An ej original recipe!



1 lb ground Chicken 

4 oz mortadella( grind in mini food processor)

1 Tango Apple(grated)

1 t brown sugar 

Pinch of pepper flakes 

Pinch of nutmeg

Salt and pepper to taste

1/4 t garlic granules 

1/4 t onion powder 

1/4 t sage

1/4 t thyme 

1/4 t rosemary 

1/4 t smoked paprika 


Oil hands

Shape into logs

Lightly Oil pan

At this point you can freeze logs for further use

Fry (will burn so stay with it) 

Internal temp should be 165 degrees

Knock Off Schlotzsky Deli Bread






























These were amazing!! Best sandwiches!

2-1/2c aerated bread flour 

3/4 c warm milk

1/2 c warm water

1 T sugar

2-1/2 t instant yeast

1/2 t salt

1/4 t baking soda 


In small bowl whisk yeast, sugar water and milk, proof 10 minutes, should be frothy 

In another small bowl mix 1-1/2 t warm water and 1/4 t baking soda 

Prepare 9 inch foil pie plates by spraying with non stick and shaking 1 T of fine cornmeal, dump excess 

Combine aerated flour and salt into large bowl, whisk

Add soda mixture to wet mixture 

Add frothy liquid by using a large plastic spoon handle, beat into a sticky wet dough 

Divide dough between pans

Spray tops of dough with non stick, cover with sprayed plastic wrap and tea towel

Rise for 1 hour

Preheat oven to 375 degrees, spray dough tops with non stick and a few spritz of water

Bake 20-25 minutes until tops are beginning to lightly brown

Flip over on a rack and cool 1 hour before cutting ( I put mine in freezer for 20 minutes and then cut)

You get 4 sandwiches out of each round 


My Dressing recipe

2 T chow chow (I used Full Moon)

2 T chopped dill pickles( I used leftover Full Moon)

2 T Olive Garden Italian dressing

3 T Dukes Mayo 

Mix


Build Sandwich 

Your baked bread 

Your dressing

Turkey slices( I used Full Moon)

Ham slices ( I used Canadian bacon)

Slices of Gouda

Grated Parmesan 

Chopped Lettuce

Sliced Tomato 

Thin sliced sweet onions

Leftover Ukrainian Chicken Kyiv Breakfast Gravy

Left over chicken Kyiv (sliced)* I had 1 c 

1 T olive oil

2 T Flour

Milk

Seasoning 


Fry the leftovers in a little olive oil 

Add flour and fry until dissolved 

Add milk and seasonings

Enjoy over Grits

Ukrainian Chicken Kyiv































No dry chicken breast here!

The ground chicken worked great!





Psalm 28:2


    [2] Hear the voice of my pleas for mercy,

        toward your most holy sanctuary.



Compound butter

1 stick softened Butter 

1/2 t Smoked Paprika

1/2 t Lemon zest

1/2 t Ginger

3 T Fresh Dill 

Pinch Cayenne 

Mix and make into football shapes 

Freeze for at least 15 minutes 



1 lb. Ground Chicken 

1/2 t Garlic granules 

1/2 t Dill 

1/2 t Paprika 

Salt and pepper 

Mix

Grease hands

Make into 8 football shapes

Seal frozen butter into chicken ball

Freeze for 30 minutes


Dredge ingredients 

Flour

Egg-water mixture

Seasoned panko (dill lemon zest Parmesan) add a little oil



Bake on parchment lined sheet pan

Spray each shape with non stick spray or a drizzle oil

Preheated air fryer 375 degrees for 30 minutes turning half way through cook time

Bread Bowls



























 

 

 

 

 

Psalm 8:3-4


    [3] When I look at your heavens, the work of your fingers,

        the moon and the stars, which you have set in place, 

    [4] what is man that you are mindful of him,

        and the son of man that you care for him?



1-1/2 c warm water 110 -112 degree

2 T Instant yeast

1 T sugar

3-1/2 c aerated bread flour

1-1/4 t salt

2 T melted butter for after baking finishing 


Mix water, sugar, yeast in bowl for 10 minutes to bloom 

Mixture should be foamy

Add flour and salt to bowl and whisk

Add flour mixture and yeast mixture to stand mixer bowl and mix on medium 

Dough will come together and pull away from sides of bowl, knead for 5 minutes in mixer

Put dough on parchment and kneed 5 more minutes 

Rise dough, covered in bowl for 30 minutes 

I put in oven with light on

Bring dough out

Cut dough into 6 equal pieces

Roll into balls

Put on non stick sprayed parchment 

Spray with 2 mist of water 

Preheat oven to 500 degrees

Rise dough balls for 15 minutes covered

Bake 2 minutes 

Take out dough balls

Spray with 2 sprays mist of water 

Turn oven down to 400 degrees and put dough balls back in

Bake 15 minutes or until internal temp is 190

Baste roll with melted butter

Carefully cut top out of bowl

Use a spoon to scoop out most of the bread

Fill with soup

Ground Chicken and Ground Mortadella Breakfast Sausage

1 lb ground Chicken 

1 dinner cut slice mortadella (Publix)

