Rotisserie Chicken Breast and Rice Casserole In Anaheim Green Sauce


































John 1:1-5


The Word Became Flesh

2 c cooked sticky rice, set aside


3 c hand crushed tortilla chips, set aside


2 chicken breast from a rotisserie Chicken ( shredded)

Set aside


2 c shredded mozzarella 

1 c Unexpected cheddar


4-5 Poblano or Anaheim roasted over flame, seeded and spines scraped 

1 c water

Pulse in processor until smooth 

Add 1 c of fresh cilantro, 

1 t sugar

2 t toasted cumin

1/2 t black pepper

1/2 t salt

Pulse until incorporated 

Reserve 1/2 c 


Melt 2 t butter in skillet, add 1 medium diced onion.

Sauté until soft.

Add 1 c chicken stock, 

1 c evaporated milk,

Green sauce,

3 T cornmeal, whisk until incorporated.

Add Shredded Chicken,

1 c shredded Mozzarella,

1/2 c Unexpected cheddar,

Cook until slightly thickened.


13x9 pan

Layers

Reserved sauce

Crushed chips

Chicken and sauce mixture 

Little cheese

1/2 of the Rice

Repeat

Sprinkle cheese on top


Bake covered 350 degrees for 30 minutes, then uncovered for 15 minutes.

Top with fresh Pico de Gallo. 

Serve with refried beans topped with cheese.

Instant Pot Rotisserie Chicken Thighs

[3] Now the end is upon you, and I will send my anger upon you; I will judge you according to your ways, and I will punish you for all your abominations. [4] And my eye will not spare you, nor will I have pity, but I will punish you for your ways, while your abominations are in your midst. Then you will know that I am the LORD.




6 Thighs bone in skin on, trim


Seasoning

1 t kosher salt

1 t black pepper

1 t garlic granules 

1 t onion powder

1 t oregano

1 t smoked paprika 

1 t thyme 


Mix and set aside.


Heat 2 T grape seed oil on the sauté setting of Instant Pot.

When it is hot sear thighs starting with skin side for 3 minutes, flip and do another 2 minutes.

Remove to plate.

Hit cancel.

Add 1 c chicken stock and deglaze bits.

Add trivet to IP.

Add thighs.

Set to Meat to 10 minutes, pressure on.

Add lid.

After cook time do a natural release.

Use drippings to make gravy.

Best gravy I've ever tasted!!!

All Beef Wieners ( cut slits down the dog and fry in a little oil)

Trimmed tortilla roasted on open flame 


Toppings

Meat sauce ( make with ground hamburger, onions, ketchup, mustard, Worcestershire sauce and chili powder)

Sweet Slaw 

Vidalia Onions

German Kraut

Yellow mustard

Rotisserie Chicken and Sage with Dumplings

































Revelation 3:3


[3] Remember, then, what you received and heard. Keep it, and repent. If you will not wake up, I will come like a thief, and you will not know at what hour I will come against you.



This is a simple dish but so tasty.

It's like being wrapped in a big hug!

Dumplings

2 c Pioneer biscuit mix

1/2 c or more of Milk

Mix until milk is incorporated.

Drop by teaspoon, a few at a time, into lightly boiling broth. 

Spoon a dumpling and cut in half. 

Cook 10 minutes until dumplings are dry in the middle.


1 Rotisserie chicken breast, chunked or shredded

Chicken stock (Enough to cover chicken,

I make mine with broth base seasoning, it's salty so don't add any more until tasting)

3 T Butter

1/4 c Half and half

Lots of Cracked Black pepper

1 t Dried Sage


Cook chicken in broth for 10 minutes.

Add all the rest of the ingredients.

Add dumplings.

Pork Chops with Peaches In Apple Jack Brandy Sauce

4 thick bone in Chops ( season with seasoned meat tenderizer, smoked paprika and Mardi Gras rub

Let sit 1 hour to reach room temp.

Sear in clarified butter and oil.

Broil 10 minutes on one side and 7 minutes on the other.

Temp should be 150 - 160 degrees


Peach Apple Jack sauce

1 T Apple Jack Brandy

3 T Honey

1 T sugar

1 T clarified butter

1 T half and half

1 c canned sliced peaches, drained and chopped

1/4 t each cloves, nutmeg, allspice

Pumpkin pie spice

Heat and reduce 

Serve over Pork Chops 

Sea Bass in Sauvignon Blanc Lime Garlic Sauce

2 pieces of Sea Bass (I use frozen Barramundi from Costco)

Thaw in cold water

Grease both sides with olive oil

Squeeze 1/2 of a lime on both sides

Season

Toss in cornstarch 

Pan sear in hot clarified butter and oil

Make sauce


Seasoning mix

1/2 t Old Bay

1/2 t Garlic

1/2 t Smoked paprika

Light Salt and pepper

Mix and set aside.


