Poblano Avocado Cream Sauce










So we see that they were unable to enter because of unbelief. - Hebrews 3:19




4 T chopped charred Poblanos 
1 t olive oil
1 t Worcestershire sauce
1 avocado, chopped and mashed
1 shallot, diced
1/2 lime squeezed for juice 
3/4 c Sour cream

Sauté shallots, lime juice and Poblanos in oil.
Take off heat.
Add Worcestershire sauce and sour cream.
To thicken, add mashed avocado.

Cuban Style Chili Relleno Dip with Poblano Avocado Cream Sauce







3 For Jesus has been counted worthy of more glory than Moses-as much more glory as the builder of a house has more honor than the house itself.

1 rotisserie chicken, chopped
2 Roasted Poblanos, seeded and scraped, cut in strips and chopped(reserve meat around the stem for cream sauce)
1 small can evaporated milk
1/4 c half and half
1/2 of a lime, juiced
1/3 of a block of cream cheese, room temperature and chopped
1 c sharp cheddar cheese, shredded
1/4 c smoked Gouda 
1/4 c smoked Gruyere shredded
2 T fresh cilantro
2 T Greek oregano
2 T spicy oregano
2 t sweet basil
5 sliced mushrooms, sliced
1 shallot diced
1 leek, sliced
1 T Cuban seasoning
Smoked salt and pepper to taste
1 t olive oil
1 t butter

Toppings
Poblano avocado cream sauce, recipe on this blog under sauce tab
Tomatoes, chopped

Preheat oven at 350 degrees.
Sauté leeks, shallots and mushrooms in butter and olive oil.
Add chicken, milk, half and half, cream cheese and 1/3 of all the types of cheese.
Next add spices, salt and pepper.
In a 13x9 pan, place half of the chicken mixture, then half the poblano and repeat again.
Top with all the cheese.
Bake for 30 minutes.
Top with sauce and tomatoes and serve with black bean tortilla chips.

Not Fried Mongolian Pork







Therefore he had to be made like his brothers in every respect, so that he might become a merciful and faithful high priest in the service of God, to make propitiation for the sins of the people. - Hebrews 2:17







Marinade for pork:
Sliced pork, I used 2 bone in chops 
1/4 c light soy sauce 
2 T hoisin sauce
1 t sesame oil
1/4 c cornstarch
1/2 t baking powder
1 t rice wine vinegar 
1/2 t olive oil

Make the marinade.
Slice pork really thin.
Place in marinade for 1 hr.
You can deep fry this or just do a stir fry.
Fried will be sort of crispy.
Whichever you do, remove and set aside.

oil for frying or stir frying 

For the sauce:
1 T ginger, minced
1 T garlic, minced
1/4 c soy sauce
1/4 c balsamic vinegar
1/4 c of Mirin rice wine
Pinch of chili flakes
1/2 c of honey
1 T brown sugar
1 T cornstarch
Sesame seeds

Make sauce and set aside.

Veggies:
Baby bok choy
Zucchini noodles
Carrot, matchstick cut
Leek, sliced

Wash and prepare veggies.

Garnish:
Green onions, bias cut
Cashews

After pork is done, remove from pan and set aside. Using the same pan, add a little oil and stir fry veggies. Add pork back in and add sauce, cooking until thickened. Add garnish and enjoy!

Sriracha Onion Rings






14 But as for you, continue in what you have learned and have firmly believed, knowing from whom you learned it
15 and how from childhood you have been acquainted with the sacred writings, which are able to make you wise for salvation through faith in Christ Jesus.

1 really large onion, sliced into rings and separated 
Olive oil for frying
Sriracha 
1 c white whole wheat Flour
1 t salt Salt
1 T Baking powder
2 Eggs, beaten
1 c Milk
1 c Panko( will need more) 

Dipping order
Flour mixed with baking powder and salt
Egg mixed with milk and Sriracha 
Panko

Dip onions, place on rack and let dry a few minutes.
Be sure to shake excess egg mixture off before placing in the Panko. 
You will have to replace Panko when it gets moisture in it because it won't stick. Drain and salt finished rings on paper towels.

