Vanilla Caramel Mocha Frappé






I have stored up your word in my heart, that I might not sin against you.  - Psalm 119:11







8 oz. strong cold coffee
1 oz. whole milk
1 oz. half and half
2 T chocolate malt
1/4 c caramel topping, extra for garnish
1/8 c agave
1 t vanilla
Ice 
Spray whip cream



Place all ingredients in a blender, blend.
Add ice to the top.
Pulverize ice until mixture is smooth.
Top with drizzle of caramel and spray whip cream.
Yum!!!

Chinese Beef Boneless Short Ribs






My soul clings to the dust; give me life according to your word!  - Psalm 119:25





2 1/2 c water
1/2 c dry red wine
1/3 cup soy sauce
2 T hoisin sauce
2 T molasses
3 leeks, white parts, cut on diagonal 
1 chunk ginger, peeled, halved and crushed
4 T roasted garlic
1/2 t five-spice powder
1/2 t red pepper flakes
3 lbs. boneless beef short ribs, trimmed and cut cross wise into 4-inch lengths

Add at the end.
1 t cornstarch, dissolve in 1/8 c water, to thicken sauce


Heat over medium-high heat, stirring occasionally 2 to 3 minutes. 
Stir in wine, soy sauce, hoisin, molasses, leeks, ginger, garlic, five-spice powder, and pepper flakes. 
Stir in beef and bring to simmer. 
Remove pot from heat. 
Cover tightly with sheet of heavy-duty aluminum foil, then the lid. 
Place back on heat and cook 1 1/2 to 2 hours on medium heat, stirring halfway through cooking.
Using slotted spoon, transfer beef to plate. Whisk in the watered down cornstarch mixture.
When sauce thickens, add beef back in.
So delicious!!!

Hot Fanny Sauced Pork Tenderloin

1 golden rotisserie flavored pork tenderloins, grill
Slice and drizzle hot fanny sauce all over.

Egg Noodle Mac & Cheese






1 God is our refuge and strength, a very present help in trouble. 
2 Therefore we will not fear though the earth gives way, though the mountains be moved into the heart of the sea, 
3 though its waters roar and foam, though the mountains tremble at its swelling. Selah  Psalm 46:1-3






Prepared egg noodles( I used 6 oz. dry and then cooked al dente)

1 shallot
1 t clarified butter
1 t roasted garlic
1/8 c red bell peppers

Sauté these together.


Cheese sauce:
1/2 c sharp Cheddar 
3/4 c smoked Gouda 
1/2 c Fontina  
1 t tomato paste
1 c half and half
1 t smoky chipotle Tabasco
1 t dry mustard
1 t smoked paprika 
Smoked salt
Cracked black pepper

Bring half and half up to a boil, add seasonings and cheeses.
Stir until melted.
Pour over noodles and top with crust.


Crust:
1/2 c panko
1/2 c sharp cheddar
1/2 c crushed canned onion rings

Bake 350 for 20 minutes.

Scratch Buttermilk Biscuits

2 c AP flour
1 T baking powder, level
1 t salt 
2 t sugar
6 T cold butter, cut into pats
1 c buttermilk with a pinch of baking soda


Brush tops with watered down buttermilk before baking.
Brush tops with melted butter after baking.

Place all dry ingredients along with the pats of butter in food processor. 
Pulse a few times to incorporate.
Put into a bowl and add buttermilk mixture.
Mix with spoon until the mixture comes together.
Flour hands and roll into ball.
Flour surface and kneed 8 times.
Pat until 1/4 inch thick.
Cut out with a biscuit cutter. 
I cut out 12 biscuits.
Bake preheated 425 oven for 15 minutes.
Serve with honey!!!

Slow Cooker Chicken Burrito Bowl

2 c shredded rotisserie chicken breast (I'm using smoked chicken that I keep in the freezer)
1 t onion powder
1 t garlic granules
3 t chili powder
2 t cumin
1 t kosher salt 
freshly ground pepper to taste
1 leek, chopped
1/2 roasted bell pepper
2 c chicken broth
1 15 oz can mild rotel, drained
1 14 oz can black beans, drained and rinsed
1 chopped zucchini 
1 ear of fresh corn
1 c instant rice
1/2 lime, juice and add to dish as it cooks
1 1/2 c shredded cheese(your choice) I'm using a blend of smoked Gouda and smoked cheddar
Fresh cilantro

Place the chicken, rotel, broth, zucchini, corn, peppers, leeks and seasonings in crock pot.
Cook on high for 2 hr.
Stir in instant rice, and black beans.
Add lime juice.
Let cook 30-45 minutes on high, or until rice is tender.
Top with cheese and let cook a few minutes longer until cheese is melted.
Top with fresh tomatoes, sour cream, onions, and sliced avocados.
Serve tortillas on the side.

Honey Butter on Light and Tasty Waffles with Fried Chicken Tenderloins

This was a delicious dish that I served at breakfast but I think you could serve it any meal.


Waffles (recipe under the breakfast tab this blog)
Fried chicken tenderloins, cut in half
Olive oil for frying tenderloins
Honey 
Butter


To fry tenderloins, cut in half and season with seasoned salt and smoked paprika.
Roll in AP flour, and pan fry in olive oil on medium high heat.
Just barely cover the bottom of skillet with oil.
Cover and flip often.
These cook quickly. 
To assemble, place waffle on plate, drizzle with honey. Place thin pats of butter on warm waffles.
Stack fried chicken against the waffles.

Steak Marsala over Egg Noodles






Let those who delight in my righteousness shout for joy and be glad and say evermore, "Great is the LORD, who delights in the welfare of his servant!"  - Psalm 35:27



Prepared egg noodles

1 Left over Filet steak, cut into bite size pieces
Drizzle of olive oil
4 pieces of fried Bacon, chopped
1 Leek, chopped
3/4 c fine Sweet Marsala 
2 T Roasted garlic
1 T Thyme
1/2 c Half and half
1 c Chicken stock
1/2 c Parmesan Reggiano  
Cracked black pepper



Sauté bacon, leeks, garlic and thyme in a drizzle of oil. 
Add steak and simmer 2 minutes.
Add Marsala, pepper and reduce by half.
Next add chicken stock and half and half.
Cook 5 minutes. 
To thicken add cornstarch in a little water then whisk into sauce.

Jim N Nicks Breakfast Cheese N Sausage Biscuits

I always have left over cheese biscuits from Jim N Nicks so I throw them in the freezer.
I wanted to do a simple breakfast sandwich using them and this is what I came up with.
They were so good!!!


Jim N Nicks cheddar biscuits
Cooked sausage
Cheese
Scrambled eggs
Honey butter


Slice biscuits in half. Sprinkle cheese on one side and honey butter on the other side. Toast in the toaster oven. Fry sausage and drain on a paper towel. Cut each sausage patty in half. Scramble eggs, salt and pepper. Remove toasted biscuit from oven, add sausage, enjoy!!

Hot Fanny Sauce Reduction

This reduction was insane!!!! Served on hash browns topped with a filet and the hot fanny sauce!!!

1/2 c sugar
1&1/2 c chopped leeks
2 t charred poblano peppers, diced
1 c chicken broth
Sprinkle of smoked salt
1 T fine sweet Marsala
1 red bell pepper, charred
1/8 c red wine vinegar

Heat sugar over medium heat until it turns a caramel color.
Add leeks, salt and Poblanos.
Stir in broth and reduce to 1/2 c of sauce, add Marsala and cook 1 minute.
Add cooled sauce to blender that has the green bell pepper and vinegar and pulse.