Finishing Sauce 

2 T Sauvignon Blanc

2 T Butter

1 t roasted Garlic

1/2 t Sugar

1/2 of a Lime juiced

Black pepper

Reduce slightly.

Drizzle over sea bass.

Serve with garlic mashed potatoes and a salad!

Instant Pot Beer Gravy Over Chicken

    [4] Man is like a breath;

        his days are like a passing shadow.



Ale Gravy 

I c light color beer ( I used Belgium White Ale from Aldi)

1 T water 

1 T cornstarch 


4 Boneless Skinless chicken breast

Make a brine of 1/8 c salt and water to cover in a gallon zip lock 

Brine immersed for 1 hr in fridge.

Pat breast dry and set aside


Seasoning Paste

1 &1/2 T grape seed oil ( or any neutral oil)

1 t dried oregano

1 t garlic granules 

1 t black pepper

1/2 t onion powder

1 t smoked paprika 

1 t toasted cumin


Glaze both sides of chicken.

Add 1 T oil to IP.

Heat IP on sear setting.

Sear in IP on sauté 3 minutes each side.

Remove.

Add Ale and deglaze pan.

Hit cancel button.

Place rack in IP.

Lay 4 brined breast on rack.

Cover, lock, set lid to pressure.

Set to high pressure.

Set timer to 5 minutes.

Let come to pressure.

After cook time ends, set stove timer for 8 minutes to allow some pressure to come off.

After 8 minutes, let rest of pressure off.

Remove chicken to plate and rest 5 minutes.

After rest, pull chicken into bite size pieces.

Add cornstarch slurry to Ale drippings to make gravy.

Set to sauté and thicken.

Serve on a bed if rice with Ale gravy drizzled over chicken.

Sprinkle with black pepper.

Marinated Filet of Beef


































1 Thessalonians 5:16-22


[16] Rejoice always, [17] pray without ceasing, [18] give thanks in all circumstances; for this is the will of God in Christ Jesus for you. [19] Do not quench the Spirit. [20] Do not despise prophecies, [21] but test everything; hold fast what is good. [22] Abstain from every form of evil.



4 Filet of Beef


Marinade

1/4 c light Soy 

1/4 c Olive oil

1/4 c Worcestershire sauce

1/4 c Vidalia Onion 

2 T Honey 

1/4 c Green onion tops

1 t roasted Garlic

1 t dried Thyme 

1 t dried Rosemary 

1/2 t Salt 

1/2 t Aleppo pepper

Mix

Reserve 1 c of marinade for serving


Pour over Filet and marinate 30 minutes, flip and repeat.


Pat steaks dry.

Fry steaks in lightly oiled skillet until cooked to medium.


Add 1 t red wine vinegar to the reserved cup of marinade for serving over cooked steaks.

Marinated Tuna with Warm Peach Jalapeño Salsa

































Psalm 140:12-13

    [13] Surely the righteous shall give thanks to your name;

        the upright shall dwell in your presence.



Marinade

1/4 c light Soy

1/4 c Peach juice (out of jarred peaches)

2 T Honey

1/2 of a Lime juiced

2 t Olive oil

1 T Roasted garlic

2 T Fresh parsley 

1 /2 t Dried oregano

1/2 t Black pepper

1/4 t salt 


Marinate Tuna steaks for at least 1 hour.

Oil skillet, heat 2 minutes and fry patted dry Tuna steaks.

Fry to medium 3-4 minutes each side, rest.


Warm Jalapeño Peach Salsa

1 c peaches, chopped

1 seeded Jalapeño, sliced

1 t roasted Garlic

1 T Honey

Bourbon Steak and Gravy Poutine

Left over Filet steak, cut into bite size pieces

Fried potatoes 

1 sliced thin Vidalia Onion

Gravy


Fried potatoes

4 microwaved Yukon Gold medium potatoes 

Peanut oil

2 minutes each side


Green onions for topping


Poutine Gravy 

1/2 t Beef stock

1 c Beef

1 t Olive oil

1 t roasted garlic 

1 t Flour

1 Onion

1 T Bourbon 



Fry potatoes.

Season with seasoned salt and garlic granules.

Make steak gravy.

Layer potatoes, meat and gravy then cheese and top with green onions.

Sour cream. Optional
