one of the scribes came up and heard them disputing with one another, and seeing that he answered them well, asked him, "Which commandment is the most important of all?"
29 Jesus answered, "The most important is, 'Hear, O Israel: The Lord our God, the Lord is one.
30 And you shall love the Lord your God with all your heart and with all your soul and with all your mind and with all your strength.'
31 The second is this: 'You shall love your neighbor as yourself.' There is no other commandment greater than these." - Mark 12:28-31



1 t olive oil
1 T ginger, grated 
1 T roasted garlic
2 c veggie mix, I used broccoli, onions, carrots, mushrooms, red bell pepper, shaved fresh corn
1 T Mirin
4 chicken tenders, sliced on bias

Stock liquid, add these together
3/4 c chicken base seasoning
Drizzle toasted sesame oil
1 T soy sauce
1 T Mirin
Pinch of red pepper flakes

Slurry
1 T cornstarch 
1/4 c water

1 beaten egg white

Place oil in pan, heat, add garlic and ginger.
Cook 2 minutes and add veggie mix.
Cook another 2 minutes.
Add Mirin, keep stir frying, add stock liquid and bring to boil.
Cook 2 minutes and add chicken.
Cook till chicken is done, about 4 minutes.
Add cornstarch slurry.
Stir fry until sauce begins to thicken.
Add the beaten egg white.
Serve over sticky rice.
