BBQ Kraut Stir Fry with Sliced Brats, Pork Bits and Burger Bits

2 T BBQ sauce
2 c Boars Head Kraut
4 grilled brats, sliced
1 grilled pork chop, chopped
2 burger patties, chopped

Stir fry all together!!

Chicken Marsala Rice Sweet Pea Casserole

1/2 of a rotisserie chicken, pulled and rough chopped
1 leek, sliced
1/2 onion, sliced
1 small can Pet milk
1/4 white wine
1/2 c water
1/4 c Marsala
1 c cooked sticky rice
2 T parsley
1 pat compound butter, I used my own, basil-smoked paprika
1/2 t olive oil 
1/2 t chicken base seasoning
Smoked salt and cracked pepper to taste
3/4 c frozen English peas
1 c Parmesan Reggiano, reserve 1/2 c for topping

Topping( add in this order)
1/4 c Panko
1/4 c canned onion rings, crushed
1/2 c Parmesan Reggiano 
1/2 c shredded Mozzarella 


Over medium, heat oil, add compound butter, melt and add onions, leeks, rice and frozen peas. Next add the wines, chicken base seasoning, water and Pet milk, cooking for 5 minutes. Next add the 1/2 c Parmesan and the chicken. Cut off heat, add the parsley. Salt and pepper to taste. Add topping. Place in a greased casserole and bake 325 degrees for 20 minutes.

Knock Off Bright Star Peanut Butter Pie

For the crust:
Take 24 Nutter Butter cookies and place them in a freezer bag. Hit the freezer bag with a rolling pin (or whatever) to make the cookies into crumbles. I wanted the crust to still be recognizable as Nutter Butters - so we left a number of good-size pieces. Pour the crumbled NB's into a good-size bowl and add 5-6 tbsp of melted butter. Mix well. Place this mixture into either a pie dish or other suitable-size dish. I had a pyrex square dish that worked great. Once filled and even on the bottom, place in the refrigerator.

For the filling:
Cream together one 8-oz package cream cheese, one cup of peanut butter, 3/4 cup of sugar. The original recipe called for a splash of vanilla, but I didn't think that was necessary. Once that's all incorporated, stir in 8-oz Cool Whip.

Finish:
Take the crust back out of the refrigerator, and spoon the filling over. Level it out on top. Cover with Saran and place in the freezer for a few hours or overnight.
Yummy!

Chicken Rice and Creamed Spinach Casserole

1/2 of a rotisserie Chicken, pulled
1 frozen Green Giant creamed spinach, cooked
1 c Water
1 T Chicken base seasoning
1/2 c Onion rings
1/4 c White wine 
1/4 c Cream 
2 t parsley flakes
1 c Mozzarella cheese
1 1/2 c cooked rice

1/2 c Parmesan cheese, placed on top

Mix all together and top with Parmesan.
Bake in a 350 degree oven for 25 minutes or until top is slightly browned.

Dreamy Coconut Cake

1 white cake mix, make in a 13x9 pan according to box direction( don't use a pudding in the mix cake)
Cool and poke holes in cake with a wooden spoon

1 can of Coco Lopez cream of coconut( found in the wine section where the alcoholic drink mixes are located) pour in cake holes and around the edges( place can in bowl of hot water to melt, it hardens in the can, shake well

1 large cool whip, thawed( frost cake with cool whip)

Refrigerate

Out of the Ordinary Honey Sesame Chicken

1 small egg
2 Tbsp cornstarch 
1 pinch each salt & pepper
4 boneless, skinless chicken tenderloins
2 T vegetable oil (for frying) 

Sauce
3 T soy sauce
1 T water 
½ T toasted sesame oil
2 T brown sugar 
1½ T rice vinegar 
3 T honey
2 T Mirin
1 inch fresh ginger, grated 
1 t roasted garlic, mashed
2 T sesame seeds 
Pinch chili flakes
1 T cornstarch 


