Honey Lemon Dill Salmon





























Psalm 119:169-170

Large piece of salmon cut into your preferred serving size


1/4 c Mayo

1/4 t each Salt and pepper

Fresh dill sprigs for each piece

1/2 t chopped Capers

1 t Fresh lemon juice

1 t Honey

Roasted Garlic 


Cover sheet pan with parchment 

Mix and spread over salmon pieces 

Bake preheated 425 degrees for 13 minutes

Easy Fast Tortilla Thin Crispy Crust Meat Lovers Pizza in the Air Fryer

These literally took 3 minutes to make and 7 minutes to air fry!!


Air fry 450 degrees for 7 minutes until crust is crisp 


Medium tortillas 

Double concentrate tomato paste

Maple Honey Ham

Bourbon Ridge ham

Pepperoni 

Bacon bits

Onion

Roasted red peppers

Parmesan 

Mozzarella 

Drizzle Olive oil


Spray foil with non stick spray

Lay tortillas on foil

Using a spoon lightly cover tortillas with tomato paste 

Add chopped meats next onion then cheeses 

Top with peppers

Drizzle with oil

Romaine Lettuce, shaved

Sweet Onions, sliced 

Cucumbers, chopped 

Tomato, chopped 

Sweet mini Peppers, sliced in rings

Castelvetrano  Olives, cut in half 

Radishes, sliced

Greek pepper rings

Boiled eggs, grated

Croutons 

Cheese

1 lb cleaned Tiger shrimp seasoned with Kinder wood fired garlic seasoning

1 T Clarified butter

1 t Olive oil

1 T Roasted garlic

1/8 c Sauvignon Blanc 

1/8 c Heavy cream

1/8 c chopped fresh cilantro 

Lime juice from 1 lime


Dry shrimp off

Season shrimp 

Melt butter in large skillet 

Sauté garlic 20 seconds 

Add seasoned shrimp 

Cook 3 minutes on one side and flip, repeat

Remove shrimp 

Add wine, sauté 1 minute

Add cream, sauté 1 minute 

Sauce should be slightly thickened 

Place shrimp back in 

Cut off heat and remove skillet to a cool place

Add fresh chopped cilantro over shrimp 

Squeeze 1 small lime over shrimp 

Serve immediately

Publix Bakery White Mountain Bread Croutons

4 thin slices white mt bread cut to your favorite size croutons ( we like small size)

Olive oil

Umami seasoning (Trader Joe's) to taste

Kinder Wood fired garlic seasoning to taste 

Black pepper 

Put in bowl 

Spritz or drizzle olive oil

Toss

Season 

Toss

Air fry 400 degree for 10 minutes

Knock Off Hardee's Biscuits






























Psalm 119:107


    [107] I am severely afflicted;

        give me life, O LORD, according to your word!



2 &1/2 c aerated AP flour

2 T baking powder 

1 t sugar

1 t salt

1 stick butter, chill in freezer 20 minutes for easy grating

1 c buttermilk 


2 T melted butter for biscuit tops


Bake preheated 425 oven for 15-20 minutes ( according to your oven) 


Sift all dry ingredients into bowl.

Grate very cold butter into flour mixture.

Using hands, distribute butter gently all through flour mixture.

Add buttermilk.

Gently shape into shaggy ball.

Dough will be sticky.

Flour parchment and hands.

Pat out dough ball to an1 inch thickness. 

Fold and turn 6 times handling gently, being sure to keep the 1 inch height. 

Cut with a large biscuit cutter.

Grease a 10 inch skillet with butter.

Place biscuits touching each other.

Place rack on lower middle.

Bake until golden brown.

Pour melted butter over biscuits.

This made 8 huge biscuits.

Really did taste like Hardee's.

Made fried pork chops and gravy also!

Peach Blueberry Fluff





























Psalm 119:124


    [124] Deal with your servant according to your steadfast love,

        and teach me your statutes.



1 small box peach jello

1 c boiling water

1/2 c cold water

1 small box vanilla instant pudding

4 oz spreadable cream cheese, room temp

1 8 oz thawed cool whip

3 fresh ripe peaches, chopped 

1 8 oz fresh sweet blueberries, wash and set aside


In a large bowl add jello and boiling water, whisk to dissolve.

