Asian Shrimp In White Sauce




































13 For you formed my inward parts; you knitted me together in my mother's womb.

1 t olive oil
1 T ginger, grated 
1 T roasted garlic
2 c veggie mix, I used broccoli, leeks, mushrooms, red bell pepper, and shelled edamame
1 T Mirin
1 lb. shrimp, cleaned and tail removed

Stock liquid, add these together
3/4 c chicken stock
Drizzle toasted sesame oil
1 T soy sauce
Pinch of red pepper flakes

Slurry
1 T cornstarch 
1/4 c water

1 beaten egg white

Place oil in pan, heat, add garlic and ginger.
Cook 2 minutes and add veggie mix.
Cook another 2 minutes.
Add Mirin, keep stir frying, add stock liquid and bring to boil.
Cook 2 minutes and add shrimp.
Cook till shrimp turn slightly pink.
Add cornstarch slurry.
Stir fry until sauce begins to thicken.
Add the beaten egg white.
Serve over sticky rice.

Beef Brisket Pineapple Tacos




































7 For none of us lives to himself, and none of us dies to himself.

2 c Chopped Brisket
Scant amount of adobo seasoning
Drizzle of oil
Sauté just till warm.

Pico de gallo
Fresh tomatoes, diced
Diced Sweet onion, I used Vidalia
Jalapeño, I used pickled, diced
Mix

Toppings
Cheddar cheese, shredded
Diced pineapple
Sour cream

Avocado Aioli 
1 Avocado, mashed
1/2 t mayo
1/2 t Greek yogurt
1/2 t smoked cumin
Salt and pepper, to taste

To serve, add meat to warmed tortillas.
Add toppings.

Lager Beef Stew






























36 Let all the house of Israel therefore know for certain that God has made him both Lord and Christ, this Jesus whom you crucified."

1 lb. Stew meat, lightly dusted with flour
Olive oil for browning meat

1 can larger beer
3 large yellow butter Potatoes 
4 Carrots
1 Onion
3 T Double concentrate tomato paste
1 t Sugar
2 T Worcestershire sauce
2 T Liquid smoke
1 c Chicken or beef broth
3 T Butter
2 T roasted Garlic, mashed 
1 t fresh Thyme
1 t fresh Rosemary

Brown meat in Dutch oven.
Add all seasonings, sugar, butter, Worcestershire sauce, liquid smoke, broth and lager. 
Add veggies.
Simmer, covered,  for 2 -3 hours until meat is tender.
Serve with toasted crusty bread.






Butter Bourbon Infused Oven Beef Brisket































42 And they devoted themselves to the apostles' teaching and the fellowship, to the breaking of bread and the prayers.
43 And awe came upon every soul, and many wonders and signs were being done through the apostles.
44 And all who believed were together and had all things in common.
45 And they were selling their possessions and belongings and distributing the proceeds to all, as any had need.
46 And day by day, attending the temple together and breaking bread in their homes, they received their food with glad and generous hearts,
47 praising God and having favor with all the people. And the Lord added to their number day by day those who were being saved. - Acts 2:42-47




Flat brisket, I got mine at Costco for $20

Injection liquid
1/8 c clarified butter
1 c chicken or beef stock, I used chicken because I made mine out of chicken base
1/2 t Garlic granules 
1/2 c bourbon

1/2 c Rub of your choice

Inject all the liquid into meat.
Wrap tightly in foil.
Refrigerate overnight.

Preheat oven to 250 degrees.
Unwrap meat and sprinkle rub over top.
Make a barrier out of several pieces of rolled up foil and place meat on top.
Add a 1-1/2 c equal amounts water-bourbon liquid mixture to bottom of pan.
Seal in foil and cook 3 hours.
Check temp, 160 degrees will be done. 
If not bump temp to 350 degrees and cook covered another 30 minutes to an  hour.
Check again after 30 minutes.
Mine ended up being 180 degrees, so watch carefully, still really delicious though!!!
I drizzled some juice over meat and put in fridge.

Moo Goo Chicken with Veggies































3 Blessed be the God and Father of our Lord Jesus Christ, the Father of mercies and God of all comfort,
4 who comforts us in all our affliction, so that we may be able to comfort those who are in any affliction, with the comfort with which we ourselves are comforted by God. - 2 Corinthians 1:3-4




Prepared sticky rice, I use frozen from Trader Joe's 

4 Chicken tenderloins, slice thin 
1 egg
2 T cornstarch 
1 t oil
1/4 t salt 

Veggie mix 
3 large Carrots, sliced into thin flat strips
1 Onion, sliced
1/2 c shelled Edamame, frozen
1 c Broccoli, cut into florets
1 c Mushrooms, sliced 
2 T roasted garlic

Slurry to add to sauce
2 t cornstarch 
1 T water
1/4 t salt
1/4 t toasted sesame oil

Sauce
1c water 
1 t sugar
1 T soy sauce
2 t Mirin
1/4 t white pepper
1/4 t salt

Add 1/2 c of oil and garlic to skillet and heat.
Add chicken and cook until it is slightly browned.
Remove to paper towel covered plate.
Clean skillet leaving only a tablespoon of oil.
Heat and add veggie mix.
Sauté for 3 minutes stirring frequently.
Add chicken back in. 
Add water mixture, cook 2 minutes.
Add slurry stirring frequently, cook 2 minutes.
Serve over rice.