2 c cooked jasmine rice

Veggies
1 chopped bok choy
1 leek, sliced



In a large bowl, whisk the egg, add 2 T cornstarch, and a pinch of salt and pepper and whisk again.
Cut chicken into 1 inch pieces. 
Toss the chicken in the egg and cornstarch mixture.
Heat a large skillet with 2 T of vegetable oil over medium-high heat. 
When the oil is very hot, add the chicken and all of the mixture.
Prepare the sauce. 
In a small bowl stir together the soy sauce, water, sesame oil, brown sugar, rice vinegar, honey, Mirin, fresh ginger, minced garlic, cornstarch, and sesame seeds.
Once the chicken is cooked through and golden brown and add the veggies. 
They cook quickly, then pour the sauce over top. 
Toss the chicken and veggies to coat in the sauce. 
The sauce will begin to thicken as soon as it hits the heat.
Once the chicken is coated and the sauce thickened, turn off the heat.

Grilled Chicken and Veggie Stuffed Baked Potato with BBQ Ranch Dressing





11 Let us therefore strive to enter that rest, so that no one may fall by the same sort of disobedience.

2 baked potatoes, on this blog under potato tab( best potato ever)
6 pounded chicken tenderloins, sliced into strips, season with kosher salt and BBQ seasoning rub
2 shredded Carrots 
1 Shallots, diced
3 tiny multi colored peppers, sliced in tiny strips
1 bok choy, chopped

Butter
Sour cream
Mozzarella cheese, shredded 
BBQ ranch dressing, this blog under dressings tab


In a little olive oil, sauté carrots, shallots and peppers, 3 minutes. Remove. Add chicken and a little oil to skillet. Cook chicken 5 minutes or until done. Add bok choy and veggie mix back in. Cook 3 minutes.

Build potato
Slit down the middle, mash with fork.
Add butter, sour cream, meat-veggie mixture, top with shredded mozzarella and BBQ ranch dressing.

BBQ Ranch Dressing and Dipping Sauce






14 Since then we have a great high priest who has passed through the heavens, Jesus, the Son of God, let us hold fast our confession.

1/4 c Buttermilk
1/4 c mayo
1/4 c BBQ sauce
1 t Apple cider vinegar
1 t Dry mustard
1 t Dill 
1/2 t Kosher salt
1 t BBQ seasoning
A few turns Cracked pepper
1 t Worcestershire sauce
1/2 of a Lime juiced and zested
1 t honey
1/2 t red pepper flakes 
Roasted garlic

Mix all together with whisk.

Bacon and Onion Egg Salad

6 slices bacon, diced and cooked
1 small onion, diced 

4 large brown eggs, boiled and rough chopped
4 Croissants, lightly toasted

1/4 c mayo
1/4 c sweet pickle relish
1 t yellow mustard
A few turns cracked black pepper
Kosher salt to taste

Fry bacon until almost crisp, then add onions.
Cook until onions are done and bacon is crisp.
Drain on paper towels.

Take chopped eggs, add mayo, relish, mustard and seasoning.
Add bacon-onion mixture to the egg mixture.
Serve on croissants, yum!!

Pork Medallions In Dijon Mustard Cream Sauce






You have tried my heart, you have visited me by night, you have tested me, and you will find nothing; I have purposed that my mouth will not transgress.  - Psalm 17:3





2 c sliced Pork medallions, can cut from center cut chops or tenderloin, season with meat tenderizer
Small can Pet milk
1 Leeks
1 t Thyme
1 t Rosemary
6 Mushrooms, sliced
1 t Dijon mustard
1 c Half and half
1/2 c white wine 
Garnish with parsley flakes

Sauté medallions in a little oil until slightly browned.
Remove from pan.
Add leeks and mushrooms to pan and sauté until tender.
Add wine and two milks sautéing until mixture is reduced by half.
Add mustard, stir well. 
Add pork back in along with rosemary and thyme.
Garnish with parsley flakes.

