Crustless Leek Bacon and Ham Quiche

An ej original recipe!



1 1/2 tablespoons fine dry plain bread crumbs
Clarified butter drizzled over bottom of pan
1 c sliced leeks
1 c diced cooked ham 
1 c cooked crumbed bacon, reserve 1 t bacon grease
1 c shredded mild Cheddar cheese
1 c shredded Manchego cheese
1/2 t Mrs. Dash table version 
Pinch of salt
Pinch of nutmeg
Pinch red pepper flakes
4 large eggs
1/4 c Mascarpone 
1 can Pet milk
1/4 c half and half

Preheat oven to 425°F, place on middle rack.
Butter quiche dish, then sprinkle all over with bread crumbs.
Cook bacon until crispy, drain on paper towels.
Cook leeks and peppers with ham in 1 t bacon grease in a heavy skillet,  medium-high heat, stirring occasionally.
Chop and set aside.
Spread in dish, then evenly sprinkle the 2 cheeses on top.
Whisk together eggs, half and half, Pet milk, mascarpone, and seasonings.
Pour over cheese. 
Bake 25 minutes until top is golden and custard is set. 
Cool and cut into pie wedges.
Serve with sliced tomatoes.

Guajillo Sauce Stuffed Poblanos


































1 Then I saw a new heaven and a new earth, for the first heaven and the first earth had passed away, and the sea was no more.

4 guajillo chilis, toasted and set aside
1/2 Onion, chopped 
2 T roasted Garlic
1/4 c sugar 
2 T Cilantro 
Pinch black peppers
1 c Herdez Salsa verde
1/4 c Herdez guacamole salsa
2 c chicken broth

Toast peppers on comal or stove top eye.
Cut ends off and take veins and seeds out.
Tear into pieces and put in large sauce pan.
Cover with water and re-hydrate for 15 minutes.
Cool.
Spoon into blender and add 1/2 c juice.
Dump the rest of the juice.
Blend until smooth, add black pepper, garlic, sugar, Cilantro, salsa verde, guacamole salsa, blend a little more.

Add to chicken stock and simmer, reduce until desired thickness.  
Use 1 c of sauce for Rotisserie chicken stuffed roasted Poblanos recipe and freeze the rest.

3 c Rotisserie Chicken, shredded
4 roasted Poblanos, cooled seeded and cut in half, to take the heat out run knife down inside spine 
1/2 c onions, sliced
1/4 c guajillo sauce 
Heat until onions are tender.

To assemble 
Lightly cover bottom of pan with sauce.
Lay peppers down, fill with chicken mixture.
Add more sauce.
Add cheese, I like Quesadilla cheese and Manchego.
Bake 375 degrees for 20 minutes.
Serve with sour cream, guacamole etc.

Manchego Cherry Cheese Ball

An ej original recipe!



1 room temp full fat cream cheese block
1/2 c grated Manchego cheese
5 canned dark red cherries, diced
1/4 c powdered sugar
2 t cherry juice
5 slices pickled  jalapeƱo, diced

Mix well, roll into 2 equal balls.
Chill.

1 c butter toasted salted Pecans, chopped

Roll chilled balls in Pecans. 
Serve with crackers.

Tuscan Ribollita

An ej original recipe!

This soup was made from leftover Christmas dishes, with a few other added freezer ingredients. Did not disappoint! Delicious!!

2 T Olive oil
1/2 c leeks
1 small Shallot
1/4 c red bell peppers
2 T roasted garlic
1 ear shaved corn
3 small carrots, thin sliced
1/2 t black pepper 
Pinch red pepper flakes
3 T chicken base seasoning, this is salty 
1 T Mrs. Dash table version

SautƩ in oil.
Add the below ingredients.

1 c leftover Pinto beans
1 c leftover Turnip greens
1 c leftover Mac and cheese
1 c leftover lighthouse Inn potato casserole
1 c kale, chopped
1/2 c frozen green peas
1 can stewed tomatoes 
1 c shredded cabbage 
1/2 c shredded Parmesan Reggiano cheese
2 quart water

Simmer 30 minutes.
Serve with crusty bread!

Asiago Cheese Bread Smoked Ham Breakfast Sandwich

Asiago cheese bread ( Fresh Market)
Mrs. Dash Table version
Olive oil
Pinch of salt
Smoked Ham
Fried Egg or egg whites
Gouda cheese

Lightly oil bread, season with a tiny pinch of salt and Mrs.Dash, lightly toast bread.
Fry egg and set aside.
When bread is toasted add, cheese, egg and ham.
Serve with fruit.
Yum!!

