Smoked Gruyere Kobe Burgers with Caramelized Leeks


                                                                                                                           

Ps.78:1-8

6 that the next generation might know them, the children yet unborn, and arise and tell them to their children, 
7 so that they should set their hope in God and not forget the works of God, but keep his commandments; 
8 and that they should not be like their fathers, a stubborn and rebellious generation, a generation whose heart was not steadfast, whose spirit was not faithful to God.



This gourmet burger was insanely delicious!!! One of my best creations, thank you Lord God for my ability!!

4 Kobe burger patties
1/2 c Smoked Gruyere cheese, chopped
1/2 sliced Leeks
1/4 c Chopped Jalapenos
1 T Butter
1/4 c Cream
2 slices of Canadian bacon or ham, chopped
Seasoned salt (liberally do each patty)
Avocado slices

In a skillet, brown seasoned burgers.
In a small skillet, saute leeks, bacon and jalapenos in butter until tender.
Add cream, and Gruyere to make a sauce.
Toast bun, add burger, top with sauce and a slice of avocado.

Chicken and Rice with White Wine and Gruyere Reduction

11 in accordance with the gospel of the glory of the blessed God with which I have been entrusted.



2 c Rotisserie chicken, shredded
1 c chicken stock
1/2 c white wine 
1/2 c heavy cream
3/4 c Gruyere chopped
1 1/2 c cooked basmati rice
2 t butter
1 c sliced button mushrooms
1 c sliced leeks
1/2 t minced garlic
1/4 c fresh flat leaf parsley
1 T lemon juice
1/4 t smoked salt 
1/2 t pepper
1/4 t herbs de Provence 

I created this today to go with my black eyed peas, turnip greens, cornbread and rutabagas. It was delicious!!

In a large skillet, melt butter, saute leeks, garlic and mushrooms. Add chicken, stock and wine, reduce by half. Add cream, Gruyere  lemon juice, salt, pepper, parsley and herbs de Provence. Slowly add cooked rice.

Oven Roast Beef Tenderloin






Ps.103:11-16
11 For as high as the heavens are above the earth, so great is his steadfast love toward those who fear him; 

12 as far as the east is from the west, so far does he remove our transgressions from us. 
13 As a father shows compassion to his children, so the LORD shows compassion to those who fear him. 
14 For he knows our frame; he remembers that we are dust. 
15 As for man, his days are like grass; he flourishes like a flower of the field; 
16 for the wind passes over it, and it is gone, and its place knows it no more.


Take tenderloin out of package, oil with olive oil, lots of coarse salt, and pepper.
Place tenderloin, uncovered on waxed paper and place on a cookie sheet and set in fridge for 24 hours.
This will create a dry surface which will help the herb mixture adhere better.

Two hours before cooking set tenderloin out so it will come to room temp and evenly cook. Tie the tenderloin with kitchen string at 1 inch intervals.


Take fresh chopped tarragon; mix with a little olive oil and garlic salt to make a paste. Cover tenderloin. Liberally salt and pepper tenderloin again!

Take 1/2 c red wine, 1 c water and 1/2 Jim Beam put in bottom of pan to steam tenderloin as it bakes. Place tenderloin on rack and put on top of liquid mixture.

I roasted mine 425 degrees for 1 hour but next time I will only cook it for 50 minutes. This was so yummy! I made tarragon butter, recipe found on my log, to add to your tenderloin before eating.

Roast: Browning the tenderloin first is not optional, it will caramelize the outside and lock in the juices. In a large skillet heat olive oil over medium-high heat and quickly brown the tenderloin on all sides in the hot oil. Transfer the roast to a rack in a shallow roasting pan which has the prepared liquid. Preheat oven to 425°F. Roast tenderloin, uncovered, according to the timing chart below. Check temp after 45 minutes with an instant read thermometer. Transfer meat to a cutting board and cover with foil. Let stand for 15 minutes before slicing. The temperature of the meat will rise during the rest time.