Lemon Cream Chops Over Sautéed Spinach






The LORD is king forever and ever; the nations perish from his land.  - Psalm 10:16





Center cut pork chops seasoned with seasoned meat tenderizer and smoky paprika
Few drizzle of olive oil

1 shallot
1 onion
1/2 of a lemon for juice
Pack of Baby spinach


1/4 c white wine
2 T cream
Smoked salt
Cracked multi peppercorn 

1/4 c finely shaved Parmesan Reggiano 


Season and sear chops in oil on medium high heat.
Cook for 5 minutes on each side, remove.
Add onions, shallots, lemon juice and spinach.
Sauté until onions are translucent.
Add white wine, salt, pepper and cream, reduce by half, return chops. Finish off with Parmesan.

Good quality ground beef, I like Sprouts extra lean 
Tomato, sliced
Lettuce
Slider buns, I like the potato buns
Sweet Bourbon Smoky Bacon jam, recipe this blog under Dressing tab
Season salt
Cracked black pepper
Smokehouse Sierra Jack cheese slices, from Sprouts

Grill or pan fry beef patties, seasoned with season salt and pepper.
Toast bun, topped with cheese.
Add jam and tomato slice.
This burger was outrageous!!!

Sweet Bourbon Smoky Bacon Jam

2 T Jim Beam
1/2 c Water
1 t chicken base seasoning
1/8 c brown sugar
1 Shallot, diced
Splash liquid smoke
1/2 package Bacon, diced
1 Vidalia onion, chopped
Splash of Sriracha 
1/2 t molasses 

What can I say, this stuff is delicious!!! Cover your breakfast sandwich, your lunch sandwich, your burger or you hot dog with slightly sweet smoky bourbon bacon deliciousness!!!

Sauté bacon, until almost crispy, add onions and shallots cooking until all ingredients are done. Add liquid smoke, Jim Beam, chicken base seasoning and brown sugar, stirring to incorporate. Now add water, molasses, and Sriracha, cook down on medium heat until it's thickened. Refrigerate.

Stuffed Fresh Figs

Blue cheese 
Figs
Bacon, could use prosciutto 

Cut a crisscross in the fig.
Stuff a little blue cheese in it.
Wrap a 1/2 piece of bacon around each fig and secure with a toothpick.
Place on parchment paper.
Bake in a 375 degree oven until bacon is crispy, around 20 minutes.
These are delicious.

Quick Almond Crossiants

2 split crossiants, toasted
Sliced almonds
1/3 of the block of Cream cheese, room temp
2 T Powdered sugar
1/4 t Almond extract
1/2 pat Butter
2 t Cream

Melt butter, add almonds and toast lightly, quickly add sugar, extract and cream. Let cool then add to cream cheese. Spread on Crossiants. Sprinkle with powdered sugar.

Rotisserie Chicken with Ranch Avocado Jalapeño Spread

Rotisserie chicken, pulled
Tomato slices
Onion slices
Smoked cheddar slices
Parmesan buns, toasted (these little jewels come from Sprouts)

Ranch Avocado Dressing

1/4 of an avocado, rough chopped
6 pickled jalapeño slices, diced
4 T ranch dressing 

Mash 1/2 of the avocado chunks into the ranch and add the jalapeños. Assemble your sandwich and enjoy!!

Asian Sticky Beef and Veggie Stir Fry

2 Beef filet, sliced thin seasoned with 4 T brown sugar, a pinch pepper flakes, 1/2 t kosher salt and 1/2 t garlic granules
Toss the meat and set aside.


2 Baby bok choy, chopped 
1 small onion, cut in half and sliced thin
8 baby carrots, matchstick cut
2 Baby bell pepper, sliced
1 t roasted mashed garlic


Finishing sauce
1 t smooth peanut butter
1/4 c rice wine
Whisk these together, put on the dish at the very end.


Prepared angel hair pasta.


Place 2 t of olive oil in large skillet and heat.
Add beef and brown.
This will only take a few minutes.
Remove and set aside.
Add 1 t oil and add all veggies except bok choy.
When the onions are translucent, add the beef back in and the bok choy. Stir fry until bok choy is tender. Add finishing sauce. Cook 1 minute. Garnish with cashews if you like.
