Creamy Brussels Sprouts






Rev.21:

3 or more slices bacon, chopped
1 T extra-virgin olive oil
1 shallot, chopped
1/2 leek, sliced
1 clove roasted garlic
1 1/2 pounds Brussels sprouts, trimmed, and halved
Salt and pepper, to taste
1 T heavy cream
1/4 c water
1/4 c Sauvignon Blanc
Splash of red wine vinegar
Pinch of sugar
1 t chicken base seasoning



Brown bacon in a medium skillet over medium high heat. 
Remove bacon to a paper towel lined plate. 
Add extra-virgin olive oil to the pan, 1 turn. 
Add shallots, garlic and leeks to the pan and saute 1 to 2 minutes. 
Add Brussels spouts and coat in oil. 
Season with salt and pepper. 
Cook Brussels sprouts 2 to 3 minutes to begin to soften, then add broth seasoning, water and wine.
Bring broth to a boil, cover and reduce heat to medium low. 
Cook 10 minutes, or until tender. 
Add pinch of sugar and splash of red wine vinegar.

Clementine Trifle With Grand Marnier Sabayon A Fresh Market Recipe






Rev.15:4
Who will not fear, O Lord, and glorify your name? For you alone are holy. All nations will come and worship you, for your righteous acts have been revealed." 








1/2 t vanilla
2 T cornstarch 
4 T Grand Marnier
12 egg yolks
3/4 c sugar
1/4 t Clementine zest
2 loaves Fresh Market Bakery French Vanilla Pound Cakes, cubed
8-10 Clementines, peeled and segmented
2 10 oz cool whip

Sabayon
In a small bowl combine Grand Marnier and cornstarch, set aside. In a heat proof bowl combine egg yolks, sugar and vanilla. Set bowl over a water bath of simmering water and whisk until 140 degrees is reached. Add cornstarch mixture stir until thickened. Remove from heat and add zest. Stir until mixture cools.

To build trifle
Layer 1/3 sabayon into trifle dish, then 1/3 of cake cubes, then 1/3 of the clementines and finally the whipped topping. Repeat for 2 more layers ending with clementines.

Pecan Log Roll

12 oz box of Vanilla Wafers, crushed
3 c fine chopped pecans, toasted
1 can Eagle brand

Mix all ingredients together, shape into log.
Wrap in plastic wrap.
Slice into bite size pieces.

Chocolate Peanut Butter Stuffed Salted Pretzels

Fast and yummy!!


Waffle pretzels
Peanut butter
Melting chocolate, your choice, I mix dark and white

Spread peanut butter between 2 waffle pretzels to make a sandwich.
Melt the chocolate and dip pretzels. 
Melt white chocolate and add a little olive oil, stir.
Place in a squirt bottle and drizzle for decorations.

Chocolate Crispix






For the Lamb in the midst of the throne will be their shepherd, and he will guide them to springs of living water, and God will wipe away every tear from their eyes."  Revelation 7:17





Melt a cup of dipping chocolate.
Add Crispix cereal and gently fold into chocolate until cereal is covered.
The mixture will be thick.
Drop by spoonfuls onto parchment.
Let set and enjoy.

You could add nuts, raisins etc. 
I think I'll do white chocolate and add some crushed peppermint!

Stir Fry Kale Inspired By Bobby Flay

This is delicious. Kale can be really tart, but not this recipe!!

2 bunches of young kale, stems removed and leaves torn
1 T roasted mashed garlic
2 t olive oil
1/2 c water
A few turns coarse sea salt
A few turns Malabar pepper
2 T red wine vinegar
1/8 t sugar 

Heat oil with the garlic. Add kale, water, sugar, salt, and pepper. Saute 5 minutes, covered lightly with foil. Take off heat and stir in vinegar.

Smoky Gouda and Smoked Sausage Pizza

1 medium Caramelized Onion
1 t olive oil
1 t Pesto
1/8 t brown sugar
1/4 c cream
2 turns of Smoked salt
2 turns of Cracked pepper
1 c Smoked sausage, chopped(we smoke ours and slice and freeze)
1 c Smoky Gouda, grate
1 ultra thin pizza crust

Sauté onion and brown sugar in oil until onions caramelize.
Add pesto, cream, salt and pepper.

