Fresh Kimchi

Thus might be very spicy!!!!


3 T Kosher salt
1 small Savoy cabbage, chopped
1 baby bok choy, chopped
1 daikon radish, sliced
3 carrots, sliced
1/2 inch fresh piece of ginger root, chopped
2 T sugar
1 T toasted sesame seed
1 T sesame oil
3 green onions, sliced
1 onion, sliced
1 t roasted garlic

1/2 jar of Chili paste, I bought Sambal Oelek




Make a brine of water and salt, enough to cover cabbage veggie mixture.

Weight down, soak 3 hours until cabbage is soft.

Reserve the brine.

Cover the cabbage veggie mix with the chili paste, toasted sesame seeds, sugar and sesame oil.

Place in a glass container that seals and press the liquid out, takes a few times. Do not drain.

Then add the reserved brine if necessary just to cover mixture.

Press down once more.

Refrigerate.

May be eaten immediately or stored refrigerated until it ferments.

I have not tasted this yet but it smells delicious!!

Grilled Pork Tenderloin Smoked Mozzarella and Pear Sandwich Fixins

Use the bread of your choice. I like toasted onion buns.
Add a sliced onion to a little oil and cook until onions are translucent.
I'm using grilled pork tenderloin we made the other day. It was a golden rotisserie flavor Smithfield. I added McCormick Grill Mates applewood rub I bought at Sam's which they also sell at Walmart. Add slices of the meat to the onion.
Cut several slices of smoked mozzarella and add to the skillet.
Peel and slice a pear. Set aside.
Add the pear. Turn off heat. When cheese is melted, it's ready to build sandwich.
So simple, so delicious!!!

Ramen Noodle Beef Stir Fry with Peanuts and Vegetables

Beef, thin cut into bite size pieces, I used beef tenderloin
Olive oil for stir frying
Ramen noodles, cooked, discard seasoning packet
Sesame oil
1 t roasted garlic
4 Green onions 
1 c snapped baby Green beans
1 Carrot, matchstick cut
Sprinkling of Sesame seeds
1/4 c Peanuts

Sauce
1/4 c Mirin
2 T ham glaze, this blog under the Rub tab
1 t Kosher salt 
A few turns Coarse black pepper


Cook noodles, drain and rinse, drain again, toss in sesame oil. Set aside.
Add oil to large non stick skillet. 
Add beef, onions, garlic, green beans and carrot to oil, stir fry until veggies are slightly soft and beef is to your preference. 
Add sauce and cut off heat. 
Add noodles and toss.

Lemon Pepper Grilled Chicken and Onion with Smoked Cheddar and Apple on an Onion Bun

Marinate your 6 chicken tenderloins in 3 t sugar/ 3 t salt water for 30 minutes.
Remove from water, drain.
Sprinkle lemon pepper seasoning on chicken. 
Set aside while grill heats.
Grill until done. 
Slice into 1/4 inch slices.
In an oiled skillet, sauté 1 sliced onion.
Add chicken slices. 
Slice 6 pieces of smoked cheddar on top of chicken onion mixture.
Tun off heat.
Peel and slice a Gala Apple.
Add apples to mixture.
Toast onion buns.
Add chicken mixture and slice stuffed bun in half.
Yum, yum Yum!!!!

Grilled Pork Tenderloin Stir Fry

1/2 of a small grilled rotisserie flavored tenderloin, sliced into strips
3 baby bok choy, wash and chop
1 onion, sliced
2 carrots, cut matchstick
1 red bell pepper, slices
2 T roasted garlic
1 t fresh grated ginger
1 t olive oil

1 T sesame oil
2 pgks chicken flavored ramen noodle, throw out the flavor packet

1/2 c cashews, added when dish is to be served


Sauce:
2 T Brown sugar
1/2 t Peanut butter
1/2 t Rice vinegar
2 T Soy sauce
1/2 c Mirin, Target and Sprouts has this wine in the Asian section
1/2 c Water
1/2 t Molasses 
Pinch of red pepper flakes

Smoked salt to taste, add at the end of cooking.

Cook noodles, drain and rinse with cold water, drain again and toss in sesame oil, set aside.

Stir fry all veggies until tender.
Add tenderloin.
Mix sauce ingredients and add to veggie/meat mixture.
Toss in cooked noodles with tongs.
Garnish with cashews.