1 t brown sugar 

Pinch of pepper flakes 

Pinch of nutmeg

Salt and pepper

1/4 t garlic granules 

1/4 t onion powder 

1/4 t sage

1/4 t thyme 

1/4 t rosemary 

1/4 t smoked paprika 


Mix just to incorporate 

Make patties (I got 10)

Place in ziplock and freeze 

To fry, add a little olive oil

Creamy Chicken Gnocchi Soup
























 

 

 

 

Ecclesiastes 11:5


[5] As you do not know the way the spirit comes to the bones in the womb of a woman with child, so you do not know the work of God who makes everything.



2 T olive oil

1 t butter

1 chopped Onion

1 chopped stalk Celery

1 match stick cut Carrot

1 t Roasted garlic 

Pinch of red pepper flakes 

1/4 c flour

1/4 dried thyme

Salt and pepper to taste

1/4 t Dry mustard 

1 qt chicken bone broth 

1 c half and half 

1/2 c heavy cream

1 qt water

1 c shredded Rotisserie chicken 

1 c fresh spinach 

1 (14 oz pkg potato Gnocchi) (Costco 3 pkg)


Sauté carrots, onion, celery, garlic, salt, pepper and herbs in oil butter mixture just till slightly tender

Add flour

Add broth and water, chicken and spinach 

After 5 minutes add Gnocchi

Ready to serve in 5 minutes

Dulce Tres Leches Infused Milk Cake































Ecclesiastes 9:5


[5] For the living know that they will die, but the dead know nothing, and they have no more reward, for the memory of them is forgotten.



Butter Cake 


Boxed Yellow or white cake mix 

3/4 c water

3 eggs

7 T melted butter


Tres Leches (3 More milks)


1 can sweetened condensed milk

1 can evaporated milk

1/2 c heavy cream

1/2 c half and half


Topping

Whipped cream


Preheat oven to 325 degrees.


Combine cake mix, water, melted butter and eggs with hand mixer on low speed and increase to medium for 4 minutes.

Spray 13x9 pan with non stick.

Tap filled pan on counter to remove air bubbles and tilt to evenly distribute mix.

Bake 30-35 minutes until toothpick comes out clean.

Whisk 3 milks together.

Set aside.

Cool 20 minutes.

Poke holes in cake with a chop stick.

Evenly pour mixture over cake.

Cover with plastic wrap and refrigerate for 3-4 hours.

Serve with spray topping.

Strawberry slices may be added.

 

Andouille Sausage Everything Bagel Pastry Bites































Job 9:22-23


    [22] It is all one; therefore I say,

        ‘He destroys both the blameless and the wicked.’ 

    [23] When disaster brings sudden death,

        he mocks at the calamity of the innocent.



1 sheet frozen Pastry dough, thaw on counter for 15 minutes

Cut into 3 long strips and roll out slightly to be able to roll up and seal

Cut each long strip into 3 pieces

Place cheese then sausage roll and place seam side down

Brush with egg wash

Sprinkle everything bagel seasoning 

Place on parchment spray with non stick

on a sheet pan


Andouille Sausage 

Boil 10 minutes,  drain, cool

Cut to fit dough 

Set aside


2 T Egg white 


Everything bagel seasoning 


Square pieces of the cheese of your choice


Preheated 400 degree for 20 minutes

Quick Rolls Taste Like Sister S




































Ecclesiastes 6:12


[12] For who knows what is good for man while he lives the few days of his vain life, which he passes like a shadow? For who can tell man what will be after him under the sun?



Makes 12 rolls

These were too big so next time I would make 24 rolls 



1 c plus 2 T (110-114 ) degree water( must check with thermometer, too hot will kill yeast)

1/3 c olive oil

1/4 sugar

2 T quick yeast

1 t kosher salt

1 egg

3-1/2 c aerated bread flour


Using stand mixer, add water, oil, sugar and yeast

Whisk one time

Rest 10 minutes to proof yeast

Add 2 c of the flour, salt and the egg

Add dough hook and mix on # 2 speed

Slowly add rest of dough

Move to #3 speed if necessary 

Let mixer kneed until dough comes together in a ball, scrape down sides if necessary 

Dough will be soft and sticky

Very lightly flour hands

Roll into 24 balls

Place in 13x9 pans that has a very light sprinkle of flour

Preheat oven to 400

Let roll rest 10 minutes before baking

Bake on bottom rack 10-17 minutes till tops are lightly browned 

Brush with butter

1/4 c oj with pulp

1/8 c whole milk

2 T agave 

2 T probiotic Greek Yogurt 

1/4 c ice

1/4 c canned mandarin oranges

1/4 c canned peaches

1 chopped Apple

1/4 c frozen spinach 

1/4 chopped English cucumber 

2 T ground flax seed

Blend on margarita setting

Makes 3 smoothies
