Smoky Cheddar Gruyere Bacon Mac and Cheese







1 Let every person be subject to the governing authorities. For there is no authority except from God, and those that exist have been instituted by God.

4 slices chopped bacon
1/2 onion, chopped
1/2 t roasted garlic

Cheese melt for pasta
1/2 t sugar
1/2 t kosher salt
1/2 t smoky paprika 
Pinch pepper flakes
1/2 c smoky cheddar
1/2 c smoky Gruyere
1/2 c sharp cheddar
1/2 c heavy cream
1/2 c milk
1/2 c half and half


1/2 of a 13.25 ounce box of Dreamfields macaroni pasta, cooked Al dente
  
Sauté bacon, onions and garlic until bacon is crispy.
Bring liquids to a light boil and add all the cheese plus the seasonings.
Place pasta in a buttered dish, stir in the bacon mixture then add thickened cheese melt.
Bake 325 for 30 minutes.

Sticky Pork and Asparagus Stir Fry







8 Though you have not seen him, you love him. Though you do not now see him, you believe in him and rejoice with joy that is inexpressible and filled with glory,

3 pork chops, deboned and sliced thin against the grain
Chop seasoning (1/4 t meat tenderizer, 1/8 t garlic granules, 2 t brown sugar)

1 bunch asparagus, trimmed
2 slices Bacon, diced, reserve drippings to cook pork
1/2 of an onion, chopped
1 t roasted garlic
1/2 t olive oil
1 t Sesame seeds

Prepare chops and season, set aside.
Dice bacon, trim asparagus and chop onions.
Stir fry onion, garlic and bacon in oil. Remove when done, reserving drippings to cook pork. If necessary add a little oil. When pork is almost done, add asparagus. 
Add the bacon mixture back in and put in the sesame seeds.

Mexican Habanero Mango Salsa Oven Pulled Pork

My rub(on this blog)
Boston Pork butt
1/4 c Habanero Mango Peach Salsa
1/4 c Worcestershire sauce
4 T Liquid smoke

Rub on meat, put in fridge overnight.
To the top of the meat add salsa, Worcestershire sauce and liquid smoke.
Seal in foil and bake 250 degrees for 4-5 hrs, depending on size of butt.
Meat needs to be 190 degrees to pull.
Reserve some of the drippings.
Pull the pork in the drippings.
Add BBQ sauce and slaw and place on bun.

Chicken and Andouille Sausage Jambalaya Pasta








O LORD of hosts, who tests the righteous, who sees the heart and the mind, let me see your vengeance upon them, for to you have I committed my cause.  - Jeremiah 20:12







1/4 c  Andouille sausage, diced
4 chicken tenderloins, chopped 1/4 cut

Prepare these veggies first by adding 1 t of olive oil into a large skillet.
1 shallot, diced
1 t roasted garlic, mashed
2 small carrots, cut into thin strips
3 T celery, sliced thin
2 T cilantro, chopped
Juice of 1 lemon
6 button mushrooms, sliced

Sauce 
1/4 c white wine 
1/4 c cream
1/2 c pasta water
1/2 box of Dream Fields Angel Hair Pasta, cooked al dente


To prepare the chicken, chop and season with 1/2 t kosher salt and 1 t brown sugar and set aside.  
When the veggie mixture is partially finished add the sausage, then the chicken. 
It will cook fast, about 5 minutes. 
Lastly, add the wine, water and cream.
Cook 5 minutes and add cooked pasta.

Candied Pecan Wedge Salad






Hebrews 6:
17 So when God desired to show more convincingly to the heirs of the promise the unchangeable character of his purpose, he guaranteed it with an oath,
18 so that by two unchangeable things, in which it is impossible for God to lie, we who have fled for refuge might have strong encouragement to hold fast to the hope set before us.
19 We have this as a sure and steadfast anchor of the soul, a hope that enters into the inner place behind the curtain,
20 where Jesus has gone as a forerunner on our behalf, having become a high priest forever after the order of Melchizedek.




