Andouille Cream Sauce Shrimp and Cheese Grits









1 Peter 2:3
if indeed you have tasted that the Lord is good. 






2 inch piece of Andouille sausage, diced
1/2 c heavy Cream
1/3 c Parmesan cheese
1 Leek, sliced
20 frozen Shrimp, tail off
1/4 c Limoncello
1/2 t Smoky chipotle hot sauce
2 T Roasted garlic
1 t Butter for sautéing shrimp
1/2 t olive oil
2 t Fresh parsley

Grits 
1/4 c cream
1 1/2 c water
Smoky salt to taste
pepper to taste
1/2 c Sharp cheddar
1/4 c Smoked Gruyere  
4 heaping T Quick grits

Fast and Delicious Bacon Cream Cheese Pepper Jelly







1 Peter 3:15
but in your hearts honor Christ the Lord as holy, always being prepared to make a defense to anyone who asks you for a reason for the hope that is in you; yet do it with gentleness and respect, 






2 -3 T of Pepper Jelly and Onion, I use Harry and David brand
1/3 of the bar of Cream cheese, softened
6 slices of Bacon, chopped and fried

Cook bacon and drain.
Add jelly to cream cheese then add the bacon. 
Eat with crackers of your choice.

Asparagus Casserole





1 Peter 2:
13 Be subject for the Lord's sake to every human institution, whether it be to the emperor as supreme,
14 or to governors as sent by him to punish those who do evil and to praise those who do good.









Casserole
1 bunch small asparagus 
1t butter
1 t olive oil
1/4 t ancho chili powder
1/4 t turmeric 
Salt and pepper, to taste
1 can cream of mushroom soup
1/2 c sour cream
1/2 c cheddar cheese 
1/2 c onion rings

Topping
1/2 c Italian Panko
1/2 c cheddar cheese
1/2 c onion rings

Pesto Mushroom Leek Chicken Casserole




1 Peter 2:

23 When he was reviled, he did not revile in return; when he suffered, he did not threaten, but continued entrusting himself to him who judges justly.
24 He himself bore our sins in his body on the tree, that we might die to sin and live to righteousness. By his wounds you have been healed.
25 For you were straying like sheep, but have now returned to the Shepherd and Overseer of your souls.







3 c rotisserie chicken, shredded
1 can cream of onion soup
1/2 c sautéed leeks and mushroom mixture, * I do a skillet full and keep in the freezer
1/2 c sour cream
1 T pesto

Topping
1/2 c panko
1/2 c sharp cheddar
1/2 c mozzerella 

In a 13x9 pan, place shredded chicken. Scatter leek mixture over the chicken. In a bowl mix soup, sour cream and pesto and add to chicken and stir gently to incorporate. Sprinkle panko then the two cheeses on top of chicken mixture. Bake 350 degrees for 30 minutes.

* Saute 3 sliced leeks and a large container of sliced mushrooms in 1 t of butter and 1 t of olive oil. I buy the bulk size at Sam's or Costco. These freeze well! Divide into small containers, I try to do a 1/2 cup size.

Cornbread and Croissant Southern Style Dressing







1 Peter 1:
8 Though you have not seen him, you love him. Though you do not now see him, you believe in him and rejoice with joy that is inexpressible and filled with glory,
9 obtaining the outcome of your faith, the salvation of your souls.




1 10 inch cast iron skillet of cooked buttermilk cornbread 
4 toasted croissant, cut in half to toast, after toasting, dice
1 can cream of celery 
1 can cream of chicken
3 T fresh chopped sage
1 leek, sliced
1/4 c heavy cream
2 stalks celery, sliced thin
1 1/2 -2 c smoked chicken or rotisserie chicken
1 1/2 quarts Chicken stock, reserve the rest for gravy

In a 13x9 deep dish pan, crumble cornbread. Add the toasted croissant, soups, sage, leeks, cream, celery and chicken. Now add stock. Drizzle cream on top, bake 450 degrees for 50-60 minutes or until browned.

3 T clover honey
1 1/2 T Mitsukan rice wine vinegar
1/4 c light mayo
1 t Grey Poupon Dijon
1/8 t Imperial Dragon sesame oil

Whisk together.

Prosciutto Panino Pasta






James 1:22
But be doers of the word, and not hearers only, deceiving yourselves.




