Vanilla Whiskey Sauce


















31 So Jesus said to the Jews who had believed him, "If you abide in my word, you are truly my disciples,

3 T sugar
2 c half and half
1/4 c Jim Beam
2 T cornstarch


In a heavy pan, bring sugar and half and half to a boil.
Stirring constantly to prevent scalding.
Remove from heat.
Whisk the cornstarch into the whiskey and add to the sugar half and half mixture.
Serve over bread pudding.

Apple Fritter Bread Pudding with Caramel Topping and Vanilla Whiskey Sauce


















So if the Son sets you free, you will be free indeed. - John 8:36






2 apple fritters, cut into 1/2 inch cubes, I got mine at Costco
6 Hawaiian rolls, cut into 1/2 inch cubes
4 T butter
1/2 c sugar
 4 eggs 
2 c half and half
1 t Cinnamon 
1 t Vanilla

Use a 9x9 pan.
Take the bread squares and cover the pan, mixing both types evenly.

Cream butter and sugar, whisk in eggs, one at a time, into sugar butter mixture.
Add seasonings.
Pour custard over bread.
Mash down with a fork.
Bake 350 for 30 minutes.

To serve add whiskey sauce and ice cream topping caramel.

Shrimp Adobo Soft Tacos


















For a man's ways are before the eyes of the LORD, and he ponders all his paths.  - Proverbs 5:21




1 lb. cleaned tail off Shrimp
Smoked paprika
Adobo dry rub
Onions
Red bell peppers
2 T Butter
Fresh Lime juice
1 T Olive oil

Sauté onions and peppers in butter oil mixture.
When onions are slightly soft, add seasoned shrimp.
Do not overcook shrimp, they will be slightly pink looking when done.
Fill warmed tortilla and add toppings.

Flour tortillas
Warm over flame or microwave.

Toppings
Cheese 
Salsa
Roasted tomatoes
Sour cream

Cheesy Blend Baked Fresh Tomatoes




















O LORD my God, I cried to you for help, and you have healed me.  - Psalm 30:2






4 fresh tomatoes, sliced into thick slices
Olive oil to drizzle over slices
Cheese blend, I used Trader Joe's Shaved Blend, it has Unexpected Cheddar, Toscano and Parmesan
Mozzarella, shredded or fresh thin sliced
Seasoned salt
Black pepper
Tuscan Garlic seasoning
Fresh sweet basil, chopped


Place parchment on a large sheet pan. 
Oil and season slices, then add cheese blend first and end with mozzarella.
Toast under broiler until cheese is slightly brown around edges.
Add fresh basil before serving.
These make me think of pizza without a crust!!

Chicken Fried Chicken Thighs

1 pgk. Boneless chicken thighs


Chicken Soak

1 can Ginger Ale
1/8 c salt
1/8 c sugar
1/4 c water

Marinate thighs for at least 1 hour.
I used a ziplock bag.
Place thighs on plate and season with seasoning salt, pepper and Garlic 

Dredge

2 beaten eggs
2 c flour 

Dredge thighs in beaten eggs then flour and repeat.
Fry in hot oil until golden brown.

Amaretto Cream Sauce






















9 There shall be no strange god among you; you shall not bow down to a foreign god.

2 c half and half
3 T sugar
1/4 c amaretto liqueur 
2 t cornstarch 

Put half and half and sugar in heavy pan.
Bring to boil, whisking constantly.
Whisk cornstarch into liqueur and whisk into cream.
Serve over warm bread pudding.

Hawaiian Roll Bread Pudding with Amaretto Cream



















"And now I am about to go the way of all the earth, and you know in your hearts and souls, all of you, that not one word has failed of all the good things that the LORD your God promised concerning you. All have come to pass for you; not one of them has failed. - Joshua 23:14





Bake preheated 350 degrees for 40 minutes. Cool 20 minutes before serving.

Hawaiian rolls, cut into cubes (I used 3/4 of the package)
6T butter, softened 
1/2 c sugar
5 eggs
2 c half and half
1 t Cinnamon
1 t vanilla 
Pinch of Nutmeg
1 c raisins (I soaked mine in 1/4 c of amaretto which I reserved for the sauce)

Using a 8 1/2 inch x 9 inch pan, spray with Pam. Press bread cubes in pan.
 In a bowl cream sugar in butter.
Add eggs one at a time. 
Then add seasonings and vanilla. 
Sprinkle raisins over bread.
Pour the custard over the cubes, mashing cubes down with a fork. 
Bake.
Cool.

Party Ham Sliders

Thick sliced Ham, I used Kirkland Master Carve
Smoked cheddar, cut into thin slices
Hawaiian rolls

Butter sauce:
2 T butter
2 T diced onions
1 t sugar
1 t dry mustard
1 t poppy seeds


Build sliders.
Brush with butter sauce.
Bake, covered preheated 350 degrees oven for 30 minutes.

E J 'S Real Easy Scratch Spaghetti and Meatballs

The simplicity of this dish is what makes it so yummy!!!