Combine the first 13 ingredients and chill.
1/4 pound crumbled blue cheese
1/4 cup sour cream
1/3 cup buttermilk
1/2 cup mayonnaise
1/4 cup red wine vinegar
1 tablespoon extra-virgin olive oil
1 t Honey
1 roasted clove garlic, minced
1 minced shallot
Ground black pepper to taste
1/8 teaspoon smoked salt
1/2 t anchovy paste or crushed capers
1/4c chopped crisp bacon

1 head iceberg lettuce, cut into 8 wedges
1/4 pound crumbled blue cheese
Candied pecans, chopped
Chopped bacon

Lay lettuce wedges on their side.
Drizzle dressing over the wedge.
Cover with bacon, pecans and and blue cheese.
May garnish with grated boiled eggs and chopped tomatoes!!

Sugar Plum Grapes

1 large cluster of Seedless Grapes, I used black ones
1 c Chopped or crushed toasted Pecans, almonds or cashews
4 oz Cream cheese, softened 
1 oz Stilton, crumbled into bits
1 T Cream
4 T turbinado sugar
Pinch cayenne 

Beat together cream cheese, cream and cayenne until it resembles frosting.
Fold in cheese bits.
Put in the grapes and gently stir to coat.
Crush or chop the nuts and add the grainy turbinado sugar.
Roll grapes in chopped or crushed nuts.
Chill and enjoy!!!

Fajita Scoop Peach Turkey Nachos

Fajita scoops
Ground turkey, sautéed with 1 t taco seasoning
Sliced peaches
Vidalia onion, sliced thin(wouldn't try it with a regular onion, too loud tasting)
Sharp Cheddar, grated thin

Now keep an open mind. You have to think outside the box to be creative.

Brown meat and season.
Prepare peaches, onions and cheese.
To assemble, take the fajita scoop and place a peach slice in first, follow with the meat then the cheese and end with onion.
So fresh and delightful!!!

Pig on a Tater







10 But that you may know that the Son of Man has authority on earth to forgive sins"-he said to the paralytic-

You can also do these with white baking potatoes. Grease with olive oil and season with kosher salt. 
Bake on oven rack for 1 hour at 425 degrees. Crispy outside yummy soft inside, just like a restaurant!!!!


6 medium to large red potatoes, skin cleaned 
1/2 lb. BBQ pork, shredded
BBQ sauce
Butter
Sour cream
Cheddar cheese
Broccoli florets, steamed

For the outside of the tater:
Pam spray
Kosher salt
Cracked black pepper

Spray one side of the potato with Pam.
Sprinkle with salt and pepper.
Cook in microwave, covered 5 minutes.
Flip over, cover with Pam, add season, cook 5 minutes.
To assemble, slice potato long ways, mash with a fork.
Add butter, mash.
Add sour cream, mash.
Top with chopped broccoli, then cheese.
Next add BBQ meat that has been sauced.
Sprinkle a little cheese and enjoy!!!

Greek Seasoning






10 "And when you tell this people all these words, and they say to you, 'Why has the LORD pronounced all this great evil against us? What is our iniquity? What is the sin that we have committed against the LORD our God?'
11 then you shall say to them: 'Because your fathers have forsaken me, declares the LORD, and have gone after other gods and have served and worshiped them, and have forsaken me and have not kept my law,

 2 teaspoons kosher salt
 2 teaspoons garlic powder
 2 teaspoons dried basil
 2 teaspoons dried Greek oregano
 1 teaspoon ground cinnamon
 1 teaspoon ground black pepper
 1 teaspoon dried parsley
 1 teaspoon dried rosemary, minced
 1 teaspoon dried dill weed
 1 teaspoon dried nutmeg
 1 teaspoon onion powder

 Combine and place in a airtight container.

Skillet Peach Pie






And we know that the Son of God has come and has given us understanding, so that we may know him who is true; and we are in him who is true, in his Son Jesus Christ. He is the true God and eternal life. - 1 John 5:20









1 stick butter
1 c light brown sugar
2 refrigerated rolled pie crusts
One 21-ounce can peach pie filling
1/4 t pumpkin pie spice
1/4 t allspice
1/4 t nutmeg
1/4 t cinnamon


Melt the butter in a 9-inch cast-iron skillet; set aside 1 tablespoon of the melted butter for the top crust. 
To the melted butter, add the brown sugar and stir them together on medium heat, a couple of minutes.
Remove from the heat and line the skillet with one of the pie crusts. 
Pour the peach pie filling over the crust and sprinkle with all the spices.
Use the second pie crust to cover the filling. 
Brush the top with the reserved melted butter.
Cut vents in the top pie crust. 
Bake for 25 minutes at 400 degrees.

