Air Fryer Greek Pork Tenderloin and Potatoes






























Ezekiel 18:26-27


[26] When a righteous person turns away from his righteousness and does injustice, he shall die for it; for the injustice that he has done he shall die. [27] Again, when a wicked person turns away from the wickedness he has committed and does what is just and right, he shall save his life.



Ingredients


2 pork tenderloins trim extra fat and silver skin

1/2 c olive oil

2 t lemon pepper

1 lemon, juiced

1 t dried oregano

1 t Greek seasoning 

2 t roasted garlic

salt and pepper to taste


2 t mayonnaise

1/8 c Sauvignon Blanc 

1 & 1/2 pounds mini potatoes, microwaved, cooled and split in half


In a gallon ziplock mix the olive oil, lemon pepper, lemon juice, Greek seasoning, oregano, and garlic. Add the tenderloins and coat. Place in the fridge for 6 or more hours. Turn occasionally.

1 hour before dinner, take the pork out of the fridge.

Preheat the Air Fryer to 400 F

Microwave the potatoes, 2 min each side.

Cool potatoes.

Meanwhile, heat a large fry pan on the and sear tenderloins.

Reserve drippings in fry pan.

Add the browned tenderloins back to the marinade and air fry, uncovered, until desired doneness. The internal temperature is 145-150 degrees.

Should only take 7 minutes each side.

While the pork is air frying, slice the potatoes in half and toss in Mayo wine mixture.

Add to the same pan as drippings.

Brown the cut side on high temperature. Set aside.

Remove the pork to cutting board and cover with foil to rest.

While pork rests, add the potatoes to the pan with the marinade drippings, salt and pepper, to taste, and add mayonnaise wine mixture. Coat thoroughly.

Add the fry pan back to air fryer and let the potatoes continue cooking while the pork has rested about 10 minutes.

Slice the pork after rest.

Serve with Molasses mixed greens