White Chocolate Peppermint PopCorn











3 bags microwave Tender white Popcorn, popped
1 6 oz box candy canes, crushed
1 package White Chocolate Almond Bark


After you cook the popcorn, melt white chocolate in microwave. Add the crushed peppermint to white chocolate and start adding to the popcorn with a wooden spoon. The popcorn needs to be in a large bowl or pan so you can evenly distribute the chocolate mint mixture through the popcorn. Spread it out on parchment to harden.

Patron Tequila Chops

Bone in chops (season on each side with meat tenderizer piercing with fork to tenderize) I use Adolph's Seasoned
1/8 t Creole seasoning( I used Tony Chachere’s)
A splash of Worcestershire sauce(I use French's)
A splash of Patron Tequila

Sear in hot olive oil until pork has a grilled look, 5 minutes on each side.
Broil under broiler for 10 minutes on each side, no pink left in the chop.
Yum! I made these today for lunch and boy were they good!!!

Tarragon Butter

½ cup (1 stick)Butter, softened
1 T Dijon-style mustard
1 T Worcestershire sauce
2 t garlic minced that has been sauteed in butter
1 T fresh tarragon, minced



Cream butter in small bowl using a fork or electric mixer. Gradually blend in other ingredients.
Butter mixture can be used soft; or it can be rolled into a cylinder in parchment paper or plastic wrap and refrigerated or frozen, then sliced into thin rounds.
Can be stored a couple days in the refrigerator or it can be frozen for several weeks.
Allow 1 teaspoon per serving. Place by teaspoonful on the top of grilled steak, slice of tenderloin or a potato.

1/4 cup Smokehouse almonds
3 T corn syrup
1 1/2 cups powdered sugar
1 T melted butter
2 cups shredded coconut
1/2 t Jim Beam
1/2 t vanilla extract
1 1/2 cups dipping chocolate



In a large bowl, stir together the corn syrup, powdered sugar, melted butter, coconut extract, shredded coconut, Jim Beam and vanilla extract, to form a thick paste.
Moisten hands slightly and form mixture into small balls.
Place on a sheet of parchment paper.
Place in fridge to harden.
Melt dipping chocolate.
Place one almond on top of ball and push to flatten ball.
Dip coconut bites.
Let harden.
These were so easy and tasted great!

Nestlé sugar cookie dough(flat pack not roll)
Rollo mini candies (already unwrapped)

Take the square cookie dough and wrap it around the Rollo mini. Roll into a ball. Bake 14 minutes at 325 degrees on parchment. Let cool. Yummy!!!

Do not let the simplicity of this recipe fool you, they have a gourmet taste without the trouble!!

Easy Crispy Peanut Butter Balls




2 Tim.2:1-5


1 But understand this, that in the last days there will come times of difficulty.
2 For people will be lovers of self, lovers of money, proud, arrogant, abusive, disobedient to their parents, ungrateful, unholy,
3 heartless, unappeasable, slanderous, without self-control, brutal, not loving good,
4 treacherous, reckless, swollen with conceit, lovers of pleasure rather than lovers of God,
5 having the appearance of godliness, but denying its power. Avoid such people.




2-1/2 cups rice crispy cereal
3 cups powdered sugar
1-1/2 cups smooth peanut butter
1/2 cup (1 stick) butter
Melting Chocolate(I use Ghirardelli from Sam's)


Directions:
In a large bowl, mix rice krispies and powdered sugar together, set aside.
In a medium saucepan, melt peanut butter and butter on medium heat.
As soon as it becomes a uniform liquid, remove from heat and pour over rice krispy mixture, stirring until well combined.
Form into 1-1/2 inch balls, place on a cookie sheet and put in refrigerator to cool.
Meanwhile, place melting chocolate in the microwave and heat until melted.
Dip balls and place on parchment to harden.Yum!