1 can Nina San Marzano Italian tomatoes ( from Costco) 28 oz.
1/2 c water
6 cloves garlic ( I use roasted) mash it with a fork
1/8 c olive oil
Fresh herb mix, of each (oregano, lemon thyme, sweet basil, cilantro, Rosemary) 1/8 c total
1 T Sugar
1/4 c Red wine( I used Cabernet Sauvignon)
1/2 c  shaved blend, Toscano, unexpected Cheddar, and Parmesan( found at Trader Joe's) 
1/2 t Red pepper flakes
Pepper, a few turns
1 T Fine Kosher salt

Add tomatoes to a bowl.
Squish tomatoes with hands.
I use disposable gloves.
Add 1/2 c water.
Heat oil in pan and add Garlic.
Cook one minute.
Then add tomatoes and water.
Add all seasonings, herbs, sugar, wine and cheese.
Simmer for 15 minutes.
Serve over cooked pasta.

Meat Balls

1 lb. 80/20 lean ground beef( I used Sprouts)
1/8 c panko bread crumbs
1/8 c fresh cilantro, Rosemary, oregano, sweet basil, make a herb mix, diced 
1 diced shallot
1/8 c whole buttermilk
2 T double concentrated tomato paste( I used Cento)
1/4 c shaved blend, Toscano, unexpected Cheddar, and Parmesan( found at Trader Joe's) 
1/4 c mascarpone cheese( I use Trader Joe's) 
1/4 t salt
A few turns of cracked black pepper

Make balls about the size of a golf ball.
Add oil to skillet and brown slowly. 
Flip to insure even browning, covering to help steam.
Add to sauce.

Oatmeal Raisin Soft Batch Cookies


















You have tried my heart, you have visited me by night, you have tested me, and you will find nothing; I have purposed that my mouth will not transgress.  - Psalm 17:3




Dry 
2 c AP flour
1 t kosher salt
1 t baking powder
1 t baking soda
1 t cinnamon
Whisk and set aside.

Wet 
1 c butter, softened
1 c sugar
1 c packed brown sugar
2 eggs
2 t vanilla 
Cream with a electric mixer, starting on low and ending on high.
It took awhile to get creamy and for the butter to be incorporated.

Add the dry ingredients into the wet, a little at a time stirring with a wood spoon, just till flour is not showing.
This dough is very thick.

Add ins 
3 c old fashioned oats
1 1/2 c large raisins, got mine at Sprouts in the self serve bins
Mix these in a little at a time with a big spoon.

Bake 350 preheated oven.
Cover pan with parchment.
Measure out a 2 T ball and slightly flatten, leaving 2 inch space between.
Bake 11 minutes.
They will still be a little undercooked. 
Cool in pan 2 minutes.
Remove to cool on parchment.

Really Quick Really Delicious Honey Mirin Chicken and Veggies


















7 I bless the LORD who gives me counsel; in the night also my heart instructs me.

3 c Perdue frozen Popcorn Chicken from Costco, oven baked for 16 minutes on 450 degrees
Set aside.

Fresh angel hair, cooked and set aside

Veggies
1 English cucumber, matchstick cut
1 carrot, matchstick cut
1 baby Bok choy, chopped
3 T Roasted garlic
2 T dried chives
Oil for sautéing 

Sauté veggies, add cooked chicken, add sauce stirring. 
When sauce is thickened and coats chicken, through in peanuts. Serve over noodles.
Ready in 20 minutes.

Sauce 
1/8 c Mirin
1/8 c honey
1 T apple cider vinegar
1/8 c soy sauce
1/2 c water
1 T flour, whisk into water

1/2 c dry roasted peanuts

White Chocolate Cheesecake Strawberry Banana Salad


















19 My brothers, if anyone among you wanders from the truth and someone brings him back,

This taste a lot like banana pudding with strawberries added!!



1 8 oz. cream cheese, softened 
1 small box each of white chocolate and  cheesecake instant pudding
1 c half and half
4 oz. cool whip
3 c sliced strawberries 
4 sliced bananas

Whip cream cheese.
After cream cheese is whipped, slowly add dry pudding, a tablespoon at a time while whipping on low speed.
Add half and half a tablespoon at a time, whipping slowly.
Whip in cool whip.
Fold in fruit.

Filet of Beef Sweet Herb Rice Burrito Bowl with Black Bean Corn Salsa

Steak

2 Filet of beef, seasoned, pan seared in whiskey, and broiled to medium
Rub
1 cap full Whiskey
Smoked salt and cracked pepper

Black Bean Corn Salsa

3 ears fresh corn, microwave, shaved 
1 can black beans, drained and rinsed
1 tomato, chopped
1 small shallot, diced
1 tiny lime, juiced 
1/2 t Garlic granules 
1 t Fresh Spice mix, cilantro, sage, sweet basil, Rosemary, oregano
Mix together, cover, set aside.

