Not So Spicy Poppers

An ej original recipe!



10 -12 Jalapeño, cut in half and scraped with a spoon to remove seeds and membranes 


Stuffing mix

6 oz soft cream cheese, not whipped

4 oz grated mozzarella 

1 T Mexi chili spice

2 t roasted mashed garlic

Big Pinch of dry Dill

1/4 c diced ham


Mix well, set aside


Mexi Chili Spice


2 T toasted cumin

1/2 t smoked paprika 

1/2 t garlic

1/2 t onion powder

1/4 t sugar

1/4 t salt

1/4 t pepper

Pinch pepper flakes


1/4 c panko

2 T melted butter

Mix

Set aside


Preheat oven to 400 degrees.

Stuff pepper halves.

Dip stuffed side into panko mixture.

Bake on parchment lined pan for 20-25 minutes, just until slightly browned.

We aren't a big fan of salami, mortadella etc!

So I did my own thing using Bourbon Ridge Ham, Honey Maple Turkey, Cheddar and Swiss.

Bourbon Ridge Ham

Maple Honey Turkey Breast

Cheddar

Swiss

Persillade relish, added a small can of black olives which I chopped

Oil and vinegar

Salt and pepper

Lettuce

Tomatoes 

Onion

Naan bread, pulled apart and toasted


Spread the Persillade relish.

Start layering with the seasoned veggies, one meat, one cheese, then another bread and repeat.

Cut into quarters.

Trim if you like to a square shape.

Wrap in plastic wrap, put in fridge for an hour.

New Combo of Mixed Greens































 

2 Samuel 22:32


    [32] “For who is God, but the LORD?

        And who is a rock, except our God?



I've cooked mixed greens using kale, mustard and turnip greens but this is by far the most delicious combo!



1 pack Baby Spinach, washed 

1 pack Mustard greens, washed

1 pack Turnip greens, washed 

1 large Onion, chopped

2 c Ham, chopped

2 T Bacon grease

1/8 c Sugar

1/4 c Honey

2 T Pepper sauce

1 T Cajun seasoning

1 qt. Chicken broth


Boil until tender.

Taste pot likker and adjust to your taste.

Serve with peas or beans and cornbread.

Chicken Chili Verde

1 Rotisserie chicken breast, shredded

1 pint chicken bone broth

1/2 pint water

1/8 c Herdez Avocado Salsa 

1/4 c Herdez Salsa Verde

1 can of Northern beans, drained

1 T Olive oil

1 chopped Onion

1/8 c chopped Roasted Poblano 

1 T Roasted Garlic 

1 t Toasted Cumin 

Pinch Red pepper flakes

1/2 t onion powder

2 t sugar

1/8 c chopped cilantro 


Add oil to Pot along with the seasonings.

Heat to bloom, add onions, garlic and chicken.

Add both of the Salsas, broth and water.

Simmer 20 minutes.

To finish, garnish with fresh cilantro.


Optional squirt of lime juice

Moo Goo Shrimp Broccoli and Rice Stir Fry

1 bag frozen Colossal Shrimp thawed, shelled, tail removed and cleaned 


2 c leftover Jasmine rice to finish stir fry.


Shrimp toss

1 T mushroom Soy sauce

2 T cornstarch 

Toss Shrimp in Soy then cornstarch and set aside


Using 1 T of olive oil, stir fry shrimp just till slightly pink on both sides, remove to plate.


Veggie rice mix

2 c broccoli 

1/2 c Green onions

2 T pickled Ginger, diced

2 T roasted garlic 

1 T olive oil


Stir fry veggies until slightly tender.

Add sauce.

Reduce by half, add Shrimp and rice.

Stir until everything is coated with sauce.


Sauce

1& 3/4 c chicken stock

1 T brown sugar

2 T Mirin

1 T toasted sesame oil

1 T cornstarch 

1/2 t white pepper

Whisk together and set aside.

Refried beans(I can pintos so I made mine from them)

1/2 of a diced sweet Onion

1/2 t Red pepper flakes

Salt and pepper to taste

1/2 t Toasted cumin

1 t Roasted Garlic

Cheese( I used smoked Gouda)

Chinese Style Sausage and Ham Fried Rice































John 15:25

    “Lord, who has believed what he heard from us,

        and to whom has the arm of the Lord been revealed?”





2 links of Chinese style sausage ( Costco) that is boiled then chopped and fried (I Sous Vide mine)

1 c chopped ham

2 c leftover sticky rice that has been refrigerated overnight 

2 T olive oil

1 small Onion, chopped

1 medium Carrot, chopped

1c frozen English peas

2 T roasted garlic

1/2 t red pepper flakes

2 large beaten eggs (beat and set aside)

1 T Soy sauce

1 t anchovy paste

1 t white pepper


Heat wok or large skillet to high.

Add oil, pepper flakes and garlic.

Heat till fragrant, add sausage and ham.

Cook 1 minute.

Add egg, cook until done then chop with spatula or wooden spoon.

Add all veggies and cook while stirring.

Add seasonings, Soy and anchovy paste.

Add rice.

Stir fry 2 minutes.

Serve immediately.

Potato Brisket Pimento Cheese Eggs Skillet

        when I consider, I am in dread of him.

        nor because thick darkness covers my face.


 

 

An ej original recipe!

 

 

1 c chopped Brisket

1/2 of a Onion, chopped 

1/2 of a Bell pepper, chopped 

1/8 c Alabama white sauce

1 medium Yukon potato, microwaved and chopped

1/4 t Seasoned salt

1/4 t Granulated garlic

1 c Liquid Eggs

1/4 c Pimento cheese



Spray skillet with non stick spray.

Sauté onion and peppers until tender.

Add Brisket and potatoes, sauté.

Add sauce and seasoning.

Remove to plate.

Respray pan.

Add eggs and pimento cheese, cook until soft, gently add meat mixture back in.

Serve warm.

Left Over Ham Leek Potato Breakfast Hash

1&1/2 c left over chopped ham

1 sliced Leek

1 small onion

2 Yukon potatoes that have been microwaved covered for 2 minutes each side, chop and set aside

1 T olive oil

Pinch Red pepper flakes

Black Pepper

Seasoned salt


Add oil and seasonings.

Fry onions and leeks in oil.

Add potatoes and ham.

Fry just until potatoes lightly brown.