Blackened Ground Beef Potato Casserole































14 Since therefore the children share in flesh and blood, he himself likewise partook of the same things, that through death he might destroy the one who has the power of death, that is, the devil,

1 lb. ground beef
1 can onion rings, reserve 1/2 of can
2 large butter tasting potatoes
1-1/2 c shredded cheddar cheese, reserve 3/4 c
Blackened seasoning to taste

Topping
1/2 can of onion rings
3/4 c cheese
1/4 c panko


Brown meat, add 1/2 of can of onions and season.
Set aside.
Microwave potatoes covered 3 minutes on each side.
Slice and chop.
Set aside.
Spray Casserole pan with non stick spray.
Add chopped potatoes and 3/4 c cheese.
Put under broiler until browned.
Add beef on top of potatoes.
Top with topping.
Bake preheated 350 degree oven for 30 minutes.
Serve with smoked sausage stir fried cabbage.

Tacos Al Pastor

























Rejoice in hope, be patient in tribulation, be constant in prayer. - Romans 12:12



1 pork tenderloin, golden rotisserie flavor
Cut into 1 inch slices, pounded thin

1 pineapple, cut into 1 inch slices(I used canned) 
Set aside

Paste
1-1/2 T smoked paprika 
1 T vinegar
3/4 t oregano
1 t roasted garlic, mashed
1/4 t toasted cumin

Mix into paste and set aside

Marinade for pork
3 T apple cider vinegar
All of the Paste
1/2 c pineapple juice
1/2 t roasted pasilla chili
1/2 t salt
1/2 t cracked black pepper

Make this in a gallon size ziplock bag.
Mix well a add pork.
Marinate 2 hours.
Add all meat slices and 4 slices of pineapple to a pan with foil.
In a preheated 350 degree oven roast for 45 minutes.

Serve on warm flour tortillas with avocado Aioli pickled onions, cheese of your choice, fresh chopped cilantro and chopped roasted pineapple.

Upside Down Apple Cake




























9 All the nations you have made shall come and worship before you, O Lord, and shall glorify your name.

Preheat oven to 375 degrees.

8 inch cast iron skillet
1-3/4 sticks butter
3/4 c sugar
5 Honey Crisp Apples, peeled, cored and cut in equal slices. ( Reserve 1 apple)

Melt butter on low heat in skillet and add sugar, stirring to melt sugar.
Add slices, arranging in a rows on outer edge of skillet working to the center.
Cook until apples are slightly soft and butter sugar mixture is thickened.

Cake batter
1 stick softened butter
2/3 c sugar 
Cream together with a mixer until fluffy.
With a spoon, mix in
1-1/2 t vanilla 
2 eggs
Then add 1/4 c sour cream, and 1/4 c buttermilk.

In another bowl, add dry ingredients.
1-1/2 c AP flour
1-1/2 t baking powder
1 t salt 
1 t cinnamon 
1 reserved apple peeled, cored and diced
Mix with a spoon.
Gradually add flour mixture into cake batter until just combined.
Batter will be thick.
Add to skillet on top of the apple mixture.
Spread with a spoon.

Bake 25 - 30 minutes.
Cool 10 minutes then flip onto plate with the apple side up.
Cut in half, then slice.
Serve with vanilla bean ice cream

Rotisserie Chicken Alfredo Tetrazzini





























And he did not permit him but said to him, "Go home to your friends and tell them how much the Lord has done for you, and how he has had mercy on you." - Mark 5:19




1 Leek, chopped
1 T roasted Garlic, mashed
1 t Clarified butter
1/4 c Sauvignon Blanc
1 c Water with 1 T cornstarch 
1/4 c Heavy Cream 
1 c ricotta
1 t Chicken base seasoning 
1/4 c Italian cheese blend, Trader Joe's Parmesan, Romano and Asiago 
2 c Rotisserie chicken, shredded
Cracked black pepper to taste
Fresh herb mix, rosemary, oregano and thyme
Cooked thin spaghetti, 2 c cooked al dente 


Sauté leeks and garlic in clarified butter for 1 minute.
When leeks are tender add wine, seasonings, cheese, cream, ricotta and water.
Stir to incorporate, reduce until thickened, keep stirring, add chicken and pasta.
Remove from heat.
Let sit a few minutes and add fresh herbs.

Blackened Grouper with Pine Nuts































11 And he said to them, "To you has been given the secret of the kingdom of God, but for those outside everything is in parables,
12 so that "'they may indeed see but not perceive, and may indeed hear but not understand, lest they should turn and be forgiven.'"  - Mark 4:11-12



6 Grouper fillets, mine were really thin
Blackened seasoned
Olive oil or clarified butter
Pine nuts
1/2 of a Lemon, juiced
Fresh herbs for finishing added at the end, I used rosemary, thyme, oregano and sweet basil, chopped tiny

Preheat oven to 425 degrees on convection bake.

Blackened seasoning
1 1/2 T Smoked paprika
1/2 t onion powder
1/2 t oregano
1/2 t garlic
1/2 t sugar
1/2 t thyme
1/4 t cayenne 
1/2 t black pepper
1/2 t coarse sea salt

Butter parchment.
Place fish on paper towels.
Squeeze lemon on fish.
Pat dry.
Add fish to parchment covered sheet pan.
Lightly oil or butter fish.
I used clarified butter.
Add a medium dusting of rub.
Add a little more clarified butter and a few pine nuts.
Bake 7-8 minutes for thin fish fillets.
Sprinkle fresh herbs.
Serve with tarter sauce.