Sweet Herb Rice

2 c cooked rice, done according to box directions and set aside,
1 t Fresh Spice mix, cilantro, sage, sweet basil, Rosemary, oregano
1 tiny lime, juiced 
1 T sugar
Smoked Salt and pepper
After rice is slightly cooled, salt/pepper, add herbs, lime juice and sugar.

Toppings

Sliced avocado, cheese and sour cream
To serve place rice on bottom of bowl, then using a third measure scheme add the beef, 
avocado, and black bean corn salsa, topping with cheese and sour cream.

Egg White Huevos Rancheros Burrito with Peach Mango Salsa



















5 So also the tongue is a small member, yet it boasts of great things. How great a forest is set ablaze by such a small fire! 
6 And the tongue is a fire, a world of unrighteousness. The tongue is set among our members, staining the whole body, setting on fire the entire course of life, and set on fire by hell.

1/4 c Egg whites, salt and pepper to taste
3 T Pimento cheese
1 Shallot, diced 
2 Sausage patties cooked crisp
Peach Mango Salsa
Tortillas, warmed

Fry sausage and set aside.
Pour off most of the grease and sauté the shallots in the remaining drippings.
Add seasoned egg whites, when almost done add pimento cheese.
Cut the sausage patties in half, add egg mixture and add some of the salsa.
Can add sliced avocado if you like!!!

Spicy Shrimp Burrito Bowl With Sweet Herb Rice and Black Bean Corn Salsa

4 c cleaned,  tail off shrimp, season and set aside

Seasoning for Shrimp

1 1/2 t Ancho chili powder
1 t Garlic granules 
1 1/2 t Toasted cumin
Pinch red pepper flakes
Mix spices and sprinkle on shrimp.
Oil for sautéing 
Sauté shrimp quickly in hot oil. 2 1/2 minutes each side. Do not over cook. They will resemble grilled shrimp.

Black Bean Corn Salsa

3 ears fresh corn, microwave, shaved 
1 can black beans, drained and rinsed
1 tomato, chopped
1/2 red onion, diced
1 tiny lime, juiced 
1/2 t Garlic 
1 t Fresh Spice mix, cilantro, sage, sweet basil, Rosemary, oregano
Mix together, cover, set aside.

Sweet Herb Rice

2 c cooked rice, done according to box directions and set aside
1 t Fresh Spice mix, cilantro, sage, sweet basil, Rosemary, oregano
1 tiny lime, juiced 
1 T sugar
Smoked Salt and pepper
After rice is slightly cooled, salt/pepper, add herbs, lime juice and sugar.

Toppings

Sliced avocado, cheese and sour cream
To serve place rice on bottom of bowl, then using a third measure scheme add the shrimp, avocado, and salsa, topping with cheese and sour cream.

Basil Sage Lime Zest Honey Toasted Cumin Pan Seared Chicken

10 chicken tenderloins, pounded

Marinade
1/4 c Oil, I used grape seed 
Lime juice, 1 whole
Lime zest, 1 whole
3 T Honey
1/2 t Toasted cumin
1/2 t Garlic
1/4 t each Salt and pepper
1 T each Fresh sweet basil, sage, rosemary, thyme, and oregano, chopped

Marinate 30 minutes in ziplock bag.
Pan sear. Do not overcook!!

Special Fresh Strawberry Pretzel Crust Salad




















7 For the mystery of lawlessness is already at work. Only he who now restrains it will do so until he is out of the way.
8 And then the lawless one will be revealed, whom the Lord Jesus will kill with the breath of his mouth and bring to nothing by the appearance of his coming.
9 The coming of the lawless one is by the activity of Satan with all power and false signs and wonders,
10 and with all wicked deception for those who are perishing, because they refused to love the truth and so be saved.
11 Therefore God sends them a strong delusion, so that they may believe what is false,
12 in order that all may be condemned who did not believe the truth but had pleasure in unrighteousness. - 2 Thessalonians 2:7-12






Pretzel Crust
2 c crushed pretzel sticks
1/2 c butter, melted
3 T sugar
Mix together and press in a 13x9 pan, bake 7 minutes and set aside.

Top
3 c fresh sliced strawberries tossed in a 3 oz. dry box of strawberry jello
Set aside in fridge.
If you set these in fridge for a few hours, you will have to drain the juice off before using.

Cream cheese layer
1 stick of cream cheese softened 
2/3 c sugar
1 8oz. Frozen whipped topping, thawed
Mix together with a hand mixer until smooth, place on cooled crust, add strawberries and chill for 2 hours.

Spray whip topping to use as you serve slices.

Mexican Ancho Chili Lime Street Corn



















6 He will render to each one according to his works:

Served with a Mexican Avocado Jalapeno Burger!!!

4 ears corn
Mayo
Parmesan cheese
Ancho chili powder
Lime zest from 1 lime
Lime juice from 1 lime


Microwave corn, covered 3 minutes each side.
Drizzle corn with mayo and brush mayo evenly on all sides, sprinkle chili, parm, and lime zest on both sides. To finish, squeeze lime juice.
