Artisan Flatbread Bacon Sun Dried Tomato Onion Pizza




























This was delicious!!

23 For I received from the Lord what I also delivered to you, that the Lord Jesus on the night when he was betrayed took bread,

Artisan Flatbread pizza ( got mine at Aldi in the bread isle)
Fried crisp bacon, crumbled 
Onion, sliced thin
Smoked Gouda, grated 
Sun dried tomatoes 
Cotija cheese

Top Flatbread with toppings.
Bake until slightly crispy.

Crushed Cheese Curl Salmon Patties







































7 for we brought nothing into the world, and we cannot take anything out of the world.

An ej original recipe!


1 can salmon, drained
Fresh Lemon juice
1/2 t Mardi Gras seasoning 
1/4 t Dry mustard
1/4 t Garlic
1/4 t Dried cilantro 
4 Scallions
1/4 c Mayo
1/2 c Crushed cheese curls

Mix well.
Shape into patties.
Roll in panko and freeze 15 minutes.
Fry in clarified butter!

1 c Panko 

2 T Clarified butter for frying

Quick Left Over Filet Asian Beef and Broccoli


































4 "Give attention to me, my people, and give ear to me, my nation; for a law will go out from me, and I will set my justice for a light to the peoples.

Left over cooked beef Fillet, sliced thin

Slurry for Beef 
2 T cornstarch 
2 T water
1/2 t garlic granules 

Slice beef, mix slurry, add beef, stir.
Drizzle with 1/2 t toasted sesame oil, stir again. 
Set aside.

Veggie mix
1 c Broccoli florets
1 c Cabbage, sliced thin 
1 Onion, sliced thin
2 T pickled sushi ginger, chopped
1/2 t olive oil

Add slight drizzle of oil and heat on high.
Place drained beef into hot skillet.
Quickly slightly crisp up Beef.
Remove.

Sauce
1/3 c light soy sauce
2 T palm sugar
1/2 c water
Stir.

Add veggies and oil to hot skillet.
Stir fry 1 minute.
Add sauce, then beef.
Stir fry 3 minutes.
Serve over sticky rice.
Delicious!!

Drizzle of olive oil

Asian Pan Seared Tuna Burger


































11 Out of the anguish of his soul he shall see and be satisfied; by his knowledge shall the righteous one, my servant, make many to be accounted righteous, and he shall bear their iniquities.

Normally you use ground meat to make a burger but I used a filet just as you would use in making a steak burger!

Pan Seared Tuna steaks (got mine at Costco)
Brioche slider bun
Sweet Onions, paper thin sliced
Carrots, paper thin sliced
English Cucumbers, paper thin sliced
Sweet Chili Thai sauce



Tuna prep

Build Burger, starting with warm bun, tuna, onion, carrots, cucumbers and sweet chili Thai sauce.

Pressure Canned Sliced Mushrooms

































5 But he was pierced for our transgressions; he was crushed for our iniquities; upon him was the chastisement that brought us peace, and with his wounds we are healed. 
6 All we like sheep have gone astray; we have turned-every one-to his own way; and the LORD has laid on him the iniquity of us all. 
7 He was oppressed, and he was afflicted, yet he opened not his mouth; like a lamb that is led to the slaughter, and like a sheep that before its shearers is silent, so he opened not his mouth.  - Isaiah 53:5-7



2 large packs Button mushrooms from Costco 
1/2 t Fresh lemon juice, add to each jar
6 half pint jelly jars

Slice mushrooms. 
Blanch in water.
Drain. 
Add lemon juice to each jar.
Pack mushrooms tightly in hot jars.
Clean rims with vinegar.
Place rings and lids.
Finger tight.
Place in prepared Pressure Canner.
Refer to Pressure Canner book for directions.
Process 45 minutes on your areas correct pressure according to altitude.
Here ours is 10 lbs.

Greek Dried Fig Jam

































21 For to this you have been called, because Christ also suffered for you, leaving you an example, so that you might follow in his steps.

We used to buy Fig jam from Greece.
It was delicious!
I could not figure out that secret ingredients.
But after looking at many recipes, I decided to try balsamic vinegar.
It worked!!


1&1/2 c chopped figs, stems removed
2 c water
1 c sugar
4 T white balsamic vinegar
1/2 t fresh lemon juice

Chop figs.
Have clean jars ready.
Combine all ingredients into a saucepan over medium.
Bring to a medium steady boil then reduce to simmer. 
Stirring occasionally, cook 10 minutes.
Spoon figs onto a plate.
Pulse figs.
Cook 10-15 minutes until the jam is thickened. 
It will continue to thicken as it cools and when you refrigerate. 
Place in jars and tighten lids.
Transfer to jars with tight-fitting lids. 
This made 3 half pint jelly jars and 1 quarter pint jar.
Will keep for 2 weeks.
I'm going to water bath the next batch for shelf storage!!