Spicy Pimento Cheese Squash Casserole

5 yellow squash, chopped and steamed
1 onion, chopped
1 T cream cheese
1/2 c spicy pimento cheese
Salt and pepper to taste

Topping
1/2 c canned onion rings, crushed
2 T Panko
1/2 c sharp cheddar cheese, grated

Steam squash and onion in microwave steamer, drain.
It usually takes 6 minutes.
Add cream cheese and pimento cheese to hot squash and stir.
Season to taste.
Steam an additional 3 minutes.
Spray a pie plate with Pam and add squash mixture.
Add topping ingredients, onion rings first, then Panko and ending with cheese.
Bake 350 for 20 minutes or until crust is crunchy. 

Beef Tenderloin in Red Wine Sauce on Egg Noodles

2 c Beef tenderloin, smoked and sliced
4 large Mushrooms 
1 t olive oil
1 Leek
1/4 c Red wine 
1/2 c water
1 instant Brown Gravy packet
2 cups cooked Egg noodles
1 t Parsley
1/4 c half and half
Cracked black pepper, to taste
Kosher salt, to taste


Sauté leeks and mushrooms in oil.
When the mixture is tender add dry gravy mix.
Stir into mixture until dissolved and add wine, cooking a couple of minutes.
Now add water and half and half and cook until thickened.
Add all seasonings, beef and noodles.

Yummy Bacon and Chicken Easy Stir Fry

Drizzle of olive oil
1/2 pat compound butter, I make my own, recipe on this blog under compound butter tab, basil paprika butter
1 ear of corn kernels 
1 rotisserie chicken breast, chopped
1/2 bell pepper, sliced
2 large green onions, slice on diagonal 
5 mushrooms, chopped
2 c cooked pasta, I used angel hair
3 slices cooked crisp chopped bacon
1/2 t dried dill
1/2 t smoked paprika
1/2 t smoked salt
A few turns cracked black pepper
1/2 t fresh rosemary, diced
1 T fresh sweet basil
1/2 t dried parsley
1/4 c half and half
Pinch of pepper flakes

Sauté veggies and herbs in compound butter and oil.
Add cooked bacon, cooked chicken and cooked pasta.

This was fast, delicious and healthy!

Basil Smoked Paprika Compound Butter

1 stick butter, softened
1/4 c fresh sweet basil, diced 
1/2 t smoked paprika
1/2 t shallot, diced

Mix well, roll into log, refrigerate.

Updated Knock Off Flemings Potatoes

3 T jalapeños or Poblanos, chopped 
4 oz. leeks or shallots, diced for shallots, chop for leeks
1 t olive oil
1 t Kosher salt
1 t coarse black pepper
1 cup heavy cream
1 cup half & half
4 oz. cheddar cheese, grated
4 oz. jack cheese, grated
2 oz. low moisture mozzarella, grated
1 t roasted mashed garlic
3 lbs. Red potatoes, medium size 

Instructions:
Remove seeds from jalapeños or Poblanos and dice finely. Cut ends off leeks. 
Dice the bottom 3 inches of leeks into 1/2-inch pieces.
If using shallots, dice.
Place oil in large sauce pot set on medium high heat. Add jalapeños or Poblanos, leeks or shallots, salt and pepper, sauté for 4-5 minutes. Add cream and half & half and bring to a simmer. When cream is hot, pull off stove, add cheeses and blend in thoroughly.
Microwave potatoes until fork tender, cool, peel and slice thinly. 
I cooked mine covered 4 minutes on one side, flip and repeat.
Cool in ice water for easy handling.
Spray sides and bottom of a 9” x 13” baking dish with pan coating. Evenly distribute the potatoes and sauce in the pan.
Cover with aluminum foil and bake at 350° F for 30 minutes. Remove foil, add 1/2 c cheddar and bake another 15 minutes till top is a golden brown.

Bruschetta Cheese Stuffed Burgers with Guasacaca

1.5 lbs 85% lean ground beef, I get mine at Sprouts
Bruschetta cheese, Publix deli ( cut 10 1/2 inch chunks)
Kosher salt
Black cracked pepper
Onion rolls, toasted( I get mine from Sprouts)
Guasacaca

Make a burger patty. Place two cheese chunks in the middle. Make another patty and place on top. Press around the outer edge to seal. This makes 5 large burgers. Season burger and press down to make a neat patty. Add a tad of olive oil to a large skillet. Sear and season patties. Place a large lid to fit over all burgers so you can steam them. Flip frequently. 
These are so good!!! Serve on a toasted onion bun topped with Guasascaca, recipe this blog under dip tab.

