2 c Left over cooked angel hair pasta
10 chicken fingers, chop into bite size pieces
1 Shallot, diced
1 t Italian style Soffritto from Trader Joe's
2 T Clarified butter
1/2 t black pepper
1/2 t sugar
1/4 c Sauvignon Blanc
1/4 c half and half
1/4 c water
3 T Mascarpone
3 T Italian cheese blend
Using a large non stick skillet, heat to medium with butter, when hot add shallots and all dry seasonings.
Add wine, stir until wine dissipates.
Add half and half, water, mascarpone and cheese.
Stir until slightly thickened.
Cut off heat.
Using tongs, twist in pasta.