Szechuan Chicken and Shrimp

THIS WAS ABSOLUTLY DELICIOUS, ONE OF MY BEST CREATIONS!!!

Sauce

1⁄2 c water
1 t chicken base seasoning
2 T honey 
2 T soy sauce
2 t rice wine vinegar
2 t balsamic vinegar
1 T sesame oil
1 T Chinese rice wine
1 t Sriracha 
1 t fish sauce
2 t cornstarch
1/4 sesame seeds

Chicken and shrimp soak:

6 chicken tenderloins, cut into bite size pieces
1/2 lb. frozen cooked shrimp
1 t baking soda
1⁄2 c cold water
2 t Chinese rice wine 
2 t cornstarch


Stir-Fry

4 mushrooms
2 t Fresh ginger, grated
2 t roasted garlic, mashed
1 onion
1 shallot
2 zucchini, cut into noodles*
Olive oil

Add cashews before serving for crunchy goodness!!! 


Whisk all sauce ingredients together in bowl. Set aside.

Cut chicken into pieces.
Remove tails from shrimp.
Add to the soak.

For the stir fry oil, combine garlic, and ginger and add to hot oil. 
Add the drained chicken and cook until done, about 7 minutes.
Remove the chicken.
Add 1 T oil.
Add to hot oil, all the veggies except zucchini noodles.
Add chicken back in along with the shrimp.
Now add the zucchini noodles.
Stir fry 2 minutes and add sauce.

*I made my noodles with my mandolin. I sliced them into long flat pieces, then stacked them together and sliced into noodles.

Sweet Potato Cabbage Gratin

2 Sweet potato, cut into 1" chunks
1/4 head Cabbage, shredded
1 c Sour cream
1/2 c buttermilk
1/2 c Smoky Gouda
1 t Chicken base seasoning
1 t Cajun seasoning

Topping
1/4 t garlic granules 
1/4 c crushed onion rings
1/4 c mozzarella, shredded
1/4 C sharp cheddar
1/4 c Panko

Directions

Combine the sour cream, Gouda, buttermilk and seasonings then add veggies.
Place in greased deep dish pie plate.
Top with the mozzarella and cheddar cheese, onion rings and Panko.
Bake for 45 minutes or until potatoes are tender.

Easy Cheesy Corned Beef Hash Casserole






Because the sentence against an evil deed is not executed speedily, the heart of the children of man is fully set to do evil. - Ecclesiastes 8:11







3 #2 cut sliced deli corned beef, stacked and diced
2 T olive oil
1 Onion, sliced
1 shallot, diced
1 pgk frozen potatoes O'Brien, thawed
1/2 red Bell pepper, diced
1 Carrot, diced
4 mushrooms, cleaned and sliced
1 T roasted Garlic, mashed 
2 t Fresh spicy oregano
2 t Fresh flat leaf parsley
1 t chicken base seasoning
1/2 c water
1 1/4 c Sharp cheddar, reserve 1/4 c for top


In oil, sauté all seasoned (chicken base seasoning)veggies, when they are tender, add potatoes, water and corned beef. Cook 10 minutes and add cheese and fresh herbs. Put into a greased casserole, cover and bake 35 minutes or until potatoes are soft. Uncover and add 1/4 c of cheese. Bake 10 more minutes.

Sicilian Baked Pork Chops






Wisdom is better than weapons of war, but one sinner destroys much good. - Ecclesiastes 9:18






3 eggs, beaten
3 T half and half 
1 1/2 c Panko bread crumbs, season with 1 T garlic and herb seasoning
1/2 c grated Parmesan cheese
2 T fresh parsley
1 T fresh spicy oregano
 2 T olive oil
 2 roasted garlic, mashed
 4 pork chops, bone in and pounded to tenderize 

Preheat oven to 325 degrees.
In a small bowl, beat together the eggs and half and half. In a separate small bowl, mix the Panko, Parmesan cheese, seasonings, fresh spicy oregano and parsley.
Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic to flavor oil. 
Dip each pork chop into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 5 minutes on each side.
Place the skillet and pork chops in the preheated oven, and cook 25 minutes, or to an internal temperature of 145 degrees.