Spritz crust with oil on both sides.

Spread sauce on crust, add sausage and cheese.
Toast in toaster oven on 400 degrees for 10 minutes. 

Imperial Lobster Stuffed Shrimp Knock Off Bonefish Grill

Langostino Lobster, you can get this at Publix, frozen and fully cooked
25 jumbo Shrimp, frozen and cooked
1 Shallot, diced
1/8 c Mayo
1 T Butter
1/8 t Worcestershire 
1/4 c Limoncello 
1/8 t Smoked paprika
1/8 t Turmeric 
1/8 t Dijon 
1/8 t Ancho chili powder
1/4 c Heavy cream
1/8 t Sriracha 
Fresh parsley

1/4 c Panko

Thaw shrimp and lobster.
I just put the shrimp on a plate and by the time I finished the stuffing it was thawed.
Leave tails on and carefully slit back being careful not to cut through.
Place lobster bag in cold water to thaw. 
Sauté shallot in butter until tender, add Limoncello sautéing 1 minute, then add all the dry seasonings, then the wet ingredients ending with parsley. Sauté until incorporated and reduced by half.
Remove from heat. 
Add Panko. 
The stuffing needs to be thick.
After they are stuffed, place in a small casserole, spritz with olive oil and sprinkle with a little panko. 
They need to stand with the filling side up, side by side.
You can wedge them with foil. 

These are the bomb!!

Spicy General Chicken For Two

4 chicken tenderloins, cut into bite size pieces, salt after cooking
4 green onions, chopped
2 mushrooms, chopped

Dipping batter for chicken
1/4 c soy sauce
1 c cornstarch 
1 egg, beaten
Whisk together, will be very thick

Sauce
1/8 c water
1/4 c cornstarch 
1 t garlic
1/4 c sugar
1/4 c soy
1/8 c rice vinegar 
1/8 c Mirin
7 oz chicken stock
Refrigerate, can use for another Chinese dish, shake well

2 t sweet chili Thai sauce
Smoked almonds

Olive oil for frying chicken, I used a 1/4 c.
Dip chicken in dipping batter.
I used a non stick pan and fried the chicken in 2 batches.
Oil needs to be hot.
After the chicken is done, remove. 
Leave enough oil to sauté onions and mushrooms.
Place chicken back in onion mixture, add some of sauce, a little at a time until you get the desired thickness. Turn off heat. Add the sweet chili Thai sauce, stir and add almonds, serve over rice.

Chicken Carrot and Mushroom Ragu

1 c shredded Rotisserie chicken
1 diced Leeks
1 sliced Shallot
1 grated Carrot
1/2 t chicken seasoning base
5 Mushrooms, sliced
1 T Olive oil
Gravy packet
1/2 c Sauvignon Blanc
1 1/4 c Water

Sauté leeks, shallot, seasoning, carrots and mushroom in oil. Add chicken and wine and stir until bubbly. Add gravy packet to water and whisk, add to hot mixture stirring to thicken.

Japanese Fried Chicken

as he does in all his letters when he speaks in them of these matters. There are some things in them that are hard to understand, which the ignorant and unstable twist to their own destruction, as they do the other Scriptures. 









6 Boneless chicken thighs(going to try it with breast strips)

Marinade
1/2 c Dark Soy sauce
1/2 c Chinese rice vinegar
5 Green onions, sliced
2 cloves garlic, smashed
1 t sesame oil
1 T Mirin

Pour in a ziplock bag.
Marinate for at least 3 hours, better still, overnight if you can.

Toss in salted cornstarch.

Fry in oil until the internal temp of chicken is 165.

Andouille Cream Sauce Shrimp and Cheese Grits









1 Peter 2:3

2 inch piece of Andouille sausage, diced
1/2 c heavy Cream
1/3 c Parmesan cheese
1 Leek, sliced
20 frozen Shrimp, tail off
1/4 c Limoncello
1/2 t Smoky chipotle hot sauce
2 T Roasted garlic
1 t Butter for sautéing shrimp
1/2 t olive oil
2 t Fresh parsley

Grits 
1/4 c cream
1 1/2 c water
Smoky salt to taste
pepper to taste
1/2 c Sharp cheddar
1/4 c Smoked Gruyere  
4 heaping T Quick grits

Fast and Delicious Bacon Cream Cheese Pepper Jelly

but in your hearts honor Christ the Lord as holy, always being prepared to make a defense to anyone who asks you for a reason for the hope that is in you; yet do it with gentleness and respect, 






2 -3 T of Pepper Jelly and Onion, I use Harry and David brand
1/3 of the bar of Cream cheese, softened
6 slices of Bacon, chopped and fried

Cook bacon and drain.
Add jelly to cream cheese then add the bacon. 
Eat with crackers of your choice.