Kickin Sloppy Joe Sliders







45 Now from the sixth hour there was darkness over all the land until the ninth hour.

1 lb. ground Turkey or ground beef
1/2 of a Onion, chopped
1/2 Bell pepper, chopped
1 Smoky chipotle in adobo, diced
2 T BBQ sauce
1/2 c Ketchup
1 t yellow mustard
Capful Jim Beam
1 t molasses
1 t brown sugar
Few turns of salt and pepper


Place Colby Jack slices on potato slider buns and toast. 

Dill pickle slices

Place 1 t of olive oil in a skillet and heat. 
Add onions, both types of peppers and ground turkey. 
When turkey is browned start adding wet ingredients, then sprinkle the brown sugar.
Cook 5 minutes.
Add meat to bun and top with pickle.

Fluffy Buttermilk Pancakes





Give glory to the LORD your God before he brings darkness, before your feet stumble on the twilight mountains, and while you look for light he turns it into gloom and makes it deep darkness.  - Jeremiah 13:16




 3/4 c buttermilk
 3/4 c white wheat flour
 2 T white sugar
 1 t baking powder
 1/2 t baking soda
 1/2 t salt
 1 egg
 2 T butter, melted
 cooking spray

I have never been able to make good pancakes but this recipe really works!!
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into buttermilk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone. Batter will be thick. If you want thinner pancakes you could add a teaspoon of milk.
Heat a large skillet over medium heat, and coat with cooking spray. Spread batter out a little with the back if the spoon. I made medium size pancakes. Flip with a spatula, and cook until browned on the other side.

Jalapeño Whiskey Grilled Onions and Beef on a Parmesan Bun

No nitrate beef( Sprouts) shred it
Parmesan buns( Sprouts)
Drizzle olive oil
Sprinkle a small amount of garlic granules on onions
Grilled Vidalia onions
Capful Jim Beam
A squirt of Yellow mustard
Lettuce 
Tomato
Pickled Jalapeño slices
Jack cheese slices

Toast bun with a slice of cheese.
Sauté onions in oil, add garlic, mustard and whiskey. Cut off heat and add beef.
Build sandwich, place lettuce on cheese, then tomato slices, next pile on onions and beef. Top with jalapeño slices.

Onion Bacon Bombs

Meatloaf recipe of your choice
Onions, medium size
Bacon, cut in half


Make your meatloaf mixture.
Slice medium size onion in half, reserving the small inside pieces for another time.
Make a ball to fit the onion slice and piece together to form the bomb.
Lay bacon in a criss cross pattern on top.
Bake, covered at 400 degrees for 45 minutes. 
Turn to toast and bake until bacon is crisp.
I did mine in the toaster oven.

Laughing Cow Cheese Burger

Laughing Cow Swiss Cheese Wedge
Hamburger patty, seasoned with seasoning salt
Onions
Pickled Jalapeño slices
Lettuce
Tomato 
Slider buns

Spread both sides of bun with Laughing Cow cheese.
Add cooked burgers.
Top with lettuce, tomatoes, onions and jalapeño slices.
This was delicious! 