Peanut Brittle Cookies

3/4 cup brown sugar
3/4 cup sugar
1 cup butter
1/2 cup smooth peanut butter
1/4 cup chopped roasted peanuts

1/4 t bourbon
2 eggs
2 cups flour
1/2 teaspoon salt
1 tablespoon baking powder
1 cup Peanut Brittle (crushed)


Cream together brown sugar, sugar and butter. Add peanut butter, bourbon and eggs (one at a time).  Mix together well. In a separate bowl, sift flour, salt and baking powder.
Mix the dry ingredients into the creamed mixture. Add the crushed peanut brittle. Roll dough into small balls, flatten with a fork and place on a greased cookie sheet. Bake at 350 degrees for 15 minutes.

Jane and Linda's Toffee





3 John 1:4
I have no greater joy than to hear that my children are walking in the truth.



1 cup sugar
1 cup margarine
3 Tbsp. water
1 tsp. vanilla extract
3 Hershey bars
Pecans


Sprinkle some pecans into a buttered 9"x 13" pan. Combine sugar, margarine and water in a saucepan. Cook for 15 minutes or until the mixture is a golden brown, stirring constantly. Stir in vanilla. Pour over the pecans in the pan. Place Hershey bars over the sugar mixture immediately, spreading as the chocolate melts. Sprinkle with additional pecans. Let stand until set. Chop or break into pieces. You can omit the vanilla and grate the chocolate and mix with the nuts and sprinkle in the pan.

Smoky Chipotle Tenderloin

25 Nor was it to offer himself repeatedly, as the high priest enters the holy places every year with blood not his own,
26 for then he would have had to suffer repeatedly since the foundation of the world. But as it is, he has appeared once for all at the end of the ages to put away sin by the sacrifice of himself.
27 And just as it is appointed for man to die once, and after that comes judgment






1 (4 lb.) whole beef tenderloin, trimmed
1/2 cup soy sauce
1/2 cup red wine
4T smoky chipotle Tabasco
2 T  brown sugar
2 shallots, minced
Kosher salt
Black pepper
2 t fresh tarragon
Olive oil for coating


Place tenderloin in large zip-lock bag; pour in soy sauce, tabasco, brown sugar, shallots and red wine. Tie loin with cotton kitchen string to hold shape, turn small end under for even cooking. Seal bag. Marinate in refrigerator for 8 hours or overnight, turning occasionally. Remove meat from marinade and drain (discard marinade). Coat loin with oil, then season drained beef tenderloin evenly with salt, pepper and herbs. Grill uncovered over medium- to medium-high heat until instant read thermometer inserted at thickest part of beef registers 130 degrees F for medium-rare or until desired doneness, turning occasionally. Transfer grilled tenderloin to platter; cover with foil and let rest for 15 minutes. Slice beef crosswise to serve.

Chicken Cordon Bleu Lasagna Roll Ups







Ezekiel 18:4

Behold, all souls are mine; the soul of the father as well as the soul of the son is mine: the soul who sins shall die.



Rotisserie chicken breast, chopped
1 1/2 c Gruyere, shredded
1/2c chopped Pancetta
1/2 c fresh chopped basil
Alfredo sauce (recipe follows)
Smoked salt (to taste)
Pepper (to taste)


Prepared Lasagna noodles

Salt and pepper chicken to taste. Add fresh chopped basil, half of the prepared Alfredo sauce. Take prepared lasagna noodles, add a little shredded Gruyere and place filling at one end, roll up. Add a spoonful of Alfredo on bottom of pan where each roll up will sit. Add a spoonful of Alfredo on top of each roll up. Add a little more cheese on top. Cover and heat for 20 minutes in a greased pan in preheated oven at 350 degrees.

Alfredo sauce

1/2 c White wine
1 c shredded Parmesan
1/2 stick cream cheese
1/2 stick butter
1 c heavy cream
1/4 t smoked paprika

Cornstarch for thickening (2 T cornstarch in 1/4 c water, whisk)
Add wet ingredients, cheeses and paprika to pot. Simmer on low heat until butter and cheeses melts. Add cornstarch mixture and simmer until thickened.