President's Proscuitto Panino is gourmet meat with fresh mozzarella and basil from Sam's club

Panino roll, cut into 3 pieces, freeze in ziploc bags

1/3 of the Panino roll, chopped

1/2 t olive oil
2 t butter
1 leek, sliced
8 fresh small asparagus, cut into bite size pieces
2 large mushrooms, sliced
1 t chicken base seasoning

1/4 c Sauvignon Blanc
1/4 c cream
1/4 c 1/2 and 1/2
1/2 t ancho chili powder
1/2 t turmeric 
1/2 t smoky paprika
4 turns fresh black pepper


Angel hair pasta 1/2 box, cooked al dente
Reserve some pasta water

Sauté leeks, mushrooms and asparagus in oil and butter, add the chicken base seasoning to the veggies and add the chopped panino. When the veggies are tender, add the wine. Let it cook 2 minutes and add the cream, 1/2 &1/2 and the rest of the seasonings.
Add pasta and 1/2 c pasta water, stir with tongs to incorporate.

Japanese Ramen Shrimp Bowl








Hebrews 12:25

Watch out Nothing But Noodles!!!


2 packages Ramen noodles, toss season pgk
1/2 c mushrooms, chopped
20 large frozen cooked shrimp, remove tail
1/2 c chopped onion
1 sliced leek
1/4 t red pepper flakes
2 heaping T chicken base seasoning
4 c water
1/2 c Mirin, World Market has this, so does Target
1/4 c soy sauce
4 t sesame oil

Sauté chicken base seasoned leeks, mushrooms, and onions in a butter oil mixture (1 t butter, 1 t olive oil)
Then add shrimp and pepper flakes.
In small bowl, combine water, mirin, soy sauce, and sesame oil. 
Add wet ingredients to shrimp mixture.
Last add Ramen noodles. Cook 3 minutes.

Jeff's Momma's Mac and Cheese
Boil noodles like normal, add some salt. When noodles are tender, drain and rinse, then pour back in pan. Cut and add 1 large full box of the Velvetta cheese and any other cheese you may have in frig, add milk and warm to melt all the cheese. Stirring constantly. Lick spoon then redip to taste and make sure if needs more salt or pepper. When cheese is melted, pour into a buttered casserole dish, lick spoon again. If it does not have much milk in it, add more, you want it alittle juicy. You may need to add more salt & pepper to taste. lick spoon again. Cover the top with a thick layer of Shredded Mild Cheddar cheese, I usualy have a whole bag ontop of mine. In a separte bowl beat 2 eggs (don't lick the fork unless you like the taste of raw eggs) then pour egg mixture lightly all over cheese topping. After poured all over, fork the egg into the mac n cheese, do not stir it into it. You may have to add more cheese. As you can tell I like to use alot of cheese. Sometimes mine is never the same as it depends on what cheese I have in the house. Bake on 350 for about 30 minutes or until top gets brown. But you may want to really think if you want to let anyone else try it because when they do, there is no getting away from doing it again and again lol They will hound you especially on holidays to make it. So be extremely careful on who you let taste it LOL
* I used 2 boxes noodles
Biggest block velveeta
Large block mozzarella 
Milk & half/half to make juicy
Topped with 2 eggs & block of sharp cheddar 
Made a deep, large pan
* shred your block cheese in food processor* 

Chinese Red Dipping Sauce

1/2 c ketchup
1/2 small can pineapple juice, shake can

1/2 t garlic salt
1/2 c sugar
1 T molasses

1/4 c honey
1/2 t dry mustard
1 t Worcestershire 

Heat for 15 minutes on low.

TURNIP GREENS SOUP









Hebrews 9:12
he entered once for all into the holy places, not by means of the blood of goats and calves but by means of his own blood, thus securing an eternal redemption.


 
3 cans chicken broth
1 pgk Knorr Vegetable Soup Mix

1 c chopped baby carrots
1 pgk frozen chopped turnip greens mix
2 pgk Smoked sausage, sliced in bite-size pieces
3 cans White Navy Beans, drain and rinse
1 t olive oil
Chopped shallot or onion
 
Sauté onions or shallots and carrots in oil.
Add the rest of the ingredients in and bring to boil and lower heat to simmer for about 45 minutes.
Serve with cornbread.

Pear Fontina Walnut Tartlets














Hebrews 10:31
It is a fearful thing to fall into the hands of the living God.



Crescent Rolls, cut out circles to fit mini baking pans, reserve scraps to re-roll to make more circles
1 large sweet pear, peeled and chopped into tiny pieces, salted and peppered
3/4 c of Fontina cheese, chopped into tiny pieces
3/4 c of Walnuts, chopped tiny
Honey, to drizzle tops of filled mini tart shells

Using a Pam sprayed mini muffin pan, 12 count, place crescent roll circles in bottom. Place a few pieces of pear, then cheese and then the walnuts. Drizzle with honey. Bake 350 degrees until slightly browned, 20-25 minutes. Let cool in the pan, then remove. 