Guasacaca (Venezuelan Guacamole)

1/2 onion, diced 
1 ripe avocado, chopped( I use a lettuce knife made of plastic, this keeps avocado from turning dark)
1 t parsley 
1 t cilantro 
1 t red wine vinegar
1t lime juice 
3 pickled jalapeño slices, diced
1 t mayo
1/2 t honey
1/2 t Kosher salt, or to taste
1/4 t course black pepper

This stuff is ridiculous!!! 
Rough chop avocado. Add all ingredients. Using a plastic spoon, gently stir to just incorporate.
This can be used on burgers, tacos or just eat on chips!

Malabar Pepper Brown Sugar Bacon Italian Sausage Onion Bombs

4 large onions, peel, cut in half and pull the outer layers to make 6 onion slices to fit together for your bomb

Meat mixture:
1 lb. ground Italian sausage 
1/4 c panko
1/4 c buttermilk
2 T Heinz Ketchup
1/2 t vinegar
1 T brown sugar
2 T Worcestershire sauce
1 t Dried parsley
1 c Parmesan Reggiano 

Topping:
Malabar course black pepper
6 slices Bacon, cut in half
Brown sugar
Ketchup
Smoked salt

Mix all of meat mixture ingredients together, just to incorporate.
Take onion pieces and set upright making a circle and leaving an opening to stuff with meat mixture. It looks like the onion is wrapped around the meat mixture.
Now sprinkle brown sugar on top, swirl on some ketchup then salt and pepper.
Bake at 375 degrees for 50-60 minutes or until internal temp is 165 degrees.
These are the bomb!!!

I have served this at many family reunions and it was always the number one requested pot luck dish for my husband's work parties.

1 lg pgk coleslaw mix (not angel hair) if you can't find a large bag use (2) small bags

1 bunch green onions chopped
2 pgk chicken flavor Ramen noodles
1 c dry roasted sunflower kernels
1 c slivered or sliced almonds

Dressing
1/3 c vinegar
1/2 c sugar
1/4 c oil
2 T soy sauce
This slaw is best made right at meal time. It makes a lot so if you aren't having lots of guests, half the recipe.

Cuban Grilled Chicken Jalapeño Pimento Cheese Bacon Club

Cuban grilled chicken tenderloins, seasoned with Cuban rub
Jalapeño pimento cheese
Crispy bacon
Avocado 
Onion buns, toasted 

Pound chicken, season, pan fry in a little olive oil.
On the toasted bun, spread with the pimento cheese, place the avocado slices on the pimento spread then top with bacon and chicken. Yum!!

Greek Seasoned Pot Roast

Chuck roast cut into chunks, sear seasoned roast in olive oil
Greek seasoning, season roast and veggies
1 Onion, sliced
1 Leek, sliced
4 Carrots, chunks
1 Celery stalk, sliced
2 T tomato paste
1 c Red Wine
1/2 c Water
Kosher salt, season roast and veggies

Sear season and salted veggies in oil. Remove. Add oil if necessary.
Season roast with salt and Greek seasoning.
Sear in oil. 
Add veggies back and add water, and wine. 
Bring pressure up and cook for 35 minutes, using medium heat. 
Take pressure off and check liquid, add tomato paste and if necessary add a little wine.
Bring pressure back up and cook 15 minutes.
Yummy!!!

I served this with Greek potatoes, Greek asparagus and corn on the cob!!!

Cashew Pork and Noodles






He drew me up from the pit of destruction, out of the miry bog, and set my feet upon a rock, making my steps secure.  - Psalm 40:2







2 Pork chops, deboned, pounded and chopped 1/4 inch pieces
Season with:
1/4 c brown sugar
1/2 t kosher salt
1/8 t garlic granules
Pinch of pepper flakes
Sprinkle on meat and let it sit while you chop veggies.

Prepared angel hair pasta.

Veggie mix:
2 Baby bok choy, chopped
2 Carrots, match stick cut
1 shallot, diced
1 small onion, cut in half and slice thin

Finishing sauce:
1/4 c Mirin
1 T peanut butter
Whisk together.

Garnish with cashews.

Stir fry pork in 2 t olive oil until done, around 5-8 minutes.
Remove to a plate.
Add oil if necessary, add veggies, stir frying until done, 5 minutes.
Add pork back in and add finishing sauce.
Sauce with thicken very quickly.
Add cooked and drained noodles.
Garnish with cashews.