Fast and Easy White Queso Blanco Rotel

1 can of Rico’s White Queso Blanco cheese sauce
1 can of mild Rotel
1/2 block of cream cheese
1/2 chopped onion
1/2 diced jalapeno
1/2 t minced garlic
1/2 ground turkey (you could use sausage)
1/2 t each of chili powder, garlic salt, cumin, and paprika

Cook ground turkey until done. Place Queso in crock pot. Microwave Rotel and cream cheese until cheese is melted. Saute onion, jalapeno and garlic in a splash of olive oil until it is soft.  Place all the ingredients in small crock pot and heat.

Buttermilk Cocktail Meatballs

1/3 cup Panko bread crumbs
1 cup whole-fat buttermilk
1 cup diced onions
1/3 cup chopped fresh parsley
1 T Herbs de Provence
2 tbsp. glaze( recipe follows)
1 lb. turkey
1 lb. ground pork
1 cup grated Italian 4 cheese
1/2 tsp. smoked salt
1/2 tsp. ground pepper

Shape into balls, I make mine 1 inch to 1 1/2 inch diameter. Brown in a little olive oil. Bake at 350 degrees until done, about 30 minutes. To keep warm,
put in crock pot and cover with glaze.

Mascarpone Potatoes






Heb.10:9-14

10 Potatoes (boiled until fork tender)
4 oz Mascarpone
1/2 c half and half
1 T butter
1/2 t garlic powder
1/2 t pepper
1 T smoked salt
2 T fresh parsley

Boil potatoes, adding the garlic, salt, pepper, and butter until tender. Drain off most of the water. Add the half and half and the parsley. Mash until smooth.

Savory Cheese and Pepper Jelly

24 "The LORD is my portion," says my soul, "therefore I will hope in him." 
25 The LORD is good to those who wait for him, to the soul who seeks him. 
26 It is good that one should wait quietly for the salvation of the LORD.



12 ounces cream cheese, at room temperature
1 cup heavy cream
Zest of 1 lemon
1 tablespoon freshly squeezed lemon juice
1/2 t chopped chives
1/2 t minced garlic
1 teaspoon smoked salt
1/2 teaspoon freshly ground black
I jar of pepper jelly

Crackers, for serving

Directions
Place the cream cheese in the bowl of an electric mixer fitted with the whisk attachment and whip until it is firm like whipped cream. With the mixer on low speed, slowly add the cream, lemon zest, lemon juice, salt and pepper. Beat on high speed until the mixture is very thick.

Line a 6-inch wire strainer with a few layers of cheesecloth, allowing the excess to drape over the sides. Place in a larger bowl. Pour the cream mixture into the cheesecloth and smooth the top with a rubber spatula. Fold the excess cheesecloth over the top of the cream. Cover with plastic wrap, and refrigerate overnight.

When ready to serve, un-mold the creme upside down onto a plate and pour the pepper jelly over the top, allowing it to drip down the sides. Serve chilled with crackers.

Dried Cherry Jalapeño Pecan Cheese Ball

1 pkg.  (8 oz. Cream Cheese, softened
1 pkg.  (8 oz.) Shredded Sharp White Cheddar Cheese
1/2 cup dried cherries, chopped
1/4 tsp. Pumpkin pie spice
1/2 minced fresh jalapeno
1/2 cup finely chopped Pecans, toasted
Pecans for coating ball

Mix until well blended. Shape into ball, chill for 2 hours.
Roll in toasted pecans before serving.


Glazed Chicken over Basmati Rice

10 chicken tenderloins salted and peppered
2 T olive oil
1 leek sliced
Sliced Mushrooms (optional)
Pat of butter
1/2 t garlic salt
1c chicken stock
1t Cornstarch, for thickening
Fresh chopped basil

1 c cooked Basmati rice

Brown chicken, remove from pan. Sauté garlic seasoned leeks and mushrooms in butter. Add chicken and stock. Take the cornstarch, add it to 1/2 c cold water, stir with fork to dissolve. Add to stock and simmer until it thickens. Serve over rice.