Creamed Cipollini Onions


































24 for "All flesh is like grass and all its glory like the flower of grass. The grass withers, and the flower falls,

This was delicious!!!


1 Pkg of cipollini onions, I got mine from Sprouts
1 T clarified butter
1 t flour
3/4 c milk
1 T sweet Marsala
1 t dry mustard
Pinch nutmeg
Salt and pepper,  to taste
1/4 c Parmesan Reggiano 

To prepare onions, bring to boil in pot, just covered with water. 
Cook 3 minutes.
Pour into colander, cool.
Cut bottom and top off and squeeze out whole onion.
Set aside.
In a small cast iron skillet, melt butter, whisk in flour, cook 3 minutes.
Stir continuously.
Heat milk in microwave, whisk into flour-butter mixture.
Cook until slightly thickened.
Add all spices, Marsala and onions. 
Stir to incorporate.
Add cheese to top, cook 350 degrees until cheese browns, around 20 minutes.
These things are delicious!!
I served with a Chateaubriand, baked potato, and asparagus.

Morning Glory Breakfast Cookies

1 banana, mashed
1/4 c melted coconut oil minus 2 t 
2 T palm sugar
1 t vanilla extract
1 t maple extract
3/4 c oat flour, process oats in food processor 
3/4 c oats
1/2 t baking powder
1 t ground cinnamon
1/2 t powdered ginger
1/4 t salt
1/2 apple, peeled then grated
3/4 c carrots, grated 
1/4 c chopped smoked almonds
1/4 c white raisins



Preheat oven to 350° and line a baking sheet with parchment paper.
Stir the banana, coconut oil, sugar, maple and vanilla together in a medium bowl. 
In a separate medium mixing bowl, stir together the oat flour, oats, baking powder, cinnamon, ginger, and salt. 
Add the banana mixture to the oat mixture and stir just until fully blended. 
Fold in the apple, carrots, almonds, and raisins. 
The batter should be moist, but you should be able to shape it into balls.
Shape about 3 t of the batter into a ball and place on the sheet. 
Continue until all of the batter is used, and flatten.
Bake for about 18-20 minutes. 
The cookies will be soft, but they should hold together, and will firm as they cool.
These remind me of fruit cake.

Fried Sichuan Chicken































7 for we brought nothing into the world, and we cannot take anything out of the world.

This was delicious!!

3 large chicken Tenderloins, cut into 1 inch chunks

Soak ingredients 
1/4 c mushroom soy sauce
2 T rice wine seasoned vinegar
2 T sugar
2 egg whites

Stir well, add chicken pieces and soak 20 minutes.
Drain on paper towel.

Dredge
1 c cornstarch 
2 T sugar

Dredge chicken, shake, put in paper plate.

Heat oil to medium and fry chicken.
Drain on paper towels.

Sichuan seasoning
1 t ginger powder
1 t garlic granules 
1 t chili powder
1 t toasted cumin powder
1 toasted Thai chili ( fry in oil) crumble ( I only used a pinch) 
1/2 t black pepper
1/2 t kosher salt

Mix well.

Mix seasoning mix into 1 T chili oil and 1 T olive oil, toss warm fried chicken in the oil mixture.

Spicy Shrimp Toast

































20 Then Job arose and tore his robe and shaved his head and fell on the ground and worshiped.
21 And he said, "Naked I came from my mother's womb, and naked shall I return. The LORD gave, and the LORD has taken away; blessed be the name of the LORD."
22 In all this Job did not sin or charge God with wrong. - Job 1:20-22



This is a great recipe for entertaining.
They stay crispy in a warm oven for 30 minutes, maybe a longer time, but I didn't check to see!


8 oz. cleaned, peeled shrimp, no tail
1 small egg
1 T chives
1/2 t red pepper flakes
Pinch of Smoked Salt 

4 slices of Sandwich Bread, I used Aldi brand honey wheat, remove crust and cut in half on the diagonal to make a triangle shape.
I did enough to get 8 triangles.

Panko bread crumbs
Oil/ clarified butter for frying

Pulse the shrimp, egg, smoked salt and chives a few times in food processor until you have a paste. 
Place in bowl.
In a plate place some panko bread crumbs.
Dip bread triangle in shrimp paste, then in panko.
Also dip plain side in panko, shake gently. 
Fry in oil.
These cook quickly and will burn.
Store in oven, on foil, on the warm setting.

Sauce for dipping
3 T mayo
2 T Sweet chili Thai sauce
2 T Hoisin 

Mix well.