Quick White Wine Glazed Chicken

2 Leftover chicken breast, sliced diagonally to make 4, then sliced into small bite size pieces 
1 c Sovereign blanc
1 T chicken base seasoning
Drizzle Olive oil
1 Leek, sliced
1 small Onions, sliced 
1 c sliced Mushrooms
1/2 t Thyme
1/2 t Rosemary
1/2 t Sage
1-1/2 c water

Add heavy drizzle of oil to skillet.
Through in leeks, onions and mushrooms.
Sprinkle all seasonings on veggies.
Stir fry around until they begin to slightly caramelize. 
Add chicken.
Add wine and reduce until most of the wine is gone and add water.
Simmer until you have a glaze.
Serve over rice.

Leek and Potato Soup with Rosemary Parmesan Croutons





















Already the one who reaps is receiving wages and gathering fruit for eternal life, so that sower and reaper may rejoice together. - John 4:36






2 quarts Water
1 Leek, sliced 
1 Celery stalk, sliced thin
7 medium Red Potatoes
1/2 stick of Cream cheese, chopped
3 T Chicken base seasoning
Cracked black pepper
1/4 c Smoked cheddar 
1/4 c Unexpected cheddar

Slurry made of cornstarch and cold water for thickening.

Using a plate, microwave potatoes for 4 minutes on each side.
Set aside to slightly cool.
Cut the ends off and slice through the potato.
The peeling will easily fall off.
Heat water. 
Place potato chunks in heated seasoned water.
Add leeks, celery and all the cheese into pot.
Simmer until cheese melts.

Make croutons out of Costco Rosemary Parmesan bread.
Slice bread, add olive oil, toast on griddle and lightly salt.

Mardi Gras Bruschetta Chicken Tacos

An ej original recipe!



1 c Smoked chicken or Rotisserie chicken 
1/2 t Mardi Gras seasoning
2 T Bruschetta 
Crispy Tacos, warmed
Quesadilla Cheese
1 t Sour cream

I made 4 tacos.
Sauté onion in a drizzle of oil.
Add chicken and bruschetta.
Dress tacos with cheese and sour cream.

Pimento Cheese Reuben

Sour dough bread
Top round beef
Pastrami 
John's slaw dressing
Kraut
Pimento cheese
Clarified Butter

Butter bread.
Put on grill top.
Add pimento cheese, meats and kraut.
Toast on both sides.
Serve with John's slaw and pickles.

Fresh Blueberry Pie



























The fruit of the righteous is a tree of life, and whoever captures souls is wise.  - Proverbs 11:30


3 c fresh blueberry
3/4 c sugar
1/8 c cornstarch 
1/2 of a Lemon juiced

2 pre-made Pie crust

Toss berries in the sugar, cornstarch and juice.
Add to pie shell.
Take second crust and pull pieces and spread around on pie.
Bake preheated 400 degrees oven for 35 - 40 minutes. 
Check after 30 minutes, if crust is getting too dark, lay a foil sheet over top.
Serve with ice cream on top.

Kitchen Sink Vegetable and Chicken Soup

She rises while it is yet night and provides food for her household and portions for her maidens.  - Proverbs 31:15




Thank You Lord for out bountiful harvest.




Chicken stock made from base seasoning, enough water to fill large pot 3/4 way
1 Shallot, diced (or onion)
1/2 Roasted Poblano, diced
1 c Rotisserie chicken, shredded
3 T double concentrate tomato paste 

Herbs
1/2 t Sweet Basil
1/2 t Garlic
1/2 t Thyme
1/2 t Rosemary 
Pinch Red pepper flakes
1/4 t Crushed bay leaf
1/4 t Sage
1 t Sugar
1/2 t Black pepper
Salt to taste 

Veggies
1/2 c Corn, I used some I froze from garden, silver queen
1/2 c Big boy Peas or purple hull
1/2 c English peas
1/2 c Green beans
1/2 c Christmas speckled butter beans or limas
2 medium Yukon Potatoes
1 c Spinach 
1/2 c okra
1/4 c celery
1 c Sweet 100 tomatoes 
Heaping T of bruschetta 
Half Fresh lime


Place all ingredients in a large pot.
Bring to boil, turn to low, simmer until veggies are tender.
Most of the veggies came from our garden.
Serve over cornbread.