Smoky Chipotle Okra and Tomatoes






12 Indeed, all who desire to live a godly life in Christ Jesus will be persecuted,

1 28 oz can Cento petites cut tomatoes
1 onion, sliced
2 T roasted garlic, mashed
2 c Okra, sliced
1/2 of a Smoky chipotle in adobo, chopped
1/4 c sliced thin carrot 
1/4 c Celery, sliced
1/4 c Bell pepper, chopped 
1/2 t olive oil
1 T Chicken base seasoning
Pinch of sugar
2 t Fresh Greek oregano
2 t Fresh sweet basil
1/2 t white pepper

Sauté onions, carrots, garlic, celery and smoky chipotle in oil. After  they are softened add seasonings and okra. Cook until okra begins to softened then add tomatoes and their juice. Simmer until okra is tender and add fresh herbs.

Jacked Up Hot Beef






1 But understand this, that in the last days there will come times of difficulty.
2 For people will be lovers of self, lovers of money, proud, arrogant, abusive, disobedient to their parents, ungrateful, unholy,
3 heartless, unappeasable, slanderous, without self-control, brutal, not loving good,
4 treacherous, reckless, swollen with conceit, lovers of pleasure rather than lovers of God,
5 having the appearance of godliness, but denying its power. Avoid such people. - 2 Timothy 3:1-5








1/2 lb. ground lean beef
1/2 t olive oil
1 onion, sliced
5 mushrooms, cleaned and sliced
2 capfuls Jim Beam
2 T yellow mustard
1 t chicken base seasoning 
1/2 c half and half
1 t roasted garlic, mashed

Sauté onions, garlic seasoning and mushrooms in oil until they begin to soften. Pinch meat off in chunks and brown with onions mixture. After meat is done add whiskey, half and half and mustard to make a sauce. Serve over mashed potatoes.

Avocado Sausage Egg and Cheese Breakfast Pocket






For who knows what is good for man while he lives the few days of his vain life, which he passes like a shadow? For who can tell man what will be after him under the sun? - Ecclesiastes 6:12








1 Naan bread, warmed
2 eggs, scrambled 
2 pieces of Colby jack cheese
2 pieces of cooked sausage, I use Tennessee Pride
Smoked salt
Cracked black pepper
1/2 of a sliced avocado 

Cut Naan bread with scissors to create a pocket.
Warm Naan bread.
Cook sausage patties until crisp.
Remove and drain on a piece of paper towel and chop.
Remove grease from skillet.
Scramble eggs, season and add cheese.
Slice avocado thin.
Stuff pocket in this order, avocado, eggs and cheese then sausage.

Smoky Paprika Hot Pepper Flake Chunky Potato and Onion Hash





For when dreams increase and words grow many, there is vanity; but God is the one you must fear. - Ecclesiastes 5:7




2 red potatoes, 4-5 inch length
1 onion, chopped
1/2 c Olive oil
1/2 t Seasoned salt
1/4 t Granulated garlic
1/2 t Smoky paprika
Pinch hot pepper flakes

Microwave potatoes 2 1/2 minutes on each side.
Slice in medallions, pull peel off with a fork.
Heat oil in cast iron skillet.
Add potatoes to skillet, sprinkle on seasonings.
After potatoes have cooked a few minutes, add onions.
These potatoes cook fast because of their time in the microwave.
You mainly want to crisp the potatoes.
These are delicious!!