Asparagus Casserole





1 Peter 2:
13 Be subject for the Lord's sake to every human institution, whether it be to the emperor as supreme,
14 or to governors as sent by him to punish those who do evil and to praise those who do good.









Casserole
1 bunch small asparagus 
1t butter
1 t olive oil
1/4 t ancho chili powder
1/4 t turmeric 
Salt and pepper, to taste
1 can cream of mushroom soup
1/2 c sour cream
1/2 c cheddar cheese 
1/2 c onion rings

Topping
1/2 c Italian Panko
1/2 c cheddar cheese
1/2 c onion rings

Pesto Mushroom Leek Chicken Casserole




1 Peter 2:

3 c rotisserie chicken, shredded
1 can cream of onion soup
1/2 c sautéed leeks and mushroom mixture, * I do a skillet full and keep in the freezer
1/2 c sour cream
1 T pesto

Topping
1/2 c panko
1/2 c sharp cheddar
1/2 c mozzerella 

In a 13x9 pan, place shredded chicken. Scatter leek mixture over the chicken. In a bowl mix soup, sour cream and pesto and add to chicken and stir gently to incorporate. Sprinkle panko then the two cheeses on top of chicken mixture. Bake 350 degrees for 30 minutes.

* Saute 3 sliced leeks and a large container of sliced mushrooms in 1 t of butter and 1 t of olive oil. I buy the bulk size at Sam's or Costco. These freeze well! Divide into small containers, I try to do a 1/2 cup size.

Cornbread and Croissant Southern Style Dressing







1 Peter 1:
8 Though you have not seen him, you love him. Though you do not now see him, you believe in him and rejoice with joy that is inexpressible and filled with glory,
9 obtaining the outcome of your faith, the salvation of your souls.




1 10 inch cast iron skillet of cooked buttermilk cornbread 
4 toasted croissant, cut in half to toast, after toasting, dice
1 can cream of celery 
1 can cream of chicken
3 T fresh chopped sage
1 leek, sliced
1/4 c heavy cream
2 stalks celery, sliced thin
1 1/2 -2 c smoked chicken or rotisserie chicken
1 1/2 quarts Chicken stock, reserve the rest for gravy

In a 13x9 deep dish pan, crumble cornbread. Add the toasted croissant, soups, sage, leeks, cream, celery and chicken. Now add stock. Drizzle cream on top, bake 450 degrees for 50-60 minutes or until browned.

1 1/2 T Mitsukan rice wine vinegar
1/4 c light mayo
1 t Grey Poupon Dijon
1/8 t Imperial Dragon sesame oil

Whisk together.

Prosciutto Panino Pasta






James 1:22
But be doers of the word, and not hearers only, deceiving yourselves.




President's Proscuitto Panino is gourmet meat with fresh mozzarella and basil from Sam's club

Panino roll, cut into 3 pieces, freeze in ziploc bags

1/3 of the Panino roll, chopped

1/2 t olive oil
2 t butter
1 leek, sliced
8 fresh small asparagus, cut into bite size pieces
2 large mushrooms, sliced
1 t chicken base seasoning

1/4 c Sauvignon Blanc
1/4 c cream
1/4 c 1/2 and 1/2
1/2 t ancho chili powder
1/2 t turmeric 
1/2 t smoky paprika
4 turns fresh black pepper


Angel hair pasta 1/2 box, cooked al dente
Reserve some pasta water

Sauté leeks, mushrooms and asparagus in oil and butter, add the chicken base seasoning to the veggies and add the chopped panino. When the veggies are tender, add the wine. Let it cook 2 minutes and add the cream, 1/2 &1/2 and the rest of the seasonings.
Add pasta and 1/2 c pasta water, stir with tongs to incorporate.