German Savoy Cabbage and Potatoes








23 I know, O LORD, that the way of man is not in himself, that it is not in man who walks to direct his steps. 
24 Correct me, O LORD, but in justice; not in your anger, lest you bring me to nothing. 
25 Pour out your wrath on the nations that know you not, and on the peoples that call not on your name, for they have devoured Jacob; they have devoured him and consumed him, and have laid waste his habitation.  - Jeremiah 10:23-25










For the cabbage

1 savoy cabbage
4 red potatoes
1 c water
2 t cumin 
1 bay leaf
1 heaping T chicken base seasoning
A few turns cracked black pepper
1/2 of a lemon zest
2 T cream
1 capful apple cider vinegar
1 t sugar
Pinch of cayenne 


For the bacon mixture

1 t olive oil
1 onion, diced
1 shallot, diced
6 ounces bacon, diced 




FOR CABBAGE: 
Remove rib of each leaf and core the head.
Stack leaves and slice into strips.
Put all seasonings, bay leaf and water in a large pot, cover and boil for 10 minutes until just slightly tender.
Place potatoes on paper plate and cover with a plastic lid.
Microwave for 3 minutes on each side or until fork tender.


FOR BACON MIXTURE:
Dice bacon, shallot and onion.
Fry onions and shallots in oil, then add bacon.
Stir often.
When bacon is crispy, add potatoes.
Cook 5 minutes, stirring constantly.



TO ASSEMBLE: 
Drain cabbage.
Remove bay leaf.
Mix bacon mixture into cabbage.
Serve and enjoy.

DIY Zesty Italian Salad Dressing

1 c light olive oil 
1/4 c white vinegar
2 T apple cider vinegar
1 T roasted garlic
2 T diced shallots
2 T diced red bell pepper
2 t Dijon mustard
1 T honey
1 t kosher salt
1/4 t dried oregano
1/4 t fresh diced Greek oregano
Pinch of red pepper flakes
Freshly ground black pepper, to taste

Combine all of the ingredients in a jar with a tight fitting lid.

Greek Chicken and Pita Casserole





2 Cor.4:1-6

6 For God, who said, "Let light shine out of darkness,"has shone in our hearts to give the light of the knowledge of the glory of God in the face of Jesus Christ.


My sweet friend Jana gave me this recipe!

4 cups chopped smoked chicken or turkey2 medium zucchini, halved lengthwise and cut into 1/2-inch strips (3 cups)
1 10 3/4 - ounce can condensed cream of chicken soup 
1/2 cup chicken broth
1 1/4 teaspoons Greek seasoning
1 sauteed leek chopped (1/2 cup)
1 t butter
2 cloves roasted garlic, crushed
Nonstick cooking spray
1 6 - inch pita bread, cut into strips
3 medium Roma tomatoes, chopped (1 cup) 1 cup crumbled feta cheese (4 ounces)
1/2 cup pitted Kalamata olives, sliced


Preheat oven to 350 degrees F. In a large bowl, combine chicken, zucchini, soup, broth, 1 t of the Greek seasoning. Saute leeks and garlic in a small skillet with a t of butter. Transfer mixture to an un-greased baking dish.
Coat pita wedges with cooking spray; sprinkle with the remaining 1/4 t Greek seasoning. Sprinkle pita wedges, tomatoes, cheese, and olives on top of chicken mixture. Bake, uncovered, 20 minutes.

Smoked Mozzarella Guacamole Slider

I love a good burger, but don't want a large serving so a slider is just the perfect size!!

Sprouts 85%15% ground beef( grill or fry) They have the best burger meat!!
Season meat with seasoned salt
Guacamole( recipe on this blog under salsa/queso/guacamole tab)
Thin sliced Vidalia onion
Sliced tomatoes
Sliced smoked mozzarella cheese
Pickled jalapeño sliced
Lettuce
Slider buns( I use potato buns)

Cook burgers, top with cheese, place buns on top of meat and cover with foil to heat the bun.
Start layering with the tomato, then onion, follow with jalapeno and add lettuce. Spread guacamole on top bun and devour!!

Blueberry Banana Cheesecake Dessert

1 c blueberries
2 bananas, sliced thin
1 pgk instant white chocolate pudding
1/3 block of cream cheese, softened
1 c half and half
Small container of thawed cool whip
1 small angel food cake, cut into small cubes( will have cake left)

Whip dry pudding mix and half and half together, add in cream cheese. Mixture will be the consistency of a spread. 
Layer in this order:
blueberries
1/3 of the spread
3 cake cubes
1/3 of the spread
4 bananas
1/2 cool whip
blueberries
1/3 of the spread
cake cubes
1/2 cool whip