*** The third batch, I tried it a little different. I softened 3 T of cream cheese and added 1 1/2 t of honey and whipped it with a fork. I used this instead of the fontina. Layer the same, pears, honey-cream cheese mixture and walnuts. It was very good! It yielded 3 pans of tarts.

Creamy Cherry Pineapple Walnut Skillet Cake






Hebrews 8:

11 And they shall not teach, each one his neighbor and each one his brother, saying, 'Know the Lord,' for they shall all know me, from the least of them to the greatest. 
12 For I will be merciful toward their iniquities, and I will remember their sins no more." 


1 can Comstock more fruit Cherry pie filling
1 can pineapple tidbits in its own juice
1/2 c cream
1 stick butter
1/2 box of yellow cake mix
1 c walnuts

Melt 2 T of butter in a 10 inch cast iron skillet.
Before it melts all the way, grease sides with the chunk.
Add the can of pie filling, then the juice and the can of pineapple tidbits.
Stir the cream into the fruit.
Sprinkle the cake on top of the fruit.
Do not stir!!
Melt the rest of the stick of butter in the microwave, reserving for the top of the cake.
Add the walnuts then drizzle the butter on top. 
Bake 350 degrees for 30-45 minutes or until lightly browned.

I used my toaster oven to bake this and then turned on the toast setting to brown a little more.
This was so easy and was delicious!!!
Not too sweet but just right!!!

Mushroom Broccoli Smoked Chicken Bake







Hebrews 5:14
But solid food is for the mature, for those who have their powers of discernment trained by constant practice to distinguish good from evil.







2 c smoked chicken
1 can cream of mushroom soup
1 c sour cream
Steamed broccoli, I used 10 broccoli heads that I chopped


Topping
1/2 c shredded sharp cheddar
1/4 c panko
1/2 c crushed onion rings

Bake 350 degrees for 30 minutes.

Italian Style Asparagus






Hebrews 5:9
And being made perfect, he became the source of eternal salvation to all who obey him,





Bunch of tiny asparagus 
1 T butter 
1/2 T olive oil
Salt and pepper to taste
1/4 t ancho chili powder
1/4 t smoked paprika
1/4 t onion powder
1/4 t garlic granules
1/4 c Parmesan
1/4 c panko

Melt butter in oil and add seasonings.
Add asparagus and sauté until tender.
Add the Parmesan and the panko.

Canadian Bacon Pesto Pizza






Hebrews 2:10

Momma Mary's ultra thin crust or your choice of crust
1/2 c Prego traditional
1/4 c Pesto
Canadian bacon, chopped
1/4 of Peru onion, paper thin sliced
Mozzarella, I shredded my own, it just taste better
Home style brand Parmesan/Romano 

This pizza crust is awesome, bakes in 8 minutes.
Brush olive oil on both sides. 
Start with the red sauce, then spread the pesto into the red sauce.
Scatter the Canadian bacon next, then the onions. 
The last layer will be the mozzarella and then sprinkle the two cheese mixture. You are ready to bake.
I baked mine on the rack in my toaster oven, 425 degrees for 10 minutes. 

Saws of Alabama White Sauce Knock Off





Hebrews 3:
12 Take care, brothers, lest there be in any of you an evil, unbelieving heart, leading you to fall away from the living God.
13 But exhort one another every day, as long as it is called "today," that none of you may be hardened by the deceitfulness of sin.





1 c mayo
3 T white vinegar
3 T lemon juice
1 T black pepper
1 T honey


Mix together with a whisk. Put in a squeeze bottle, refrigerate.

Glazed Chicken over Basmati Rice




2 Tim.4:1-2
1 I charge you in the presence of God and of Christ Jesus, who is to judge the living and the dead, and by his appearing and his kingdom:
2 preach the word; be ready in season and out of season; reprove, rebuke, and exhort, with complete patience and teaching.




10 chicken tenderloins salted and peppered 
2 T olive oil
1 leek sliced
Sliced Mushrooms (optional)

Pat of butter
1/2 t garlic salt
1c chicken stock
1t Cornstarch, for thickening 

Fresh chopped basil
1 c cooked Basmati rice


Brown chicken, remove from pan. Sauté garlic seasoned leeks and mushrooms in butter. Add chicken and stock. Take the cornstarch, add it to 1/2 c cold water, stir with fork to dissolve. Add to stock and simmer until it thickens. Serve over rice.