Whiskey Reduction Seared Chops

2 Bone in pork chops
Smoky paprika
Seasoned meat tenderizer
Splash of Whiskey
Dijon mustard

Pound chops and season both sides with smoky paprika, meat tenderizer, and a splash of whiskey. Add 1 T of olive oil to skillet and sear chops, flip and add another splash of whiskey.  Add 1 t Dijon and 1/2 c water just before you put under broiler. Broil 10 minutes on each side. Spoon reduction on chops. Let rest 5 minutes before serving.

Chipotle Mayo

3/4 cup mayonnaise
2 chipotle peppers in adobo, finely chopped
1 leek, finely chopped
1 tablespoon finely chopped cilantro
1 teaspoon lime juice
1 small clove garlic, finely minced

In a bowl combine the mayonnaise, chipotle peppers, leeks, cilantro, lime juice, and garlic; blend well.
Cover and refrigerate until serving time.
Use this mayonnaise as a dip for chicken, fries, fish or shrimp, or use it as a burger topping or sandwich spread instead of mayonnaise.

This recipe makes about 1 cup of mayo.

Chicken Smothered in Marsala Dijon Sauce

10 boneless skinless chicken tenderloins
Salt and freshly ground black pepper
2 tablespoons olive oil
5 tablespoons butter, divided
3/4 cup chopped leeks
2 tablespoons minced garlic
1 cup dry Marsala wine
1 /2 cup mascarpone cheese
2 tablespoons Dijon mustard
1/2 teaspoon tarragon
2 tablespoons fresh basil
12 ounces dried fettuccine

Sprinkle the chicken with salt and pepper. I like to use smoky salt. Heat the oil in a heavy large skillet over high heat. Add the chicken and cook just until brown, about 2 minutes per side. Transfer the chicken to a plate and cool slightly.

While the chicken cools, melt 2 tablespoons of butter to the same skillet over medium-high heat, then add the leeks and saute until tender. Add garlic. Add the wine and simmer until it is reduced by half, about 4 minutes. Stir in the mascarpone and mustard.  Add the chicken back in. Simmer, uncovered, over medium-low heat until the chicken is just cooked through and the sauce thickens slightly. Stir in the chopped basil and tarragon.  Season the sauce, to taste, with salt and pepper.

Place fettuccine in pot of salted water and cook until al dente, stirring occasionally, about 8 minutes. Drain. Toss the fettuccine with 3 tablespoons of butter and season, to taste, with salt and pepper. Swirl the fettuccine onto serving plates. Spoon the chicken mixture over top. Garnish with fresh basil and serve.

Sausage Stuffed Cresents

Then the end will come, when he hands over the kingdom to God the Father after he has destroyed all dominion, authority and power



1 pound ground sausage
1 can (4 ounces) chopped green chilies or 1 chopped and seeded jalapeno
1 package (8 ounces) cream cheese, cubed
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
3 tubes (8 ounces each) refrigerated crescent rolls

Directions
In a large skillet, cook sausage and chilies over medium heat until done; drain.
Add the cream cheese, cumin and chili powder.
Cool slightly.
Separate crescent dough into 24 triangles.
Place 1 tablespoon of sausage mixture along the short end of each triangle; carefully roll up.
Place point side down on parchment lined baking sheets. Bake at 375° for 11-14 minutes or until golden brown.
Serve warm.

1/2 cup extra virgin olive oil
1/4 cup chopped scallion
1/4 cup chopped parsley
1/4 cup chopped fresh cilantro
1 tablespoon minced garlic
2 teaspoons paprika
2 teaspoons ground cumin
1 teaspoon salt
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper
4 boneless skinless chicken breasts

Directions:
Combine oil, scallions, parsley, cilantro, garlic, paprika, cumin, salt, turmeric and cayenne pepper in the container of a food processor.
Process until a smooth paste is formed.
Rub the mixture on both sides of the chicken breasts and let stand 30 minutes.
Preheat the grill to medium hot.
Grill chicken breasts 5-7 minutes on each side, or until done.

