Baked Salmon With Citrus Dijon Limoncello Sauce

1 3/4 lb. Atlantic Farm Raised Salmon cut into fillets
Clarified butter/olive oil mix

Drizzling mix

Smoked salt and cracked black pepper, to taste 
Dill sprinkle on each filet
Lime zest on each filet
Lime juice on each filet 
Garlic granules sprinkled on each filet



Citrus Dijon Limoncello Sauce

1/8 c heavy Cream
2 T Butter
1/8 c Limoncello 
1 t Fresh Ginger, diced and mashed
1 Shallots, diced
1/2 t Lime zest 
1/2 t Lime juice
1/2 t Dijon 
1 t roasted Garlic
Smoked salt and cracked black pepper to taste
Pinch Red pepper flakes
1/2 t Capers and juice
Thin slices of lime

Make sauce over medium heat and reduce.
Set aside.

Line pan with parchment paper.
If fillets have skin, place skin side down.
My fillets were skinless.
Drizzle oil and clarified butter over fillets.
Sprinkle dry drizzling mix over fillets.
Add lime slices on top.
Bake 425 degrees in a preheated oven on bottom rack for 14 minutes.
Do not over bake!
Serve over jasmine rice.

Mexican Pineapple Juice Pork Short Ribs

1 package of boneless pork short ribs, cut into 2 inch chunks
1/2 c salsa
1 Leek, sliced
2 T roasted garlic
3 T Worcestershire sauce
2 T hickory liquid smoke
1/4 c pineapple juice
1/4 c water
1 T adobo seasoning
Salt and pepper 

Using a Dutch oven, sear meat chunks in a little olive oil, add leeks and garlic after meat begins to crisp.
Sprinkle on the adobo, salt and pepper.
Add water, juice, salsa, Worcestershire sauce and liquid smoke.
Seal with foil, bake in preheated 350 degree oven for 1 1/2- 2 hrs or until pork will pull with a fork.
Serve on warm tortillas topped with chopped tomatoes, lettuce, grated cheese and chopped avocados. 
This meat is also good for nachos.

Boursin Shallot and Chive Chicken Casserole

Rotisserie chicken, both breast, pulled
1 Can of chicken soup
1/8 c heavy cream
1/2 t tarragon 
1/2 of a container of Boursin shallot and chive
Top with Ritz crackers

Bake 350 degrees for 30 minutes.

Broccoli Rice Mushroom Casserole

2 c Veggie rice frozen mix
1 package broccoli florets
1/4 c leeks
1/2 t chicken base seasoning
5 Mushrooms, sautéed in butter and  chopped
1/4 c heavy cream 
1/2 c pimento cheese

Topping
1/4 c cheese, I used smoked Cheddar and Havarti 
1/4 c canned onion rings
1/4 c panko

Bake 350 degrees for 30 minutes.


Chicken Black Bean Stuffed Pasilla Chili Pepper

4 Pasilla (poblano)chili peppers, charred, cut in half
1 can black beans, rinsed and drained
1 Onions, chopped
2 c Chicken, I used left over fried chicken which I skinned, de-boned and pulled
4 T double strength tomato paste
1 t adobo dry seasoning 
Splash of whiskey
1/8 c water
1/4 c cheese, I used Hoop cheese

Enchilada sauce, recipe this blog under Mexican

Baked 350 degrees for 30 minutes.

Topping
Avocado 
Tomatoes 
Lettuce


Chili Cheese Fries for Two





























8 Oh give thanks to the LORD; call upon his name; make known his deeds among the peoples!

French Fries cooked and set aside

Grated Cheese(I used Havarti)

All Meat Chili

1 piece of Angus, chopped tiny
1 onion 
1/2 t clarified butter
3 T double strength Cento tomato paste
1 t yellow mustard
1/2 t smoked cumin
1/2 t garlic
1/2 c water
Salt and pepper to taste
Sauté burger and onion in butter.
After meat is done, add mustard, seasonings, water and tomato paste. 
Simmer to thicken.
Pour over cooked fries and sprinkle with cheese.

Hoisin Boneless Beef Short Ribs

Simple but delicious!
An ej original creation!


1 Leeks
Drizzle of olive oil
2 T roasted Garlic
4-5 Boneless short ribs(Costco) cut into 2 inch pieces (enough to cover bottom of pan)
1/4 c Hoisin
2 T Liquid smoke
1/8 c Soy sauce
1/2 t Chili oil
1/2 c Water


Drizzle oil in a Dutch oven and bring to medium heat.
Add leeks and sauté for 1 minute, add garlic and beef.
Sear beef, then add hoisin, liquid smoke, soy sauce, chili oil and water.
Seal Dutch oven with foil.
Bake in a 350 degree preheated oven, middle rack for 1 hour 30 minutes or until tender. 
Serve over rice or make sandwiches.

Cheese Curd Veggie Sweet Potato Nachos

Sweet potato tostado chips (Trader Joe's)
Cheese curds (Sprouts) I twisted mine into small chunks
Sweet onion (Peru) sliced
Avocado, sliced
Tomato, chopped

Lay chips in plate and add curds.
Microwave 30 seconds.
Add onion, avocado and tomato.
Yum!!

Boursin Cream Shrimp And Rice

1 Leek, sliced
1 T clarified butter
3 T Shallot chive Boursin 
1/8 c White wine
1/8 c cream
Salt and pepper
1/2 t tarragon 
10 Shrimp, tail removed, peeled, cut in half
1 bag frozen Rice, microwaved and set aside
1/4 c Parmesan 


Sauté leeks in butter.
Add wine, Boursin and cream, sauté to make sauce. As sauce thickens add shrimp and seasonings. Don't over cook. Add Parmesan. Serve over rice.

Cuban Pork Tenderloin Sandwich

Seasoning paste
1/2 t Garlic granules 
1/2 t Olive oil
Salt and pepper
1/2 t Adobo seasoning
Using mortal and pestle make paste.

Basting sauce
1/2 c orange juice
1 small lime juice 
1 T light rum
Mix with a spoon. 
Reserve 1/2 t to add to mayo.

Chipotle mayo
1/4 c miracle whip
1/2 t chipotle in adobo, mashed
1/2 t basting sauce

Make several slits across pork top and fill with paste, sprinkle sazon on top and roast in 400 degree oven for 40 minutes. After roast has been in oven for 10 minutes, start basting every 10 minutes.

To build sandwich slice pork, add ham, chipotle mayo, sliced dill pickle and cheese put on buttered bread. Toast on griddle.