Panko Crusted Fried Chicken and Avocado Slices on a Croissant






A generation goes, and a generation comes, but the earth remains forever.  - Ecclesiastes 1:4






4 chicken tenderloins, season with smoked salt and cracked pepper
1 beaten egg
1/2 c white whole wheat flour
1 c Panko bread crumbs
1/4 c garlic and herb dry seasoning
4 cocktail size croissant, toasted
Sliced avocado
Thin sliced sweet onions
Olive oil for frying

Add herb seasoning to Panko.

Dipping order for chicken:
Beaten egg
Flour
Beaten egg
Panko

Fry in hot oil. Flip.
Chicken is done when it is not pink on the inside.
I cooked mine about 7 minutes on each side on medium high heat.
To check, slice the thickest piece in half.
To build sandwich, onto the croissant add avocado slices, then chicken and end with thin onion slices.

Beef and Cheese with Rum Mustard Sauce on an Onion Roll

Onion rolls( I get mine in the deli at Sprouts)
No nitrate beef from Sprouts deli
1/2 of a onion, thin sliced
1 cap full Rum
1 t yellow mustard
1/2 t olive oil
Kosher dill slices
4 pieces of crisp cooked bacon
Slices of Cheddar/Colby cheese

Split rolls.
Slice enough cheese to cover one side of the roll and toast.
Sauté onion in oil just till onions are soft.
Add beef, mustard and rum, heat just till beef is warm.
To build the sandwich, add beef, onions, bacon to roll. 
Top mixture with pickles and slice roll.
Yum!!!



Green Tomato Casserole





13 But we ought always to give thanks to God for you, brothers beloved by the Lord, because God chose you as the firstfruits to be saved, through sanctification by the Spirit and belief in the truth.
14 To this he called you through our gospel, so that you may obtain the glory of our Lord Jesus Christ.
2 Thessalonians 2:13-14








4 medium green tomatoes, sliced thin and chopped 
1 t sugar
1 t salt
1 shallot, diced
1/2 t cajun seasoning
Cracked black pepper
1 pgk. ritz crackers, crushed
1 c  shredded sharp cheddar 
1/2 c mozzarella 
1/2 c cream
1/4 c canned onion rings, crushed
2 T fresh parsley, chopped

I created this today and it was delicious! 

Arrange one layer of tomatoes in the bottom of casserole.
Sprinkle with sugar, salt, garlic and pepper, 1/2 crackers and 1/2 cheeses.
Add 1/2 of cream to each layer of tomatoes.
Repeat twice.
Add parsley on top of second layer.
Cover and bake at 400 degrees for 45 minutes.
Add remaining cheese and onion rings bake uncovered until cheese melts.

Baby Bok Choy and Spicy Honey Pork Tenderloin

Just finished creating this for lunch! Yum!


Marinade for pork
2 t cornstarch
2 T soy sauce
1 T rice wine
1/2 t rice vinegar
1 T honey


2 c chopped pork tenderloin

1/2 c carrots, sliced

1 tsp fresh ginger, grated

2 baby bok choy, cleaned and sliced lengthwise 

2 roasted garlic cloves

1 shallot, diced

1 t olive oil

2 t corn starch

1 T honey

2 T soy sauce

1 T Mirin rice wine

1/4 t red pepper flakes

noodles, cooked ( I used Ramen and discarded the seasoning)

Toss noodles in 1/2 t olive oil

Cashews, (optional)

In a small bowl, combine the cornstarch, honey, rice wine, water, and soy sauce. 

Cut the end off of the bok choy and slice the leaves lengthwise into 1/2 inch wide strips. Put the bok choy in a collinder and run under water and set aside.

Slice the carrots into matchsticks. 

Cut the pork into thin strips. 

In a large skillet or wok, add the oil, ginger, and garlic. Heat the skillet medium high and add the marinated pork.

Add the bok choy, the soy sauce mixture and the red pepper flakes into the skillet and toss with the pork and carrots. Cover and cook for 5 minutes or until the bok choy is wilted and the sauce is thickened.

As an afterthought, my husband added cashews to the finished dish, it was a very good choice!!!