Mexican Style Breakfast Casserole

5 beaten eggs
1 c cheese of your choice(I used cheddar)
1/2 c sour cream or cottage cheese
1 t smoked salt
1/2 t pepper
1 t hot sauce
1/2 c onions or leeks
5 oz. fresh hash browns (found in cold section) pat dry
1 lb. cooked crispy bacon
Salsa for serving

Beat eggs, add cheese, sour cream, salt, pepper, hot sauce and onions. Mix well. Add potatoes, continue mixing until potatoes are incorporated. Place in a greased pie plate. Top with the crispy bacon. Cover and let set, in the fridge for 2 hrs. or overnight. Bake 25-35 min. or until knife inserted in middle comes out clean. Add salsa to top of casserole when serving. The salsa adds lots of flavor! Bacon stays crispy because it is on the top, yum!

Brine for Pork Butts









Is.28:16 therefore thus says the Lord GOD, "Behold, I am the one who has laid as a foundation in Zion, a stone, a tested stone, a precious cornerstone, of a sure foundation: 'Whoever believes will not be in haste.'



2 small pork butts
2 qt Water
1/2 Kosher Salt
1/4 c Sugar
1/4 c Honey
3/4 c Molasses
1/4 c Soy sauce
1/4 c Apple Cider vinegar

Bring to boil, cool down with ice, pierce butts and soak for 2 days, in fridge, then smoke.

2 T 1/2 & 1/2
1 heaping T Dark chocolate powder (I use Ghirardelli)

3/4 cup mayonnaise
3 cloves garlic, minced
2 1/2 tablespoons lemon juice
3/4 teaspoon salt
1/2 teaspoon ground black pepper
If you want to spice it up, you can add some hot sauce!

Directions

Mix mayonnaise, garlic, lemon juice, salt, and pepper in a bowl. Cover and refrigerate for at least 30 minutes before serving.

Costa Rican Jalapeño Cream

1-2 jalapeno pepper(seeded and chopped)
1/4 cup evaporated milk or cream
1 medium onion or leeks
1 chicken bouillon cube or 1/2 t chicken better than bouillon
2 steaks of your choice ( I use Rib eye’s)
1 tablespoon butter or oleo
Add fresh cilantro after you finish

Cook steaks as desired.
Add butter, onion, and jalapeno to fry pan and cook 1-2 minutes.
Now you add the milk and bouillon, lower heat and simmer for 2-3 minutes.
Pour over steaks.
This recipe was graciously given to me by Cart Barn Grill! Thanks! As usual, I have added my own twist to the recipe, leeks, cream, better than bouillon and fresh cilantro. I think this would be good on any meat or seafood!!

Rubbed and Slow Baked Corned Beef Brisket


                                                                                                                               





Is.12:2 "Behold, God is my salvation; I will trust, and will not be afraid; for the LORD GOD is my strength and my song, and he has become my salvation."


1 Cook's brand Corned Beef Flat Brisket (4-5) lb.


Wash the brine off the brisket, discard season packet and place in large zip lock bag, cover with Dr. Pepper. Marinate overnight.


Next day:
Cover with Evelyn's rub (found on this blog)and regular yellow mustard. Using a foil pan, put 1 1/2 cup of Dr. Pepper in pan, place beef brisket in liquid and seal with foil. Cook on 350 degrees for 1 hour per pound. This is delicious! Let rest for 15 minutes before carving. Slice as thin as possible.

Salted Caramel Pistachio Pretzel Bark

1 bar of 60% Cacao Bittersweet Chocolate Baking Bar
1 bar of White Chocolate Baking Bar
1/2c pistachios pieces
1/2 crushed pretzel pieces
Caramel for drizzling

Melt the chocolate in the microwave for 50 seconds, stir, melt another 10 seconds. Stir until all is melted, add nuts and pretzels. Spread on parchment, drizzle with caramel and cool. Break into bark and enjoy!