Add cold water.

Whisk.

Place in fridge for 20 minutes.

Stir dry pudding into slightly thickened jello.

Place in fridge another 20 minutes.

Using a hand mixer, mix cream cheese and cool whip together in another bowl.

Fold in fruit.

Stir jello mixture and cream cheese mixture together. 

Chill 1 hour.

Apple Cider Brined Chicken Thighs with Mushrooms

6 large boneless skinless chicken thighs


Apple Cider brine

1 c Apple cider

Juice of 1 large lemon

1-1/2 T kosher salt

1/3 c brown sugar 

1/4 c Worcestershire sauce

1/2 T onion powder 

1/2 T garlic powder

1 T coarse black pepper 

1 T smoked paprika 

Stir

Brine thighs for 1-2 hours

Remove and pat dry


1 Onion, sliced

2 c Mushrooms, sliced 

1 t Clarified butter

1 t olive oil

1/2 t Chicken base seasoning 

1/2 t Onion powder

1 T roasted Garlic 

Sauté in large skillet and set aside in a plate


Skillet will have a little juice

Grease slightly 

Using same skillet, sauté chicken 

Sprinkle a little steak seasoning on each thigh

Sauté till thighs are 170 degrees 

Add mushroom onion mixture back

Add sauce ingredients except slurry

Simmer until slightly thickened 

Add slurry 

Serve over sticky rice


Sauce 

1/2 c Sauvignon Blanc 

1 c chicken stock

1/4 c half and half 

Simmer 

Add

1/2 c mixed water/cornstarch slurry

Soufflé Muffins and a Soufflé Pizza

Veggies

1 medium Yukon Gold Potato, grate with skin on, squeeze out moisture

1 small Onion, chopped

1 small Shallot, chopped 

1 Jalapeño, diced 

1 T roasted Garlic

Seasoned salt to taste

Cracked black pepper to taste

1 t Olive oil

1 t Clarified butter

Stir fry potato and veggies for 5 minutes 

Set aside on a plate


Meats

4 slices of ham (I used maple Honey)

5 thick slices pepperoni 

Stack together and chop

Stir fry in same skillet 

Set aside


Bread

4 slices White Mountain bread( Publix bakery) chopped 

1 large croissant, chopped 

Set aside


Cheeses 

1 c sharp white cheddar 

1/4 c Gouda

Set aside


Egg mixture 

4 eggs

1/2 c egg whites

Salt and pepper 

1/4 c milk

1/4 c half and half

Whisk in a large bowl 


Directions

Add bread to egg mixture 

Mix

Let stand for 10 minutes to soak up egg mixture 

Add cheeses 

Mix

Add meat 

Mix

Add veggies 

Mix



Preheat oven 375 degrees for 35-40 minutes 


Fill a large well greased 12 count muffin pan until filled and the left over filling in a disposable pie pan 

Cool 


Caramelized Onion and Shallot Gravy over Apple Cider Pork

1/2 of a Onion, sliced 

1 Shallot, sliced

1 T roasted Garlic 

1 t Olive oil

1 t Clarified Butter

1/2 t Sugar

1/2 t Chicken base seasoning 

Pinch of red pepper flakes

1 c Left over Apple Cider Pork, chopped

1/4 c Rhone Red wine

1/8 c half and half

Cornstarch slurry 

2 c Water 


Caramelize onions, shallots, garlic

along with seasonings in butter and oil

Add pork

Add wine, sauté then add light cream and water

Thicken with slurry

Serve over sticky rice or mashed potatoes

Egg Drop Soup



























 

 

 

Psalm 119:37


    [37] Turn my eyes from looking at worthless things;

        and give me life in your ways.



2 c chicken broth (I used chicken base seasoning and water)

1/2 t soy sauce

1/4 t sesame oil


2 t water

1 t cornstarch 


1 large egg, beaten


1/2 t ground white pepper 

1/8 t salt 

1 t chopped chives

3 sliced button mushrooms 

1/4 c Spinach 


1 T chopped green onions


Stir together broth and seasonings.

Bring to light boil.

Whisk in cornstarch slurry to thicken.

Remove from heat.

Slowly whisk in beaten egg to create swirls.

Add veggies.

Top with chopped green onion.