Oh My Goodness Smoky Chicken and Rice

Made this for lunch today, oh my goodness!!
                                                                                                                       



Ecc.9:3 This is an evil in all that is done under the sun, that the same event happens to all. Also, the hearts of the children of man are full of evil, and madness is in their hearts while they live, and after that they go to the dead.

2c Quick Rice(I used Minute Rice)
1/2 stick butter
1t olive oil

Melt butter and oil in large non stick skillet, add uncooked rice and sauté rice until it slightly browns.

Chicken;
6-8 chicken tenderloins (season one side with onion powder and smoked paprika, the other
side season with garlic salt and smoked paprika)

Remove rice.

Using the same skillet melt 1/2 stick of butter and 1 t olive oil.
Sauté chicken until done, pulling it into bite size pieces as it cooks. Right before the chicken is done, add:
1c sliced mushrooms
1c sliced leeks
2 slices pancetta 

Add the rice and:
1/2 t bacon grease
Juice of 1/2 lemon
Few shakes of smoky hot sauce
1/2 c cream
2c chicken stock
Simmer 15 minutes, uncovered, yum!!

Bonefish Grill Crab Cakes Knock Off

We must all die; we are like water spilled on the ground, which cannot be gathered up again. But God will not take away life, and he devises means so that the banished one will not remain an outcast.



1 large egg
1/4 cup mayonnaise
1 t each: sour cream, lemon juice, Dijon mustard, kosher salt
2 t each: chopped fresh parsley, cayenne pepper
1/4 t smoked paprika
1/4 cup panko crumbs
2 T diced red peppers
1 pound lump crab meat, drained
Additional panko crumbs for patties
Clarified butter for cooking (found at Earth Fare)
Wasabi herb sauce *
Thai sarachi (Asian hot sauce)

1. In nonmetallic bowl, whisk Worcestershire, Old Bay, egg, mayonnaise, sour cream, lemon juice, mustard, salt, parsley, cayenne pepper and paprika. Fold in panko crumbs, red peppers and crab. Form 3-ounce patties by hand and coat with additional panko crumbs for crispness. Put on parchment paper-lined baking tray. Refrigerate 2 hours
2. Heat oven to 350 F. Heat 2 ounces clarified butter in skillet. Cook cakes until golden on each side. Put cakes in oven 5 minutes.
3. Lay cake in center of plate. Squeeze wasabi sauce on both sides. Add Thai sarachi (Asian hot sauce). Garnish with lemon.

*How to make wasabi herb sauce:
In food processor, puree:
4 tablespoons olive oil
1/4 cup each minced celery and chopped green onions
1 bunch chopped parsley (no stems)
Transfer mixture to bowl.
Stir in:
2 t Dijon mustard,
2 t wasabi powder,
1 T lemon juice,
1 cup mayonnaise
1/4 cup olive oil
1 t each dry mustard, chopped garlic and anchovy paste
Return mixture to food processor and process on low speed 1 minute to mix. Pour sauce into squeeze bottle. Refrigerate until ready to use.

Smoky Remoulade

1T Chopped fresh parsley
2T green onions
2T sweet pickles
pinch of garlic powder
3/4 c sour cream
1 1/2 t Dijon
1/2 t chopped chipotle in adobo
1/8 t pepper
1/2 t smoked paprika

Whisk together.
This is good on shrimp sandwiches, fried green tomatoes, fish, crab cakes, french fries or whatever else you would like to try it on!!

Jamie's Chili Mac


                                                                                                                                                              



Prov.17:3 The crucible is for silver, and the furnace is for gold, and the LORD tests hearts.

1 lb ground beef or turkey
2t chili powder
1-1/2cups  water
1 can black beans or kidney, rinsed
1 can tomato sauce
1 cup Salsa
3/4 cup elbow macaroni, uncooked
1 cup Shredded Pepper Jack Cheese 
4oz cream cheese

BROWN meat with chili powder in large saucepan.

ADD all remaining ingredients except cheese; mix well.

BRING to boil; cover. Simmer on low heat 15 min., stirring after 8 min. Serve topped with cheese.
